  • The purpose of this study is to make profits and enhance national competitiveness through the globalization of Korean food. For this purpose, this study analyzed the certificate of qualification for Korean cooking technicians in the field of technical cooking. The results of presenting the perception, motivation for acquisition, and improvement measures of the Korean cooking certificate are as follows. First, as for the perception, if Korean cooking technicians acquire the certificate, they are acknowledged to acquire the qualifications and basic technology as licensed cooks in Korean food; however, they cannot practically execute cooking affairs. They cannot receive additional marks in time of employment. Getting the special education in cooking schools is helpful to acquiring the certificate. Second, the motivation for acquisition results from its advantage over other types of business, and a hope for running Korean food restaurants. Third, the improvement measures cover changing examination contents to be utilized in practical affairs, improving cooking methods, fair evaluation, and considering excessive technicians not to depreciate the value of the certificate.

  • BACKGROUND/OBJECTIVES: The recent coronavirus disease 2019 pandemic has brought to light issues regarding personal and environmental cleanliness. Individuals may have concerns about cleanliness at food service establishments when they consume food prepared at a restaurant. In Korea, a new restaurant hygienic certificate system was implemented in 2017. The effect of this new system has not been evaluated. SUBJECTS/METHODS: This study investigated consumers' perceptions of these new certificates using the protection motivation theory (PMT). An online survey was conducted to collect data and then exploratory factor analysis, analysis of variance, and multiple regression tests were run. RESULTS: The results of this study indicate that 3 different certificates had significant differences in threat (P < 0.001) and benefit (P < 0.001) perception. However, experience with a foodborne illness from a restaurant did not effect on the PMT variables. In addition, the 3-tier certificate did not motivate consumers to protect themselves against foodborne illnesses, while previous experiences of foodborne illness (P < 0.05), coping (P < 0.001), and benefits (P < 0.01) affected this protection motivation. CONCLUSIONS: This study suggests that consumers were not influenced by different certificate levels regarding their motivation to protect themselves from foodborne illnesses. Therefore, an improved plan should be initiated to clarify the meaning of these certificates. The results of this study can help the application and development of a new system for future adaptations.

  • This research examines how influential the certificate is on career development and job satisfaction. The outcome of substantial analysis on hypothesis of the study is: First, three factors-proactiveness, value, competitiveness are the positive effect on motivation for certificate. However, it is shown that the correlation and regulation factors do not have a significant effect on career development. Second, career development has a positive relation with the job satisfaction. Third, value and association among motivation factors for certificate acquisition have a positive effect on job satisfaction. However, it is revealed that proactiveness, competitiveness, and bylaw factors do not have significant influences on job satisfaction. These outcomes prove that private certificates do not meet the need realistically in the business field. It is caused by the low level of difficulty of the certificate exam, which results in the standardization state where it becomes easier for anyone to obtain the certificate. In order to resolve the problem in relation to the private certificate acquisition, it is suggested that advices of field experts should be actively reflected on the exam and that the difficulty of the exam should be moderated to acquire comparability and to reflect reality.

The results of the research are as follows: when the trainees were motivated by the goals of getting a certificate or a job, employment service satisfaction levels were influenced meaningfully. Secondly, educational satisfaction levels and occupational ability development also scored highly. Therefore, it is important to strengthen instructors' competency. Instructors must be required to have onsite experience so that they can provide authentic education that can be applied to the work field. The government should establish a compulsory training session for the trainers along with an incentive program so that they can catch up with up-to-date technology and trend. Third, the research shows that supporting business startup and job placement is important. Follow-up management systems should be provided in cooperation with relevant institutions of employment and business startups. • This study is to determine the key factors of internal situational characteristics, affecting the motivation and performance for overseas expansion of Korean venture business in global markets and to investigate the moderating effect of them on the relationship between entrepreneurship and overseas expansion. To meet the research purpose, by reviewing previous researches, we categorized internal factors into four situational factors of firm size with sales growth, firm age with main product's life cycle, overseas experience and organizational structure and into three entrepreneurship sub-categories of innovativeness, pro-activeness and risk-taking. As result of the statistical analysis of 289 small and medium-sized enterprises with Korean Venture Certificate, it is verified that the motivation for globalization has been influenced by firm size, entrepreneurship, and overseas experience. On the other hand, all factors excepting firm size have positive effects on globalization performance overseas. And, it also verified that there are positive moderating effects of internal situational factors on the relationship of entrepreneurship and the performance of globalization, wheres overseas experience only plays positive moderating effects on the relationship between entrepreneurship and the motivation of globalization. On the basis of these results, we discussed and suggested practical and political issues and implications in order to vitalize globalization of Korean SMEs in the conclusion.
