파라벤류의 방부력에 대한 화장품용 안료의 영향 (Effects of Cosmetic Pigments on the Bactericidal Activities of Parabens)

  • In this study, we evaluate the anti-microbiological activity of paraben in eye shadows that are composed of pigments and oil binders using various analytical methods and microbiological tests. Paraben does not show the microbiological activity properly when it was used with Nylon SP$^{(R)}$ 10, Talc RF SSA$^{(R)}$, OMC Talc AS$^{(R)}$ and $BaSO_4$. In the test of fungi, Nylon SP$^{(R)}$ 10 causes the decrease of microbiological activity regardless of the type of oil binders. The pigment of Mango violet also causes the decrease of microbiological activity when ester oil binder was used. Regardless of the type of oil binder, samples containing nylon SP 10, 0.15% of methyl paraben and 0.05% of propyl paraben had not been able to maintain microbiological activity only if the concentration of parabens were increased. Trace amounts of metal ions present in pigments reduced the activity of preservatives by inactivation of hydroxyl group of paraben. It is thought that swollen nylon SP 10 in ester oil increase the absorption or interaction of parabens and swollen nylon powder causes the inactivation of paraben.

시뮬레이션을 통한 김밥 생산과정의 계절별 미생물적 품질평가 (A Simulation Study on Microbiological Evaluation of Kimbap Manufacturing Process in Summer and Winter)

  • The purpose of this study was to evaluate microbiological quality for each stage of the kimbap manufacturing process in summer and winter. Under the various controlled conditions through the simulation, the time-temperature data were collected and the microbiological quality(including total plate count, coliforms, and fecal coliform count) were evaluated. To determine the expected shelf life of Kimbap, a microbiolgical analysis according to the length of the storage time was performed. The microbiological analysis on both sanitary and unsanitary utensils was compared. The microbiological quality of the raw materials of Kimbap in summer was not at an acceptable level, but that of the heat-treated raw materials of Kimbap met the requirement according to the standards set by the Natick Research Center. The number of the microorganisms of the unsanitary utensils and the Kimbap made from unsanitary utensils was more than the acceptable criteria. Sanitary management is necessary to prohibit cross-contamination and to manufacture Kimbap safely. Results from storage times and storage temperature conditions(chilled and room-temperature storage) showed that the expected shelf-life of the Kimbap with the room-temperature storage was as less than 3 hours in summer, while it was as 7-10 hours in winter.

급식소의 조리기기 및 작업환경에 대한 미생물학적 위해분석과 HACCP 제도 적용 후 위생개선효과 (Microbiological Hazard Analysis of Cooking Utensils and Working Areas of Foodservice Establishments and Hygienic Improvement by Implementing HACCP system)

  • The purpose of this study was to evaluate the effect of implementing the HACCP system on foodservice establishments. At first, the hygienic conditions were measured by microbiological hazard analyses of the cooking utensils and working areas. In order to solve the detected problems, the HACCP system was implemented, after what was considered a sufficient settlement period following the initial assessment, then microbiological verification was performed again. In relation to the cooking utensils and equipment(kitchen knives, cutting boards, knives for shredding vegetables, refrigerators, baskets, barts, working tables, preparation tables, tungs, dish-clothes and drains) the microbiological inspection on the Total Plate Count, Coliforms, Staphylococcus aureus and Listeria monocytogenes, were conducted with regard to the working areas(working tables, preparation tables, seasoning's shelves, serving tables, drinking water tables, refrigerators, storage rooms and dining tables), the Total Plate Count and Fungi were also examined. According to the microbiological hazard analyses there were many problems, especially with cutting boards, baskets, barts, dish-clothes and sinkballs. However, by introducing the HACCP system, the microbiological hazard levels were able to be controlled and lowered, and the total aerial bacteria in the working areas of the foodservice establishments were detected at levels below 6 CFU/plate.

식품에서 분리된 리스테리아 모노사이토젠스의 분포 및 항생제 내성 (Prevalence and Antibiotic Resistance Patterns in Listeria Monocytogenes Isolated from Food)

  • 본 연구에서는 식품에서의 L. monocytogenes에 대한 기초자료를 제공하고자 2010년부터 2011년까지 서울지역에서 수거된 식품 총 1042건에서 L. monocytogenes를 분리하여 항생제 감수성 검사를 하였다. 김밥 4건(0.8%), 육회 4건(2.6%), 연어제품 2건(11.1%), 돈육식품과 조리된 생선에서 각 1건씩(각5.9%, 6.3%) 총 12균주가 분리 동정되었다. 분리 균주를 20종의 항생제에 검사한 결과 대다수 항생제(16종)에 감수성을 나타내었지만 cefotetan (11균주), cefotaxime (7균주), cefepime (6균주)에서 내성을 나타냈으며 3균주에서 임상치료에 자주 사용되는 tetracycline에 대해서 내성을 나타내었다.

단체급식 비가열조리 생채소의 소독 효과 (Effect of Sanitization on Raw Vegetables not Heated in Foodservice Operations)

  • The purpose of this study was to investigate effectiveness of sanitization on raw vegetables not heated in foodservice operations. Microbiological examinations of food materials and cooked food with leek Gukgalli were performed in 2 HACCP-implemented foodservices (A and B) appointed by Food and Drug Administrations, and in 2 other foodservices (C and D) not implemented HACCP. 'Washing and sanitizing raw vegetables' were monitored as CCP at A and B foodservices but only washing has been done in pre-preparation at C and D foodservices. Aerobic plate counts of received leek in A and B foodservices were above $10^7$ CFU/g indicating very poor microbiological quality. After sanitization treatment (soaking for 5 minutes in chlorine water: chlorine density 50〜100 ppm), its aerobic plate counts decreased to 7.06×$10^5$ CFU/g (A foodservice) and 4.31×$10^5$ CFU/g (B foodservice), coliform and faecal coliform were not detected. With this result, the effect of microbial reduction by sanitizer was conformed. But, the conditions of leek were still not acceptable by microbiological standards for ready-to-eat foods. After three more times of rinse has been done, the microbial conditions of leek became acceptable. In C and D foodservices, aerobic plate counts of leek showed decreasing trends by 2〜4 times of washings but microbiological quality of leek after pre-preparation were unacceptable by microbiological standards for ready-to-eat foods (C foodservice: 3.58×$10^5$ CFU/g, D foodservice: 1.29×$10^9$ CFU/g). For the prevention of foodborne illness, sanitizing raw vegetables should be performed during pre-preparation of non-heated foods.

과일류의 염소 소독 농도 및 세척 횟수에 따른 미생물 제거 효과 (Anti-microbial Effects of Washing and Chlorine Treatments on Fresh Fruits)

  • This study examined the anti-microbiological effects of chlorine treatment on the surface of fresh fruits, in order to improve microbiological safety in school foodservice operations. Non-peeled fruit(strawberries) and peeled fruit(bananas) were treated with different concentrations of chlorinated water and rinsing numbers, followed by microbiological testing. The fruits were immersed at different concentrations of chlorinated water(0 ppm, 50 ppm, and 100 ppm) and durations(3 min and 5 min), and were then rinsed with tap water(one time, two times, or three times). The total viable cell counts of both the strawberries and bananas ranged from $10^3$ CFU/g to $10^4$ CFU/g, and coliform levels ranged from $10^2$ CFU/g to $10^3$ CFU/g. As the chlorine concentration, immersion time, and rinsing number increased, anti-microbiological activity increased. The largest microbial reduction was shown with immersion for 5 min in 100 ppm chlorinated water and three rinsings. In the strawberries, this treatment reduced the initial population of total viable cells and coliforms by 3.29 log CFU/g and to an undetectable level, respectively, no total viable cells or coliforms were detected on the banana surface following this treatment. However, after a sterilization treatment with immersion for 5 min in 50 ppm chlorinated water and three rinsings, the total viable cell counts and coliform counts of the strawberries and bananas decreased to acceptable levels, based on the microbiological standards for ready-to-eat foods. Overall, it was shown that the sterilization treatment of 50 ppm chlorinated water, soaking for 5 min, and three rinsings provided an effective reduction in surface microbes, and enhanced the microbiological safety of the fruit.
