Genetic and phenotypic relationships of live body measurement traits and carcass traits in crossbred pigs of Korea

  • This study presents the estimates of heritabilities of body measurement traits and carcass traits, and genetic and phenotypic correlations of those traits for crossbred pigs in Korea. Body and ultrasound (A mode: Piglog 105) measurements in 221 pigs including body weight, length, height and width, three back fat thickness at the points of 4th, 14th rib and chine bone, eye muscle area and lean meat percent were collected at the ages of 70, 145 and 180 days and then slaughtered to measure carcass weight, back fat, belly, collar butt, spare rib, picnic shoulder, hind leg, loin, tenderloin, lean meat yield and intramuscular rough fat content in loin. Genetic analysis was done using a multi-trait animal model. Heritabilties of the body measurements were ranged from 0.331 to 0.559 and three measurements of back fat thickness were also high as range varying from 0.402 to 0.475 for the ages of 145 and 180 days. However, eye muscle area was moderate (0.296) at the age of 180 days. Heritabilities of retail cut yields were also high as ranged from 0.387 to 0.474 and of IMF content in loin was 0.499. Heritabilities of the cut percent traits were ranged from 0.249 to 0.488. Important positive genetic and phenotypic correlations were noted for all carcass yield traits (0.298 to 0.875 and 0.432 to 0.922, respectively). IMF showed low negative genetic correlations with carcass yield traits, such as carcass weight, picnic shoulder, hind leg, loin, tenderloin and lean meat yield whereas low positive genetic correlations with back fat, belly, collar butt and spare rib. Loin, tenderloin and lean meat percent showed negative genetic correlations with carcass weight, back fat thickness, collar butt, spare rib and picnic shoulder percent. The four body measurements at the ages of 70, 145 and 180 days had positive genetic correlations with belly, shoulder butt, spare rib, picnic shoulder and hind leg percent, but negative genetic correlations were shown with loin and tenderloin percent except body measurements at 70 days. The results suggest that carcass yield are negatively correlated with intramuscular fat content, which is a major factor deciding pork quality and the yield of loin and tenderloin are not increased as much as increase in body size. However, the proportions of belly and collar butt are increased with the body size. In conclusion, selection strategy should be designed according to the preference on composition of carcass in each country.

2007년 한국의 전국 57개 종합병원에서 조사한 신생아 출생 및 신생아중환자실 사망률 통계보고 (Birth Statistics and Mortality Rates for Neonatal Intensive Care Units in Korea during 2007: Collective Results from 57 Hospitals)

  • 목적 : 본 저자들은 국내 57개 병원을 대상으로 2007년 한 해 동안 원내출생아의 특성과 분포 및 신생아 중환자실 입원 환자의 특성과 분포, 그리고 사망률을 조사하였다. 방법 : 2008년 3월 신샹아 중환자실을 갖춘 곳 중 전국 57개 개 병원으로부터 2007년 한해 동안 발생하였던 신생아 출생 및 사망에 관한 설문을 보내고 회신을 받아 그 결과를 분석하였다. 그 내용에는 1) 원내 총 출생아의 재태기간별, 출생체중별 분포, 2) 신생아중환자실 입원 환자의 재태기간별, 출생체중별 분포 및 사망률이 포함되어 있었으며, 이 결과를 1996년 및 2002년에 조사되었던 한국의 결과와 비교하였다. 결과 : 총 40,433의 신생아 원내출생이 57개 병원으로부터 조사되었으며, 미숙아, 만삭아, 과숙아는 각각 24.2%, 75.6%, 0.2%의 출생빈도를 차지하였다. 또한, 저체중 출생아, 정상체중아, 과체중아는 각각 22.0%, 74.6%, 3.4%로 조사되었는데, 특히 국소 저체중출생아와 초극소 저체중출생아는 각각 4.6%와 1.7%이었다. 2007년 한 해 동안 전국 57개 병원의 신생아 중환자실에서 입원치료를 받은 환자의 분포를 보면, 재태기간에 따라 조사된 총 인원수는 21,957명, 출생체중에 따라 조사된 총 인원수는 21,356명으로 조사되었다. 이들의 사망률은 미숙아, 만삭아, 과숙아에서 가각 4.5%, 0.7%, 3.7%이었고, 특히 재태기간 32주 미만에서는 11.3%, 보다 작은 재태기간 28주 미만에서는 26%의 높은 사망률을 보이고 있었다. 1996년과 2002년의 국내 자료와 비교하여 보면, 미숙아, 저체중출생아, 초극소 저체중출생아의 출생수는 현저히 증가하고 있었으며, 이들의 사망률은 감소하는 양상을 확인할 수 있었다. 결론 : 본 저자들은 과거 1996년과 2002년의 국내 조사 결과와 2007년의 본 연구 결괄ㄹ 비교해 보았을 때 미숙아, 저체중출생아와 초극소 저체중츨생아의 빈도가 증가하고 있으며, 이들의 사망률은 현저히 감소하고 있음을 확인하였다. 비록 한국 미숙아 진료의 결과가 개선되고 있는 것으로 조사되었으나, 아직도 초미숙아의 사망률은 높기 때문에 이들의 치료에 보다 많은 노력을 기울여야 할 것으로 생각된다.

It is looked by the other that individual's special quality uses area facilities according to life partner's existence and nonexistence and family composition and existence and nonexistence of profession and distinction of sex. Show difference of external behavior according to public garden and market and supermarket and welfare facilities etc.'s location in dwelling environment of area and relation about facilities of area has been formed and old people and dwelling environment of area can know that is that do interaction. Environment that access about facilities may have to be easy, and can live that communicating closely with area's inhabitantses may have to consist so that old people may can run various external life.. Notions of the evaluated value is an profit(+) and expense(-) that decide design intention. To adapt real planning, 1. A raster type space cell has logical site informations. 2. To be evaluate various factor. 3. To reflect operator's design mind, they should add an extra weight on evaluated value.

Effects of Tannery Wastes on the Fattening of Growing Cattle, Carcass, and Meat Quality

  • The present study was conducted to determine the effect of tannery waste protein concentrate (TWPC) on fattening of cattle and the carcass and meat quality, with the aim of replacing the costly commercial protein concentrate (Jasoprot) with a more economical and effective alternative. Twelve young cattle (six male and six female) were fed during the study period on a control diet (T1) with 10% Jasoprot and on two test diets: 5% TWPC + 5% Jasoprot (T2) and 10% TWPC (T3). The test diets significantly affected (p<0.05) live weight gain and profitability compared to the control diet, perhaps due to the increased protein and essential amino acid content, relative to Jasoprot. TWPC was free of aflatoxin. Sensory-evaluated organoleptic scores did not differ among the groups. Chemical composition was normal as other beef and was non toxic especially within recommended chromium level ($1.90{\pm}0.6{\mu}g$) Total lipid contents were higher (p<0.05) in T3, and moisture, ash and crude protein contents were almost similar (p>0.05) among the three groups. It is concluded that TWPC or an equal mixture of TWPC and Jasoprot may be an economic and efficient alternative protein source to Jasoprot in the cattle industry, which minimizes adverse effects on carcass and sensory meat quality.

Comparison of physicochemical traits of dry-cured ham from purebred Berkshire and crossbred Landrace × Yorkshire × Duroc (LYD) pigs

  • This study was conducted to compare the physicochemical traits of dry-cured hams made from two different pig breeds: Berkshire and $Landrace{\times}Yorkshire{\times}Duroc$ (LYD). Pigs were slaughtered at a live weight of approximately 110 kg and cooled at $0^{\circ}C$ for 24 h in a chilling room. Then, the ham portion of the carcasses were cut and processed by dry-curing for physicochemical analyses. The dry-cured hams from Berkshire contain higher crude protein, fat, and ash level than those from LYD, whereas the hams from LYD had higher moisture contents than those from Berkshire(p < 0.05). The pH values of the hams from Berkshire were lower than those from LYD (p < 0.05). The hams from Berkshire had lower $L^*$ and $b^*$ values than those from LYD (p < 0.05). Palmitoleic acid (C16:1), oleic acid (C18:1), elaidic acid (C18:1t), monounsaturated fatty acids, and ratio of n-6 and n-3 fatty acids (n-6/n-3) in the ham from Berkshire were higher than LYD (p < 0.05). Free amino acids such as aspartic acid, threonine, serine, asparagine, glutamic acid, and lysine in hams from Berkshire were higher than those from LYD (p < 0.05). The microbial population had no significant difference between Berkshire and LYD dry-cured ham. The cross sections of dry cured ham showed difference from different breeds using scanning electron microscope and indicates some differences in texture. Considering the meat quality parameters of ham, hams from Berkshire could provide variety of ham for consumer who are seeking various different qualities and stories.

Effects of driving style and bedding in pigs transported to slaughterhouse in different temperatures

  • Animal welfare during transport became an largely issue because of increasing demand for improved animal welfare standards. Most studies on the animal welfare during transportation have concentrated on the atmosphere and the temperature of the truck compartments. Thus, the objective of study was to collect and quantify three axis acceleration and determine the effect of bedding for transporting pigs from farm to slaughterhouse. A total of 2,840 crossbred fattening pigs with a live weight of approximately 115 kg were used. They were raised in the same commercial farms and transported to the same commercial slaughterhouse. A 3×2×2 completely randomized factorial design was used to investigate effects of rubber type bedding (bedding or non-bedding) and two levels of driving style (aggressive or normal) in three different time periods with different outside temperatures. Air temperature treatments were as follow: high temperature ([HT] higher than 24℃); low temperature ([LT] lower than 10℃); normal temperature ([NT] 10℃ to 24℃). In our experiment, pigs transported under aggressive driving style showed lower (p < 0.05) pH and water holding capacity (WHC) than those transported under normal driving style. Pigs transported under normal driving style showed a lower percentage of drip loss (DL) (p < 0.05) than those transported with an aggressive driving style. Also, transported with bedding showed higher (p < 0.05) lying behavior but lower (p < 0.05) sitting behavior than those transported without bedding. Pigs transported under normal driving style showed lower (p < 0.05) cortisol level than those transported under aggressive driving style. In conclusion, aggressive driving style cause acute stress in pigs, while bedding helps alleviate acute stress in pigs during transportation in LT.

보리의 사료가치평가와 한우 거세우 급여에 의한 발육 및 육질개선효과 구명 (Effects of Dietary Barley on the Growth Performance and Carcass Characteristics in Hanwoo Steers)

  • 본 연구는 보리의 급여수준 또는 가공 형태가 반추위 내 발효특성과 소화율 및 한우의 성장과 육질에 미치는 효과를 조사하고자 실시하였다. 분쇄보리와 압편보리를 이용하여 반추위 fistula를 장착한 한우암소 4두를 이용하여 4종류 시험사료(옥수수구, Corn; 분쇄보리구, GB; 압편보리구, DRB; 분쇄압편보리구, GDRB)에 대한 소화시험을 수행하였고(시험 1), 아울러 19개월령 거세한우 40두를 공시하여 비육후기 한우 거세우의 보리 급여가 육질에 미치는 효과를 구명하기 위한 사양시험을 실시하였다(시험 2). 시험 1: 보리첨가 시험사료의 소화 및 영양학적 가치 조사1.사료 섭취에 따른 반추위 내 pH의 변화는 GB와 DRB에 비해 Corn 및 GDBR 형태에서 pH의 저하 폭이 더 컸으며, GDRB구는 최저 pH가 5.5까지 떨어져 반추위 내에서 사료분해가 급격하게 이루어지는 경향을 보였다. 2.암모니아농도의 변화는 시험사료에 따른 차이는 없었으나, GR구와 DBR구에서는 꾸준하게 다른 두 처리구에 비해 비교적 낮은 농도로 안정적인 발효환경을 보였다. 시험 2 : 비육후기 한우 거세우의 가공보리 첨가사료 급여에 따른 증체 및 육질 개선효과 1.시험 개시 후 280일이 지난 28개월령의 DRB구 거세한우의 평균 체중이 683kg로 가장 높았고, 분쇄 및 압편보리를 첨가한 GDRB구의 평균 체중이 653.3kg로 가장 낮았다. 2.옥수수구(Corn)와 분쇄보리(GB)를 섭취한 거세한우는 전 기간 비슷한 일당증체를 보였으며, GDRB구의 일당증체가 가장 낮았다. 그러나 DRB 사료를 섭취한 거세한우의 19~23개월령 평균 일당증체가 0.89kg이었고, 24~28개월령 사이에는 0.43kg로 다른 처리구에 비해 높은 증체 효과를 보였다. 3.보리의 가공 형태는 생체중, 냉도체중, 도체율, 등지방두께 및 육량지수 등에 영향하지 않았으나 등심단면적은 분쇄보리를 급여한 GB구에서 92.5cm2로서 현저히 증가되었는데(P< .015), 가장 작았던 GDRB구에 비해 16% 증가되었다 4.분쇄보리가 함유된 GB구의 근내지방도는 평균 5.5로서 가장 높았다. 육색은 RDB와 GDRB가 공히 4.6으로 다른 처리구에 비해 0.2정도 밝았으며, 지방색 역시 보리를 더 많이 섭취된 GDRB에서 현저히(P<.002) 밝은 것으로 나타났다. 그러나 성숙도 면에서는 근내지방이 가장 높았던 GB에서 가장 좋았다(P<.018). 5.옥수수와 보리위주의 비육후기 사료를 섭취한 거세우 등심근육에서 수분과 조단백질 함량은 처리간 차이가 없었으나 지방 함량은 GDRB의 거세한우에서 18.55%로 타 처리구에 비해 높았다(P<.01). 6.등심근의 육색 중 적색도(a*)는 처리간 거의 비슷한 수준이었으나, 보리급여와 급여량이 많을수록 명도(L*)와 황색도(b*)가 증가하여 육색이 개선되는 경향이었는데, 등심의 육색소 함량은 oxy-myoglobin 함량이 보리 급여구에서 현저히(P<.015) 높았다. 전단력은 DGB 처리구가 가장 낮아 연도가 가장 좋았으나 보수력, 가열감량 등에서는 처리간 차이가 없었다. 7.지방산 조성의 경우 GDRB 처리구에서 linolenic acid(C18:3 n3)및 n6/n3 비율이 각각 현저(P<.049, P<.009)하게 높았으나 다른 지방산은 처리간 유의차가 없었다.

The Growth Performance, Carcass Characteristics, and Meat Quality of Egg-Type Male Growing Chicken and White-Mini Broiler in Comparison with Commercial Broiler (Ross 308)

  • The present study was conducted to compare the growth performance, carcass characteristics, and meat quality of the egg-type male growing chicken (EM), white-mini broiler (WB), and commercial broiler (Ross 308, CB). A total of 360 1-d-old chicks were reared together using a completely randomized design with 4 replicates for each group under the identical feeding and rearing conditions. The ADG and gain:feed were the highest in CB, intermediate in WB, and the lowest in EM (p<0.05), and the live and carcass weights of CB and EM were significantly higher than those of WB (p<0.05). The pH of breast meat from WB and CB was significantly higher (p<0.05) than that from EM with a similar body weight. The EM had the lowest moisture (p<0.05) and the highest protein content (p<0.05), whereas the fat and ash contents were not different among groups. The mystiric acid (C14:0), palmitoleic acid (C16:1 ${\omega}7$), and oleic acid (C18:1 ${\omega}9$) levels were significantly higher in breast meat from CB (p<0.05). The monounsaturated fatty acid (MUFA) content showed the highest (p<0.05) levels in CB. In contrast, the polyunsaturated fatty acid (PUFA) contents of breast meat, including linoleic acid (C18:2 ${\omega}6$) and arachidonic acid (C20:4 ${\omega}6$), were higher (p<0.05) in EM and WB than in CB. In conclusion, the EM and WB had less growth performances in comparison with CB, but they each had some unique features (taste, flavor, and physiological characteristics) when raised under the identical rearing and feeding conditions.

육성비육돈용 자동급이기 사료공급장치 개발에 관한 연구 (Development of the Automatic Feeder for Growing-finishing Pigs)

  • 본 연구는 사료 급여량 자동조절 및 사료의 허실을 최소화하며 구조가 간단한 육성비 육돈용 자동급이기 개발을 위해 수행하였다. 개발 시작형 자동급이기의 주요 구성은 사료저장조, 사료이송장치, 사료이송제어장치, 사료진타장치, 프로그램머블 IC, 개인용 컴퓨터로 구성되었다. 개발 시작형 자동급이기의 가루사료의 초당 평균 이송량은 $9.83{\pm}0.4\;g$, 이었다. 개발 시작형 자동급이기를 이용 체중 43 kg 내외 육성돈(렌드레이셔)을 공시 6주 동안 콘크리트 돈방에서 사양 시험을 실시하였다. 개발 시작형 자동급이기는 사료공급 시간을 2초, 3, 4, 5, 6초로 설정, 검증시험을 수행 하였다. 개발 시작형 자동급이기 일일 급이기 방문 빈도는 사료이송 구동시간에 관계없이 05~11시와 11시부터 17시 사이에 집중적 이었다. 사료허실을 줄이기 위하여 개발 시작형 자동급이기 사료이송 시간은 2~4초 이내가 적절한 것으로 나타났다. 개발 시작형 자동급이기의 사료이송 기준 6초를 제외하고, 개발 시작형 자동급이기가 관행 급이기보다 시험 전기간 평균 일당 종체량(0.8~0.9 kg)은 같거나 높고, 일일 사료섭취량과 (2.76~2.93 kg), 사료요구율 (3,10~3.66)은 같거나 낮은 것으로 나타났다. 이상 결과를 일당증체, 사료섭취량, 사료요구율, 사료 허실량 등을 종합 해보면 육성비육돈용으로 개발 시작형 자동급이기 이용이 가능할 것으로 사료된다.

Physicochemical Meat Quality, Fatty Acid and Free Amino Acid Composition of Strip loin, Chuck Tender, and Eye of Round Produced by Different Age Groups of Hanwoo Cow

  • This study was performed to investigate the influence of age on the physicochemical properties of strip loin (m. longissimus lumborum), chuck tender (m. supraspinatus), and eye of round (m. semitendinosus) of Hanwoo cows. Hanwoo cows (n=126; 24-194 mon; live weight, 270-500 kg) were slaughtered and three muscles were obtained according to 3 age groups (G1, < 5 years old; G2, 6-8 years old; G3, > 9 years old). The chuck tender had significantly higher protein contents in G3 than in G1 or G2 (p<0.05). For strip loin and chuck tender, G1 had significantly higher intramuscular fat contents than G3 (p<0.05). The chuck tender had significantly higher $b^*$ (yellowness) values for G2 than for G1 (p<0.05). The three muscles had significantly higher cooking loss (%) and lower WHC (%) in G3 than in G1 or G2 (p<0.05). WBS values of strip loin were significantly higher in G3 than in the other groups (p<0.05). The three muscles had higher C18:1n9 in G1 than that in the other groups. The total content of saturated fatty acids was significantly higher in G3 than in G1 for all 3 muscles (p<0.05). Regarding free amino acid contents, G1 had significantly higher contents of threonine, alanine, valine, methionine, phenylalanine, leucine, and lysine in the strip loin than G2 or G3 (p<0.05). In conclusion, young cow beef were higher in the WHC, intramuscular fat and free amino acids contents, whereas old cow beef had higher cooking loss and WBS (p<0.05).
