The salinity of soups of institutions enrolled at the Center for Children's Foodservice Management was monitored to reduce sodium intake of children by continuously managing salinity of soups provided by children food service. Monitoring of salinity was conducted by a salinity meter (SB-1500H, HM digital) three times in 2016 by patrolling children's institutions for the instruction of public health. The average salinity of soups provided by total children's institution showed a significant decrease in salinity - $1^{st}$ 0.45%, $2^{nd}$ 0.41% and $3^{rd}$ 0.39% - as monitoring was proceeded (p<0.01). When salinity of soups was analyzed according to the type of children's institution, the salinity of national and public institutions showed no significant decrease. In contrast, the salinity of private institutions decreased significantly (p<0.05). Depending on the enrollment of the food service, there was no significant difference in average salinity of soups between large food services, which have over 50 children, and small food services, which have less than 50 children. However, all food services showed a salinity decrease from the $1^{st}$ monitoring to the $3^{rd}$ monitoring. Salinity according to the type of soup showed that salinity of clear soup, miso soup, and stew except beef soup decreased from the $1^{st}$ monitoring to $3^{rd}$ monitoring. However, there was no significant difference in salinity according to the type of soup which can be attributed to a large difference in salinity among the same type of soup. The individual soup showing the biggest difference between maximum and minimum salinity of soup was egg soup (0.62%), potato soup (0.54%), and mushroom soup (0.64%). The present average salinity of soup provided by children's institutions was less than 0.5% which is the recommended standard of the Ministry of Food and Drug Safety. However, the salinity of soups should be managed within a certain range including the minimum salinity regarding the taste education of children.
The objectives of this study were to gauge the extent of the forestry business through establishing the definition of forestry industry from the perspective of economic convergence and to analyze key components that affect each growth phase of a forestry business entity by classifying them. A total of 1,397 "sixth-sector industry" management entities were certified by the Ministry of Agriculture, Food, and Rural Affairs in South Korea from 2012-2017. Of these, 259 (18.5%) were in the forestry sector. In this study, the 259 forestry management entities were further classified into three phases based on sales distribution: entrance, development, and maturity. The entrance phase (<100 million KRW), development phase (>100 million and <1 billion KRW), and maturity phase (>1 billion KRW) constituted 33.2%, 55.4%, and 12.4% of the total 259 entities, respectively. The results showed that most of the management entities were either in the entrance or development phases, and only a small portion was in the maturity phase. To identify the key variables that affect each of the phases, chi-square analysis was used. We designed the "sixth-sector industry" type as an independent variable, whereas selected region, business organization, manager age group, forest product, processing type, and service type were designated as dependent variables. The results of the analysis showed that the processing and service types influenced all three developmental phases. Moreover, as the phase advanced, processing type showed a higher proportion of health-functional ingredients, such as powder or extract from forest products, which enable to develop and produce a variety of products. Service type also changed from simple experience to integrated experience tourism and finally to tourism education. Distribution and sales channel also turned out to be a significant factor during the development phase. This study provides the basic information needed to guide government support in the implementation of a formal forestry business through convergence as well as to increase the efficiency of business management.

The main reaction for soil washing with using sodium hydroxide(NaOH) and hydrogen peroxide(H$_2$O$_2$) was desorption and flotation of petrochemical contaminant by means of oxygen bubble. We found the rate of decomposition by rate constant according to various temperature. For the purpose of optimizing the operation factor, we examined the effect of concentration of NaOH and H$_2$O$_2$, washing time, and soil:water ratio. The rate of decomposition for H$_2$O$_2$ in liquid phase is the first order reaction by its concentration. The rate constant of k$_1$ was 0.9439 $\times$ exp(-1376.82/RT) when concentration of NaOH was lower than 0.1 M, and the rate constant of k$_2$ was 17.3588 $\times$ exp(-2320.06/RT) when it was higher than NaOH of 0.1 M. It found that NaOH was facilitated at the beyond of specific concentration. We confirmed the optimum concentration of NaOH/H$_2$O$_2$ by means of rate constants during soil washing. Also, the optimum conditions during soil washing were washing time of 15 min, soil : water ratio of 1 : 3, and NaOH/H$_2$O$_2$ concentration of 0.25 M/0.1 M.

In this study, the anti-inflammatory effect of Polyopes affinis ethanol extract (PAEE) was investigated using LPS-stimulated RAW 264.7 cells and a croton oil-induced ICR mice model. Treatment with PAEE significantly reduced production of nitric oxide (NO) and pro-inflammatory cytokines [interleukin (IL)-6, tumor necrosis factor $(TNF)-{\alpha}$, and $IL-1{\beta}$] in lipopolysaccharide (LPS)-stimulated RAW 264.7 cells. PAEE treatment also reduced expression of inducible NO synthase, cyclooxygenase-2, nuclear $factor-{\kappa}B$, and mitogen-activated protein kinases in LPS-stimulated RAW 264.7 cells. In the croton oil-induced ear edema test, application of PAEE (10~250 mg/kg body weight) reduced ear edema in a dose-dependent manner, and PAEE treatment at 50 mg/kg body weight showed similar inhibitory effects compared with prednisolone (10 mg/kg body weight). Histological analysis revealed reduced dermal thickness and lower number of infiltrated mast cells. These results suggest that PAEE might be used as a promising anti-inflammatory agent for inhibition of LPS-induced inflammation and ear edema formation.

The anti-inflammatory effects of ethanol extract from Grateloupia crispata (GCEE) were investigated in lipopolysaccharide (LPS)-stimulated murine macrophages. Anti-inflammatory effects were detected by enzyme-linked immunosorbent assay, Western blotting, and immunohistochemistry. There was no cytotoxic effect on proliferation of macrophages treated with GCEE compared to the control. GCEE significantly inhibited production of pro-inflammatory cytokines [interleukin (IL)-6, tumor necrosis $factor-{\alpha}$, and $IL-1{\beta}$] as well as nitric oxide in LPS-stimulated RAW 264.7 cells. In addition, GCEE suppressed expression of inducible nitric oxide synthase, cyclooxygenase-2, and nuclear $factor-{\kappa}B$ in a dose-dependent manner. GCEE significantly reduced activation of mitogen-activated protein kinases. In the in vivo test, evaluation of anti-inflammatory activity of GCEE was performed using croton oil-induced ear edema in ICR mice. Oral administration of 10 mg/kg to 250 mg/kg of GCEE significantly reduced ear edema in a dose-dependent manner compared to croton oil-induced mice. Moreover, GCEE reduced ear thickness and the number of mast cells compared to croton oil-induced mice in the histological analysis. These data suggest that GCEE could be used as a potential source for anti-inflammatory agents.
The anti-inflammatory effect of Sargassum patens C. Agardh ethanol extract (SPEE) was examined based on the lipopolysaccharide (LPS)-induced inflammatory response in this study. SPEE treatment was not cytotoxic to macrophages compared to the control. The production of NO was suppressed by SPEE by approximately 28% at $100{\mu}g/ml$, and levels of interleukin-6, tumor necrosis $factor-{\alpha}$, and $interleukin-1{\beta}$ decreased in a dose-dependent manner. In addition, the expression of inducible nitric oxide synthase, cyclooxygenase-2, and nuclear $factor-{\kappa}B$ was suppressed by SPEE treatment. In vivo, croton oil-induced mouse ear edema was attenuated by SPEE and the infiltration of mast cells into the tissue decreased. Based on these results, SPEE inhibits the release of LPS-induced pro-inflammatory cytokines and mediators, suggesting that SPEE is a potential agent for anti-inflammatory therapies.
Samples of water, soil, and sediment were taken from 10 streams near Andong, Korea in May 2004. To assess the degree of environmental pollution of each stream, chemical pollutants such as total notrogen (T-N), total phosphorus (T-P), chemical oxygen demand (COD), heavy metals, organophosphorus pesticides, organochlorine pesticides, and dioxin-like PCB congeners were analyzed by standard process tests or U.S. EPA methods. In addition, biomarkers originated from insect immune systems of beet armyworm, Spodoptera exigua, were used to analysis of the environmental samples. Except Waya-chun stream showing T-N content of 9.12 mg/L, most streams were contaminated with relatively low levels of overall pollutants in terms of T-N, T-P, and COD, compared to their acceptable environmental levels designated by the Ministry of Environment. Contents of Pb and Cd in samples of each stream were much lower than environmentally permissible levels. However, several times higherconcentrations of Pb and Cd were found in locations at Mi-chun, Kilan-chun, and Hyunha-chun streams, in comparison with other streams. Diazinon, parathion, and phenthoate compounds among organophosphorus pesticides were detected as concentrations of 0.19, 0.40, and $1.13\;{\mu}g/g$, respectively, from soil sample collected in the vicinity of Mi-chun stream. On the other hand, 16 organochlorine pesticides and 12 dioxin-like PCB congeners, known as endocrine disrupting chemicals, selected in this study were not found above the limit of detection. Biomarker analyses using insect immune responses indicated that Waya-chun stream was suspected as exposure to environmental pollutants. Limitation and compensation of both environmental analysis techniques are discussed.

Anthropogenic disturbances on freshwater ecosystem are known to degrade biodiversity, especially on fish assemblage. In this study, we have conducted fish surveys to identify impact of a bridge construction on fish assemblages. A total of eight study sites were surveyed in the Danjang and the Dong Stream in southern part of South Korea from June to November in 2021. The fish samplings were carried out five times, using cast-nets(10×10 mm mesh size), scoop-nets(4×4 mm, 5×5 mm mesh size), set-nets (10×10 mm mesh size), and fish traps (3×3 mm mesh size), along with the Stream/River Ecosystem Survey and Health Assessment by the Ministry of Environment of Korea and basic water quality measurement. Also, we applied the species diversity index and length-weight relationship regressions on certain species to identify interspecific growth rate differences in accordance with study sites. As a result, a total of 782 individuals, 23 species and 10 families were collected. The dominant species was Zacco Koreanus and relative abundance was 50.89%. When applying the length-weight relationship regressions on certain species, the 'b' value for Z. Koreanus was lower at the downstream points than at the upstream points of the construction site. In addition, when comparing to the results of the past survey, relative density of demersal fish at the upstream and downstream points decreased from 26% to 1.4%, and from 18% to 6.3%, respectively. In conclusion, it is considered that bridge construction negatively affects the habitat of fishes, especially on demersal fishes. Therefore, appropriate conservation efforts such as installation of silt protector and sand sedimentation pond are needed to alleviate the disturbance in habitat such as occurrence of turbidity and destruction of micro-habitats.
Ecological variations of Arbuscular mycorrhizal (AM) fungi were determined from the soils collected from different sites of the polluted and unpolluted areas related to the soil pollutions. Average 24.5 spores $(per\;20g)^{-1}$ soil of AM fungal spore were counted from the 32 sites of soils collected from On-san (polluted), whereas average 4.1 spores $(per\;20g)^{-1}$ soil from the 18 sites of those from Mt. Kwanak (polluted); Average 23.6 spores $(per\;20g)^{-1}$ soil of AM fungal spore were also counted from the 30 sites of soils collected from Chung-mu (unpolluted), whereas average 15.8 spores $(per\;20g)^{-1}$ soil from the 14 sites of those from Mt. Chungwang (unpolluted). The spores of AM fungi were the species of Glomus, Gigaspora, Acaulospora and Scutellospora. Among the above four genera, the species of Glomus were observed to be more abundant than the other genera in the soils collected from On-san, Chung-mu and Mt. Chungwang whereas the species of Gigaspora in those from Mt. Kwan-ak. The parameters of soils measured showed some variations between the polluted and unpolluted areas; 12.9 to 16.4% in the soil moisture, 5.6 to 8.3% in the organic matter and 4.3 to 5.7 at soil pH (polluted to unpolluted areas, respectively). The soils collected, thereby, appeared to be more strongly acidic and also lower in the contents of soil moisture or organic matter at the polluted area than unpolluted area. Based on the ecological criteria, the species richness or species diversity had significant differences (p<0.05) between polluted and unpolluted area. The spore density of genus Glomus or Gigaspora was significantly different (p<0.05) among the soils of three different plant vegetations (conifer plants, broad leaf plants, and grass plants). Also, there were significant differences (p<0.05) in the species evenness or species diversity among the soils referring to three different plant vegetations. There was a direct relationship $(r^2=0.38)$ between soil moisture and organic matter measured from 94 soil samples. Since there was a direct relationship $(r^2=0.22)$ between organic matter and total spores, it seems to be likely to presume that mycorrhizal spores can be increased in proportion to enhanced organic matters in soils. The species richness or species diversity was inclined to increase in proportion to enhanced soil pH and total spores in soils.
In this study we sought to develop a simultaneous analysis method for cis-bixin and cis-norbixin, the main components, to detect annatto pigment in food. To establish the optimal test method, the HPLC analysis methods of the European Food Safety Authority (EFSA), Japan's Ministry of Health, Labor and Welfare (MHLW), and National Institute of Food and Drug Safety Evaluation (NIFDS) were compared and reviewed. In addition, a new pretreatment method applicable to various foods was developed after selecting conditions for simultaneous high-performance liquid chromatography (HPLC) analysis in consideration of linearity, limit of detection (LOD), limit of quantification (LOQ), and analysis time. The HPLC analysis method of NIFDS showed the best linearity (R2 ≥ 0.999), exhibiting low detection and quantification limits for cis-norbixin and cis-bixin as 0.03, 0.05 ㎍/mL, and 0.097, 0.16 ㎍/mL, respectively. All previously reported pretreatment methods had limitations in various food applications. However, the new pretreatment method showed a high recovery rate for all three main food groups of fish meat and meat products, processed cheese and beverages. This method showed an excellent simultaneous recovery rate of 98% or more for cis-bixin and cis-norbixin. The HPLC analysis method with a new pretreatment method showed high linearity with a coefficient of determination (R2) of 1 for both substances, and the accuracy (recovery rate) and precision (%RSD) were 98% and between 0.4-7.9, respectively. From this result, the optimized analytical method was considered to be very suitable for the simultaneous analysis of cis-bixin and cis-norbixin, two main components of annatto pigment in food.
