구기자의 수용성 추출물을 첨가한 집청액이 유과의 품질특성에 미치는 영향 (Effects of Coating Syrup with Water-Soluble Extracts of Gugija(Lycii fructus) on the Quality Characteristics of Yukwa)

  • 구기자의 수용성 추출물을 첨가한 시럽에 집청한 유과(YU-G)를 제조하여 PE 필름 봉지에 넣고 함기 포장한 후 상온에서 12주간 저장하면서 유과의 품질 특성을 검토하였다. 저장하는 동안 YU-G는 구기자 추출물을 첨가하지 않은 시럽에 집청한 유과(YU-NG)에 비해 수분함량은 높았고 기계적 경도는 낮았다. 저장시 YU-NG와 YU-G의 L값은 감소하고 a값과 b값은 증가하였다. 상온 저장 시 유과의 과산화물가와 산가가 증가하였으며, YU-G는 YUNG에 비해 과산화물가와 산가가 낮았다. 12주 저장 후 YU-G 의 과산화물가는 식품공전 기준치인 40 meq/kg 보다 낮았고 산가는 식품공전기준치인 4 KOH mg/g 보다 낮은 값을 보였으나, YU-NG의 과산화물가는 6주 저장 후, 산가는 10주 저장 후 식품공전 기준치를 초과하였다. 유과의 관능검사 결과, YU-G는 YU-NG보다 저장하는 동안 전반적인 선호도가 높았다.

구기자 복합물 약침액이 간기능 개선에 미치는 영향 (Protective Effect of Herbal Mixture Including Lycii Fructus on Hepatotoxicity Induced by Thioacetamide in Mice)

  • Objectives : This study investigated the hepatoprotective effect of herbal mixture including Lycii fructus (HML) in thioacetamide (TAA)-induced hepatotoxicity in mice. Methods : To confirm the liver protective effect, induced by TAA for 3 days injection at 100 mg/kg mice, HML were treated for 8 weeks at 300 mg/kg/day, 1000 mg/kg/day. Positive control was treated silymarin 50 mg/kg/day after TAA injection. The changes of mortality rate, clinical signs, organ weight, relative liver, blood chemistry and histopathological findings were analyzed after experiment. Results : Body weight gain was observed in all groups, but TAA treated group at 4th week and all treated groups decreased weight compared to the untreated group. As a result of organ weight measurement, organ weight gain due to hepatic injury was observed statistically significantly in TAA-treated group and TAA+Silymarin treated group, and the herbal mixture-treated group showed a tendency to decrease compared to the TAA treated group. Blood biochemistry showed that total cholesterol and very low density lipoprotein cholesterol decreased statistically in TAA+low-dose and high dose herbal mixture treated group compared to the TAA-treated group. Histopathological examination showed that liver abnormalities were not observed in untreated group, liver fibrosis was observed in liver injury with TAA treated and herbal mixture treated group. And, TAA+high dose herbal mixture group showed relaxation tendency on liver calcification compared to the TAA treated group. Conclusions : According to the above results, HML provided hepatoprotective effects on the hepatic injury by reduction of inflammatory responses.

볶음 조건에 따른 구기자 열수 추출물의 이화학적 특성 (Physico-chemical Properties of Boxthorn(Lycii fructus) Hot Water Extracts by Roasting Conditions)

  • 건 구기자와 볶음조건을 달리한 볶은 구기자의 열수 추출물에 대하여 여러 가지 이화학적 특성을 조사하였다. 건 구기자의 일반성분은 수분 17.5%, 회분 5.4%, 지방 14.7%, 단백질 18.9%, 섬유질 12.8%, 당질 31.7%였다. 열수 추출시 추출수율은 볶음온도와 시간이 증가할수록 가용성 고형분이 더 빨리 추출되었으며, 색도는 명도가 감소하고 적색도가 증가하여 추출물이 더 진한 갈색을 나타내었고 탁도 역시 증가하였다. pH는 볶음온도와 시간이 증가할수록 5.08에서 4.38로 감소하였고 산도는 0.09%에서 0.16%로 증가하였다. 유리당 함량은 볶음온도와 시간이 증가할수록 감소하였고 특히 glucose함량이 0.45%에서 0.12%로 크게 감소하였다. 지방산 조성은 건 구기자에 비해 볶음온도와 시간이 증가할수록 linoleic acid의 비율이 감소하고 palmitic acid의 비율이 증가하였다. 관능검사 결과는 볶음온도와 시간이 증가할수록 단 냄새, 탄 냄새, 신 맛, 탄 맛, 떫은 맛 등은 증가하였고 단 맛과 구수한 맛은 약간 감소하였다.

구기자 침출액을 첨가한 녹두묵의 품질특성 (Quality Characteristics of Mungbeanmook Added with Gugija (Lycii fructus) Infusion)

  • The principal objective of this study was to evaluate the quality characteristics of mungbeanmook prepared with five different levels (0, 5, 10, 15, and 20%) of Gugija (Lycii fructus) infusion. We analyzed Hunter's color values, pH, texture characteristics, and perfomed sensory evaluation of mungbeanmook prepared with Gugija infusion. The pH levels of mungbeanmook ranged between 5.45 and 6.12 and did not show significant differences. As Gugija infusion concentration increased, the color lightness "L" value decreased, whereas redness color "a" value and yellowness color "b" values increased (P<0.05). With regard to mechanical texture properties of the mungbeanmook samples, as the Gugija infusion concentration increased, the scores of hardness, chewiness, and gumminess all significantly decreased (P<0.05) whereas there were no significant differences in springiness or cohesiveness. The results of the sensory evaluation showed that the score of the LFLT10 sample (10% Gugija infusion) was significantly higher than those of others in terms of taste, color, flavor, texture, and overall quality (P<0.05). Taken together, the recommended optimum level of Gugija infusion in mungbeanmook is 10% for sensory evaluation. Gugija infusion can be a useful approach to improving quality of mungbeenmook as a functional food.

Caffeine 및 광자극 유발 스트레스 동물모델에서 구기자 복합물이 스트레스 완화 및 혈중 멜라토닌에 미치는 영향 (Effect of Herbal Mixture including Lycii Fructus (HML) on Stress Relief and Melatonin in Caffeine and Light induced Stress Animal Model)

  • Objectives : In the present study, we investigated whether or not an herb mixture including Lycii fructus(HML) has attenuation effects on light stress in rats. Methods : Light stress was induced by exposure to 300 lx of constant lifht for 24 h and 1mg/kg of caffeine was injected into the rat. Rats were orally treated with distilled water of HML for 21 days at 100mg/kg/d. The changes of mortality rate, clinical signs, body, blood chemistry, melatonin and IL-2 expression were analyzed after experiment. Results : Normal weight changes were observed in all treatment groups. In addition, no changes were observed in dead animals and general symptoms. At the time of autopsy, the appearance of all groups and gross examination of major organs were observed, and no gross findings were observed. Blood biochemical tests showed that total cholesterol and HDL cholesterol levels were statistically significantly decreased in the group treated with HML compared to the stress-induced group. Melatonin was measured in the blood, but there was no significant difference in the group treated with HML compared to the group with stress-induced group, but it tended to increase. IL-2 was measured in the blood, no significant change was observed in the group treated with HML compared to the stress-induced group. Conclusions : According to the above results, HML maybe help with hematological changes expressed by caffeine and light-induced stress.

구기자 추출액을 첨가한 양갱의 품질특성 및 묘사적 관능평가 (Quality Characteristics and Descriptive Analysis of Yanggaeng added with Lycii Fructus Extract)

  • The purpose of this study was to investigate the quality characteristics and descriptive analysis of Yanggaeng prepared with Lycii fructus extract (LD). LD were added in ratios (w/w) of 0 (C), 1.5 (LY1), 3.0 (LY2), 4.5 (LY3), and 6% (LY4), and then proximate compositions, physicochemical properties, and sensory evaluations of the Yanggaeng were measured LY1~LY4 samples showed higher contents of crude lipid, crude protein and crude ash as well as $^{\circ}Brix$ compared to control (p<0.001). pH and lightness (L) of samples decreased as the LD increased. With regard to the texture of Yanggaeng samples, the scores of hardness, adhesiveness, springness, and cohesiveness was significantly increased by the Addition of LD (p<0.05, p<0.01). For the descriptive analysis, ten panelist generated and evaluated 29 sensory attributes for the Yanggaeng, and there were significant differences among the samples for all 26 sensory attributes. For the descriptive data, principal component analysis (PCA) was performed to summarize the sensory characteristics of the Yanggaeng. The results of PCA showed that the positive attributes, e.g. savoury, were closely in relationship with LY2 and LY3. Form the findings, this study suggests that 3~4.5% addition of LD was effective for preparation of Yanggaeng in the aspects of the consumer acceptability.

구기자 추출물이 피부 미백 및 주름에 미치는 영향 (Effects of Lycii Fructus Extracts(LFE) on Skin whitening and Elasticity using Melanoma cells)

  • Objective : Lycii Fructus Extracts(LFE) can do Anti-hypertension activity, Antidepressant, Anti-diabetic activity. This study was designed to investigate effects of LFE on skin whitening and elasticity using melanoma cells. Methods : In this experiment, effect of LFE on cell viability, inhibition of melanin synthesis and inhibitory effect on tyrosinase and elastase. Results : More than $250{\mu}g/ml$ of LFE treated group showed lowered proliferation rates significantly compared to non-treated group. More than $125{\mu}g/ml$ of LFE treated groups were lower levels of melanin synthesis respectively. LFE showed inhibitory effect on tyrosinase activities in vitro. And, LFE suppressed tyrosinase activities in B16F10 cells significantly. Finally, LFE suppressed elastase type I and IV activities in dose-dependent manner in vitro. And LFE also slightly suppressed elastase activities in vivo. Conclusion : These results suggest that LFE can inhibit melanin synthesis through ihhibitory action on tyrosinase activity and inhibt elastase activity, and also suggest that these results can be used for the study on maintaining skin elasticity or whitening.

수확시기에 따른 구기자 품종의 성분변화 (Changes in Composition of Gugija (Lycii Fructus) Species According to Harvest Time)

  • 시험장에서 육성한 품종인 명안, 불로, 청대, 장명, 청운과 육성중인 청양6호, 청양7호 및 청양재래의 가용성 무질소물, 조단백질, 조지질, 회분, 총 폴리페놀, 엑스, 베타인의 함량을 8, 9, 10 및 11월의 수확시기별로 조사한 결과, 가용성 무질소물 및 엑스는 육성중인 청양6호가 가장 높은 함량을 보였고, 조단백질, 총폴리페놀 및 베타인의 함량에서는 육성중인 청양 7호가 가장 높은 함량을 보였으며, 조지질은 청대에서, 조회분은 청운에서 가장 높았다. 건과비율은 육성중인 청양6호에서 가장 높았고, 건과비율이 높을수록 가용성 무질소물의 함량은 증가 (r = 0.70)하는 반면 조단백질 (r = -0.83) 및 조회분 (r = -0.71)등은 감소하였다. 일반성분 중에는 서로 일정한 상관을 보였는데, 가용성 무질소물의 함량이 증가하면 엑스의 함량 (r = 0.81)은 높아지는 반면, 단백질 (r = -0.88), 지질 (r = -0.82) 및 회분 함량 (r = -0.81)은 감소하고, 총폴리페놀 함량이 증가하면 베타인 함량이 증가 (r = 0.90)하는 경향이었다. 품종특성과 성분을 분석한 결과 육성중인 청양 6호는 가용성 무질소물 및 엑스분이 높게 관찰되었을 뿐만 아니라, 건과비율이 높아 타 품종에 비해 쉽게 건조될 수 있어 건조비용을 줄일 수 있는 것으로 예상되었고, 청양 7호는 조단백질, 총폴리페놀 및 베타인 함량이 높아 기능성 품종으로서의 가치를 보여주었다.

  • Objective : This study was conducted to observe the anti-hyperlipidemic and anti-inflammatory effects, as well as the metabolic benefits, of pear extract and herbal drug mixture (Lycii Fructus, Coicis Semen, Alimatis Rhizoma, and Astragali Radix) on rats fed with a high fat diet. Methods : The animals used were male rats and the control group was fed a high fat diet only. The experimental groups were divided into four. Exp I group was fed a high fat diet with a mixture of pear extract and 3% Lycii Fructus; Exp II group was fed a high fat diet with a mixture of pear extract and 3% Coicis Semen; Exp III group was fed a high fat diet with a mixture of pear extract and 3% Alimatis Rhizoma; and Exp IV group was fed a high fat diet with a mixture of pear extract and 3% Astragali Radix for 4 weeks. Results : The body weight gain increased in all groups, but attenuated gradually in the experimental groups compared to the control group. The food intakes were significantly lower in Exp I and Exp III groups than the control group. The concentrations of serum total cholesterol (TC), HDL-cholesterol, LDL-cholesterol, and triglyceride (TG) were significantly higher in Exp II than in the control group, and lower in Exp III group than in the control group. Also the concentration of serum free fatty acid was significantly lower in the Exp III group than in the control group. In inflammatory activities, the Exp II group was significantly lower than the control group. Conclusion : The results indicated that Exp III group (administered a mixture of pear extract and Alimatis Rhizoma) most efficiently reduced fat accumulation and body weight, while the Exp II group (administered the mixture of pear extract and Coicis Semen) had the highest elevated lipid metabolism and immune activity.

구기자 및 혼합구기자 열수 추출 농축액의 리올로지적 특성 (Rheological Properties of Hot-Water Extractable Concentrates of Boxthorn (Lycii Fructus) and Mixed Boxthorn)

  • 구기자의 이용 및 활용을 확대 증진시키기 위해서 구기자 및 기호성을 향상시키기 위해 바른 생약류가 소량 혼합된 혼합구기자 열수 추출 농축액의 리올로지적 특성을 조사 비교한 결과는 다음과 같다. 각각의 농축액들은 power law model에 잘 적용되어 해석할 수 있었으며, 모두 비뉴톤 유체로서 의가소성 유체의 흐름특성을 보여주었다. 전단속도 1,500 l/s, $20^{\circ}C$ 에서의 겉보기 점도는 혼합구기자 $50^{\circ}Bx(0.1940\;Pa{\cdot}s)$, 구기자 $50^{\circ}Bx(0.0988\;Pa{\cdot}s),$ 혼합구기자 $40^{\circ}Bx(0.0720\;Pa{\cdot}s)$. 구기자 $40^{\circ}Bx(0.0431\;Pa{\cdot}s)$, 혼합구기자 $30^{\circ}Bx(0.0328\;Pa{\cdot}s)$, 구기자 $30^{\circ}Bx(0.0175\;Pa{\cdot}s)$, 혼합구기자 $20^{\circ}Bx(0.0099\;Pa{\cdot}s)$, 설탕용액 $50^{\circ}Bx(0.0078\;Pa{\cdot}s)$, 구기자 $20^{\circ}Bx(0.0074\;Pa{\cdot}s)$ 농축액 순이었다. 농축액들의 항복력은 구기자 열수 추출 농축액이 $0.1286{\sim}6.2532\;Pa{\cdot}s$, 혼합구기자 열수 추출농축액 $0.074{\sim}8.891\;Pa{\cdot}s$이었다. Arrhenius식에 의해 구한 유동 활성화에너지는 $20^{\circ}Bx$에서 $50^{\circ}Bx$로 농도가 증가할 때 구기자 열수 추출 농축액은 $1.6182{\sim}2.0543$, 혼합구기자 열수 추출 농축액은 $1.7057{\sim}2.1462{\times}10^7\;J/kg{\cdot}mol$로 증가하였다. 이와 같이 구기자 열수 추출 농축액과 혼합구기자 열수 추출 농축액의 리올리지적 특성에 큰 차이를 나타내지는 않았다.
