특1급 호텔 조리사의 푸드 스타일링 수행현황에 따른 메뉴개발 인식 및 활용속성 (Recognition and Utility Properties of Menu Development Derived from the Performance of Food Styling for Cooks in a Super Deluxe Hotel)

  • This study surveyed the performance of food styling and recognition and utility properties of menu development for cooks in a super deluxe hotel. The questionnaires developed for this study were distributed to 400 males and females aged 20 and over. A total of 375 questionnaires were used for analysis (93.8%), and statistical analysis was completed using SPSS (version 14.0) for descriptive analysis and ${\chi}^2$-test. The most important item in food styling was 'harmony of food shape' (40.2%), and second ranked was 'harmony of food color' (23.4%). The most difficult item in food styling was 'lack of professional knowledge' (38.3%) followed by 'lack of creativity' (27.7%). In recognition of menu development, the importance of menu development and promotion was 3.82, and personal satisfaction after menu development was 3.29. Important items in menu development were 'taste' (41.8%) and 'use of new ingredient' (28.5%). When using newly developed menu, the ratio of selling new menu was '30~50%' at 42.7%, and the average selling period of new menu was '3~6 months' at 40.5%. For the effect of new menu on sales, 94.1% were aware of this effect, and to actively promote menu development, 'providing incentive' (35.7%), 'training in/out of country' (20.8%), 'self motivation' (17.3%), 'financial support' (14.7%), and 'motive' (11.5%) were all necessary requirements. In order to improve cooking performance, continued education on food styling and menu development along with the company's full support are required. Further, thorough training of employees is needed along with a high quality incentive policy needs to be done. In addition, to make the new menu profitable, an active marketing strategy must be employed, which will require further study.

  • 조사대상자의 일반적인 특성과 외식 행동 특성은 빈도(N)와 백분율(%)로 나타내었으며, 조사대 상자의 일반적 특성에 따른 인식에 관한 차이를 알아보기 위해 $x^2$-검정을 실시하여 유의성을 검정하였고, 메뉴 선택행동은 요인분석(Factor analysis)을 실시하였으며, 메뉴 선택 요인과 일반적인 특성과의 차이(t-test & ANOVA)를 검정하였고, 건강지향도과 만족도와의 다중회귀분석(Multiple regression analysis)을 실시하였다. 인구통계적 변인들과 메뉴 선택 행동의 차이는 대체로 연령, 학력, 소득 수준이 높을수록 평균이 높게 나타나 웰빙 메뉴 선택 행동에 높은 관여를 보이는 것으로 조사되었으며, 메뉴 선택 행동이 건강지향성과 만족도에 미치는 영향에 관한 회귀분석결과 식생활 습관성은 건강지향성과 만족도에 영향을 미치지 못하는 것으로 조사되었다. 따라서 외식기업들은 이러한 집단을 마케팅 목표로 설정하여 그에 맞는 메뉴 개발 및 업체의 컨셉을 정하여 판매 촉진을 개선시키는 것이 바람직하다고 할 수 있다.

  • This study was conducted to evaluate the menu of a Japanese restaurant in a first class tourism hotel. The calculations used for the menu analysis were conducted using MS Excel 2003. Several previous studies have been conducted to analyze menus. For example, Pavesic used of the weighted contribution margins (WCM) and potential food cost (PFC%) to evaluate menus, while Kasavana & Smith used the mix margin (MM%) and unit contribution margin (CM) to evaluate menus. The menu engineering method focused on the customer's viewpoints, while the Cost/Margin analysis method considered the manager's viewpoints. The menus that need continuous keeping Kasavana & Smith (Star) and Pavesic (Standard) included 'Assorted sashimi with side dishes (big), 'Lunch box special', 'Tempura course', 'Broiled Spanish mackerel and side dishes', 'Shrimp tempura', 'Special sushi', 'Seafood Udong', 'Buckwheat noodles'. The results of this study should increase customer satisfaction and profits at the Japanese Restaurant.

사업체 위탁 급식소에서 제공되는 메뉴에 대한 관리자 측면에서의 품질 관리 평가 (Evaluation of Menu Quality Management in Business & Industry Contract Foodservice from Manager′s Viewpoint)

  • The purpose of this study was to analyze and evaluate the menu served in business & industry contract foodservice by assessing nutritional value and by using menu-engineering technique from managers' view point. CAN-Pro program and Kasavana k Smith's Menu Engineering technique were used to evaluate the nutritional value and menu analysis, respectively. The data were analyzed using the SAS package program for descriptive analysis, t-test, ANOVA, and Pearson Correlation Analysis. As the result of nutritional value of lunch menu, all nutrient contents per meal were higher than a third of Korean recommended dietary allowances(RDA), But there was no problem when 20∼30% of plate waste was considered. Carbohydrate : Protein fat ratio was 62.7 : 16.4 : 20.8. Because animal : vegetable source ratios of protein, fat, calcium, iron were 44 : 56, 42 : 58, 22 : 78, 24 : 76, respectively, animal sources of calcium and iron needed to be supplemented. Plural set menus of A site were classified as STAR, PUZZLE, PLOWHORSE, DOG by Menu engineering technique. Set menus and soups & pot-stews among cafeteria menus in C site were operated properly without DOG and PUZZLE item. Side dishes of fishes, meats 8t eggs among cafeteria menus in C site were, for the most part, classified as STAR item, and side dishes of vegetables & salads and noodles among cafeteria menus in C site were STAR, PUZZLE, and DOG items. 한식 메뉴 명명 기준에 대한 내용분석 (The Content Analysis of the Korean Food Menu Naming Standard)

  • This research analyzed the naming standard of Korea menu names divided into two groups, main dish and side dish. The research was conducted by contents analysis of selected literature articles and multiple-response cross tabulation analysis. The result demonstrated that the naming standard of Korea food consisted of the main ingredient name - sub ingredient name - main condiment name and main recipe. On the other hand, the menu name that is in native language or has a historical origin is exempt from this classification. Therefore, this study proposes a new standard, 'Hansik Menu Naming', to assist the food service industry and correct the names of unknown foreign dishes.

  • 엑셀이 자료 통계 분석에서 매우 편리하고 유용한 도구가 될 수 있음을 보여주기 위하여 지하철 이용객 자료로 가설을 검정하는 사례 연구를 시행하였다. 양적 자료는 엑셀의 기술통계량 메뉴에 의하여, 질적 자료는 히스토그램 메뉴에 의하여 기술되었고, 변수들간의 관계성 검정은 회귀 분석 메뉴에 의하여, 차이 검정은 T검정 메뉴에 의하여, 요인 검정은 분산배치법 메뉴에 의하여 전문적인 결과를 얻을 수 있었다. 엑셀만을 이용하여 자료 입력, 관리 및 통계 분석 결과를 편리하게 수행할 수 있는 사례가 되었다.

레스토랑 메뉴의 영양정보공개 지지도에 따른 메뉴선택속성 및 소비자 특성에 관한 연구 (Survey Study: How Customer Attributes and Menu Selection Criteria are Related to Customer Support for Menu Labeling)

  • We studied customer recognition and understanding of menu labeling as well as the correlations between customer support for menu labeling and multiple factors, such as demographic characteristics, dinning-out behavior, and menu selection criteria. This study designed a survey and received responses from 351 individuals. The analysis results reveal that most respondents did not acknowledge menu labeling or lacked knowledge of it. Many of the respondents showed experience in ordering from menus with ingredient labels, but many showed no interest in menu labeling. Exactly 114 (32.5%) respondents showed support of menu labeling, and most were interested in levels of trans-fat, fat, and cholesterol. The respondents reported that menu labeling should be implemented more in fast-food restaurants and causal dinning restaurants. This study also analyzed how customer menu selection criteria are related to support level of menu labeling. Respondents were classified into three groups based on their support level for menu labeling (low medium high), after which correlations between customer menu selection criteria and support level were examined. Respondents in the high support group considered all menu selection criteria (i.e., ingredients, health, and consideration of calories). GLM analysis showed that monthly dining-out expenses were highly related to support level with a significance level of 0.05, and the interaction between monthly dining-out expenses and respondents' jobs also affected support level with a significance level of 0.01.

웹사이트 메뉴 Depth를 줄이는 방식간의 비교 분석 (Analysis of the Methods to Decrease the Depth of Menu in Web Site)

  • To enhance web site's usability, it has been suggested that the depth of tree structured menus should be minimized. In this research, experimental results are reported to quantitatively compare the methods currently used for reducing the depth of menus in web sites. 25 popular web sites were selected and their menu types were categorized into four types: top menu, drop-down menu, boolean menu, and table of contents. The four types of menu were then sub-categorized into 15 different types according to their sub-menu type, existence of menu colors, and the event occurring after mouse activation. Performance tests and subjective evaluation were carried out. The results showed that there were no significant differences in terms of response time among the 15 menu types, while table of contents and drop-down in which the first and second level of menus were visible induced the least number of errors. In the subjective test, the top-menu structure with colors and presentation of its sub-menu without clicking mouse were preferred.

식생활의 전통성 유지 측면에서 1995년과 2001년의 학교급식 식단 비교 분석연구 (Analysis of Menu in School Food Service : Comparing the Use of Traditional Menu between 1995 and 2001)

  • Currently, dietary life in Korea is rapidly changing. New food from other countries introduced to the diet with changing economic and social environment. The number of meals away from home is increasing. Also, number of students who served by the school food service are increasing. In this paper, the menu in the school food service are compared between 1995 and 2001. Analysis was done to see changes in the use of Korean traditional foods. Between July, 2001 and August, 2001, by mail 103 schools were surveyed to analyzed menu. Menu from 2001 survey are compared with menu from 1995 survey. The results are following; 1) New menus are introduced in 2001 compared with 1995. 2) The number of menu using animal foods are increasing in 2001. 3) Among cooking methods, stir frying, and deep frying, are used more in 2001 than that of 1995. 4) The number of Korean dish served are decreased in 2001. 5) Students favorite dish are changed. Students like dishes cooked with deep frying method and western foods. With these results, menu of school food services become more westernized and using more frying methods because of students' taste preference. These trend are not recommendable for the students health, because it is known that Korean traditional dishes are more healthful. There should be more research and effort to keep Korean tranditional foods in the menu of the school food service for students health.

호텔 이태리 레스토랑의 메뉴 품질 만족도가 재방문 의사에 미치는 영향 (The Effect of the Menu Quality of Hotel Italian Restaurants on Satisfaction and Revisit Intention)

  • 본 연구의 목적은 서울 시내에 소재한 대표적인 특1급 호텔 이태리 레스토랑의 메뉴 품질이 고객 만족과 재방문에 미치는 영향 관계를 분석하는데 있다. 조사 기간은 2009년 6월 20일부터 6월 26일까지 7일 동안 이태리 레스토랑을 방문한 고객을 대상으로 설문조사를 하였으며, 분석방법은 빈도분석, 신뢰도분석, 요인분석, 상관관계분석, 다중회귀분석을 실시하였다. 연구 결과는 첫째, 이태리 레스토랑의 선택 기준은 음식의 맛이며, 이태리 레스토랑의 메뉴 품질에 대한 총 45개의 변수를 가지고 요인분석을 실시한 결과, 메뉴 구성 요인, 음식 품질 요인, 메뉴 서비스 요인으로 도출되었다. 둘째, 이태리 레스토랑의 메뉴 품질 중에서 메뉴 구성과 메뉴 서비스가 고객 만족에 유의한 영향을 미치는 것으로 나타났다. 셋째, 고객 만족은 재방문에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 넷째, 이태리 레스토랑의 메뉴 품질 중에서 메뉴 구성은 재방문에 유의한 정(+)의 영향을 미치는 것으로 나타났는데, 음식 품질과 메뉴 서비스는 재방문에 유의한 정(+)의 영향을 미치지 않는 것으로 나타났다. 연구의 한계점으로는 서울 시내에 소재한 특1급 호텔 이태리 레스토랑으로 지역을 제한하여 조사를 하였기 때문에 전체적인 이태리 레스토랑의 메뉴 품질을 대표할 수 없다고 생각된다. 향후 연구에서는 외식업체의 이태리 메뉴 품질에 관한 다양한 연구가 진행이 되어야 하겠다.
