The aim of this study was to investigate the prevalence and frequency of food-borne pathogens in unprocessed Products such as grains, tubers, vegetables, and seaweeds. Three hundred and twenty seven samples were purchased from the retail market and the supermarket in the Kyonggi-do and Seoul areas, and washed with running tap water for 4 minutes. The total aerobic bacteria count was approximately 2 to 6 log CFU/g and the highest counts were 6 log CFU/g far lettuce and sesame leaf. The coliform count showed 1-5 log CFU/g and the highest counts were 4 log CFU/g for lettuce and carrot. Escherichia coli was detected in seven samples of white rice, sweet potato, lettuce, sesame leaf, and cabbage. Clostridium perfringens was detected in six samples of brown seaweed, laver, lettuce, and sweet potato. However, Bacillus cereus contamination was found in more than 30% of brown rice, carrot, sweet potato, lettuce and sesame leaf samples, and some of these showed contamination of more than 2.0 log CFU/g. Therefore, these results suggest that pretreatment with sanitizer to remove Bacillus cereus in such products is necessary.

Marine algal flora and community structure were investigated seasonally at three sites in subtidal zone of Wangdol-cho on the east coast of Korea from May 2012 to August 2013. A total of 122 species were collected and identified, including 12 green algae, 29 brown algae, and 81 red algae. Of these, 38 species were found throughout the survey period. Average seaweed biomass was 472.19-1,198.77 g wet wt. $m^{-2}$ in spring, 68.99-631.14 g wet wt. $m^{-2}$ in summer, 200.91-401.20 g wet wt. $m^{-2}$ in autumn, and 53.61-922.32 g wet wt. $m^{-2}$ in winter. The vertical distribution based on biomass were Grateloupia lanceolata, Acrosorium venulosum, Lomentaria catenata - Undaria pinnatifida, Dictyopteris pacifica, Sargassum horneri, Ecklonia cava - Desmarestia viridis, E. cava, S. horneri from upper to lower subtidal zone. The flora was classified into six functional groups: filamentous form (34.43%), coarsely branched form (25.41%), sheet form (24.59%), thick leather form (9.71%), crustose form (5.74%) and jointed calcareous form (0.82%). The C/P, R/P and (R+C)/P values reflecting the flora characteristics were 0.41, 2.79 and 3.21, respectively. Also, diversity index (H') and dominance index (DI) indicate that the algal community and environmental condition of Wangdol-cho is stable. We recommend that Wangdol-cho subtidal zone should be more protected from human activities such as turbulence and eutrophication in order to maintain species diversity and abundance of algae.

In this study, the distribution of sedimentary environment and benthic macro-fauna in habitats and non-habitats of Zostera marina were investigated. The purpose of this study was to obtain basic data about the sedimentary environment and benthic macro-fauna in the habitats and non-habitats of Z. marina. Sand was dominant within habitat environments, whereas the non-habitats were predominantly composed of silt. As a result, the habitats of Z. marina have a different grain size and organic matter content compared to the non-habitats. These differences in the sedimentary environment were expected to influence the species composition of benthic animals. Benthic communities in the habitats of Z. marina showed a higher density and a greater number of species than in the non-habitats. As a result of an ecological index evaluation, the species diversity index (H') was $3.44{\pm}0.10$ for the habitat; the non-habitat was analyzed as $2.34{\pm}0.35$. It was also found that the stability of community in the habitats was higher than that in the non-habitats. The cluster analysis also clearly showed that habitats and non-habitats of Z. marina have distinct characteristics.

In recent years novel potential pharmocological candidates have been looked for in animal, seaweed, sponge, fungi and marine bacteria resources. In this study, matrix metalloproteinases (MMPs) that play an important role in metastasis, arthritis, chronic inflammation and wrinkle formation were used as target enzymes to screen therapeutic agents. The inhibitory effects of several marine algae including green algae (5 species), red algae (18 species) and brown algae (4 species) methanolic extracts on MMPs were investigated in human dermal fibroblasts and human fibrosarcoma cell line (HT1080 cells) using gelatin zymography. In human dermal fibroblasts, the inhibition of MMP-2 was observed in Laurencia okamurae, Polysiphonia japonica, Grateloupia lanceolate and Sinkoraena lancifolia of red algae. In contrast, MMP-2 activation was enhanced in Enteromorpha compressa and E. linza of green algae, and Peltaronia bighamiae and Sargassum thunbergii of brown algae. In human fibrosarcoma cells, MMP-9 activation was decreased in the presence of S. thunbergii of brown algae, Polysiphonia japonica in red algae and E. compressa and E. linza of green algae. The interesting finding is that E. compressa and E. linza of green algae, and S. thunbergii of brown algae exhibited a positive effect on MMP-2 in normal cells, but a negative effect on MMP-9 in cancer cell lines. These results suggest that E. compressa and E. linza of green algae, and S. thunbergii of brown algae contain potential therapeutic ingredients for cancer treatment.

Functional activities of low molecular weight substances purified from pepsin hydrolysates of four different seaweeds; Costaria costata, Enteromorpha prolifera, Grateloupia filicina and Porphyra tenera, were inves-tigated. Each pepsin hydrolysate of Costaria costata, Enteromorpha prolifera, and Grateloupia filicina resulted in three peptide peaks on Bio-Rad P2 gel chromatography pattern, while that of Porphyra tenera showed 2 peaks. Peak 1 of Porphyra tenera showed the highest antioxidative activity followed by peak 2 of Porphyra tenera and peak 2 of Costaria costata in order Peak 1 of Porphyra tenera showed the highest ACE inhibitory activity followed by peak 3 and peak 2 of Enteromorpha prolifera in order. Peak 1 and peak 2 of Porphyra tenera, and peak 2 of Enteromorpha prolifera showed the highest antityrosinase activity followed by peak 3 of Enteromorpha prolifera. Peak 1 of Enteromorpha prolifera showed the highest antitumor activity followed by peak 2 of Costaria costata, peak 3 of Enteromorpha prolifera, and peak 3 of Grateloupia filicina in order. Porphyra tenera showed the highest functional activities, which is thought to be due to its high protein content. Structure and amino acid sequence of low molecular weight peptide of Porphyra tenera should be analyzed in the further study.
This study was conducted to investigate optimum conditions for the production of cellulose-degrading crude enzymes by an isolated marine bacterium. A marine microorganism producing an extracellular cellulose-degrading enzyme was isolated from the red seaweed, Grateloupia elliptica Holmes. The isolated bacterium was identified as Cellulophaga lytica by 16S ribosomal RNA gene sequence analysis and physiological profiling and designated as Cellulophaga lytica PKA 1005. The optimum conditions for the growth of Cellulophaga lytica PKA 1005 were pH 7, 2% NaCl, and $30^{\circ}C$ with 36 h incubation time. To obtain the crude enzyme, the culture medium of the strain was centrifuged for 30 min at $12,000{\times}g$ and $4^{\circ}C$, and the supernatant was used as crude enzyme. The optimum conditions for the production of the cellulose-degrading crude enzyme were pH 8, $35^{\circ}C$, 8% carboxyl methyl cellulose, and 60 h reaction time.
Particulate matter (PM) causes oxidative stress and can rapidly diffuse from the lung to the blood and accumulate in the liver when inhaled. Natural antioxidants can be used to protect against oxidative stress caused by PM. Sargassum horneri, a brown seaweed, possesses antioxidative activity and is a good source of functional foods. Therefore, this study investigated the antioxidant potential of S. horneri extract (SHE) in the livers of PM-induced asthmatic mice. PM inhalation triggered lipid peroxidation and oxidative stress, and SHE treatment attenuated malondialdehyde in the liver of mice with PM-induced asthma. Furthermore, SHE mitigated the increase in catalase activity. Importantly, SHE reduced the activity of 8-oxoguanine glycosylase (OGG1), a DNA repair enzyme. These results suggest that SHE has antioxidant potential for moderating PM-induced oxidative stress and DNA damage in the liver of asthmatic mice.

Fucoidan is a physiologically functional ingredient extracted from seaweed brown algae, which is a sulfated polysaccharide containing fucose as a main molecule backbone. Fucoidan has a variety of immune-modulating or -stimulating effects, including promoting antigen uptake and enhancing anti-bacterial, anti-viral and anti-tumor effects. In addition, recent studies have suggested the possibility of use of fucoidan as a vaccine adjuvant in the field of human vaccine. Use of fucoidan as supplementary feeds have already been studied, but the development of fucoidan as an adjuvant of fish vaccine is still premature. However, the intracellular uptake of fucoidan differs depending on the molecular weight of fucoidan, and there is a limit to the study on specific immune response including the production of antibodies to fish caused by an artificial infection of pathogen. Although the safety of fucoidan has been demonstrated in animal cells, there is a need to confirm the safety of fucoidan in fish. Therefore, active research in this field is needed to use fucoidan as a vaccine adjuvant. This study discussed the effects of fucoidan on immune stimulation, humoraland cellular- immunity including humans and animals. The prospect of fucoidan as a vaccine adjuvant in fisheries also reviewed.
The seaweed Ulva spp., which is frequently bloomed in coastal areas, have negatively affected on marine ecosystem and industrial activities. Therefore, many researches have been conducted to solve this problem in the worldwide. In this study, we carried out several experiments to develop the methods for effectively controlling Ulva growth through an alone or mixture application of chemical and temperature. Three chemical mixtures ($H_2O_2$+N-vanillylnonanamide; $H_2O_2$+nonanoic acid; $H_2O_2$+sodium citrate), those had a synergistic effect to the death of Ulva australis (ULAUS), were found out. On the other hand, the death of ULAUS was significantly enhanced and accelerated as some chemicals were briefly treated with warm water of $40^{\circ}C$ rather than $25^{\circ}C$, showing that peracetic acid 100 ppm, sodium percarbonate 100 ppm, and hydrogen peroxide 30 ppm has a better activity than that of sodium chlorite 200 ppm and menadione sodium bisulfite 4 ppm. In addition, a strong synergistic effect to the death of ULAUS thallus was also observed when the sodium citrate 1,000 ppm (pH 3.0) or acetic acid 200 ppm (pH 3.5) solution prepared in f/2 medium were treated in a short time at $40^{\circ}C$. However, an additive effect was only appeared as pH values of their solutions were increased to 8.0. Taken together, It seemed that our results could be developed as one of an eco-friendly practical measures useful for alleviating Ulva bloom in the future.
Biosorptions of Cr and Pb were evaluated for 23 species of marine algae collected from a Korean coast. Among a variety of species for biosorbent potential, Sargassum species showed higher uptake capacity for Cr and Pb. An adsorption equilibrium was reached in about 1 hr for Cr and 30 min for Pb. The maximum uptake capacity was136.0 mg Cr/g biomass and 232.5 mg Pb/g biomass, respectively. In Pb biosorption in the column packed with Sargassum tbunbertii, 300 and 200 bed Tolumes at the concentration of 50 mg/L in feed solution were processed at the column residence time of 5 and 10 min before the column breakthrough point occurred. The elutions with 0.1 M HCl solution were more than $95{\%}$. The high efficiency of continous biesorntion and elution (3 cycles) indicated that Sargassum thunbergii was an effective biosorbent for Pb recovery.
