제주지역(濟州地域) 여중학생(女中學生)의 영양실태(營養實態)와 성장발육(成長發育)에 관한 연구(硏究) (A Study on the Nutrients Intake and Physical Growth and Development of Junior High School Girls in Cheju Is. Area)

  • 제주도내 중학교 2학년 여학생 418명에게 일반적인 환경실태, 영양섭취 실태를 조사하고 성장발육과의 관계를 요약해 보면 다음과 같다. A. 조사대상자의 일반 실태 1. 형제의 수는 대부분이 $5{\sim}6$명이었다. 2. 유아기에는 90%가 모유로 양육되었으며 이유는 $7{\sim}12$개월이 20.9%이고 $13{\sim}24$개월이 45%였다. 3. 식사시간이 불규칙한 학생은 45.7%이며 불규칙한 이유는 식욕부족과 시간부족이 각각 42.9%, 31.9%였다. 4. 1년을 기준해서 병으로 결석하는 일수는 $2{\sim}5$일이 52%였다. 5. 기호 실태에 있어서는 주식으로는 잡곡밥이 45%, 식빵이 30.6%, 국수는 26.3%가 즐기고 40.7%나 흰밥을 제일 싫어하고 있다. 부식으로는 계란, 쇠고기, 닭고기, 김치류를 좋아하고 버터, 돼지고기, 나물류를 싫어한다. 간식은 아이스크림, 우유, 과일, 과즙, 빵 등을 좋아하고 호콩 등을 좋아하지 않는 것으로 나타났다. B. 영양섭취 실태 1. 열량섭취 평균은 1,738Ca1, 총 섭취열량에 대한 탄수화물의 비율은 73%, 단백질이 15%, 지방이 12% 로 나타났다. 2. 열량 및 모든 영양소가 권장량에 미달이나 vitamin A. $B_{1}$. Niacin 등은 권장량에 달하고 있다. 3. 단백질이 1일(日) 평균 섭취량은 68g 으로서 권장량 75g에 가깝다. 총 단백질에 대한 동물성 단백질이 비율은 36%로 나타났다. 4. 총식품 섭취량에 있어서 동물성 식품이 평균섭취 비율은 14%, 곡류가 63%를 차지하고 있다. C. 영양 섭취실태, 성장발육, 지능과의 상호관계 1. 열량 섭취량과 성장발육은 상호 의의(意義)있는 결과가 나타났다. 2. 단백질 섭취량과 성장발육도 상호관계가 의의(意義)있는 결과가 나타났다. 3. 열량과 단백질 섭취와 지능과의 상호관계는 의미가 없는 것으로 나타났다. 4. 이같은 상호 관계의 결과를 보면 영양과 성장발육은 직접적인 관계가 있다고 지적되고 반면 영양과 지능과의 관계는 간접적인 영향이 있을 뿐이라고 결론을 내릴 수 있다.

제7기 국민건강영양조사 (2016-2018) 자료를 활용한 한국인의 주요 식품 (Key Foods) 선정에 관한 연구 (Key Foods selection using data from the 7th Korea National Health and Nutrition Examination Survey (2016-2018))

  • 본 연구는 제7기 국민건강영양조사 (2016-2018) 자료를 활용하여 우리 국민의 영양과 건강에 중요한 영향을 미치는 영양성분 섭취량에 기여한 바가 높은 주요 식품 (Key Foods)으로 추출하고자 하였다. 주요 영양성분은 제7기 국민건강영양조사 (2016-2018) 자료에서 공개하는 영양소를 기준으로 건강과 밀접한 관련이 있는 17종의 영양소, 즉, 에너지, 탄수화물, 단백질, 지방, 식이섬유, 칼슘, 인, 철, 나트륨, 칼륨, 비타민 A, 티아민, 리보플라빈, 니아신, 비타민 C, 콜레스테롤, 당류를 선정하였다. 주요 식품 (Key Foods)의 선정은 하나 이상의 주요 영양성분에서 누적섭취기여도 85%에 포함되는 음식코드와 총 영양소기여도 점수를 활용하였다. 주요 식품 (Key Foods) 추출을 위한 자료원은 제7기 국민건강영양조사 중 식품섭취조사 자료를 활용하였으며, 분석대상자 수는 21,271명, 이들이 섭취한 식품 수는 1,728종이었다. 영양소 누적섭취기여도 85%를 기준으로 추출한 주요 식품은 728품목으로 이들 식품을 통해 조사 대상자의 영양소 섭취량의 94%가 설명되었다. 총 영양소섭취기여도 비율에 따라 상위 10위에 속하는 식품은 잡곡밥 (5.32%), 쌀밥 (4.23%), 우유 (3.3%), 배추김치 (2.82%), 삼겹살구이 (1.56%), 사과 (1.52%), 달걀후라이 (1.49%), 시리얼 (1.36%), 믹스커피 (1.21%), 고구마 (1.12%)이었고, 이들 상위 10위에 해당하는 식품이 전체 영양소 기여도의 23.93%를 차지하였다. 결론적으로 2016-2018 국민건강영양조사의 음식코드를 사용하여 하나 이상의 주요 영양소에서 영양소 섭취 기여도의 85% 이내에 포함되는 728종의 음식코드를 주요 식품으로 추출하였다. 본 연구결과 선정된 주요 식품 (Key Foods)은 국가영양성분 데이터베이스 구축과 개정을 위한 분석대상 식품 선정 시 우선적으로 분석이 필요한 식품으로 검토될 수 있고, 이들 식품의 분석을 통하여 국가 단위와 개인 단위의 식이섭취조사 자료 분석 시 필요한 최신의 맞춤형 식품영양정보를 제공할 수 있을 것으로 기대된다.

한국 영·유아의 식생활 현황 연구 : 2013~ 2015년도 국민건강영양조사를 이용하여 (Dietary status of young children in Korea based on the data of 2013~ 2015 Korea National Health and Nutrition Examination Survey)

  • 본 연구에서는 2013 ~ 2015년 국민건강영양조사 자료를 이용하여 만 1~5세의 영 유아의 전반적인 식생활의 현황을 파악하고자 유아와 어머니의 일반적 사항, 유아의 식생활과 질병 유무, 영양섭취 상태 및 다소비 식품에 대한 조사를 시행하였다. 영 유아에게 생우유를 먹이기 시작하는 시기는 평균 14 ~ 15개월이었고 이유식 시기는 평균 6.2개월인 것으로 조사되었다. 주 5~7회 아침 식사를 하는 대상자는 82.0%, 아침 식사를 거의 하지 않는 대상자는 2.3%였다. 주 5~6회 외식하는 대상자가 35.8%로 가장 많았다. 천식과 아토피, 알레르기성 비염의 유병률은 3~5세 유아의 경우가 1~2세 영 유아에 비해 유의하게 높았다. 영 유아의 영양소 섭취상태는 에너지, 탄수화물, 단백질, 지질 등 주요 영양소는 충분히 섭취하고 있는 것으로 나타났으며, 대부분의 주요 무기질 (인, 철 및 나트륨)과 비타민(비타민 A, 티아민, 리보플라빈, 니아신 및 비타민 C)도 충분히 섭취하는 것으로 조사되었다. 하지만 3~5세의 유아의 칼슘의 평균 필요량이 470 mg (권장량 600 mg)이 칼륨은 2,300 mg인데 실제 섭취량은 칼슘이 438.6 mg이고, 칼륨은 1,873.7 mg으로 부족하게 섭취하고 있는 것으로 나타났다. 한국인의 에너지 필요 추정량보다 적게 섭취한 대상자는 1~2세에서는 44.1%, 3 ~ 5세에서는 57.4%로 조사되었으며, 칼슘과 칼륨을 필요량보다 적게 섭취하는 대상자의 수도 각각 1~2세에서 51%와 79.5%, 3 ~ 5세에서 64%와 75.5%로 높게 나타났다. 식품군별 섭취량은 감자 및 전분류, 당류, 채소류, 달걀류, 기름 및 지방, 음료류, 조미료의 섭취량은 3~5세 유아가 1~2세 영 유아보다 많았으나, 콩류와 우유 및 유제품의 섭취량은 1~2세 영 유아가 3~5세 유아보다 많았다. 그리고 1~2세 영 유아의 다소비식품은 우유, 흰쌀, 사과, 호상 요구르트, 달걀, 액상 요구르트 순으로 나타났다. 3 ~ 5세 유아의 다소비 식품은 우유, 흰쌀, 사과, 달걀, 귤, 과일음료, 호상 요구르트 순으로 나타났다. 이 결과를 이용하여 향후 지속 가능한 식생활 교육 프로그램을 개발하기 위한 기초자료를 마련하고자 한다.

Effects of Replacing Dried Skim Milk With Wheat Gluten and Spray Dried Porcine Protein on Growth Performance and Digestibility of Nutrients in Nursery Pigs

  • Three experiments were conducted to determine the nutritional value of wheat gluten (WG) and spray-dried porcine plasma (SDPP) in diets for nursery pigs. In Exp. 1, 120 weanling pigs (5.7 kg avg initial BW) were used in a 35-d growth assay. Treatments for d 0 to 14 were: 1) dried skim milk (DSM)-dried whey-SBM based control; 2) WG to replace the protein from DSM; 3) SDPP; and 4) WG-SDPP (50:50 blend on a protein basis) to replace the protein from DSM. From d 14 to 35, all pigs were fed a common corn-SBM-whey-based diet. For d 0 to 14, there were no differences in ADG, ADFI, and gain/feed (p>0.11). However, for d 14 to 35, pigs fed diets with WG had greater gain/feed than those fed SDPP (p<0.05), and pigs fed diets with the WG-SDPP blend had greater ADG than pigs fed diets with WG or SDPP alone (p<0.07). In a second experiment, 60 weanling pigs (5.1 kg avg initial BW) were used in a 28-d growth assay. All pigs were fed the WG-SDPP diet fed in Exp. 1 for d 0 to 14, and changed to experimental diets for d 14 to 28. Treatments were: 1) the whey-SBM-based diet used for d 14 to 28 in Exp. 1; or 2) a whey-SBM based diet with 3% added SDPP. There were no differences in ADG, ADFI, gain/feed, or apparent digestibilities of DM and N among treatments for d 14 to 28 or overall (p>0.14). In a third experiment, 150 weanling pigs (5.6 kg avg initial BW) were used in a 32-d growth assay to determine the optimal blend of WG and SDPP for use after weaning. The SDPP was added as 8% of the control diet, and WG was substituted on a protein basis to yield the desired SDPP:WG blends. Treatments were (d 0 to 14): 1) SDPP; 2) 75% SDPP and 25% WG; 3) 50% SDPP and 50% WG; 4) 25% SDPP and 75% WG; and 5) WG. As in Exp. 1, all pigs were switched to a common corn-SBM-whey-based diet for d 14 to 32. For d 0 to 14, ADG and ADFI increased as replacement of the SDPP was increased up to 50% and decreased when more of the SDPP was removed from the diet (quadratic effects, p<0.004 and 0.02, respectively). Apparent digestibilities of DM and N (at d 13) were not affected by treatments (p>0.18). For d 14 to 32, treatments did not affect ADG (p>0.2), although there were quadratic responses in ADFI (p<0.04), with pigs fed the 50:50 blend suggested the greatest intake of feed. For the overall experimental period (d 0 to 32), ADG, ADFI, and gain/feed increased as WG was used to replace as much as 50% of the SDPP (quadratic effects p<0.04, 0.02, and 0.06, respectively). In conclusion, WG can successfully replace up to 50% of the SDPP in a complex nursery diet, when SDPP is included at the 8% level. There is no advantage to keeping SDPP in the diet after Phase I (d 0 to 14).

1일 섭취식품수와 영양균형에 관한 조사연구 一일부 도시.농촌 임신부를 대상으로- (A Study of Relation Between Number of Daily Food Intake and Nutritional Balance)

  • During the period of May 10 to June 6, 1987, we have conducted the survey about the number of the food daily taken and the intake of nutrition of the 83 pregnant women who have registered at Sudong Myun and Mikum-myun, Yangchu-gun which are demonstration area of the public health and medicine of the College of Medicine, Ewha Women's University, and of the 100 pregnant women who have been to the University Hospital attached to the above School. The result of the survery is as follows: 1) Among the above pregnant women, primigravida constituted 91 women and multigravida 92 women. As for the month of pregnancy, those who have been pregnant for ten months numbered 43 women (23.5%), which was the highest number. As for age, those who were 25 to 29 years old constituted 63.9% , which was the highest in percentage. 2) As for the level of education, those who graduated from high school constituted 49.2%, which was the highest in percentage. As for occuptation, those who were entirely in charge of household affairs as housewives were 89.6% , which comprised most of the jobs held by the above women. 3) As for the composition of a family in environmental food and nutrition, one generation was 68.3%, and two member family was 42.6% which was the highest. As for those taking rare of cooking and serving meals, housewives constituted 95.1%. 4) As for the economic situation of dietary life, those who were in the highest level (A level), were 47.0% in an urban area and 41.0% in a rural area, which were the highest in percentage. 5) The food which the above people selected after being pregnant was fruit not only in an urban area, but also in a rural area. And in terms of the percentage of fruit, an urban area and a rural area showed 44.0% and 54.2% respectively. As for milk, and urban area and a rural area showed 28.0% and 8.4% respecitively, which disclosed that the rate of a rural area was much lower than that of an urban area. 6) As for the number of food intake, 10-14 was 54.0% in an urban area, which was the highest. And 5-9 was 73.5% in a rural area, which was the highest. 7) As for the composition of food taken according to the number of food taken, meat showed the lowest rate in 5-9 group. (p<0.05) As the number of food taken increased, the rate of food taken (points) increased (2.4). Milk and milk products showed a low rate in 5-9 group and 15-19 group (p<0.05). Fruit intake showed a similar rate in all groups. As for vegetables, the rate of intake was high, as the number of food taken increased. Cereals showed a similar rate in all groups. Ans the points of intake was high. As for fat, the rate of intake was high, as the number of food taken increased. 8) In 5-9 group in the number of food intake, energy was 79.9% of RDA, protein was 64.9%, fat was 90.0%, carbohydrate was 81.6%, iron was 83.0%, calcium was 71.1%, vitamin A was 94.3%, vitamin $B_1$ was 77.8%, vitamin $B_2$ was 79.2%, and vitamin C was 88.2%, so that it showed the lowest sufficiency rate RDA. 15-19 group maintained the balance in energy and all nutrients nealy. In 20-24 group, fat was 142.4%, vitamin $B_2$ was 105.6% and vitamin C was 102.2%, so that it exceeded RDA.

문제 행동을 가진 초등학생의 영양 상태와 모발 미네랄 함유량 (Nutritional Status and Hair Mineral Content of Elementary School Children with Behavioral Problems)

  • This study was performed to assess the nutritional status and hair mineral content of children with behavioral problems and compare the values with a gender, age-matched control group. The subjects were recruited from S elementary school children in Seoul, Korea. Students scored higher than 60 points were diagnosed with behavioral problems according to the Korean-Child Behavior Checklist. Nutritional assessment of the two groups (behavior problem group: male n=15, female n=24; $9.6{\pm}1.6$ years, control group: male n=16, female n=18; $9.5{\pm}1.9$ years) was performed using a nutritional survey and by measuring hair mineral contents. In the results, food frequency questionnaire analysis showed that the intakes of anchovy (P<0.05), soybean curb (P<0.01), radish (P<0.05), bean sprouts (P<0.05), spinach (P<0.05), carrot (P<0.05), pumpkin (P<0.05), lettuce (P<0.05), cabbage (P<0.01), apple (P<0.05), and milk (P<0.01) were higher in the control group than the behavior problem group, whereas intakes of ramyeon (P<0.05), cookies (P<0.05), and coke (P<0.01) were higher in the behavior problem group than the control group. Intakes of most nutrients such as plant-derived protein (P<0.05), fiber (P<0.05), plant-derived calcium (P<0.05), phosphorus (P<0.05), plant-derived iron (P<0.05), vitamin B2 (P<0.05), vitamin B6 (P<0.05), vitamin C (P<0.01), vitamin E (P<0.05), and folate (P<0.05) were significantly higher in the control group than the behavior problem group. Hair analysis showed that the levels of arsenic (P<0.05), mercury (P<0.001), uranium (P<0.05), iron (P<0.001), boron (P<0.01), and germanium (P<0.001) were lower, but the levels of phosphate (P<0.05), chromium (P<0.001), sodium (P<0.05), and sulfur (P<0.001) were higher in the behavior problem group than the control group. Conclusively, behavioral problems constitute a complicated condition in which nutritional factors may play major roles. However, it is still under investigation as to whether or not modification of dietary habits or nutritional supplementation can improve children's behavior, since symptoms require a broad understanding of the environmental and genetic interactions.

소득수준에 따른 우리나라 성인의 식품 및 영양소 섭취수준 비교 - 2001 국민건강$\cdot$영양조사 결과를 중심으로 (Food and Nutrient Consumption Patterns of the Korean Adult Population by Income Level - 2001 National Health and Nutrition Survey)

  • To explore the relationship between economic status and food and nutrient intake patterns, the 2001 National Health and Nutrition Survey result was analyzed. Dietary intake data of 6,978 Korean adults of 20 years and older who participated in the 2001 National Health and Nutrition Survey were used along with their demographic data. Economic status of the subjects was classified into the following 4 groups based on the self-reported average monthly income of household with reference to the minimum monthly living expenses (MLE) in 2001 : low < $100\%$ MLE $\leq$ middle < $200\%$ MLE $\leq$ high < $300\%$ MLE $\leq$ higher, Individuals in the higher income class had significantly higher mean intake for most of the nutrients including energy, protein, carbohydrate, fat, calcium, thiamin, riboflavin, niacin and vitamin C, and a higher percentage of energy intake from fat. In addition, they consumed more animal foods including meats, eggs, fish/shellfish, milk/dairy products and fats. On the other hand, the mean intakes of individuals in the lower economic class for calcium, vitamin A, and riboflavin were lower than $75\%$ of RDAs. And, there was a predominant difference in contribution of fat to total energy intake among the groups of different economic status. These results showed that household income is an important factor influencing the food and nutrient intake patterns of the Korean adult population. Although individuals at different age classes may respond differently to a change in economic status, developing and implementing nutrition policy and intervention programs for those nutritionally vulnerable groups should consider the economic status as an important factor to customize and differentiate the content of the Program. A Study of the Food and Nutrient Intakes of College Students According to their Frequencies of Eating Out

  • This study was carried out to investigate the relationship between the food and nutrient intake status and eating-out practices of college students. A dietary survey of 361 subjects living in urban areas was conducted by using a 3-day diet record method. The average ages of the male and female subjects were 22.0 and 20.6 years old, respectively. Monthly personal expenses of the male and female students were 316,517 won and 296,888 won, respectively. 43.1% of the male and 50.8% of the female students used between one-quarter and one-half of their monthly personal expenses for eating out. Sixty-five percent of the total subjects ate out more than five times a week The average daily total food intake was 1630.7g in the males and 1453.9g in the females. The average percentage of total food intake from eating out (by weight) was 60.6% in the males and 56.2% in the females; foods eaten out were mainly potatoes, meats, processed foods, and beverages. It was found that 40-65% of daily total nutrient intake came from food eaten out. When they ate out, the male students ate slightly higher amounts of protein, fat and vitamin B1, while the female students ate relatively higher amounts of animal protein, fat, vitamin A and cholesterol. The more the subjects ate out, the more the quantity of total food intake increased. This increase resulted from high intakes of beverages and processed foods in the males, while the increase was from total plant foods, mushrooms, beverages, and milk and dairy products, in the females. The dietary variety score (DVS) was significantly increased in the female subjects when they ate out more than once a day; otherwise, the DVS was not significantly different between any of the male and female groups. The intakes of energy, and of many nutrients such as protein, fat, carbohydrates, calcium, phosphorus, iron, potassium and cholesterol, were increased when the female subjects ate out more than twice a day. The mean adequacy ratio (MAR) was at its highest level of 0.65 in the males when they ate out less than once a day, and at its highest level of 0.67 in the females when they ate out more than twice a day.

Development of a Korean Diet Score (KDS) and its application assessing adherence to Korean healthy diet based on the Korean Food Guide Wheels

  • The most critical point in the assessment of adherence to dietary guidelines is the development of a practical definition for adherence, such as a dietary pattern score. The purpose of this study was to develop the Korean Diet Score (KDS) based on the Korean Food Balance Wheel and to examine the association of KDS with various lifestyle characteristics and biochemical factors. The dietary data of 5,320 subjects from the 4th Korean National Health and Nutritional Examination Survey were used for the final analysis. The food guide was composed of six food group categories; 'grain dishes', 'fish and meat dishes', 'vegetable dishes', 'fruits', 'milk' and 'oils and sugars'. Based on the recommended serving numbers for each group, the scores measuring adherence to this food guide were calculated from the dietary information from the 24-hour dietary recall questionnaire, and then its correlation with various characteristics was assessed. KDS was significantly associated with several clinical, lifestyle and socioeconomic factors as well as diagnosed disease history. The higher quintile group of KDS showed a significantly lower level in fasting blood glucose, systolic blood pressure, triglycerides, current smoking and drinking as well as higher leisure time activity, house income and education. Furthermore, the KDS quintile group of women was inversely associated with hypertension, osteoporosis and diabetes. A higher KDS quintile was characterized with a higher intake of several critical nutrients, such as Ca, Fe and vitamins as well as a desirable nutrition balance such as the ratio of macronutrients. Our results demonstrate that KDS is a beneficial tool in assessing the adherence to a healthy diet based on the Korean dietary guidelines. We suggest that KDS could be a useful indicator for evaluating the dietary balance of the Korean population.

식품영양 전공 및 비전공 여대생의 식태도, 식행동 및 영양평가에 관한 비교 연구 (A Comparative Study on the Dietary Attitudes, Dietary Behaviors and Diet Qualities of Food and Nutrition Major and Non-major Female University Students)

  • The purpose of this study was to compare dietary attitudes, dietary behaviors and diet qualities of Food and Nutrition major and non-major female student at a university located in Inchon. The subjects included 74 female Food and Nutrition and majors and 45 non-Food and Nutrition major female university students. This cross-sectional survey was conducted using a self-administered questionnaire, and the data were analyzed by a SPSS 10.0 program. The nutrient intake data collected from Three-day recalls were analysed by the Computer Aided Nutritional Analysis Program and then the diet quality was estimated using the Mean Adequacy Ratio (MAR), the Nutrient Adequacy patio (NAR) and the Index of Nutritional Quality (INQ). There was no significant difference in dietary behaviors between Food and Nutrition majors and non-majors. However, most of the female university students had poor eating habits, such as overeating, unbalanced meals, and skipping of meals. In particular, more than 50% of the female university students skipped breakfast. As for weighing themselves once a week, changing dietary lifestyles, calculating food calories and having interest in information on nutrition on health, the ratio of Food and Nutrition majors was significantly higher as compared to that of the non-majors. There was a significant difference in food consumption frequency except for mick and milk products, and iron-rich foods between the Food and Nutrition majors and non-majors. However, there was a significant difference in the frequency scores of iron-rich floods between the Food and Nutrition majors and non-majors. The MAR of Food and Nutrition majors and non-majors were 0.80$\pm$0.13, 0.79$\pm$0.13, respectively. However, in the Food and Nutrition majors and non-majors, the NARs of calcium were 0.61$\pm$0.21 and 0.59 $\pm$ 0.20, and that of iron were 0.61$\pm$0.21 and 0.59$\pm$0.16, respectively, which was extremely low when compared to that of the other nutrients. This result was similar to that of the INQ. Therefore, nutritional education is necessary if female university students are to practice optimal nutrition, including well-balanced diets and eating foods of high nutritional quality.
