대형 외식업소 조리종사자 위생인지도와 수행도 및 고객 위생만족도 (Foodservice Employees' Awareness and Performance in Sanitation and Customers' Satisfaction with Sanitation at Large-Sized Restaurants)

  • The purpose of this study was to investigate the foodservice employees' awareness and performance in sanitation and customers' satisfaction with sanitation in large sized restaurants in Korea. Sanitation inspections were carried out in 200 large Korean, Western, Chinese, and Japanese style restaurants, and in buffet-style restaurants in Daegu and Gyeongbuk province. Foodservice employees' awareness of sanitation and customers' satisfaction with sanitation were investigated by interviewing 317 foodservice employees and 205 customers. Results of the inspection of restaurants showed low performance in food handling, employees' hygiene (hygienic) practices, and in cleaning food processing equipment. Scores of the foodservice employees' awareness in Chinese style restaurants were significantly lower than scores of workers in western restaurants. Foodservice employees had low awareness of sanitation procedures used for food storage and cleaning of equipment in Korean, Chinese, and Japanese style restaurants. Foodservice employees had low awareness of equipment cleaning, inspection and food distribution in western style restaurants and of equipment cleaning and food handling in buffet-style restaurants. Foodservice employees at all restaurants had the lowest performance in terms of HACCP. This shows that HACCP application and recording have not yet been properly carried out at restaurants in Korea. Foodservice employees had low performance scores in food handling, vegetable disinfection and disinfection after hand washing. Research on customers' satisfaction with sanitation revealed a low rating of kitchens and foodservice employees at all restaurants. Customers had low satisfaction with servers and kitchen environments in Korean style restaurants with food, tableware, utensils and servers in western style restaurants; with food and kitchen environments in Chinese style restaurants with servers, tableware, and utensils in Japanese style restaurants and with kitchen environments and servers in buffet-style restaurants. Therefore, cleanliness of kitchen facilities and equipment, and hygienic food handling procedures by workers in restaurants are urgently needed.

서양식 패밀리 레스토랑의 브랜드 인지도에 관한 분석 (An Analysis on Brand Awareness of Western-style Family Restaurants)

  • The verified results of this study on the selected study assignments are as follows: Brand awareness of the western-style family restaurants in both study assignment One and Two is examined by showing and comparing the restaurants ranked from first to third. The ranking is based on the survey response rate only. And the familiarity of family restaurants' logos is investigated by statistical techniques such as T-test Anova, Duncan's Multiple Range Test, etc. Firstly, the analytical result of study assignment One shows that the brand awareness of the family restaurants can vary depending on how often customers use the restaurants. Secondly, the analytical result of study assignment Two shows that the familiarity and the preference of the restaurants ranked from first to third are identical each other depending on customers' sex, marital status, and income. Besides, the result shows that the brand awareness shows different rankings depending on customers' age, educational background, and occupation. Thirdly, the analytical result of study assignment Three indicates that the familiarity is different depending on customers' age, educational background, occupation, and annual income.

한정식업소에서 제공되는 1인분 영양소와 가격 비교조사 - 서울시 특급호텔과 창원시를 중심으로 - (A Survey of the Nutrients and a Price Comparison of Korean Style Full Course Meals - Based on Korean Restaurants in Changwon City and in Luxurious Hotels in Seoul -)

  • The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ii ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by two different types of Korean style restaurants. A total of 27 restaurants participated in this study, 7 restaurants from the luxurious hotels in Seoul and 20 restaurants from the City of Changwon. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance (RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) Compared with 1/3 or the Korean RDA, all the nutrients were oversupplied. The average nutrient ratios were about 3.7 times higher than 113 of the Korean RDA in calories, about 9 times higher in proteins, 10 times higher in phosphorus, 7 times higher in Vitamin Bl, and 12 times higher in Vitamin E. 2) Seventy-five percent (n = 20) of the restaurants served within the range of thirty to forty dishes, whereas most of the hotel restaurants (70%) served twenty dishes or fewer. 3) The average carbohydrate: protein: fat (CPF) ratio of caloric nutrients was 40:26 : 34. This study concluded that: i) Korean style full course meals provide too much food, nutrients, and calories, resulting in an over- or unbalanced nutrient intake, and ii ) the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. Such over -or unbalanced nutrient intake could cause chronic degenerative problems such as cancer and cardiovascular disease. These findings indicate that restaurants serving Korean style full course meals should carefully plan their menus in order to provide their customers with balanced meals. They should also be strongly encouraged to play an active role in improving their customers' nutritional status, as well as reducing the restaurants wastage of food. Lastly, further research should be conducted to improve the quality of the menus in Korean restaurants. (Korean J Community Nutrition 8(3) : 327∼339, 2003)

녹색성장 개념을 적용한 음식점 평가지 개발 (Development of Restaurant Assessment Questionnaire for Application of Concept of Green Growth)

  • The purpose of this study was to investigate the practices for management manual development of Good Restaurants in order to apply Green Safety Management technology. A total of 128 restaurants in Seoul according to restaurant size and style were analyzed by SPSS (window ver. 12.0). Exactly 38.3% of those surveyed purchased manicured vegetables and seafood that generates less garbage; Korean restaurants displayed the lowest frequency of purchasing preprocessed foodstuff, and Japanese restaurants had the most refrigerators and thermometers and kept the refrigeration temperature the lowest. Exactly 56.5% of the restaurants sold large and small amounts of main menu separately; Chinese restaurants displayed the highest rate while Western restaurants displayed the lowest. Furthermore, only 7.3% of the restaurants were willing to sell either large or small amounts of the same menu item. Japanese style menu had the most number of side dishes (6.1) while Western style menu had the lowest (1.8). Most of the restaurants were equipped with containers for leftovers (87.4%), but the rate of customers who took out leftovers significantly differed depending on the style of restaurant (p<0.05).

농가맛집 운영유형별 방문객의 기대 및 인식, 만족도 조사 (A Study on Visitor’s Expectations, Perception and Satisfaction When Dining in a Farm Styled Restaurant)

  • Farm themed restaurants is an initiation by the Rural Development Administration (RDA) in order to perpetuate and develop Korean traditional food-culture. This food business model contributes to the increase of local food consumption and non-farm income for rural communities. Thus, the purpose of this study was to investigate the visitor's expectations, perception and satisfaction on the farm restaurant management type in order to assist activation of farm restaurants. Farm restaurants were categorized into two types; restaurant style and experience style. The majority of subjects(67.9%) were experiencing their first time to dine at farm restaurants. Regardless of farm restaurant style, the subjects perceived that farm restaurants use high quality food ingredients. The degree of subjects expectations prior to visiting a farm restaurant was estimated by 7 Likert scales. The results show that most subjects had high expectations for using good-quality food ingredients such as ‘fresh food (restaurant style 6.25, dietary education style 6.02)’ and ‘environment-friendly food (restaurant style 6.07, dietary education style 5.91)’. Overall satisfaction of the farm restaurants was also high. The satisfaction of food scored 4.1 and the satisfaction of experience program scored 3.8.

전국 한식제공 음식업소에서의 음식물 쓰레기량 실태 파악 및 감소방안에 관한 연구 (Study on the Amounts of Kitchen Wastes and Method for Reduction of Its Wastes Disposed in Korean Style Restaurants)

  • This research was conducted to survey amounts of kitchen wastes disposed and to find method for reduction of the kitchen wastes. Questionnaires were developed. Survey was conducted in Korean style restaurants 1,292 in nationwide and recovery rate of questionnaires is 97.52%. Amounts of kitchen wastes disposed were calculated using programme developed in this research institute. As a results, wastes of food disposed in prepreparation phase large quantities is the vegetables. Wastes of fruits, fishes and shellfishes were disposed in large quantities, too. Amounts of wastes of boiled chicken with ginseng, Jeon-Gol, and rosted beef ribs in dishes were much due to refuse portion as bone. Wastes of kitchen are composed of food wastes 44%, dishes wastes 56% in nationwide in Korean style restaurants. Amounts of kitchen wastes disposed in Korean style restaurants are 28.33 kg in large city, 24 kg in small city and rural, respectively. Methods for the effective reduction of kitchen wastes in restaurants were suggested. Also, it is possible to utilize the kitchen waste as fertilizer or feed for animals but economic feasibility could cause problems.

창원시 소재 한정식업소에서 제공되는 1인분 제공량과 섭취량 실태조사 (Survey on Nutrients of Served and Consumed Foods in Korean Restaurants in Changwon)

  • The objectives of this study were to conduct preliminary research to investigate full course meals in Korean style restaurants in order: i) to analyze the nutrient contents of full course meals per servings, and ⅱ) by analyzing the above, to examine the amount and the quality of the foods served in the full course meals by Korean style restaurants in Changwon. A total of 20 restaurants in Changwon participated in this study, and two investigators visited there, consumed and investigated it. A key finding was that restaurant patrons tended to overconsume nutrients as compared to the Korean Recommended Daily Allowance(RDA), and restaurants generated large amounts of food wastes due to the excess food served. Other findings were as follows: 1) 1,821.2Kcal were served, 1,052.6Kcal were consumed and 768.6Kcal which is equivalent to 1/3RDA were thrown away on average. 2) The average carbohydrate:protein:fat(CPF) ratio of caloric nutrients was 42:27:31. 3) The correlation between the consumed and unconsumed calories was r=0.661 and the correlation between served and unconsumed calories was r=0.819. Both consumed and unconsumed calories were closely related to the served calories. 4) The result of the research showed that mean INQ in most nutrients was higher than 1.0, especially INQ in unconsumed food is mostly higher than INQ in provided and consumed food. 5) The unconsumed food and the meal prices were closely correlated in terms of price loss. These findings indicate the Korean style full course meals consisted of a high-protein, high-fat and high-caloric intake, which is similar to a westernized caloric nutrient pattern. They should also be strongly encouraged to play an active role in improving their customers’ nutritional status, as well as reducing the restaurants wastage of food. Lastly, further research should be conducted to improve the quality of the menus in Korean restaurants.

서울지역 음식점의 흡연 , 금연구역 설치현황 조사 (Survey on Running Smoking , No - Smoking Area in Restaurants in Seoul)

  • Running smoking, no-smoking area in restaurants(n=546) in 25 districts in Seoul area was surveyed and evaluated. No-smoking restaurants were evaluated as A(2.0 points). Restaurants running no-smoking area with guidance to the customers were evaluated as B(1.7 points), and those without guidance as C(1.4 points). In case of the distinction of smoking or no-smoking area are not clear, it was evaluated as D(1.1 points). Restaurants which are not running no-smoking area were scored E(0.8 points). Western style restaurants scored average of 1.55points, which was significantly higher than that of Korean, Chinese or Japanese style ones(average of 1.24~1.27 points). The highest mean score for restaurant 1.625 points in Songpa-gu(district).

신문 광고에 나타난 1940년대 후반 서울 외식업의 양상과 변화 - 4대 신문의 음식점 광고 분석을 중심으로 - (The Patterns and Changes of the Late 1940s Seoul Restaurant Industry in Newspaper Advertisements - Focused on Analysis of the Four Major Newspaper's Advertisements -)

  • This study researches the restaurant industry in Seoul during the late 1940s. The research was based on the four major newspapers in Korea. The data included a total of 227 businesses with 164 non-fusion restaurants that served single-nation type food consisting of 101 Korean, 31 Western, 20 Japanese, and 12 Chinese. Some examples of South Korean dishes are Masan, Daegu, and Jeolla-do-style local foods. As for North Korean food, Pyongyang-style bulgogi, Naengmyeon, Hamheung-style janggukbap, and Gaejangguk were introduced frequently. Chinese restaurants that appeared were high-end places with Beijing-style cuisine. In the case of Japanese restaurants, they mostly had Sukiyaki with Joseon food served as well. Moreover, Western restaurants were fusioned with Japanese as in pork cutlet and curry rice. Others are comprised of "French Cuisine", "Indian curry rice", "Steak", and "Russian soup". This analysis indicates that foreign cuisines had actively entered the market.

창원시 식품접객업소의 위생실태에 관한 조사연구 (A Study on the Sanitary Status at Various Types of Restaurants in Changwon City)

  • 본 연구에서는 창원시에 소재하고 있는 264개 식품접객업소의 위생실태를 조사하였으며 조사결과는 다음과 같다. 조사대상자(조리책임자)들은 40대가 가장 많았고, 여성이 70.1%로 대부분을 차지하였다. 학력을 보면 63.7%가 고졸이었으며, 업종에 있어 경양식 업종이 다른 업종에 비해 연령층이 낮고 학력이 높았다. 위생교육은 전체 업소의 66.5%가 종업원에 대한 위생교육을 실시하고 있었으며 가장 높은 비율을 보인 업종은 한식 업종(83.1%)이며 가장 낮은 비율을 보이는 업종은 경양식 업종(55.6%)이었다. 종업원의 96.6%가 더러운 것을 만진 후에 손을 씻었으며 돈을 만진 후에는 77.5%가, 전화 사용 후에는 51.7%가 손을 씻고 있었다. 또한 58.5%는 주방 내에서 전용신발을 착용하며, 55.4%는 위생복을 착용하지만 모자를 착용하는 비율은 10.6%밖에 되지 않았고, 악세사리의 착용에서 반지는 13.6%, 팔찌는 8.5%, 시계는 14.3%가 착용하고 있었다. 위생점검표는 24.2%만이 보유하고 있었다. 도마는 전체적으로 일주일에 1회 소독이 74.8%로 조사되었다. 경양식 업종은 55.4%로 다른 업종보다 낮게 나타났다(p<0.01). 칼은 조사대상 업소의 71.6%가 매일 소독하고 있었으나 경양식 업종은 59.4%로 낮게 나타났다(p<0.01). 행주는 조사대상 업소의 92.7%가 매일 소독을 수행하고 있으나 경양식 업종이 81.5%로 다른 업소보다 낮게 나타났다(p<0.01). 조사대상 업소의 81.8%는 정기적인 방충 방서 작업을 시행하였고 쓰레기통의 조리실과 옥외용의 분리는 조사업소의 83.1%가 분리하여 사용하고 있었다. 작업종료 후 작업장 바닥의 청소에서 97.3%는 세제를 이용하여 세척하고 있으나 소독은 68.2%만이 실시하고 있어 소독 수행이 잘 이루어지지 않고 있었다. 식품접객업소의 93.3%는 조리된 음식과 조리되지 않은 음식을 분리해서 보관하고 있었다. 한번 해동시킨 식품을 다시 냉동하여 사용하는 업소의 비율도 49.8%로 조사되었다. 19.4%는 배식 후 남은 음식을 다시 사용하고 있었다. 또한 냉동식품을 해동시킬 때는 식중독의 위험이 높은 실온에서 9.4%가 해동시켰으며, 특히 갈비 업종의 경우 66.7%가 실온에서 해동하고 있었다. 이상의 결과를 살펴볼 때, 식품접객업소의 종업원에 대한 위생교육 실시가 낮으므로 정부에서는 이들이 종업원에게 위생교육을 전체적으로, 지속적으로 실시하는 방안에 대한 제도적인 장치를 마련하여야 하겠다. 위생교육 내용에서도 식당시설, 기기 등 취급시의 손세척 실시와 도마소독, 작업장 바닥 소독이 미비하므로 소독의 중요성과 소독방법에 대해서도 강조하여야 하겠다. 식품 취급시 조리된 음식에 대한 온도관리가 미비하고 해동시의 온도관리가 제대로 시행되지 않았고 특히, 위생에서 온도-시간관리의 개념이 매우 부족하므로 식품 접객업소의 경영주와 종업원을 대상으로 이러한 측면에 대한 정기적인 위생 교육이 실시되어야 하겠다.
