The Study of Pytoestrogen Intake and Bone Mineral Density of Vegetarian and Nonvegetarian Postmenopausal Women (채식과 일반식 폐경 후 여성의 식물성 에스트로겐 섭취와 골밀도와의 관련성)

  • There is some evidence that phytostrogen plays an important role in bone metabolism in postmenopausal women. In this study, we investigated the phytoestrogen intake levels and the relation between dietary phytoestrogens intake and bone mineral density of vegetarian (n = 77) and omnivore postmenopausal women (n = 122 . Vegetarian women, all of them were seven day adventists, who had been on vegetarian diet (almost lacto-ovo vegetarians;a few vegans) oyer 20 yrs. The average age of vegetarians and omnivores were 62.3 yrs and 60.2 yrs, respectively and, there was no significant difference. However, body weight (p < 0.001), body mass index (p < 0.001) of vegetarians were significantly lower than those of omnivores. The mean daily energy intake of vegetarians and omnivores were 1386.1 kcal (76.3% of RDA) and 1424.5 kcal (76.9% of RDA), respectively. The mean calcium intake of vegetarians (456.7 mg, 66.3 % of RDA) was not significantly different from that of omnivores (453.5 mg, 65.2 % of RDA). The mean daily isoflavones (daidzein +genistein) intake of vegetarians and omnivore were 33.9 mg and 23.9 mg, respectively. The vegetarians consumed significantly greater quantities of isoflavones (p < 0.05) and lignans precursor (p < 0.05). In the vegetarians, intake of isoflavones was significantly positively correlated with BMD of femoral neck, after adjusted for age and BMI. Also lignan precursor intake of vegetarians was significantly positively correlated with BMD of spine, after adjusted for age and BMI. In conclusion, in omnivore post menopausal women, intake of phytoestrogen such as isoflavones and lignans was little low, and it is not clear that positive association with bone mineral density. But in vegetarian postmenopausal women, phytoestrogen intakes be important factors related to bone mineral density.

Association between Hair Mineral Content and Nutritional Status in Vegetarians and Non-Vegetarians (채식과 비채식인의 모발 내 무기질 함량과 영양상태의 관련성)

  • Previous studies have shown that plant-based vegetarian diets, which typically contain a variety of antioxidants and dietary fiber, help reduce the risk of heart disease, diabetes, obesity, and cancer. However, some studies have reported that vegetarian diets can lead to deficiencies in protein and trace minerals compared to non-vegetarian diets. This study was conducted to compare anthropometric measurements, blood parameters, dietary intake, and hair mineral status in long-term vegetarians (MV; moderate vegan, LV; lacto-ovo vegetarian) and non-vegetarians (NV). Thirty MV (12 males, 18 females; mean age, $50.58{\pm}5.05$ years), 15 LV (11 males, four females; mean age, $49.45{\pm}4.97$ years), and 30 NV (15 males, 15 females; mean age, $48.90{\pm}3.62$ years) participated. No significant differences were observed for age, height, weight, or body mass index, but body fat was significant lower in MV and LV males than that in NV males. White blood cell counts of MV, LV, and NV male subjects were significantly different. Dietary intake data showed that plant protein and plant iron intake were significantly higher in MV and LV than those in NV. Animal protein, animal fat, and animal iron intake were significantly higher in NV than those in MV and LV. A hair mineral analysis showed that calcium and iron were higher in the hair of MV and LV than those in NV. Zinc concentration in hair was not significantly different among the groups. The results suggest that vegetarian diets are adequate to sustain mineral status to at least the same degree as that of non-vegetarian diets.

Characterization of the \beta-Galactosidase Produced by Streptomyces sp. YB-10 (\beta-Galactosidase를 생산하는 Streptomyces sp. YB-10의 분리 및 효소 특성)

  • A strain YB-10 was isolated from soil as a producer of the extracellular $\beta$-D-galactosidase, which catalyzes the hydrolysis of lactose. The strain YB-10 was identified as Streptomyces sp. on the basis of its cultural, morphological and physiological properties. After treating culture supernatant of the isolate with ammonium sulfate, the precipitated protein was used as a crude $\beta$-galactosidase for analyzing its reaction properties with para-nitrophenyl-$\beta$-D-galactosidase(pNP-$\beta$Gal) as a substrate. The $\beta$-galactosidase showed its maximal activity at pH 6.0 and 6$0^{\circ}C$. The enzyme was also active on lactose. The hydrolyzing activity of $\beta$-galactosldase for pNP-$\beta$Gal and lactose was decreased by galactose. Its hydrolyzing activity far lactose was also decreased by glucose, but the activity for pNP-$\beta$Gal was increased to 1.8-folds by glucose.

  • The latest definition of a prebiotic is "a substrate that is selectively utilized by host microorganisms conferring a health benefit"; it now includes non-food elements and is applicable to extra-intestinal tissues. Prebiotics are recognized as a promising tool in the promotion of general health and in the prevention and treatment of numerous juvenile diseases. Prebiotics are considered an immunoactive agent, with the potential for long-lasting effects extending past active administration of the prebiotic. Because of its extremely low risk of serious adverse effects, ease of administration, and strong potential for influencing the composition and function of the microbiota in the gut and beyond, the beneficial clinical applications of prebiotics are expanding. Prebiotics are the third largest component of human breast milk. Preparations including galactooligosaccharides (GOS), fructooligosaccharides (FOS), 2'-fucosyllactose, lacto-N-neo-tetraose are examples of commonly used and studied products for supplementation in baby formula. In particular, the GOS/FOS combination is the most studied. Maintaining a healthy microbiome is essential to promote homeostasis of the gut and other organs. With more than 1,000 different microbial species in the gut, it is likely more feasible to modify the gut microbiota through the use of certain prebiotic mixtures rather than supplementing with a particular probiotic strain. In this review, we discuss the latest clinical evidence regarding prebiotics and its role in gut immunity, allergy, infections, inflammation, and functional gastrointestinal disorders.

Effect of NMDA Receptor on Analgesic Effect of Bovine Milk-derived Lactoferrin (BLF) (우유속 락토페린의 NMDA 수용체를 통한 진통효과)

  • Lactoferrin is a multifunctional protein that is found in milk, neutrophils, and other biological fluids, and its receptors have also been identified in the central nervous system. Recently, it was reported that bovine milk-derived lacto­ferrin (BLF) produced analgesia via a $\mu$-opioid receptor-mediated response in the spinal cord. However the precise mech­anism of this analgesic effect is remains unclear. In Randall-Selitto paw pressure study, each single administration of morphine (10 mg/kg) and BLF (50, 100 and 200 mg/kg) induced analgesia, however, NMDA receptor antagonist MK-801 (0.1, 0.2 and 0.3 mg/kg), inhibited analgesia induced by BLF (100 mg/kg). Intracerebroventricular infusion (I.C.V.) of N­methyl-D-aspartic acid (NMDA) ($0.3\;{\mu}g/8.0\;{\mu}l/hr/day$), as a NMDA receptor agonist, reversed inhibition of MK-801 (0.3 mg/kg) on analgesia induced by BLF (100 mg/kg). These results suggest that BLF have analgesic effect, through NMDA recep­tor activation.

Effects of Decomposition of Organic Substances as Rice Straw and Chicken Manure mixed with Saw Dust treated with Commercial Inoculums (미생물제(微生物劑)의 퇴비부숙(堆肥腐熟) 효과(效果))

  • These experiments have been conducted to study the effect by microbial inoculums currently on the market of enhancing the decomposition of organic matters. As a result of studying the effect of enhancing the decomposition of rice straw and chicken manure mixed with saw dust treated with commercial inoculums, it was found that the use of inoculums have speeded up the rate of decomposing straws at the early stage. The decomposition rate of rice straws that have speeded up with the use of comcrial inoculums in at early incubation periods has slow down in the later stage while the decomposition rate of chicken manure that has slowed down in the early stage has speeded up at the later incubation. As a result, it is found that there have been no differences between the use of microbial inoculums and control. In the experiment, filamentous fungus is found to have played an important role in decomposing the rice straws and bacteria is considered to have played a greater role in the decomposition of chicken manure mixed with saw dust.

Study on Milkability Traits in Holstein Cows

  • The present investigation was undertaken to study the milkability characteristics of Holstein cows. Out of 6,660 initial records 4,607 records were finally included in the analysis after deleting some records with an abnormal range of values for the traits considered. These 4,607 Holstein cows belonged to a total of 122 herds located in a province in Korea. The 'LactoCorder' instrument was used to electronically record the milkability traits at the milking parlor. A total of 19 traits were studied which were broadly classified into milk yield, milking speed, milking time and the electrical conductivity related traits. The SAS 9.1 statistical software was used to carry out analyses. The average maximum milk flow per minute was 3.21 kg/min, while the average milking speed during the main milking process (DMHG) had a mean value of 2.30 kg/min. The total milk yield was 14.14 kg, 62% of which was milked during the first three minutes of the milking. The average total milking time was 8.23 min. Among the three phases of the main milking process, the time of stable milk flow had the longest time (2.97 min) followed by the time at the decline phase (2.62 min). The average time taken to reach the plateau phase was 1.08 min, which can still be reduced further through improved managemental practices. Among milk yield traits, milk yield during the first two (MG2) and three (MG3) minutes of milking had high positive correlation with milking speed traits and negative correlations with almost all the milking time traits except time of incline in milk flow from 0.5 kg/min till the attainment of the plateau phase (tAN). Milking speed traits had negative correlations with total milking time, time at main milking process, time at plateau and with the time at decline. Since there was medium to high negative correlation between the milking speed and the time at plateau, there is a need for selection of cows which have intermediate milking speed so that it could require less milking time and also the optimum (higher and longer) plateau time. Proper pre-stimulation and avoiding over milking will help in further reducing the milking time and thus will add to the net profit of the farmer.

A Study for Comparison of Dietary Quality and Vitamin K Intake of Vegetarians with Carnivores (채식선호자와 육식선호자의 식사의 질 및 비타민 K 섭취 비교 연구)

  • The prevalence of chronic diseases have been rising in the developing countries because of their increased animal foods consumption and Western lifestyle. Lately, vegetarian diet that exclude animal products get public attention. The purpose of this study was to evaluate the nutritional status and dietary quality of vegetarians, and their consumption of vitamin K and was also assessed. Vegetarians including strict vegan and lacto-ovo-vegetarian consumed their diet at least over 6 months. Carnivores were gender and age matched with vegetarians and they consumed over 50% of protein and fat from animal sources. Current nutrient intakes and dietary quality were assessed using 3-day food records and intake of vitamin K was calculated from the data base of 'Provisional Table on the vitamin K contents of foods, USA'. Blood sample were collected and biochemical parameters and plasma phylloquinone concentrations were analyzed. Anthropometric data from vegetarian and carnivore were not significantly different. The intake of calories, protein, vitamin $B_2$, Ca and Zn of the vegetarians were remarkably lower than RDA for each nutrient. Moreover, index of nutritional quality and nutrient adequacy ratio of vegetarians were lower than those of carnivore. Vegetarian consumed less fat and the ratio of n-6/n-3 fatty acid was lower in vegetarian. The intake of essential amino acids in vegetarian was significantly lower than that of carnivore. The vitamin K consumption and plasma phylloquinone concentration of vegetarian were significantly higher than those of carnivore (p<0.05). The dietary vitamin K consumption was positively correlated with plasma phylloquinone levels in vegetarian (p<0.01).

Antimicrobial activities of oral bacteria by lichen extracts (지의류 추출물의 구강세균에 대한 항균효과)

  • Objectives : By investigating antimicrobial activity of natural extracts, identifying its usefulness as antibiotic material to oral bacteria. Methods : Antimicrobial activity tests of 25 natural extracts were implemented on 6 type strains alleged to cause dental caries and 10 clinical strains isolated and identified from dental caries. Results : Among medicinal plants, Coptis japonica, Scutellaria baicalensis, Dictamnus dasycarpus showed antimicrobial activity. Among lichens, 3 methanol extracts and 6 acetone extracts showed antimicrobial activity. Minimum Inhibitory Concentration(MIC) test of Usnea aurantiacoatra KoLRI 004184, an acetone extract of lichen with the highest antimicrobial activity, on 6 type strains involved in dental caries and 10 strains isolated from dental caries resulted as follows; Actinomyces oris 1041 $12{\mu}g/ml$, for Corynebacterium durum 3151 $13{\mu}g/ml$, for Rothia dentocariosa KCTC $3204^T$ $14{\mu}g/ml$, for R. dentocariosa 911 $15{\mu}g/ml$, for R. dentocariosa 1822 $12{\mu}g/ml$, for Lacto-bacillus casei KACC $12413^T$ $12{\mu}g/ml$, for L. acidophilus KACC $12419^T$ $16{\mu}g/ml$, for L. rhamnosus 2421 $15{\mu}g/ml$, for Streptococcus mutans KCTC $3065^T$ $15{\mu}g/ml$, for S. mutans 121 $13{\mu}g/ml$, for Streptococcus oralis 2221 $18{\mu}g/ml$, for S. salivarius KCTC 5512 $14{\mu}g/ml$, for S. salivarius 122 $12{\mu}g/ml$, for S. sanguinis KCTC $3284^T$ $14{\mu}g/ml$, for S. sanguinis 912 $14{\mu}g/ml$, for Neisseria sp. KEM232 $12{\mu}g/ml$. Conclusions : Even a small amount of extract from lichen Usnea aurantiacoatra KoLRI 004184 showed very high level of antimicrobial activation against all 16 bacterial strains involved in dental caries.

Cardiovascular Risk Factors among Malaysian Urban Vegetarians

  • One-hundred thirty-six Chinese men and women who are members of the Malaysian Confucian Association from Kuala Lumpur city and suburbs were included in the study. They have been vegetarians for a mean period of about 6 years with the majority of them(91.2%) at lacto/ovo vegetarians. The average age of the male and female subjects in 33 and 34 years respectively. The mean BMI for the men and women are 22.5$\pm$2.4kg/$m^2$ respectively. The mean levels of serum total cholesterol, HDL-chol and LDL-chol for men are 4.27$\pm$0.77, 1,11$\pm$0.26 and 2.60$\pm$0.54mmol/L, while the corresponding values for women are 4.24$\pm$081, 1.34$\pm$0.29 and 2.41$\pm$0.28 mmol/L, All the respondents showed TC/HDL-chol levels within the normal cut-off point of <5.8mmol/L. Majority of the subjects showed normal range levels for serum retinol, carotenoids and $\alpha$-tocopherol. The mean systolic blood pressure for men and women are 122$\pm$16mmHg and 115$\pm$13mmHg, while their diastolic blood pressure are 82$\pm$7mmHg and 79$\pm$7mmHg respectively. Hypertension was found at a higher prevalence in men(17.6%) than among the women(7.1%). None of the respondents smoke cigarettes while approximately two-thirds of them carry out physical exercise at least once a week. their usual dietary intake includes frequent consumption of a wide variety of vegetables, fruits, nuts and legumes. In summary, Malaysian vegetarians have a low cardiovascular risk based on their health-oriented lifestyle.
