A Study on Physico-chemical Property and Composition of Velvet Antler and Byproducts in Elk. (Elk종의 녹용과 부산물의 이화학적 특성에 관한 연구)

  • This study has been performed for physico-chemical property and composition of sinew, testes, tail, blood and velvet antler in Elk. Amino acid contents in the sinew taurine, alanine, histidine, and lysine were high contained, histidine, glutamic acid, taurine, and lysine were high contained in testes, glutamic acid, lysine, alanine, glycine, and phenylalanine were high contained in tail, histidine, glycine, and lysine were high contained in blood, glutamic acid, lysine, taurine, alanine, and glycine were high contained in velvet antler. And, based on the amount of mineral, $K^{+}$, $Ca^{2+}$, and $P^{+}$ were 444.8, 166.6 and 242.9mg per 100g in sinew, respectively. $K^{+}$, $Ca^{2+}$ and $P^{+}$ were 294.4, 330.5, and 514.3 mg per 100g in testes, respectively, $K^{+}$, $Mg^{2+}$, and $P^{+}$ were 1420.6, 118.4, and 1105.2mg per 100 mg in tail, respectively. Fe3+,-K+, and P+ were 344.1, 1023.6 and 157.2 mg per 100 mg in blood, respectively and $K^{+}$, $Ca^{2+}$ and $P^{+}$ were 888.4, l1533.1 and 14722.0 in velvet antler, respectively. Finaly, difference were found in comparison of composition of free mwtal ion (N $a^{+}$, $K^{+}$, $Mg^{2+}$ and $Ca^2$) bwteen blood, tail, tests, sinew and velvet antler, and composition of free metal in blood higher than those othersd higher than those others.

Shelf-life and Quality Characteristics of Tofu Coagulated by Calcium Lactate (젖산칼슘을 응고제로 한 두부의 품질특성과 저장성)

  • To investigate the utilization of calcium lactates (CaL) as coagulants for tofu manufacture, the quality characteristics and shelf-life of tofu made by CaL-P (black snail powder) and CaL-A (black snail ash) were investigated and compared to calcium chloride (CC), magnesium chloride (MC), calcium sulfate (CS ) and standard calcium lactate (CaL-S). And also, total microbe and turbidity of the tofu were determined during storage at 1$0^{\circ}C$. Coagulation ability of CaL-A was the highest, and the ability of CaL-P was higher than that of CaL-S. Yield of CaL-A tofu was similar to those of CS and CC tofu, while the yield of CaL-P tofu was 50% compared to that of CC. L* value of CaL-P tofu was lower, but a* and b* values were higher than those of other tofus. The hardness of tofu showed in the order of CaL-S>CS>CC>CaL-P>MC>CaL-A, while the cohesiveness showed in the order of MC>CaL-S>CC>CS>CaL-P>CaL-A. Calcium contents were 57 mg% in MC tofu, 174 mg% in CS tofu, 116 mg% in CaL-S tofu, 95 mg% in CaL-A tofu and 172 mg% in CaL-P tofu. From the results of microscopic observations, the lower hardness showed the more soft and the smaller particle. The particle of CaL-A tofu was small and uniformity but the size of CaL-P and CC tofu showed coarse. Sensory quality of CaL-P and -A tofu were better than the other tofu evaluated by texture, springiness, flavor and overall taste. The shelf-life estimated by total microbe was 4∼6 days in CC, MC, CS, CaL-S and CaL-A tofu, but 8 days in CaL-P tofu at 1$0^{\circ}C$. From the above results, the CaL-P and -A may believe to use as coagulant for tofu manufacture due to its softened taste and enhanced shelf-life, and higher calcium content which has higher absorbability in human body.

Vitamin C requirements in main marine finfish species in Korea

  • This presentation reviewed the dietary vitamin C requirements in main marine finfish culture in Korea. In experiment I, an II-week feeding trial was conducted to study the effects of the different levels of dietary vitamin C on growth, tissue ascorbic acid concentrations and histopathological changes in parrot fish. Casein and gelatin based diets were formulated to contain 0, 60, 120, 240, 480 and 2000mg L-ascorbic acid (AA)kg diets on Ah equivalent basis in the form of L-ascorbyl-2-monophosphate (AMP), 60 and 240 mg AA/kg diet as L-ascorbic acid. Broken line analysis of weight gain indicated that the dietary vitamin C requirement of parrot fish is l18$\pm$12 mg AA/kg diet in the form of L-ascorbyl-2-monophosphate for maximum growth. In experiment II, a 12-week experiment was conducted to compare L-ascorbyl-2-monophosphate-Ca (AMP-Ca) with L-ascorbyl-2-monophosphate-Na/Ca (AMP-Na/Ca) for supplying the dietary vitamin C for juvenile Korean rockfish Sebastes schlegeli. Fish were fed one of 11 semi-purified diets containing equivalent of 0, 50, 100, 200, 400, and 800 mg ascorbic acid (AA)kg diet in the form of AMP-Ca or AMP-Na/Ca for 12 weeks. Broken line analysis of weight gain indicated that the dietary vitamin C requirement of Korean rockfish is 100 mg AA/kg diet in the form of AMP-Na/Ca, and 117 nag AA/kg diet in the form of AMP-Ca. In experiment III, a 12-week experiment was conducted to study the effects of different dietary levels of vitamin C, L-ascorbyl-2-polyphosphate (ASPP), on growth and tissue vitamin C concentrations in juvenile olive flounder. Fish were fed one of six semi-purified diets containing an equivalent of 0, 25, 50, 75, 150, or 1500 mg ascorbic acid (AA) kg 1 diet in the form of ASPP for 12 weeks. Based on broken line analyses for WG and PER, the optimum dietary levels of vitamin C were 91 and 93 mg AA/kg diet, respectively.

  • To find out the mineral cycles of calcium, magnesium and sodium in dynamic grassland cosystems in a steady state condition, this investigation was conducted along the northwest side on Mt. Kwanak. The experimental results may he suromarized on the communities of a Zoysia japonica and a Miscanthus sinesis as follows. As compared with some properties of the surface soils among two semi-natural grasslands, cal- cium (Ca) was greater quantity in a Zoysia japonica, whereas, in a Miscanthus sicensis, sodium (Na)and magnesium (Mg) were greater in Mt. Kwanak. For the case of steady production and release, the ratio of annual mineral production to the amount accumulated on the top of mineral soil in a steady state provides the estimates of release constant k. The release constants of Ca, Mg and Na of the litter were 0.42, 0.25 and 0.29 in the Zoysia japonica grassland, and were 0.41, 0.54 arid 0.62 in the Miscanthus sinensis grassland, respect- ively. The half times of Ca, Mg and Na required for the release or accumulation of the litter on the grassland were 1.65, 2.77 and 2.39 in the Zoysia japonica, and were 1.69, 1.28 and 1.12 in the Miscauthus sinensis, respectively. The increasing order of the turnover parameters of the elements was Ca, Na and Mg in the Zoysia japonica grassland, and was Na, Mg and Ca in the Miscanthus Si nens is grassland. The amounts of annual cycles for Ca, Mg, Na in the grassland ecosystem under the steady-state conditions were 1.29, 0.20 and 0.12 g /m$^2$ in the Zoysia japonica grassland and 3.91, 1.04 and 0.61 g /m$^2$ in the Miscanthus sinensis grassland.

Assessment of acute inhalation toxicity of citric acid and sodium hypochlorite in rats

  • Background: Citric acid (CA) and sodium hypochlorite (NaOCl) have been used to disinfect animals to protect them against avian influenza and foot-and-mouth disease. Objectives: We performed a good laboratory practice (GLP)-compliant animal toxicity study to assess the acute toxic effects of CA and NaOCl aerosol exposure in Sprague-Dawley rats. Methods: Groups of five rats per sex were exposed for 4 h to four concentrations of the two chemicals, i.e., 0.00, 0.22, 0.67, and 2.00 mg/L, using a nose-only exposure. After a single exposure to the chemicals, clinical signs, body weight, and mortality was observed during the observation period. On day 15, an autopsy, and then gross findings, and histopathological analysis were performed. Results: After exposure to CA and NaOCl, body weight loss was observed but recovered. Two males died in the CA 2.00 mg/L group and, two males and one female died in the 2.00 mg/L NaOCl group. In the gross findings and histopathological analysis, discoloration of the lungs was observed in the CA exposed group and inflammatory lesions with discoloration of the lungs were observed in the NaOCl exposed group. These results suggest that the lethal concentration 50 (LC50) of CA is 1.73390 mg/L for males and > 1.70 mg/L for females. For NaOCl, the LC50 was 2.22222 mg/L for males and 2.39456 mg/L for females. Conclusions: The Globally Harmonized System is category 4 for both CA and NaOCl. In this study, the LC50 results were obtained through a GLP-based acute inhalation toxicity assessment. These results provide useful data to reset safety standards for CA and NaOCl use.

Prevention of Quality Deterioration in Concentrated Strawberry Puree by Employing pH Regulators during Heat Treatment (pH 조절제를 이용한 농축 딸기 퓌레 열처리 시 품질저하 억제)

  • This study was performed to minimize quality degradation of concentrated strawberry puree after $90^{\circ}C$ for 5 min by heat treatment with citric acid (CA) and acidic sodium metaphosphate (ASM) as pH modifiers. The highest color value was 1% CA+1% ASM (13.027), followed by 1% CA (9.539) and control (6.905). Anthocyanin contents were also 1% CA+1% ASM (3.049 mg/100 g), 1% CA (1.140 mg/100 g), and control (0.757 mg/100 g) in sequence. The DPPH radical scavenging activities of control, 1% CA, and 1% CA+1% ASM were 58.148, 72.638, and 83.736%, respectively. The color values, anthocyanin contents, and DPPH radical scavenging activities were significantly different at P<0.05 between control and 1% CA+1% ASM treatment. For the results of overall preference for hedonic test, there was no significant difference at P>0.05 among the three samples. During heat treatment, quality degradation of concentrated strawberry puree was reduced by 1% CA+1% ASM treatment, which is expected for new acidulants.

Cation Deficiencies in Needles and Fine Roots of Pitch Pine in Seoul Metropolitan Area (首都圈地域에서 리기다소나무 잎과 잔뿌리 속의 陽이온 부족)

  • The contents of major elements were determined in current-year and previous-year needles and fine roots of pitch pine (Pinus yzgida) at 33 sites in Seoul and its vicinity. Contrary to Ca and Al in needles, N, P, Mg and K contents in current-year needles were higher than those in previous-year needles. The N, P, K and Al contents in current-year needles in Seoul were not significantly different from those in rural areas. In contrast, Ca and Mg contents in needles in Seoul were significantly lower than those in suburbs and rural areas. The N /Ca and N /Mg ratios in needles in urban Seoul were higher than those in rural areas. Mg contents in fine roots in soil of 0-5 cm depth increased along with distance from the center of Seoul, while Al contents in fine root in soil of 5-10 cm depth decreased along with distance from the center of Seoul. Al contents in fine roots in soil layer in Seoul and suburbs were higher than those in rural areas. Al contents in fine roots in litter layer were 1 /3 - 1 /2 times lower than those in soil layer for all areas. A1 content in fine roots in deep soil was higher than that in top soil. Therefore growth decline of pitch pine in Seoul and suburbs was thought to be caused by Ca and Mg deficiency in plant tissues and Al toxicity to fine roots. Abnormal vertical distribution of fine roots of pitch pine in Seoul and its vicinity were interpreted as the result of growth reduction of fine roots by Al toxicity in deep layer of acid soil.

A Study of Characteristics of Pectinesterase, Polygalacturonase and Peroxidase in Kimchi Materials (김치재료에 존재하는 Pectinesterase, Polygalacturonase 및 Peroxidase 특성에 관한 연구)

  • The object of this study was to investigate the characteristics of pectinesterase(PE), polygalacturonase(PG) and Peroxidase(POD) in Kimchi materials. The results were as follows : 1. The specific activities of PEs in Korean cabbage, Korean raddish, garlic and ginger were 200 unit/mg protein, 23.1 unit/mg protein, 0.8 unit/mg protein and 32 unit/mg protein, respectively. The optimum pHs of PEs in all materials were between 7 to 8. The concentrations of NaCl, $CaCl_2$ which showed the highest activities of PEs were $0.2{\sim}0.3M$ NaCl, 50 mM $CaCl_2$ in Korean cabbage and raddish, 0.05 M NaCl, 20 mM $CaCl_2$ in garlic and 0.2 M NaCl, 20 mM $CaCl_2$ in ginger. 2. The specific activities and the optimum pHs of PGs were 1.5 unit/mg protein and pH 4.5 in Korean cabbage, 1.6 unit/mg protein and $pH\;4.5{\sim}5.5M$ in Korean raddish, 0.06 unit/mg protein and $pH\;3.0{\sim}3.5M$ in garlic, and 0.06 unit/mg protein and $CaCl_2$ in ginger. The concentrations of NaCl, $CaCl_2$ which showed the highest activities of PGs were $0.1{\sim}0.2M$ NaCl and $0.15{\sim}0.2mM$ mM $CaCl_2$ in all materials. 3. The specific activities and the optimum pHs of PODs in Korean cabbage, Korean raddish, garlic and ginger were 71.3 unit/mg protein ; pH 6.0. 769 unit/mg protein ; pH 5.5, 1.09 unit/mg protein ; pH 4.5 and 12.7 unit/mg protein ; $pH\;5.0{\sim}5.5M$, respectively. POD activities were not decreased in Korean cabbage, but decreased in Korean raddish by the increase of NaCl, $CaCl_2$ concentrations. In garlic and ginger, POD activities were a little slightly affected by the increase of NaCl, $CaCl_2$ concentrations.

  • The electrochemical behavior of magnesium ions was examined by cyclic voltammetry in a molten $MgCl_2-CaCl_2$-NaCl salt. The reduction potential of magnesium ions was measured and those values were estimated with the variation of the concentration of $MgCl_2$ and the temperature of molten salts. The diffusion coefficient of the $Mg^{2+}$ ions has been determined at 660, 680, 700, 720 and $740^{\circ}C$. The values were $8.79{\times}10^{-6}$, $9.56{\times}10^{-6}$, $1.17{\times}10^{-5}$, $1.4{\times}10^{-5}$ and $1.77{\times}10^{-5}\;cm^2\;s^{-1}$. The activation energy for the diffusion processes of $Mg^{2+}$ ions was found to be $70.28\;kJ\;mol^{-1}$ by using the Arrhenius equation.

A Study on the Mineral Water Quality in Asia Partial Area (아시아 일부지역의 광천수 수질특성에 관한 연구)

  • From March 1, 2005 to August 31, 2006 mineral water wells were selected for 13 areas in Southeast Asia (Indonesia, Philippines, Thailand, Singapore) and 20 areas in Northeast Asia (Korea, North Korea, China, Japan) and the study on their mineral water quality was analyzed. - Mineral water quality was the best in Korea. Mineral spring waters in some area of China and North Korea and in the whole area of the Southeast Asia were of poor quality. - The hardness of mineral water was the low in Korea $(10{\sim}47mg/L\;as\;CaCO_3)$, Japan $(4{\sim}66mg/L\;as\; CaCO_3)$, Geumgang-san North Korea Area $(4mg/L\;as\;CaCO_3)$. Mineral spring water in Thailand, Indonesia $(1{\sim}97.5mg/L\;as\;CaCO_3)$ and in the other area $(120{\sim}1205mg/L\;as\;CaCO_3)$ were high degree of hardness. - pH value in the mineral water of Southeast Asia $(pH\;6.7{\sim}8.2)$ and Northeast Asia $(pH\;5.9{\sim}7.9)$ was up to WHO standard $(pH\;6.5{\sim}8.5)$. Fluorine of negative ion was found in 10 mineral waters: Indonesian mineral water 'ATARTN'(0.02mg/L), Thailand mineral water 'SIAM' (0.6mg/L), 'MASAFI' (0.02mg/L). Korean mineral water 'SAEMMULNARA' (1.1mg/L), 'SANSU'(0.6mg/L), 'ICIS'(0.3mg/L), 'DONGWON SAEM-MUL'(0.03mg/L), 'PYEONGCHANG' (0.6mg/L), North Korean mineral water 'KUMGANGSAN'(0.1mg/L), Japanese mineral water 'CRYSTAL GEYSER'(0.55mg/L). However Fluorine in the other 23 mineral waters were not detectable.
