Effect of mixed hay supplementation during fattening on carcass traits and meat quality of Hanwoo steers

  • Background: This study was aim to observe the effects of feeding mixed local hay (MH) consisted of 55% orchard grass (Dactylis glomerata L.), 35% tall fescue (Festuca arundinacea) and 10% red clover (Trifolium pratense) to Hanwoo steers on performance, carcass characteristics and meat quality (longissimus thoracis) compared with feeding imported timothy hay (TH) and local rice straw (RS). Results: Although no significant effects were found on animal performance and carcass yield grade, the carcasses of MH group had higher marbling score and quality grade than those of RS and TH group (P < 0.05). Therefore, higher fat content (P < 0.001), lower shear force and hardness value in the beef of MH group than that of other groups were observed. Furthermore, the beef of MH group had higher CIE $a^*$ value (redness) than that of other groups and feeding MH to Hanwoo steers lowered n-6 to n-3 fatty acids ratio in beef. Conclusions: Mixed hay provided benefits on meat quality and could be used for Hanwoo fattening program.

육미지황탕박을 이용한 TMR의 급여가 한우의 생산성에 미치는 영향 (Effect of Yukmijihwangtang meal silage on the performance of hanwoo steers)

  • This experiment was conducted to investigate the effect of feeding TMR with or without Yukmijihwangtang meal silage on the growth performance, meat yield and quality of Hanwoo steers. Sixteen male Hanwoo steers in the late fattening period were randomly assigned to a control diet and Yukmijihwangtang meal diet, with eight heads per treatment. The supplementation of Yukmijihwangtang meal silage did not affect the feed conversion rate, ribeye area, and meat yield index of cold carcass of Hanwoo. Fat thickness of Hanwoo s loin obtained from silage supplementation was significantly lower than that of non-supplemented. Total grade in meat yield of Hanwoo from silage supplementation were higher than that of non-supplemented control. The supplementation of Yukmijihwangtang meal silage to Hanwoo decreased the marbling score significantly, but did not affect fat color, firmness, and maturity. Total grade of meat quality of Hanwoo with Yukmijihwangtang meal supplementation was lower than that of non-supplemented control. In conclusion, Yukmijihwangtang meal could be used as partial substitution (10%) in TMR for fattening cattle. However, it is considered that Yukmijihwangtang meal can be a useful feed for the periods of growing or early fattening than that of late fattening since it improved meat yield but decreased meat quality grade of Hanwoo steers.

고도 및 수송거리별 출하 한우의 도체특성 및 표면육색의 변화 (Changes of Carcass Traits and Surface Meat Color of Korean Cattle (Hanwoo) Reared Different Altitudes or Transferred from Different Distance)

  • 본 연구는 고도 차이 혹은 수송 거리의 차이가 한우(거세우 및 암소)의 도체특성, 표면육색 및 혈중 cortisol 농도 변화에 미치는 영향을 검토하기 위해 실시되었다. 공시동물은 총 190두로 이중 거세한우는 118두 암소는 72두였다. 자료는 사육 고도(100, 200, 300, 400 및 500 m) 혹은 수송 거리(50, 100, 150, 200 및 250 km)에 따라 분석하였다. 사육 고도의 차이가 거세한우 및 암소의 육량 및 육질 형질 변화에 미치는 영향은 적었으며, 수송 거리의 차이가 거세한우 및 암소의 육량 형질에 미치는 영향은 없는 것으로 나타났다. 또한 수송 거리의 차이가 거세한우 및 암소의 근내지방도, 육색 및 지방색에 미치는 영향과 사육 고도 혹은 수송 거리의 차이가 거세한우 및 암소 등심의 명도, 적색도, 황색도, 선명도 및 색상색에 미치는 영향은 낮은 것으로 나타났다. 암소의 경우 사육고도 100 m에서 200 m에 비해 등심의 명도가 증가되었으며(p<0.05), 거세한우의 경우 수송 거리 250 km 그리고 암소의 경우에는 200 km에서 등심의 명도가 낮아지는 경향을 보였다. 한편, 혈중 cortisol 농도는 낮은 사육 고도에 비해 높은 사육 고도에서 낮아지는 경향을 보였으나, 통계적인 유의차는 없었다. 수송 거리가 거세한우 및 암소의 cortisol 농도에 미치는 영향은 없었다. 따라서 본 연구의 결과에서 사육 고도 혹은 수송 거리가 한우의 생산성에 미치는 영향은 적은 것으로 판단된다.

Market weight, slaughter age, and yield grade to determine economic carcass traits and primal cuts yield of Hanwoo beef

  • This study was conducted to evaluate the relationship among market weight, slaughter age, yield grade, and primal cut yield in Hanwoo. A total of 403 Hanwoo (Korean native cattle) was assessed for carcass traits such as carcass cold weight, backfat thickness, ribeye area, dressing percentage, yield index, and marbling score. The production yield of the individual major primal cuts of Hanwoo beef was also measured. Carcass cold weight, ribeye area, and backfat thickness, which affect meat quality increased with increased market weight (p < 0.05). The production yield of the ten major primal cuts also increased with increased market weight (p < 0.05). In terms of slaughter age, carcass cold weight, ribeye area, and backfat thickness all increased from 25 months to 28-29 months, and the production yield of all prime cuts also increased with increasing slaughter age. According to the meat yield grade, carcass cold weight and backfat thickness increased from grade A to grade C, although the ribeye area was not affected. The combined findings of the study suggest that slaughtering Hanwoo at the weight of 651-700 kg and 701-750 and age of 28.23 and 29.83 months could be desirable to achieve the best quality and quantity grade of Hanwoo beef. However, the positive correlation of carcass cold weight and backfat thickness, and the negative correlation of the yield index according to primal cuts yield indicated that it is necessary to couple the slaughtering management of cattle with improved genetic and breeding method of Hanwoo to increase the production yield of the major prime cuts of Hanwoo beef.

경제성 관련 계육 도체 결함과 축산물등급사에 의한 품질 A등급의 상관관계 (Relationship between the Economical Defects of Broiler Meat Carcass and Quality Grade A with a Meat Grader)

  • 본 연구는 2007년 9월 1일부터 2008년 8월 31일까지 1년간을 공시기간으로 총 597농가에서 출하된 육계를 각 농가당 100수씩 무작위로 선정하여 총 59,700수의 계육도체를 축산물등급판정사가 등급판정한 결과를 기초로 계육의 등급판정 대상 각 항목에 따른 품질 A등급 출현율의 상관관계를 알아보고자 실시하였다. 출하일령에 따른 닭의 체중은 31-33일령 사이에 증가되고 있으며, 35일령 이후에는 출하 시점에 체중이 감소하는 경향을 보였다. 계절에 따른 품질등급에서 일당증체량과 A등급 출현율은 가을철에 높게 관찰되었고, 멍/파계 비율과 비정상계의 비율은 겨울철에 높게 관찰되었다(p<0.05). 경제성 관련 결함은 출하일령이 증가함에 따라 발생 빈도가 높아지고, A등급 출현율과의 상관관계는 외관(-0.88), 외상(-0.48), 변색(-0.12)의 순으로 높은 부의 상관관계가 나타났다. 비경제성 관련 결함과 A등급 출현율은 깃털(-0.16), 이물질(-0.22) 및 도체처리(-0.32)에서 부의 상관관계를 나타내었다. 품질 A등급 출현율과 결함수 합계와는 높은 부의 상관관계(-0.93)를 나타내었으며, 특히 경제성 관련 결함수와는 -0.91로 축산물등급판정사의 A등급 판정은 추후 경제성 관련 항목과 매우 밀접한 연관이 있음을 알 수 있었다. 이상의 결과를 종합해보면 축산물등급판정사의 등급판정 결과를 농가의 사양정보로 활용하여 생산성 증대에 기여할 수 있으며 출하 시 적정 가격정산에 이용이 가능하다고 생각된다. 또한 고품질 계육에 대한 소비자의 선택권 부여와 우수농가 보상에 활용될 수 있으리라 판단된다.

Effects of dietary supplementation of illite on growth performance, nutrient digestibility, and meat-carcass grade quality of growing-finishing pigs

  • This study investigated the impact of clay mineral 'illite' (IL) on the growth performance, apparent total tract digestibility, and meat-carcass grade quality in growing-finishing pigs. One hundred fifty pigs were divided into two groups with fifteen pens/group and five pigs/pen, a control group that was fed with a corn-soybean meal-based diet and IL treated group were fed a meal-based diet supplemented with 0.5% IL. Compared to the control, IL supplementation increased average daily feed intake (ADFI) and reduce gain to feed ratio (G:F) in the pigs during days 43 to 70 and 99 to 126 and increased dry matter during days 42 and 126, and backfat thickness on day 98 (p<0.05). The drip loss was reduced on day 7, meat firmness tended to increase with dietary IL supplementation. In summary, dietary 0.5% IL supplementation improved ADFI, nutrient utilization of dry matter, and firmness and reduced G:F and drip loss of growing-finishing pigs.

Heritabilities and Genetic Correlation, and Sire and Environment Effects on Meat Production Potential of Hanwoo Cattle

  • Genetic parameters of live weight at slaughter (LWT), quantity index (QIX), yield grade (YGD), quality grade (QGD), pH of meat, and boiled meat tenderness in terms of mastication (BMAS), shear force (BSFR) and penetration (BPEN) in Hanwoo steers were estimated. Effects of sire, location and their interaction on these traits were also evaluated. Sire effects were found to be significant on all the traits studied except for pH and BSFR. The LWT, QIX and QGD were also significantly affected both by location and by interaction effect between sire${\times}$location. The BSFR and BPEN were significantly (p<0.01) affected by location but not significantly by sire${\times}$location interaction. The boiled meat tenderness and pH were negatively correlated ($r_g$ and $r_p$) with LWT, QIX and QGD. All the other traits were positively correlated with each other. Positive and high genetic correlation (+0.56) between LWT and QGD was obtained indicating that selection for LWT would improve QGD. The $h^2$ estimates were 0.43, 0.37, 0.37, 0.35 and 0.32 for QGD, LWT, pH, BSFR and BPEN, respectively.

Effects of Dietary Bamboo Charcoal on the Carcass Characteristics and Meat Quality of Fattening Pigs

  • The purpose of this study was to investage the effects of dietary bamboo charcoal on the carcass characteristics and meat quality of fattening pigs. Fifty four crossed pigs of $61.0{\pm}1.0$ kg body weight (BW) were grouped and housed in 6 animals (3 barrows and 3 gilts) per pen and 3 replications per treatment. The basal diet (C) was supplied with 0.3% bamboo charcoal as treatment 1 (T1) and 0.6 % as treatment 2 (T2). The pigs were fed that experimental diet for 42 days, thereafter 10 longissimus dorsi (LD) per treatment were randomly collected at the time the pigs reached an average weight of $110.0{\pm}5.0$ kg. The carcass weight, backfat thickness, and the carcass grade were better (p<0.05) in the pigs fed bamboo charcoal than in C. The crude fat concentration of LD was higher (p<0.05) in T1 than in C. While the composition of stearic acid and arachidonic acid was lower (p<0.05) in treatments than in C, the composition of oleic acid and linoleic acid of treatments was higher (p<0.05) than C. The physico-chemical characteristics, such as meat color and amino acid composition of LD were not affected (p>0.05) by the supplemented bamboo charcoal. In conclusion, dietary supplementation with bamboo charcoal improved the carcass grade and fatty acids composition of pork meat from fattening pigs, where the composition of unsaturated fatty acids was increased, but that of saturated fatty acids was decreased.

비육돈의 성별·등지방두께 및 도체중별 육질등급 분석 (Analysis of Carcass Quality Grades According to Gender, Backfat Thickness and Carcass Weight in Pigs)

  • 본 연구는 충남 대단위 양돈장 5개에서 도체등급판정을 받은 26,983두를 대상으로 성별, 사료급여량별, 등지방두께별, 도체중별에 따른 돼지 도체의 육질등급을 조사 분석하여 고급돈육 생산에 필요한 기초적 자료를 얻고자 실시하였다. 성별 육질 등급 간에는 통계적으로 유의한 차이(p<0.01)를 보였다. 암컷은 $1^+$ 등급(76.7%) 출현율이 가장 많았으나, 거세돈은 1등급 출현율(56.5%)이 가장 높았다. 도체중은 사료급여량 그룹간에는 유의한 차이(p<0.05)를 보였는데, 사료급여량을 가장 적게 급여한 그룹 I의 경우 평균 도체중이 85.8 kg으로 가장 가벼웠으나, 가장 많이 급여한 그룹 IV는 89.5 kg으로 가장 무거운 것으로 나타났다. 육질등급은 등지방 두께간 유의한 차이(p<0.001)를 보였는데, 15 mm 이하 등지방 두께 그룹에서는 2등급(67.5%)의 출현율이 높았으나, 15~19 mm 등지방 두께 그룹은 1등급(89.3%) 출현율이 가장 높았다. 도체중간 육질등급은 유의한 차이(p<0.05)를 보였는데, 도체중 85 kg 이상 그룹은 2등급(54.3%) 출현율이 가장 높았으나, 78~84 kg 그룹은 1등급(62.1%)이 가장 높게 출현 되었다. 이와 같이 도체중, 등지방 두께 등은 육질등급 판정의 중요한 요인으로 작용됨으로 비육돈에 최적사양관리 시스템개발로 고급돈육 생산에 이바지해야 할 것으로 생각된다.

Discrimination study between carcass yield and meat quality by gender in Korean native cattle (Hanwoo)

  • Objective: The aim of this study was to identify a distribution pattern of meat quality grade (MQG) as a function of carcass yield index (CYI) and the gender of Hanwoo (bull, cow, and steer) to determine the optimum point between both yield and quality. We also attempted to identify how pre- and post-deboning variables affect the gender-specific beef quality of Hanwoo. Methods: A total of 31 deboning variables, consisting of 7 pre-deboning and 24 post-deboning variables from bulls (n = 139), cows (n = 69), and steers (n = 153), were obtained from the National Institute of Animal Science (NIAS) in South Korea. The database was reconstructed to be suitable for a statistical significance test between the CYI and the MQG as well as classification of meat quality. Discriminant function analysis was used for classifying MQG using the deboning parameters of Hanwoo by gender. Results: The means of CYI according to 1+, 1, 2, and 3 of MQG were 68.64±2.02, 68.85±1.94, 68.62±5.88, and 70.99±3.32, respectively. High carcass yield correlated with low-quality grade, while high-quality meat most frequently was obtained from steers. The classification ability of pre-deboning parameters was higher than that of post-deboning parameters. Moisture and the shear force were the common significant parameters in all discriminant functions having a classification accuracy of 80.6%, 71%, and 56.9% for the bull, cow, and steer, respectively. Conclusion: This study provides basic information for predicting the meat quality by gender using pre-deboning variables consistent with the actual grading index.
