Natural Occurrence of Mycotoxin and Fungi in Korean Rice (국내산 미곡에 발생하는 곰팡이와 곰팡이독소)

  • Inspection of deteriorated rices in Korea for fungal occurrence revealed that Aspergillus was the most frequently observed genus and some isolates of the Aspergillus spp. turned out to produce aflatoxin. Diverse fungal genera including Fusarium, Aspergillus, Penicillium, or Alternaria spp. were observed in most of the rice samples. Aflatoxin occurred infrequently and the levels of aflatoxin present in the rice samples were lower than regulatory limit but Fusarium toxins such as deoxynivalenol, nivalenol, zearalenone, and fumonisin occurred frequently. In rice processing complexes, fungal and mycotoxin contamination of rice decreased by milling process, resulting in the lowest level of mycotoxin and fungi in polished rice. Currently, it appears that Korean rice and milled by-products need a safety control for Fusarium toxins rather than aflatoxin.

Effect of N-fertilization on Rice Growth and Quality of Milled Rice (소비재배가 벼 생육 및 미질에 미치는 영향)

  • This experiment was carried out to identify rice varieties suitable for growing under low N-fertilization levels. Eighteen rice varieties were grown at 5.5 kg and 11 kg/10a nitrogen levels in 2004-2005 in Taegu, Korea. Several varieties like Ilmibyeo, Nampyeongbyeo, Sindongjinbyeo, Dongjin 1 and Donganbyeo yielded more than 470 kg/10a. Low N-fertilization level (5.5 kg/10a) decreased yields of Junambyeo and Donganbyeo by more than 10%. However, the decrease in yield was not significant in Surabyeo and Hwayeongbyeo compared with the 11 kg/10a N-fertilizer treatment. Improved grain quality, chemical properties and palatability was noted in some rice varieties. In terms of rice yield and grain quality, Donganbyeo, Ilmibyeo, Ilpumbyeo, Dongjin 1, Saechoocheongbyeo and Saegyehwabyeo were selected as premising rice varieties for growing under low N-fertilization levels.

Growth, Yield and Grain Quality of Rice Affected by Application of Crab Shell, Sericite Ore, and Charcoal Powders (게 껍질, 견운모 및 숯 분말이 벼의 생육, 수량 및 쌀의 품질에 미치는 영향)

  • An experiment was conducted to know the effects of crab shell, sericite ore, and charcoal powders on the growth, yield, and grain quality of rice. After application of 110-40-57 kg/ha of $N-P_2O_5-K_2O$, 3,000 kg/ha of crab shell and charcoal powders and 5,000 kg/ha of sericite ore powder were applied and incorporated into soil before transplanting of rice seedlings. The number of tillers and panicles, leaf area index at heading stage, N concentration of plants, and protein content and chalkiness of rice grains were increased with the application of crab shell powder, while the percentage of ripened stains and head rice and Toyo taste value were decreased. The yield of milled rice and other grain appearance and chemical and physical properties of rice grains were not affected by the application of crab shell powder. The sericite ore and charcoal powders increased protein content decreased Toyo taste value, but did not affect on the growth, yield and yield components and other grain qualities.

Agronomic traits of advanced backcross lines having bacterial blight resistant gene from a cross between japonica and indica

  • This study was carried out to develop rice variety integrated with rice bacterial blight resistance gene and to know the information of major agronomic traits of developed variety. Advanced backcross Lines 21 having Xa3 and Xa21 gene cross from japonica cultivar Hwanggeumnuri and indica variety IRBB21. Days after seeding and culm length of ABLs21 were 108 days (Aug. 16) and 76 cm, respectively. Ripened grain rates was 87.4 %, which was similar to the parents. 1000 grain weight of brown rice of ABLs21 was 21.4g, which was lower than the donor parent. Milled rice yield of ABLs21 was 532 kg/10a, which was smaller than recurrent parent and higher than the donor parent. Grain length/width ratio of brown rice was form of japonica with short-ellipse and glossiness of cooked rice has japonica trait. Head rice rate showed a large difference compare to the donor parent and similar to the recurrent parent. ABLs21 would be useful genetic resources for resistance breeding program against bacterial blight.

Chemical Properties and Fatty Acid Composition of Layers of Rice Grain (미립(米粒)의 층별 일반성분 및 지방산 조성)

  • In order to obtain basic data for the preparation of rice flour, chemical properties of grain layers were compared using Chucheongbyeo and Samgangbyeo, which are Japonica and Tongil type rice, respectively. The amylose contents of L6(center) layer in two different type of rice were the highest among 6 layers of rice grain tested. Reduction in amylose content was observed as the layer reached the surface, resulting in the lowest amylose content in the L0 layer. Amylose contents of L6 layer of Chucheongbyeo and Sangangbyeo were 3 and 2.2 times higher than those of L1 layer, respectively. Crude protein content of the L2 layer was the highest among 6 layers of rice grain tested and 2.2~2.5 times higher than that of whole milled rice. Crude fat content of grain layer was reduced as reaching the center layer. The crude fat contents of L6 layer of grain were 0.21% and 0.25% in Chucheongbyeo and Samgangbyeo, respectively. Most of free and bound lipids in L0 layer of two different rices were 69 : 31 and 79.5 : 20.5, respectively. Bound lipid content of grain layers increased as reaching the center layer. Major fatty acids in free lipids of both cultivars were linoleic acid, oleic acid, and palmitic acid. Linoleic acid content was higher than oleic acid in Chucheongbyeo, but oleic acid content was higher in Samgangbyeo. Palmitic and myristic acid contents of Chucheongbyeo were higher than those of Samgangbyeo, but stearic and linolenic acid contents were lower than those of Samgangbyeo.

Effect of Cooking Methods on the Qualities of Quick Cooking Rice (취반방법이 즉석쌀밥의 품질에 미치는 영향)

  • Quick cooking rice was produced by cooking raw, white long grain rice with three different methods which were atmospheric cooking in electric cooker, autoclaving and precooking followed by autoclaving. The drying rate curve showed that cooking methods affected little the drying pattern of the cooked rice except that precooking treatment before autoclaving retarded dehydration. The quick cooking rice prepared by precooking and autoclaving method among three cooking methods showed the fastest rehydration rate and took 7.5 minutes in reaching equilibrium moisture content by soaking in boiling water. And it had less hard and more cohesive texture than the milled rice cooked by conventional method and the quick cooking rice prepared by electric cooking when reconstituted. The microstructure of quick cooking rice was investigated among cooking methods.

  • 국내에서 개발된 연속식 현미조절기를 이용한 현미 가수처리 여부에 따른 도정수율의 변화를 알아보기 위해 경남 진주 농협 미곡종합처리장, 경기 여주의 미곡종합처리장 및 경기 용인의 농협 미곡종합처리장에서 검증실험을 실시하였다. 현미의 조절을 위한 가수처리 여부에 관한 실험 결과를 요약하면 다음과 같다. 1. 조질에 따른 현미 함수율의 측정값과 예측값의 차이는 진주, 여주의 경우는 각각 0.07%, 0.13%로 미소하게 나타났으며, 용인의 경우는 0.18%로 예측값이 낮게 나타났다. 2. 쇄미 발생량을 분석한 결과, 진주 농협의 경우 2.85 kg, 여주 농협의 경우 5.47 kg, 용인 농협의 경우 5.47 kg 감소되는 것으로 나타났다. 3. 도정수율 변화는 진주농협 1.21 %, 여주 0.87%, 용인 농협 1.00%의 상승을 보였다.

Studies on the Storage of a New Rice Variety Tongil (수도신품종(水稻新品種) "통일(統一)"의 저장성연구(貯藏性硏究))

  • To investigate the preservability of Tongil, three types(rough, brown and milled rice) of Tongil and the common variety (being composed of typical varieties) in Korea were stored at a ambient and a low temperature $(15^{\circ}C)$ warehouse from April to October of each year for three years (1972-1974). The results obtained are described as follows; 1) Temperatures of atmosphere and the natural temperature warehouse changed in the same way. 2) Similar changes of relative humidity were observed in atmosphere and both warehouses. 3) Equilibrium moisture content of Tongil at $25^{\circ}C$ was 0.55 % lower in rough and brown rice. 0.33% lower in milled rice than each type of the common variety. 4) Weight loss rate in the natural temperature storage and in the low temperature storage was 1.35% and 0.74% after 6 month storage. 5) The change of fat acidity in browe rice was greater than any others (rough and milled rice). 6) Hardness of Tongil was 1.64kg higher than that of the common variety. 7) Germination rate was about the same during the low temperature storage, but that of brown of the natural temperature storage was abruptly decreased to $23%{\sim}37%$ after August. As a result, it is possible Tongil is applicable to the long-term storage of rice due to Tongil's superior preservability.

Differences in Rice Quality and Physiochemical Component between Protox Inhibitor-Herbicide Resistant Transgenic Rice and Its Non-transgenic Counterpart (Protox 저해형 제초제 저항성 형질환벼와 비형질전환벼의 미질 및 이화학적 성분 차이)

  • Characteristics related to grain quality and physiochemical components such as mineral, total amino acid, free amino acid, and free sugar composition were investigated in Protox inhibitor resistanttransgenic rice (MX, PX, and AP37) and its nontransgenic counterpart (WT). Head rice, palatability, protein, and whiteness (except for MX and AP37) of milled transgenic rice were high or similar to those of the non-transgenic counterpart. Immature rice, unfilled grain, and cracked kernels (PX and AP37) of milled transgenic rice were lower than those of its non-transgenic counterpart. However, there were no significant differences in damaged grain between the transgenic rice lines and its counterpart. Potassium content in PX and copper contents in PX and AP37 were only low compared with their non-transgenic counterparts, but other mineral contents in transgenic rice lines were high or showed no significant differences compared with non-transgenic counterparts. Contents of most total amino acid composition in transgenic rice lines were high or similar to those in non-transgenic counterparts, but the content of isoleucine in AP37 was only low compared with its non-transgenic counterpart. On the other hand, free amino acid, leucine and tyrosine in PX and AP37, and total free amino acid in PX were low compared with their non-transgenic counterparts. However, the content of free amino acid in other kinds in transgenic rice lines were similar to those in their non-transgenic counterparts. Contents of sucrose in MX and PX were low compared with non-transgenic counterpars, but contents of fructose, glucose, and maltose in transgenic rice lines were high or similar compared with their non-transgenic counterparts. This results indicated that Protox genes had no negative affect on the nutritional composition of rice.
