Cooking Properties and Antioxidant Activity of Cooked Rice According to the Addition of Glutinous and Non-glutinous Sorghum (찰수수 및 메수수 첨가 밥의 취반특성과 항산화활성)

  • The purpose of this study was to evaluate the physicochemical characteristic of the cooked rice added with glutinous and non-glutinous sorghum. The sorghum cultivars were Sorghum bicolor L. Moench cv. Hwanggeumchal, Nampungchal (glutinous), and Donganme (nonglutinous), and rice cultivar was Ilpum rice. The cooking properties and pasting characteristics of cooking rice adding with sorghum according to varieties and different addition rates evaluated. The cooking properties and pasting characteristics had significant changes with the varieties and different addition rates of sorghum. With increased addition rates of sorghum, the pasting temperature, peak viscosity, trough viscosity, breakdown viscosity, and final viscosity were decreased. With increased addition rates of sorghum, the total polyphenol and flavonoid contents before and after cooked rice were increased. Total polyphenol contents of 30% addition rates before cooking rice with Hwanggeumchal, Nampungchal, and Donganme sorghum were 1,693.30, 1,890.98 and $2,386.11{\mu}g/g$ sample, whereas those after cooking rice with sorghum were 1,189.28, 1,190.42 and $1,397.87{\mu}g/g$ sample, respectively. The high level of DPPH radical scavenging activity before and after cooking rice with sorghum were 126.29 and 70.58 mg TE/100g sample in the Donganme in 30% addition rates. Also, ABTS radical scavenging activity was 135.56 and 83.12 mg TE/100g sample, respectively. The results of this study show that the addition of sorghum can make cooked rice improved antioxidant activity.

Evaluation in physicochemical properties of soy sauce fortified with soymilk residue (okara koji) (비지 koji 첨가에 따른 양조간장의 발효 중 이화학적 특성 평가)

  • To evaluate the practical use of okara koji in soy sauce fermented with soybean koji, the okara koji was fortified with different contents (0, 50, and 100%) in soybean koji and then fermented for 90 days. The saltiness of the soy sauce was about 17.15~17.22%. The higher okara koji content showed lower net soluble solid contents of 8.73, 6.12, and 2.50%, as well as lower acidity levels of 1.09, 0.98, and 0.47%. The buffering capacity of the soy sauce decreased to 1.26-3.41 by adding higher okara koji. The protease activity was higher in the soy sauce with 50% orara koji and decreased with longer fermentation. Also, the tyrosine content peaked to 275.2 mg% after 90 days. ${\alpha}$-amylase showed higher activity in the soy sauces fortified with okara koji, which resulted in the highest total sugar and reducing sugar contents after 60 days. The total sugar and the reducing sugar in the soy source decreased after longer fermentation. The total free amino acid contents of the soy sources fortified with okara koji (0, 50, and 100%) were 41.68 mg/mL, 33.10 mg/mL, and 9.27 mg/mL, respectively. In particular, the glutamic acid contents of the three types of soy sauces were highest, and most amino acids, except for glutamine, increased during the fermentation for 90 days. The sensory evaluation, except of the saltiness and color, showed similar values in the soy sauces, except in the okara koji 100%. Thus, okara koji could be a valuable ingredient of traditional soy sauces. However, the 50% okara koji did not differ significantly from the others.

Morphological Variation of Winter Buds of Quercus variabilis BL. In Korea (굴참나무 천연집단(天然集團) 동아(冬芽)의 형태적(形態的) 변이(變異))

  • For the study of morphological variation in winter buds of Q. variabilis $B_L$. natural populations in Korea, 16 populations were selected through the country in consideration of latitude, longitude, altitude, and geographical characters. Thirty trees were randomly selected from each population and 30 terminal and 30 lateral buds were sampled below 1/3 crown length of each tree. Four morphological characters including length and width of terminal and lateral buds were measured. 1. Length and width of terminal and lateral buds were in the ranges 6.9~11.3cm, 3.0~3.7cm, 6.1~8.9cm, and 2.5~3.1cm, respectively. The coefficient of variation were in about 20% in all the characters investigated. 2. All the characters were significantly different among populations as well as among individuals within populations. The degree of contribution of variance among individuals within populations was higher than that among populations. 3. Length of terminal bud showed positive correlation with length and width of lateral bud; and width of lateral bud with width of terminal bud and length of lateral bud. Also, positive correlations were observed between longitude and width of terminal bud, between latitude and length of terminal and lateral bud. 4. Cluster analysis using complete linkage method for winter bud characters showed two groups to Euclidean distance 3.4. They were group I of population 8 and group II of populations 1, 2, 3, 4, 5, 6, 7, 9, 10, 11, 12, 13, 14, 15, and 16. However, group II was divided into two at Euclidean distance 1.5 that are a group including populations 1, 2, 7, 9, and 11(groupII-1) and the other group including populations 3, 4, 5, 6, 10, 12, 13, 14, 15, and 16(groupII-2).

Vegetation Structure of Pinus densiflora Community for Conservation and Restoration of Tricholoma matsutake - Pine Mushroom Appearance Area in Yangyang-gun, Kangwon-do - (송이생산지 보전 및 복원을 위한 소나무군락의 식생구조 분석 - 강원도 양양군 송이발생지역을 중심으로 -)

  • Korea Expressway Corporation have a plan to make a new highway from East Hongcheon to Yanayang in Kangwon-do(province). This research was conducted to analyze a vegetation structure of japanese red pine forest and to prepare conservation and restoration basic information for minimizing the effects on pine mushroom producing by road construction. Considering the range of effects by road construction, twenty plots were set up near road construction reserved area, and surveyed. The result analyzed by TWINSPAN, one of the classification technique, showed that the communities were divided into four groups which are two Pinus densiflora community, Pinus densiflora-Quercus variabilis community and Pinus densiflora-Deciduous broad leaves forest community(IV). Species diversity index of each community ranged from $1.7353{\pm}0.0341$ to $1.9079{\pm}0.2471$, and the average number of species was $9.2{\pm}2.8$, especially $9.6{\pm}5.0$ at canopy layer in the unit area($100m^2$). The number of individuals ranged from 4 to 29 and average 9.55 in the unit area($100m^2$). The average RSI(relative space index) was below 35%, the average estimated age of the forest was $38{\pm}8.34$ years. The depth of $A_0$ layer of soil was 4~6cm and the range of soil acidity was pH4.70~5.63(average pH 5.29). Pine mushroom and Japanes red pine have a close symbiosis relation. Therefore it is needed that minimizing the read construction which goes through the pine mushroom producing area. If a road goes through a pine mushroom producing area, restoration measurement is prepared to prevent forest from rapid change such as succession or vegetation structure.

  • This study was conducted to investigate the impact of sand addition to an intertidal for the development of the Manila clam habitat on benthic community structure. For this, we focused on the spatio-temporal changes in the surface sediment condition and benthic community structure before and after the event. Study site was an sandbank in Gonam-myeon, Taean-gun where sand added to on July 2010. We set three stations at each of sand adding area (experimental plot) and non sand-adding area (control plot) and did sampling works ten times from June 2010 to October 2011. Directly after the event, surface sediments changed to very coarse sand, but the state was not maintained over four months because of seasonal sedimentation and finally got back to very fine sand in eight months. The number of species and density were temporarily reduced right after the event and crustacean species such as Apocorophium acutum, Photis sp. were most negatively affected by the event. However, the number of species recovered from the reduction in three months and density did in four months due to the recolonization by the existing species and species in the vicinity of the plot. During the study period, dominant species continuously changed from the species such as A. acutum, Photis sp. at the time before the event, through the species such as Heteromastus filiformis, Macrophthalmus japonicus at the time right after the event, to the species such as Musculista senhousia, Ruditapes philippinarum, Mediomastus californiensis in the latter part of the study period. Although surface sediment properties and ecological indices recovered within a certain period after the event, the recovery of community structure has never been observed up to the end of the study.

The assessment of dentoalveolar compensation in facial asymmetry individuals: integration of cone beam CT and laser scanned dental cast images (Cone beam CT 영상과 석고모형 레이저 스캔 영상의 결합을 이용한 안면비대칭자의 치성보상 평가)

  • Objective: The purpose of this study was to assess the dentoalveolar compensation in facial asymmetry individuals using an integration of a CBCT image and a laser scanned dental cast image. Methods: The subjects consisted of 30 adults with asymmetric mandibles and 20 adults with symmetric mandibles. The CBCT and laser scanned dental cast images were integrated with a registration technique. Canine and first molar position and angulation were assessed from reference coordinates. The differences between deviated and non-deviated sides were analyzed with the paired t-test. The differences shown according to menton deviation were also statistically analyzed using Pearson correlation analysis. Results: The experimental group showed deviated and non-deviated side differences (dev.-ndev.) in the position and angle of the canine and first molars. Menton deviation showed positive correlation with the deviation side (dev.-ndev.) for the maxillary and mandibular 1st molar angles, negative correlation with the deviation side for the vertical position of the maxillary 1st molars, transverse position of the mandibular canine, transverse position and vertical position of the mesio-lingual cusp of the mandibular 1st molars. Conclusions: The upper and lower canine and first molars of facial asymmetry individuals were compensated, so the transverse position, vertical position, and angle showed differences between the deviated/non-deviated sides.

Studies on the Varietal Resistance of Rice to the Green Rice Leafhopper, Nephotettix cincticeps UHLER (끝동매미충에 대한 벼의 품종저항성에 관한 연구(1))

  • Experiments were conducted to study resistance of rice varieties originated from Korea·and IRRI-sources to the green rice leafhopper, Nephotettix cincticeps UHLER. The nature of varietal resistance to the insect was evaluated from the viewpoints of ovipositional and feeding preferences and antibiosis. A trial was also made to survey local biotypes o( the green rice leafhopper possible to show different reaction for the rice varieties. The varieties resistant to the green rice leafhopper were mostly IRRI sources such as Bir-tsan-3, MTU-15, DK-1, DV-139, H105, ASD-7, MGL-2, PTB-18, Muthumanikam, Vellanlangalayan, and the domestic commercial varieties were generally susceptible, but only the reaction of Tong-il and its lines were moderate. Ovipositional and feeding preferences were significantly different among the varieties, but no correlation was observed between the two preferences. The nature of varietal resistance to the insect seemed to be related with the feeding preference, not ovipositional preference. The green rice leafhoppers confined on the resistant varieties such as PTB-18, Muthumanikam, H105 etc. suffered higher nymphal mortality than the susceptible varieties such as T(N) 1 and Jinheung. Though the varieties Mudgo and Suweon 214 were moderately resistant and moderate in plant reaction, the insects confned on two varieties suffered relatively higher nymphal mortality. No local biotypes of green rice leafhoppers with respect to plant reaction were found.

Economic Analysis of Upland Crop Irrigation Between Individual and Collective Well Water Supply (밭 공간분포와 개별·집단관정 이용을 고려한 밭용수 공급 경제성 분석)

  • Profitability of upland crops is better than paddy crops and proportion of upland is increasing. However, there is a lack of infrastructures for upland irrigation. The object of this study were to develop water supply scenarios using individual and collective agricultural wells to evaluate economic feasibility to consider geographical analysis of upland farms and water supply facilities. Cheongyang, Dangjin, Yesan, and Goesan were selected as study areas where four different crops of red pepper, chinese cabbage, apple, and bean, respectively, were mainly produced in Chungcheong province. As a result, B/C ratio was estimated as 1.49, 1.36, 1.90, and 0.71 in using individual wells scenario, and 1.45, 1.20, 1.91, and 0.65 in using collective wells scenario for red pepper, chinese cabbage, apple, and bean. It turned out that change of price effected on economic feasibility a lot for crops with low production income. As a result of evaluating economic feasibility by number of plots for developing collective well, there was no effect of economy of scale for red pepper and chinese cabbage. In case of collectivizating more than 20 upland plots, effect of economy of scale appeared for apple and bean. In conclusion, development of water using high value crops including red pepper and apple, and effect of collective well requires additory analysis of .spatial distribution of farms.

Craniofacial morphologic alteration induced by bone-targeted mutants of FGFR2 causing Apert and Crouzon syndrome (어퍼트 및 크루즌 증후군을 유발하는 골조직 특이성 FGFR2 돌연변이에 의한 두개안면 형태의 변화)

  • Objective: Activating mutations in the fibroblast growth factor receptor-2 (FGFR2) have been shown to cause syndromic craniosynostosis such as Apert and Crouzon syndromes. The purpose of this pilot study was to investigate the resultant phenotypes induced by the two distinctive bone-targeted gene constructs of FGFR2, Pro253Arg and Cys278Phe, corresponding to human Apert and Crouzon syndromes respectively. Methods: Wild type and a transgenic mouse model with normal FGFR2 were used as controls to examine the validity of the microinjection. Micro-CT and morphometric analysis on the skull revealed the following results. Results: Both Apert and Crouzon mutants of FGFR2 induced fusion of calvarial sutures and anteroposteriorly constricted facial dimension, with anterior crossbite present only in Apert mice. Apert mice differed from Crouzon mice and transgenic mice with normal FGFR2 in the anterior cranial base flexure and calvarial flexure angle which implies a possible difference in the pathogenesis of the two mutations. In contrast, the transgenic mice with normal FGFR2 displayed normal craniofacial phenotype. Conclusion: Apert and Crouzon mutations appear to lead to genotype-specific phenotypes, possibly causing the distinctive sites and sequence of synostosis in the calvaria and cranial base. The exact function of the altered FGFR2 at each suture needs further investigation.

Characteristics of Breeding Birds Community in Relation to the Forest Environment in Deogyusan National Park (덕유산국립공원의 산림환경에 따른 번식기 조류군집 특성)

  • We studied the forest environment and characteristics of bird community between April and September of 2010 on the Hyangjeokbong area(A), Baekryunsa area(B) and Anseong area(C), all in the Deogyusan National Park. Hyangjeokbong area of the high latitude ridge was characterized by the Taxus cuspidata and Abies koreana etc., and deciduous broadleaf forest species, such as the Quercus mongolica, with abundance of subalpine zone coniferous trees, the Hemerocallis fulva and the Rhododendron schlippenbachii, while the areas Baekryunsa and Anseong were primarily characterized by deciduous broadleaf forests, with the valleys showing Fraxinus mandshurica colonies. In terms of the DBH(diameter at breast height) of trees, between 11 and 20cm showed the highest frequencies, while over 30cm was the highest in Baekryunsa area and the lowest in Hyangjeokbong area. Furthermore, in terms of coverage in relation to layers, in Hyangjeokbong area, the coverage volume of the lower layer was very high, in Baekryunsa area, the coverage volume of the middle layer between 8 and 12m was the highest, and in Anseong area, the coverage volume of the upper layer over 18m was the highest. A total of 53 bird species were observed during the study period at the Deogyusan National Park. The numbers of species and density of areas were 25 species and 45.20 Ind./km for Hyangjeokbong area, 50 species and 58.63 Ind./km for Baekryunsa area and 35 species and 66.89 Ind./km for Anseong area, with Baekryunsa area showing the highest number of species and Anseong area showing the highest level of density. In terms of dominant species, in Hyangjeokbong area, Cettia diphone, along with species which inhabit in grassland and shrubs, were the dominant species, and species which live in the canopy layer, including the Aegithalos caudatus, were found to be dominant in Baekryunsa and Anseong areas. For guild structure, bush nesting guild and bush foraging guild species were the highest in all areas, and the hole nesting guild and the air foraging guild species showed the lowest proportion. This seems to be the result of the low number of trees with diameter at breast height of over 30cm, which results in the lack of nesting grounds for hole nesting guild species.
