Selection of Promising 'Ssam' Vegetable for Summer Production in Highland (고랭지 여름출하용 유망 쌈채소 선발)

  • Field investigations were initiated to determine possible new 'ssam' vegetable that could be grown during the summer season in highland. Korean 'ssam' means cooked rice in vegetables. The 'ssam' vegetable is called that those leaves has been used for wrapping at meal. Seventeen leafy vegetables were studied, including chard (Beta vulgaris L. var. flavescens DC.), leaf broccoli (Brassica oleracea L. var. italica), Chinese leek (Allium tuberosum Rottl.), Japanese hornwort (Cryptotaenia japonica Hassk), red leaf mustard (Brassica juncea L.), green leaf mustard (Brassica juncea L.), leaf parsley (Petroselinum crispum Nijim), pakchoi (Brassica campestris L. ssp. chinensis Jusl.) tatsoi (Brassica campestris var. narisoma), kale (Brassica oleracea var. acephala), collard (Brassica oleracea var. acephala), Korean mint (Agastache rugosa O. Kuntze), romaine lettuce (Lactuca sativa L. var. longifolia Lam.), red leaf chicory (Cichorium intybus L. var. folisum), red chicory (Cichorium intybus L. var. folisum), green leaf chicory (Cichorium intybus L. var. folisum), and sprouting broccoli (Brassica oleracea L. var. italica). Date of the first harvest in 1999 was July 10th in chard, leaf broccoli, red mustard, mustard, leaf parsley, pakchoi, tatsoi, kale, collard, Korean mint, red leaf chicory, red chicory, green leaf chicory, and sprouting broccoli. Date of the first harvest for Chinese leek, Japanese hornwort, and romaine lettuce was from the middle of June to the late of August. Based on ratings on marketable yield, we found good leaf shape, taste and yield in chard, red leaf mustard, green leaf mustard, pakchoi, tatsoi, romaine lettuce, red leaf chicory, red chicory, and green leaf chicory. Even though the most of all these vegetables were obtained high scores by test panels in shape, taste and quality, but some of them revealed inadequate leaf size as a 'ssam' vegetable. That problem will be solved by control of harvesting time. On the basis of this observation, chard, red leaf mustard, green leaf mustard, pakchoi, tatsoi, romaine lettuce, red leaf chicory, red chicory, and green leaf chicory were rated as promising 'ssam' vegetable by analysis of profits, adaptation, and quality.

Removal of Pesticide Residues in Field-sprayed Leafy Vegetables by Different Washing Method (엽채류에 엽면 살포된 농약의 세척 방법에 따른 제거)

  • Pesticides were sprayed on perilla leaf and leafy lettuce in a greenhouse and the reduction rate of pesticide residues on each vegetable by washing were tested. The reduction rate of pesticide residues by washing for 30 sec~3 min on perilla leaf were 3~63% in tap water, 2~58% in salt water, 6~74% in green tea water, and 8~86% in detergent solution. The detergent solution only showed significant difference in reduction rates compared to the tab water washing. Considering reduction effects of the washing duration, it was showed that the reduction rates were a pattern of inclining as the duration of washing process increased, but there was no significant difference in the reduction rates except the reduction rates between washing in the detergent solution for 1 min and 3 min. Comparing washing in flowing tab water and in stagnant tab water with leafy lettuce, the reduction rate by one time washing were 8~68% in flowing tab water and 7~64% in stagnant tab water. The water and the time used in this experiment were 17.5 L, 2.9 min with flowing tab water and 4 L, 1 min with stagnant tab water. The reduction rate by 3 times washing in stagnant tab water were 16.5~76.6%, and the water and the time used were 12 L, 3 min. Therefore, when the water and the time used to wash vegetables were considered, washing two or three times in stagnant tab water could be more effective than washing one time in flowing tab water.

  • Carotenoids are abundant int he Korean food supply. The intake of foods rich in carotenoids appears to be associated with optimal health, and a reduction in the risk of cancer, cardiovascular disease, macular degeneration and cataract formation. Specific dietary carotenoids may be responsible for these specific protective effects. Hydrocarbon carotenoids such as $\alpha$-,$\beta$-carotenes and lycopene may reduce the risk of cancer and heart disease, whereas oxygenated carotenoids, such as lutein and zeaxanthin, may be important in protection of the eye. Dietary carotenoids, such as lutein, cryptoxanthin, $\alpha$-carotene, $\beta$-carotene and lycopene can be readily obtained from the diet, Green leafy vegetables, such as spinach and broccoli, contain both oxygenated and hydrocarbon carotenoids ; yellow or orange vegetables, such as carrots, have high levels of $\alpha$-carotene and $\beta$-carotene ; and tomatoes contain high amounts of lycopene. Besides being important vitamin A sources, provitamin A carotenoids such as $\alpha$-carotene, $\beta$-carotene and cryptoxanthin, participate in the cell defense systems that are associated with radical quenching. Non-provitamin A carotenoids, such as lutein and lycopene, major carotenoids in human plasma, have also been reported to possess strong antioxidant capability. The alteration of dietary sources of carotenoids can modify their levels in the circulation and target tissues, and thus prevent or delay the onset of these chronic diseases.

Protection of Green Leafy Vegetable Extracts Against Oxidation of Human Low Density Lipoprotein

  • Oxidation of low density lipoprotein (LDL) is regarded to play an important role in the development of atherosclerosis. In the present study, salad vegetables with a remarkable DPPH radical-scavenging activity were extracted with methanol, and the methanol extracts were evaluated for the inhibition of $Cu^{2+}$-induced oxidation of human LDL. Separately, the amount of total phenolics was determined colorimetrically using Folin-Ciocalteu reagent. The vegetable extracts, expressing a strong inhibition of LDL oxidation ($IC_{50}$ values, <$100\;{\mu}g/mL$), were from angelica, dandelion, mustard leaf, and water spinach, which contained relatively high level of polyphenol content. Noteworthy, a highly positive correlation was observed between inhibition of LDL oxidation and amount of total polyphenol (p<0.01). Based on these results, it is suggested that salad vegetables, especially angelica, dandelion, and mustard leaf, may be used as easily accessible sources of natural antioxidants, especially in anti-atherosclerosis.

Vitamin C Intake and Serum Leverls in Smoking College Students (흡연대학생의 비타민 C 섭취량과 혈청수준)

  • As ciarette smoking adversely affects vitamin C metabolism in humans, smokers need substantially more vitamin C intake than do non-smokers to achieve similar serum vitamin C concentration. To provide the basic information currently available for the determination of vitamin C requirement for Korean smokers, we investigated the differences the serum vitamin C values between smokers(n=53) and non-smokers(n=62) in relation to their intake of the vitamin through diet in 115 male college students, who had not been using vitamin C supplements. Dietary intakes of vitamin C were determined by a 24-hour recall, and serum vitamin C was determined using the 2, 4-dinitrophenylhydrazine method. The mean vitamin C intakes of smokers and non-smokers were consuming less than 75% of the Koeran RDA for vitamin c in their diet. Smokers consumed yellow and green leafy vegetables more often (P=0.02) and fresh fruits less often(P=0.006) than non-smokers. The mean serum vitamin C concentration of smokers consuming the same amounts of vitamine C as non-smokers, 64.3 umol/1, were 20% lower than for non-smokers, 80.1 umol/l(P<0.05). The risk of low serum vitamin C concentration (LoC) among smokers were 3.8% compared with 1.6% in non-smokers, and the odd ratio for LoC risk was 2.43. There were no correlations between dietary and serum vitamin C for smokers and non-smokers. It was concluded that smokers might require at least 20% more vitamin C to reach the same concentration comparable to non-smokers.

EFFECT OF DIFFERENT SOURCES OF FIBER ON THE INTESTINAL MORPHOLOGY OF DOMESTIC GEESE

  • Experiment was conducted to study the effect of sources of dietary fiber on the intestinal morphology of geese. Sixty white Roman geese of two-week-old were divided randomly into six groups and were fed with isoenergetic and isonitrogenous diets which contain alfalfa meal, barley hull, rice hull, purified cellulose, lignin, or pectin as the major dietary source of fiber. Different sources of dietary fiber significantly influenced the villi height and the crypt depth in the duodenum, and the villi height and the muscle layer thickness in the ileum (p < 0.05). The duodenal villus in the geese that fed diets with alfalfa meal, rice hull or pectin supplemented were significantly longest ($968.5{\mu}m$), whereas the lignin group was significantly shortest villus and deepest crypt depth (p < 0.05). The thicknesses of the ileal and caecal muscle layer were significantly thicker in the geese fed with cellulose supplemented diets than in those fed with the other treatment diets. The caecum of the barley bran fed geese possessed significantly longest villi and the most thick muscle layers (p < 0.05). From scanning electronic microscopic observation, the leafy and plate-like in the duodenal villi morphology of geese represented a more effective nutrient absorption in the small intestine. The morphology of ileal villi in geese was similar from herbivorous rabbit and from the African Green monkey.

Analysis of Diet Contents and Nutrition Education in Picture Books (유아 그림책에 나타난 식사 및 식생활 교육 내용 분석)

  • This study was conducted to analyze the nutrition education and diet contents presented in toddler picture books. The study was conducted from August to October 2015 and examined five of Korea's major online bookstores. Finally, we analyzed 296 books, and 67 books contained dietary life contents. The contents of nutrition education were mainly about eating an even diet and keeping good table manners. However, contents of specific, practical dietary guidelines were not included. Therefore, it is recommended to eat a variety of vegetable side dishes at every meal, eat on time and not eat salty, sweet and fatty foods. Most parenting styles on feeding practice for nutrition education were dictatorial. To make parenting styles more effective, the parents' style should be more desirable. In order to provide internal motivation for toddlers and have a positive education effect, teaching methods on eating using picture books should be presented in a positive way. Food often appearing in picture books were vegetables, but green leafy vegetables were hardly observed. Foods that frequently showed up in picture books were pastries, which reflect Westernized food culture.

Dietary Factors Associated with Hyperlipidemia in Korean Postmenopausal Women

  • This study was performed to investigate the related dietary factors associated with hypercholesterolemia in postmenopausal Korean women. The study sample comprised 455 postmenopausal women aged40 $\leq$ < 65. The hypercholesterolemic (serum cholesterol $\geq$240mg/dl group (N = 82) showed significantly higher BMI and waist circumference compared to the normal group (N = 373). However, both group did not show any significant difference in energy intake but hypercholesterolemic group demonstrated significantly lower intakes of fat and vitamin A with higher intake of vitamin C. Significant dietary factors associated with the higher risk of hypercholesterolemia included consumption frequencies of light color vegetable more than 3.79times/day (OR = 4.62 ; $95\%$ CI : 2.96 - 7.22), dried squid more than 0.08time/day (OR = 1.63 ; $95\%$ CI : 1.13 - 2.35), and beer more than 0.03time/day (OR = 1.57 ; $95\%$ CI : 1.01-2.43). Whereas consumption frequency of yellow and green leafy vegetables more than 1 time per day was associated with the significantly lower risk of hypercholesterolemia (OR = 0.06 ; 95 CI : 0.038 - 0.101). Inhibitory Effect of Fermented Spanish Extract on Inorganic phosphate-induced Vascular Calcification in ex vivo Aortic Rings (발효 시금치 추출물의 무기인산염에 의해 유도된 혈관 석회화 저해 효과)

  • Spinach (Spinacia oleracea L.), a green leafy vegetable, is well known as a functional food due to its biological activities. Vascular calcification is associated with several disease conditions including atherosclerosis, diabetes, and chronic kidney disease (CKD), and is known to raise the risk of cardiovascular diseases related morbidity and mortality. However, there are no previous studies that have investigated the effects of fermented spinach exract (FSE) against aortic and its underlying mechanisms. Therefore, this study investigated the effects and action of possible mechanisms of FSE on inorganic phosphate (PI)-induced vascular calcification in ex vivo mouse aortic rings. PI increased vascular calcification through calcium deposition in ex vivo aortic rings. FSE inhibited calcium accumulation and osteogenic key marker, runt-related transcription factor 2 (Runx2), and bone Morphogenetic Protein 2 (BMP-2) protein expression in ex vivo aortic rings. And, FSE inhibited PI-induced extracellular signal-regulated kinase (ERK) and p38 phosphorylation in ex vivo aortic rings. These results show that FSE can prevent vascular calcification which may be a crucial way for the prevention and treatment of vascular disease association with vascular calcification.

Protoplast Isolation and Differentiation of Marine Green Alga Monostroma nitidum (해산 녹조류 참홑파래, Monostroma nitidum의 원형질체 분리와 분화)

  • High yields of protoplasts were obtained following enzymatic digestion of the vagetative thalli of marine green alga Monostroma nitidum. The enzyme mixtures containing $4\%$ Cellulase R-10+$3\%$ Macerozyme R-10+$3\%$ Abalone acetone power produced $4.41\times10^6$ protoplasts per 300 mg of fresh tissue. The highest yield of protoplasts was obtained by 270 minutes treatment of the thalli in enzyme solution. Freshly isolated protoplasts were spherical in shape and ranged between $13\~33\mu$m in diameter. The high efficiency of differentiation were obtained by incubating freshly isolated protoplasts in 0.4 M mannitol f/2 medium for 7 days and then transferring to 0.2 M mannitol f/2 medium. Protoplasts began to form new cell walls three days after initial culture and began to germinate after 10 days, and then form a leafy thallus after further culture in f/2 medium. The addition of antibiotics in media inhibited the differentiation of protoplasts in culture.
