본 연구는 밥 식이와 빵 식이가 지구성 운동 후 중성지방, 그렐린, 인슐린, 혈당, 유리지방산, 지방과 탄수화물 산화율을 조사하여 두 식이의 차이점을 분석하였다. 중성지방은 지구성 운동 시 두 식이 간에 유의한 차이는 나타나지 않았으며 운동 후 회복기에서 중성지방은 밥 식이가 빵 식이보다 유의하게 감소하였다. 인슐린과 혈당에서도 밥 식이는 빵 식이보다 유의하게 감소된 결과를 나타냈다. 밥 식이와 빵 식이의 유리지방산과 지방 산화율은 운동과 운동 후 회복기에서 통계적 유의한 차이는 나타나지 않았지만 밥 식이가 빵 식이보다 다소 높은 경향을 나타내었다. 운동을 병행한 두 식이 간 비교에서 밥 식이가 중성지방 감소, 낮은 혈당 반응, 인슐린 민감성 향상의 결과가 나타났다. 이상의 결과를 종합할 때 일회성 운동이지만 서구의 주식인 빵 식이보다 우리의 주식인 밥 식이의 섭취가 운동과 병행하였을 경우 심혈관질환 예방 효과의 가능성을 볼 수 있었다.
경제발전으로 인해 한국인의 식습관이 점차 서구화됨에 따라 웰빙(Well-being)의 문제가 야기되고 있다. 웰빙은 장내 미생물 군집과 밀접하게 연관되어 있으며, 이는 섭취한 음식에 따라 가변적이다. 이에 본 연구에서는 장내 미생물의 16S rRNA 유전자를 기반으로 하여 MiSeq을 진행하였고, 고지방 식이(HFD) 및 저식이섬유 식이(LFD)로 인한 장내의 미생물 생태 비교 및 분석하고자 수행되었다. 일반 대조군(CTL) 그룹과 비교하여 각각 LFD 그룹과 HFD 그룹은 species richness가 유의적으로 감소하였고, species evenness에서는 차이가 나타나지 않았다. phylum 수준에서는 Proteobacteria는 두 처리군에서 유의적으로 증가하였고(p<0.05), 그 중 Sutterella genus가 유의적으로 가장 많이 증가하였다. Bacteroidetes는 HFD 그룹에서 유의적으로 감소하였고, S24-7 family가 가장 큰 비율로 감소하였다. 한편 Firmicutes는 HFD:LFD 그룹에서 차이를 보였고, LFD 그룹에서 Lachnospiraceae family가 유의적으로 낮은 비율로 나타난 것이 확인되었다(p<0.05). PICUSt 기반 신진대사 분석에서 LFD 그룹은 아미노산 대사 및 탄수화물 대사에 관여하는 미생물 수가 유의적으로 감소하는 양상을 보였고(p<0.05), 에너지 대사에서는 메탄 대사에 관여하는 미생물이 유의적으로 감소하였다(p<0.01). 한편 HFD 그룹에서는 아미노산 대사에 관여하는 미생물 수가 유의적으로 증가하였다(p<0.05). 글리칸 생합성 및 대사에 관여하는 미생물은 LFD 그룹과 HFD 그룹에서 유의적으로 증가하는 것으로 나타났다(p<0.01). 이상의 결과를 통해 지속적으로 불균형한 식단을 섭취하는 것은 장내 환경을 dysbiosis시켜, 대사성 질환 및 장 기능 저하를 유발할 것으로 예상된다.
Casein을 단백원으로 하고 조단백질과 지질의 함량을 조사한 사료로서 치무지개송어를 19일간 사육하여 다음과 같은 결과를 얻었다. 1) 무지개송어의 체중은 사료중의 단백질 함량이 많을수록 증가하며 단백질의 함량 $40\%$ 부근에서 최대치에 달하고 그 이상 단백질이 증가하여도 체중은 증가하지 않았다. 체단백질의 증가도 사료중의 단백질 함량이 $40\%$ 부근에서 최대치에 가까워지며 그 이상 단백질이 증가하여 도 변화는 적었다. 2) 단백질의 이용치는 사료중의 단백질 함양이 많을 수록 증가하였으나 체단백질의 축적률은 단백질의 함량 $40\%$ 부근에서 최대치에 달했다. 3) 이상의 결과에서 Casein을 단백원으로 하는 경우 치무지개송어의 단백질 요구량은 사료중 $40\%$라고 생각했다. 4) 사료의 단백효율(y)은 단백질의 함양(x)이 많을 수록 감소하고 그 관계는 y=4.91-0.034x의 방정식으로 표시 할 수 있었다. 5) 사료의 단백질 함량과 사료효율 및 사료계수와의 관계를 검토하였다. 끝으로 시종 실험을 지도하여 주신 동경수산대학에 야진길 교수에게 사의를 표한다.
This study was designed to compare the metabolic effects of varicous types of Korean diet. 40 males and same number of females of Albino rats, divided into eight groups, 5 rats each. 1 Group; Sugar casein standard Group 2 Group; Rice casein standard Group 3 Group; Rice group 4 Group; 65% Rice +35% Anchovy 5 Group; 65% Rice +35% Chinese cabbage 6 Group; 65% Rice+10% Anchovy +25% Chinese cabbage 7 Group; 65%. Rice+26% Chinese cabbage+3.5% Anchovy+4% Bean+1% Potatoes+0.2% Sea Weeds+0.3% Seasonings 8 Group; 47% Rice+24% Chinese cabbage+20.5% Anchovy+5% Bean+1% Potatoes+1.8% Sea Weeds+0.7% Seasonings The rats were kept in individual cage and given 8 different diet for 10 weeks. The result of this study were elucidated as fallow. Food intake of sugar casein standard group and rice casein standard group and Seoul diet pattern group were high, Rice diet group showed low food intake. F.E.R, P.E.R, body weight, organ weight were the similar results. The nitrogen content in various organs were no great difference, but nitrogen metabolism and total nitrogen retention were significant differences. The lipid content in the liver showed no significant differences, but fecal lipid and serum cholesterol showed significant differences. This study showed the glucose content in urine and feces were due to the dietary carbohydrate content. In other word, the results of this study showed no significant differences between sugar casein standard group and rice casein standard group, but significiant differences between standard group and experimental group.
This study attempted to evaluate the effectiveness of nutrition education on a weight control prog-ram. The major components of nutrition education in this program held for 8 weekly sessions were the general nutrition information about the diets especially low fat high carbohydrate hypocaloric diets methods of increasing physical activity strategies for the maintenace of proper body weight and other information related to the prevention of obesity. Twenty five female college students participated in this program. All subjects were randomly assigned to the Nutrition Education (NE) group or the Diet Only (DO) group. Mean energy intake of the NE group was 1,230kcal(CHO:61% PRO:15% FAT:24%) DO group consumed 1,472kcal(CHO:58%, PRO:16% FAT:26%). The NE group lost 3.3$\pm$0.7kg of body weight. In contrast the DO group lost 1.8$\pm$0.6kg The NE group experienced a significant decrease in cholesterol LDL-cholesterol level however the DO group significantly increased in triglyceride. The results of this study suggest that progressive nutrition education in a weight control program might re-duce body weight and serum lipids concentration.
The purpose of this study is to analyze the factors associated with health and diet by nutritional status. The subjects were the children aged 2 to 6. Physicians and nurses measured children's anthropometries and examined their blood and urine. Interviewers questioned children's food habits to their mothers. 24 hour recall was done for children with their mother. The nutritional status was classified to 'underweight', 'normal weight' and 'overweight' by weight for height(median±1 S.D.) of the reference population. The number of subjects in each group(under, normal, over) was 25, 130 and 49. Factors including anthropometry and hemoglobin concentration were not significantly dif ferent by the nutritional status. The birth weight of children was correlated positively to mothers' BMI. Z scores of weight for height were related to the birth weight positively by the analysis of variance. The children of the underweight group used nutritional supplements more frequently than those of normal and overweight group. The nutrient intakes of normal weight group were higher than those of low and overweight group. Particularly, the intakes of energy, carbohydrate and calcium were significantly high among the groups. In terms of number of foods, food groups and dishes consumed per day, the children of the normal weight group ate more diversely than other groups but the differences were not significant. In conclusion, the children of normal weight group had similar characteristics with other groups but had more desirable dietary intakes than other groups in this study. Because the diet of children may be different by the nutritional status, nutrition education for children should be conducted according to the characteristics of each group's diet.
The purpose of this study was to evaluate the multilateral weight control program provided by the university health care center for female college students. The program was 8weeks long and composed of nutrition consultation, exercise, and behavior modification. Nutrition education focused on a low calorie and balanced diet, increasing the intake of protein and micronutrients and reducing carbohydrate and fat consumption. Evaluations were made upon completion of an 8-week program and upon follow-up at 6 months after the end of program. A total of 92 women completed the 8-week program, while 20 completed the follow-up survey. Upon completion of the 8-week program, significant decreases in body weight, BMI, body fat (kg), and %body fat were observed, and muscle mass was also reduced. The total energy and carbohydrates intake were also significantly decreased in subjects with weight loss, while the percentage of subjects whose consumption of protein, calcium, iron, vitamin $B_1$, $B_6$, and niacin did not meet the EAR, were decreased. The blood values of glucose, total cholesterol and HDL-cholesterol were decreased. The follow-up survey revealed that the subjects continued to lose weight after completion of the program. In addition, a Mini nutrition assessment revealed that diet quality improved, especially with respect to reductions in the consumption frequency of fried, greasy and salty food. In conclusion, the multilateral weight control program with diet education for female college students was effective for long lasting weight control and improved dietary behavior. Nutrition education for weight reduction should focus on balanced nutrition as well as lowering the total caloric intake.
Fat in meat greatly improves eating quality, yet many consumers avoid visible fat, mainly because of health concerns. Generations of consumers, especially in the English-speaking world, have been convinced by health authorities that animal fat, particularly saturated or solid fat, should be reduced or avoided to maintain a healthy diet. Decades of negative messages regarding animal fats has resulted in general avoidance of fatty cuts of meat. Paradoxically, low fat or lean meat tends to have poor eating quality and flavor and low consumer acceptability. The failure of low-fat high-carbohydrate diets to curb "globesity" has prompted many experts to re-evaluate of the place of fat in human diets, including animal fat. Attitudes towards fat vary dramatically between and within cultures. Previous generations of humans sought out fatty cuts of meat for their superior sensory properties. Many consumers in East and Southeast Asia have traditionally valued more fatty meat cuts. As nutritional messages around dietary fat change, there is evidence that attitudes towards animal fat are changing and many consumers are rediscovering and embracing fattier cuts of meat, including marbled beef. The present work provides a short overview of the unique sensory characteristics of marbled beef and changing consumer preferences for fat in meat in general.
Recent trial results suggest that the consumption of a low glycemic index (GI) diet is beneficial in the prevention of high blood glucose levels. Identifying active hypoglycemic substances in ordinary foods could be a significant benefit to the management of blood glucose. It has been hypothesized that noodles with Bombyx mori powder are a low GI food. We evaluated GI and changes in postprandial glucose levels following consumption of those noodles and compared them with those following consumption of plain wheat flour noodles (control) and glucose (reference) in healthy subjects. Thirteen males (age: $34.2{\pm}4.5years$, body mass index: $23.2{\pm}1.1kg/m^2$) consumed 75 g carbohydrate portions of glucose and the 2 kinds of noodle after an overnight fast. Capillary blood was measured at time 0 (fasting), 15, 30, 45, 60, 90, 120, and 180 min from the start of each food intake. The GI values were calculated by taking the ratio of the incremental area under the blood glucose response curve (IAUC) for the noodles and glucose. There was a significant difference in postprandial glucose concentrations at 30 and 45 min between the control noodles and the noodles with Bombyx mori powder: the IAUC and GI for the noodles with Bombyx mori powder were significantly lower than those for glucose and plain wheat flour noodles. The wheat flour noodles with Bombyx mori powder could help prevent an increase in postprandial glucose response and possibly provide an alternative to other carbohydrate staple foods for glycemic management.
인터넷과 대중매체의 발전은 새로운 다이어트에 대한 사람들의 접근을 용이하게 만들었다. 그러나 사람들의 관심은 시시각각으로 변화하기 때문에 이슈가 되는 다이어트는 매년 달라지고 있다. 따라서 본 연구에서는 2016년의 다이어트에 대한 경향을 알아보고 분석하기 위해서 빅데이터 분석 방법을 이용하였고, 포털 사이트 네이버를 통해 2016년 1월 1일부터 2016년 12월 31일 까지 1년간 다이어트 키워드가 포함된 문장을 수집하고 분석하여 단순빈도 분석, N-gram 분석, 키워드 네트워크 분석, 계절성 분석을 시행하였다. 단순빈도분석을 통해 가장 많이 출현한 키워드는 '운동'으로(191,032개)나타났고, 그 다음으로 '식단'이(102,631개)로 나타났으며, 키워드 간의 연관빈도를 분석한 N-gram 분석결과 상위 결과로 다이어트-식단, 다이어트-시작, 다이어트-성공으로 나타났고, 다이어트-도시락이 새롭게 나타나 다이어트 시장의 새로운 변화를 확인할 수 있었다. 또한 다이어트 키워드와 연관된 키워드를 유사한 성격들끼리 그룹화한 키워드 네트워크 분석을 통해 식이그룹, 운동 그룹, 상업적 다이어트 식품, 상업적 다이어트 프로그램 그룹으로 총 4개의 그룹으로 세분화되었다. 계절성 분석을 통해 2월부터 7월까지 꾸준한 상승을 보였으나, 10월에 다이어트 출현빈도 수치가 급격히 상승하였고, 대중매체를 통해 소개된 고지방 다이어트의 월별 출현빈도도 10월에 급격한 상승이 있었다. 따라서 대중매체의 영향이나 새로운 다이어트의 유행이 사람들에게 큰 영향을 미치는 것을 확인할 수 있었다. 이상의 결과를 바탕으로 다이어트의 패턴은 1년을 기준으로 일정한 양상을 띠고 있으나, 새롭게 유행하는 다이어트의 출현을 통해 사람들의 관심이 변화하여 다이어트의 패턴에도 영향을 미치는 것을 확인하였다. 결국 시시각각 변화하는 다이어트를 빠르게 파악하기 위해서는 주기적이기 보다는 지속적인 모니터링과 분석이 필요하다고 판단되어진다.
