The supply and demand of mushrooms has increased dramatically as the standard of living has increased and the nutritional and medical value of the mushrooms has been discovered. However, in meeting the demand, the profitability of the mushroom is being reduced. Even though there are many different types of and uses for mushrooms, the overall output production for the last ten years has consistently increased 5.9% per year, and for the last five years('00~'04) 5.2 % per year, and for the last 3 years('02~'04) 2.9% per year- the rate of increase has slowed. Looking at the standard gross income from mushroom production, it has increased 5.2% over the last nine years('95~'03), 1.6% over the last 4 years('00~'03), and 3.2% over the last 3 years('02~'04)-the annual gross income is decreasing. Even though the farmers are producing more mushrooms, the annual gross income is not increasing enough to keep up with the production, and therefore the profitability of mushrooms is decreasing. Since 2002, the constant increase of the output of edible mushrooms such as the Common Mushroom, Oyster Mushroom, King Oyster Mushroom and Winter Mushroom has resulted in a price declines. Before 2004, Korea mainly exported mushrooms, but after 2004 Korea mainly imported mushrooms. The mushroom industry of Korea is nearing the end of the stage of 'supplying domestic demand.' The stages are as follows: demand raised ${\rightarrow}$ supply domestic demand ${\rightarrow}$ export ${\rightarrow}$ country with developed mushroom industry. Therefore, we should have an efficient system to promote the exportation of mushrooms. Not only the exportation of mushroom itself but also the exportation of mushroom spawn, cultivation techniques and processing facilities should be our goal when we formulate the policy.

China is the largest producer and consumer of mushrooms, and the development of China's mushroom industry poses a serious threat to Korea, which has similar mushroom production and consumption tendencies. China's mushroom industry produced only 50,000 tons around 1985 when statistical data began to be published, but by 2020, it has developed into an industry with annual production exceeding 40 million tons. The rapid development of the mushroom industry in China is due to high profitability, rapid funds turnover, rapid return on investment, active support from local governments, increased preference and consumption of healthy foods due to increased national income, expansion of overseas exports, and introduction of automated facility cultivation. Recently, there is a high possibility that mushroom production through automated facility cultivation in China will be excessive, so if measures are not taken, there is a high possibility that it will encroach on the Korean mushroom market. Therefore, in order to protect domestic mushroom farmers and industries, it is necessary to accurately identify and analyze the current status of China's mushroom industry.

In the present study, we analyzed the amino acid and free sugar contentof Flammulina velutipes. We observed that the free sugar content in Flammulina velutipes increased under higher storage temperatures. However, the the packaging material had no effect on the sugar content. Higher storage temperature increased the level Among the packaging film materials tested for the storage of Flammulina velutipes, polyphenol oxidase. ${\beta}$-glucan level of Flammulina velutipes by variation in the packaging film material or storage temperature. We suggest that the ${\beta}$-glucan content is not an acceptable to mushroom storage standards.
The global mushroom industry has grown rapidly in recent years in terms of beneficial effects, market value, and demand. India has a wide range of agro-climatic conditions and is largely an agricultural country with a cultivated area of about 4.37 %, generating about 620 million tons of agro waste annually. Mushroom cultivation not only helps recycle agro wastes, but also fills the nutritional gap prevalent among a large population of India. Recently, government industrial policy and creative innovation has promoted research and other endeavors aiming towards the cultivation of mushrooms. Mushroom cultivation in India was initiated in Solan, in the mid-sixties. Mushroom cultivation has been successful in temperate regions of the Himalayas, the Western Ghats, and the hills of northeast India. Recently, many unemployed people have begun to adopt mushroom cultivation as a means of self-employment. It is high time that Indian mushroom cultivators and consumers became aware of the nutritional and medicinal values of cultivated and wild species of mushrooms. The total mushroom production in India between 2010 and 2017 was approximately 0.13 million tons, accounting for a 4.3% increase in the average growth rate of mushrooms per annum. In particular, the total production of white button mushrooms is the highest, with a share of about 73% of total mushroom production. In this review article, we have analyzed the current scenario of the Indian mushroom industry and its contribution to the economic growth of the country.
Mushroom cultivation in Korea was launched in the early 1960's. At that time Korean government started a program for increasing cultivation of button mushroom (Agaricus bisporus) and oak mushroom (Lentinula edodes) to export agricultural products and to increase farm income. National research institutes under Rural Development Administration, Korea Forest Service, etc. play a leading role in mushroom industry as follows : Development and spread of genetically superior commercial strains, good spawns, and cultivation techniques. Training and field advice to lead farmers for mass production of high quality mushrooms. Political support of facilities and establishments for mushroom cultivation. Several mushrooms including oak mushroom, button mushroom, oyster mushroom, winter mushroom, Ganoderma, P. eryngii, etc. have been popularized for their cultivation techniques and produced in large quantities in the farm. According to a recent statistics, mushrooms have been grown by about 20,000 farm households, in Korea and the gross production of fresh mushrooms is estimated about 170,000 M/T. The gross production of oyster mushroom is the highest followed by winter mushroom, oak mushroom and button mushroom. The gross amount of mushroom production stands over 700 billion won. Thus, mushroom industry goes to the most important cash crop to be produced yearly.
In this study, five different Lentinula edodes cultivar (Chamaram, Sanbaekhyang, Sanjo 713ho, Sanjo 715ho, Sanjo 718ho) were evaluated for their ability to decolorize Remazol Brilliant Blue R (RBBR) in MEB medium, respectively. Chamaram and Sanjo 713ho decolorized RBBR rapidly in MEB medium within 3 and 5 days. The activities of manganese peroxidase (MnP) and laccase were determined on the MEB medium with and without lignin. Sanjo 713ho resulted the highest ligninolytic enzyme activities on incubation day 1, indicating of 1,213 U/mg of MnP activity and 1,421 U/mg of laccase activity.

The chemical composition and thermal, crystal characterization of oak mushroom waste were investigated in comparison with those normal oak wood for utilization of cellulose from oak mushroom waste. The oak mushroom waste contained a higher percentage of ash, and hot water extractives than oak wood. This results indicated that the materials inside the body are easily decomposed during the oak mushroom cultivation. The lower percentage of holocellulose and a-cellulose of oak mushroom waste caused by fungal decomposition too. Whereas, the thermal decomposition behavior and crystallinity of oak mushroom waste was similar to that of normal oak wood, which indicated that the cellulose characterization of oak mushroom waste is resistant to fungal decomposition. In additionally, a degree of polymerization of oak mushroom waste must be investigate for examination of cellulose crystalline characterization, especially.

미역의 뿌리부분인 미역귀에는 알긴산과 후코이단 성분이 풍부하고 고혈압과 당뇨등과 같은 성인병을 예방하는데 도움이 된다. 후코이단은 미역과 다시마 같은 갈조류에서 추출된 천연물질로 특히 면역력을 활성화하고 항암작용으로 잘 알려져 있다. 알긴산 등 유용성분이 함유된 것으로 알려진 미역귀의 유용성분을 분석하여, 향후 미역귀를 활용한 제품개발의 기초자료를 제공하고자 본 연구를 수행하였다. 본 연구에 사용된 미역귀는 2015년 12월 완도 금일수산에서 제공받아 연구재료로 활용하였다. AOAC방법에 따라 분석한 미역귀의 일반성분은 수분이 대부분을 차지하였으며, 조섬유와 가용성 무질소물 함량이 높게 나타났다. 이는 시료로 사용한 미역귀가 수확 후 바로 냉동보관 되어서 수분함량이 높은 것으로 보여진다. 유리당은 미역귀 1g에 증류수를 가하여 $60^{\circ}C$에서 4시간 추출 한 후, 원심분리(3,000 rpm, 30 min)하여 $0.45{\mu}m$ membrane filter (Millipore Co., USA)로 여과한 여액을 HPLC (High Performance Liquid Chromatography)를 이용하여 분석한 결과, 미역귀의 유리당은 Galactose 1종만이 검출되었다. 미역귀의 구성아미노산과 유리아미노산은 $0.45{\mu}m$ membrane filter로 여과하여 얻은 여액을 일정량 취하여 AccQ-Tag 시약을 사용하여 유도체화 시킨 후 HPLC로 분석하였다. 미역귀의 구성아미노산은 glutamic acid, aspartic acid, alanine, lysine, threonine, valine, arginine 순으로 높은 함량을 나타내었으며, 유리아미노산은 glutamic acid, alanine, threonine, arginine, lysine 순으로 높은 함량을 나타내었다. 미역귀의 유리아미노산함량은 표고에 비하여 현저히 낮은 함량이 나타났으며, 주요아미노산은 해조류의 풍미를 대표하는 아미노산인 glutamic acid와 alanine으로 나타났다.

미역은 갈조식물인 미역과에 속하는 1년생 바닷말로서 주로 어린 줄기와 잎부분을 식용으로 한다. 폐기부로 분류되는 미역귀 부분 또한 가식부 이상으로 풍부한 미네랄과 알긴산을 함유하고 있으며 이를 이용한 건강 친화적인 슬라이스 잼의 개발을 목적으로 연구를 수행하였다. 제품 개발의 소재화를 위한 연구의 일환으로 미역귀 알긴산 추출, 알긴산의 항산화활성(DPPH, ABTS, SOD 유사활성, total polyphenol, 세포 독성, NO생성 억제능을 수행한 바는 아래와 같다. 미역귀 알긴산 추출물을 각각 10, 50, 100, $500{\mu}g/mL$의 농도로 처리한 시험구들의 전자공여능을 확인한 결과 각각 2.8, 27.5, 35.9, 43.4%로 나타났으며, ABTS 라디칼 소거능은 각각 4.2, 21.6, 33.4, 67.4%로 나타났다. 동일한 농도로 처리하였을 때 SOD 유사활성은 각각 9.2, 12.4, 23.2, 30.8%로 나타났다. 미역귀 알긴산 추출물의 total polyphenol은 $19.16{\pm}0.08mg%$로 확인되었다. 세포생존율은 10, 50, 100, $500{\mu}g/mL$의 농도로 처리하였을 때 118.8%, 120.7%, 121.1%, 124.9%로 나타났다. NO생성 억제능을 동일한 농도에서 확인한 결과 각각 3.1, 5.1, 7.9, 9.6%로 확인되었다. 본 연구결과 미역귀 알긴산 추출물은 항산화능이 탁월하게 나타나 건강 친화적인 기능성 소재로 활용도가 높을 것으로 기대된다.
