우리나라 성인의 식사패턴 변화 추세 - 1998, 2001, 2005년도 국민건강영양조사자료를 이용하여 - (Secular Trend in Dietary Patterns in a Korean Adult Population, Using the 1998, 2001, and 2005 Korean National Health and Nutrition Examination Survey)

  • Koreans have undergone many changes in dietary patterns with economic growth. The purpose of this research was to examine changes in dietary patterns using data from the 1998, 2001, and 2005 Korean National Health and Nutrition Examination Survey. The study included 21,525 subjects (8,295 from 1998, 6,880 from 2001, and 6,350 from 2005) who were 20 years or older and who participated in a 24-h diet recall. The percentage energy intake from 22 food groups was calculated, and a cluster analysis was applied to identify dietary patterns. Two dietary patterns emerged; the first pattern was characterized by high intake of white rice, legumes, vegetables, kimchi, and seaweeds, the so-called "traditional" pattern (53%), whereas the other pattern was characterized by high intake of other grains, noodle dumplings, floured bread, pizza, hamburgers, cereals and snacks, potatoes, sugared sweets, nuts, fruits, meat·its products, eggs, fish, milk and dairy products, oils, beverages and seasoning, or the so-called "modified" pattern. The modified pattern comprised a higher proportion of younger aged, metropolitan residents with more education and higher incomes. However, the gender distribution was not significantly different. The modified pattern had a significantly higher intake of all nutrients except carbohydrates and had a higher proportion of energy from fat and protein. No association with a risk for metabolic syndrome was found for either dietary pattern. After age was standardized, the traditional pattern included 52% of the respondents in 1998, 54% in 2001, and 50% in 2005. However, the modified pattern was significantly more prevalent in the younger age group (20-29 yr), whereas the traditional pattern increased significantly in the older age group (${\geq}$ 65 yr). In conclusion, a secular trend was found for dietary pattern by age group, suggesting that it is necessary to monitor the changes in dietary pattern by age group and to develop appropriate dietary education and guidelines.

한국인의 식품 및 영양섭취상태 추이(1969-1989)-제 2보, 국민영양보고서에 의한 식품섭취상태을 중심으로- (The Trend of Food and Nutrient Intakes of Korean(1969-1989) -The Second Report, Food Intake from the Annual Report of the National Nutrition Survey-)

  • 국민의 식품섭취상황의 변화 추이를 파악하기 위하여 1969년부터 1989년까지 21년간의 국민영양조사보고서 내용을 토대로 살펴본 결과를 요약하면 다음과 같다. 총식품 섭취량은 1,000g정도를 유지하고 있으며, 식물성 식품의 섭취량은 감소하는 반면 동물성 식품의 섭취량은 증가하는 경향이다. 식물성 식품 중 곡류의 섭취량 감소는 매우 현저하여 전체 식물성 식품의 섭취량 감소를 주도하였고, 감자류의 섭취량 역시 점차적으로 감소하고 있다. 채소류의 섭취량은 소폭의 증감을 계속하고 있으나 가공류의 섭취량은 증가하는 경향이다. 콩류는 매년 섭취량이 상당한 폭으로 증가하고 있으며 과실류도 꾸준히 증가하고 있는 추세이다. 해조류의 섭취량 또한 매년 증가하고 있으며, 특히 80년대 후반에 커다란 증가 양상을 보이고 있다. 한편, 동물성 식품에서 육류, 난류, 어패류는 해마다 섭취량이 증가하고 있어 단백질 섭취에 도움을 주고 있으며 유류와 동물성 유지도 섭취량이 증가하고 있다.

한국서해에 서식하는 염생식물의 지방산 조성 비교 (Comparative Studies on the Fatty Acid Compositions of the Korean Salt Marsh Plants in the West Sea)

  • 지질은 생체내에서 여러 가지 중요한 기능을 한다. 하지만 부적절한 식이 섭취로 인한 지방산의 불균형은 성인병을 비롯한 여러 질병의 원인이 된다. 이러한 이유로 지방산에 대한 관심이 높아지고 있으며 특히 어류나 해조류에 다량 포함되어 있는 n-3계 다중불포화지방산과 질병과의 관련성이 밝혀지고 있다. 따라서 본 연구에서는 염생식물이 n-3계 다중불포화지방산을 함유할 가능성을 확인하기 위하여 26종의 염생식물에 대하여 지방산의 조성과 함량을 조사하였다. 용매 추출된 염생식물 시료는 gas chromatography를 이용하여 분석이 이루어졌으며, 그 결과, 퉁퉁마디, 수송나물, 염주괴불주머니, 사철쑥, 갯질경 등이 높은 총지방산 함량을 나타냈다. 또한 포화지방산인 palmitic acid (16:0)는 실험 대상 전체에서 나타났을 뿐만 아니라 그 %함량도 대부분의 염생식물에서 가장 높은 것으로 확인되었다. 불포화지방산의 경우, 단일불포화지방산에서는 oleic acid (18:1)가 그리고 n-6계 다중불포화지방산에서는 linoleic acid (18:2)가 높은 %함량을 보였다. 그리고 n-3계 다중불포화지방산 중에서 천일사초가 26.40%로 LNA의 함량이 가장 높았으며, 뒤이어 모래지치, 수송나물, 갯메꽃 순으로 나타났다. EPA의 함량은 상대적으로 낮은 비중으로 나타났으나 칠면초가 1.89%로 가장 높은 수치를 보였다. DHA는 여러 대상 식물에서 비교적 높은 함량을 보였으며 특히 흰명주아뀌가 14.54%로 높은 함량을 보였다. 이러한 결과는 염생식물이 해조류나 어류의 n-3계 다중불포화지방산의 함량에 있어서 뒤지지 않음을 보여줄 뿐만 아니라 천연물 화학적이나 식품학적 추가 연구를 통해 여러 질병의 예방과 치료분야에도 기여할 것으로 사료된다.

고지방고콜레스테롤식이를 섭취한 흰쥐에서 식물성식품의 혼합물 첨가로 인한 체내 항산화능 증가 효과 (Antioxidative Effect of Plant Food Mixtures in Rat Fed on High Fat-High Cholesterol Diet)

  • The previous extensive in vitro studies on the antioxidative activities of a number of Korean grains, vegetables, seaweeds and mushrooms, and the various combinations of these food source exhibited a wide range of antioxidative activities, and four food mixtures composed of 5 kinds of foods (5A, 5B, 5C and 5D) were designed from 16 selective foods showing. high antioxidant effect, in vitro, to find the good combinations for the meal planning. Mixture 5B or 5C contained very high levels of total flavonoid and polyphenol, and ethanol extract from 5A, 5B or 5C showed very strong inhibitory effects against in vitro $Fe^{2+}-induced$ lipid peroxidation and ethanol extract from 5B or 5C showed remarkable DPPH radical scavenging effect and lipid peroxide-protein conjugation inhibition effect. And in vivo study was also carried out with two mixtures (5B, 5C). Powders (P5B, P5C) or ethanol extracts (E5B, E5C) of these mixtures were supplemented to Sprague-Dawley rats fed on high fat $(15\%)-high$ cholesterol $(1\%)$ semipurified diet for 5 weeks. The total antioxidant power in serum was significantly higher in P5B, P5C, E5B and E5C groups than in high fat control group, and $ascorbate-Fe^{2+}-induced$ TBARS was significantly lowered by E5B supplementation in rat liver. In liver tissue, Cu, Zn-SOD activity was significantly higher in P5B and E5B groups than in high fat control group, while catalase or GSH-peroxidase (GPx) activity was not changed by any supplementations. In kidney, Cu, Zn­SOD activity was significantly higher in P5B group than in high fat control group, while GPx activity was not changed by any supplementations. Taken together, mixture 5B and 5C showed very strong antioxidative effects both in vitro and in vivo. Therefore, the ingredient Korean foods of 5B and 5C could be recommended to take a lot together for prevention from age-related chronic diseases.

한국인 상용 식품 중 수은 함량 데이터베이스 구축 (Development of a mercury database for food commonly consumed by Koreans)

  • 본 연구는 문헌검색을 통해 우리나라 상용 식품의 수은 함량 데이터베이스를 구축하기 위해 수행하였고, 식품 섭취량의 95%를 포함하는 완성도가 높은 데이터베이스를 구축하였다. 2007~2009년 국민건강영양조사 식품 섭취량 조사 결과를 기반으로 대상 식품을 선정하였고, 국내에서 식품 중 수은 함량을 분석한 문헌을 고찰하여 수은 함량값을 수집하였다. 미국 농무성의 데이터 질적 평가시스템을 적용하여 수집된 문헌의 함량자료를 선택했고, 함량값이 없는 식품은 식재료의 수분함량 차이를 고려하여 대체값을 적용하였다. 구축된 데이터베이스는 총 702개의 식품 중 356개의 식품에 대한 수은 함량값을 포함하였고 (50.7%), 대상자들이 섭취한 식품 섭취량으로는 95.1%에 달하는 식품을 포함하는 것으로, 질적으로 양적으로 완성도가 높은 것으로 평가되었다. 본 연구의 결과는 향후 식품을 통한 수은 노출량 추정 및 위해성 평가에 활용될 수 있으며, 본 연구의 데이터베이스 구축 방법론은 식품을 통해 노출되는 다른 유해물질의 함량데이터베이스를구축하는 데에 적용할 수 있을 것이다.

비만 남자 초등학생의 마그네슘, 철, 구리, 아연 영양상태 연구 (A Study on Status of Magnesium, Iron, Copper, Zinc in Korean Obese Male Elementary School Students)

  • The purpose of this study was to investigate the status of magnesium, iron, copper and zinc nutrition in 28 normal and 28 obese male elementary school students who have over 30% obesity index. The anthropometric measurements, dietary intakes and serum levels of magnesium, iron, copper and zinc were determined by 24-hr recall method and blood analysis, respectively. The mean age, height, weight, and obesity index were 10.9years, 147.4cm, 61.1kg, and 50.5% in obese group and 10.8years, 145.4cm, 40.2kg, and 3.3% in normal group. There was no significant difference in average daily food intake between obese and normal group, but meats(p<0.05) intake of obese group was significantly lower than that of normal group. The intakes of energy, magnesium, iron, copper were not significantly difference between obese and normal group, but heme iron(p<0.05) intake of obese group was significantly lower than that of normal group. Zinc(p<0.05) intake of obese group was significantly higher than that of normal group. Serum magnesium(p<0.001) level of obese group was significantly higher than that of normal group, but there were no significant differences in serum iron, copper, zinc levels between obese and normal group. There was a significantly positive correlation between serum magnesium and weight(p<0.05), and obesity index(p<0.05). There was a significantly positive correlation between serum magnesium and energy intake(p<0.05), protein intake(p<0.05), animal protein intake(p<0.05), phosphorus intake(p<0.05) and animal iron intake(p<0.05). There was a significantly positive correlation between serum magnesium and seaweeds intake(p<0.05), milks intake(p<0.001). Also, there was significantly positive correlation between serum copper and oils and fat intake(p<0.05). These results suggest that there should be careful considerations for micronutrients nutrition status among male obese elementary school students.

해조류 추출물의 항산화 및 α-glucosidase 저해 활성 (Antioxidant and α-glucosidase inhibition activity of seaweed extracts)

  • 해양생물 유래 기능성 소재 개발 연구의 일환으로, 국내 자생하는 감태 외 9종(곰피, 대황, 매생이, 모자반, 미역, 지충이, 청각, 톳, 파래)의 해조류을 이용하여 열수 및 에탄올 추출물을 제조하여 추출물의 항산화 활성 및 ${\alpha}$-glucosidase 저해활성을 조사하였다. 총 페놀 및 플라보노이드 함량은 대황 에탄올 추출물에서 각각 150.81, 77.02 mg/g으로 가장 많았다. DPPH radical 소거능은 대황, 감태, 지충이 에탄올 추출물이 각각 86.26, 78.72, 68.32%를 나타내었으며, ABTS radical 소거능은 대황, 감태, 지충이 열수 및 에탄올 추출물에서 모두 99% 이상의 높은 활성을 나타내었다. SOD 유사활성과 환원력은 대황 에탄올 추출물이 21.34%, 1.710($OD_{700}$)으로 가장 높았으며, 지방산패억제능도 대황 에탄올 추출물에서 83.95%로 가장 높았다. 또한, 해조류 추출물의 ${\alpha}$-glucosidase 저해 활성은 대황, 감태, 지충이 열수 추출물에서 97.75, 95.17, 87.13%를 나타내었으며, 에탄올 추출물에서는 3종류 모두 약 98%의 높은 저해활성을 나타내었다. 해조류 중 대황, 감태, 지충이의 항산화 활성 및 ${\alpha}$-glucosidase 저해활성이 우수하여 천연 기능성 소재 개발을 위한 좋은 원료가 될 수 있을 것으로 사료되며, 기능성소재로 사용하기 위하여 적용할 제품에 따라 추출물의 재료, 첨가농도, 제품의 생리활성 등과 관련된 광범위한 연구가 요구된다.

해조양식장 수질환경 모니터링을 통한 이산화탄소 단순 수지모델 (Real-time Monitoring of Environmental Properties at Seaweed Farm and a Simple Model for CO2 Budget)

  • 부산시 기장군 일광 해조류양식장에서 2011년 7월 5일부터 6일까지 약 30시간동안 해양 표층수의 수온, 염분 등의 환경인자와 pH와 이산화탄소분압($fCO_2$)을 연속 관측하였다. 표층수의 수온과 염분은 $12.5{\sim}17.6^{\circ}C$, 33.7~34.0범위를 보였으며, 조석과 광주기, 해류 등의 영향으로 일변화 및 일간변화를 크게 나타내었다. 이산화탄소분압과 pH는 381~402 ${\mu}atm$, 8.03~8.15범위를 보였으며, 엽록소는 0.8~5.8 ${\mu}g\;L^{-1}$ 범위를 보였다. 이산화탄소분압, pH 그리고 엽록소는 최대 간조와 성층이 강했던 5일 오후 5시 전후에 최소 및 최고치를 보였으며, 이는 엽록소에 의한 생물생산 결과 이산화탄소는 낮고 pH는 높아진 것을 의미한다. 해조양식장 이산화탄소변화에 대한 단순 수지모델을 적용한 결과, 낮에는 생물생산에 의한 감소가 수온상승, 대기와의 교환에 의한 증가와 상쇄하는 것으로 나타났으며, 밤에는 대기와의 교환 물리적 혼합에 대한 과대 평가로 관측치보다 다소 높게 나타났다. 모델결과는 해조양식장 이산화탄소분압 총변화량의 14~40%는 해조류의 일차생산에 의한 것으로 나타났다.

여고생의 체중조절, 영양지식, 식태도, 식행동에 관한 연구 (A Study on Weight Control, Nutritional Knowledge, Dietary Attitudes and Eating Behaviors among High School Female Students)

  • This study was designed to examine weight control, nutritional knowledge, dietary attitudes and eating behaviors of 370 high school girls and to investigate if there were differences in these variables by weight control status. The weight control attempters (65.1%) had significantly higher body weight and BMI (p<0.001). The difference between desired and current body weight was -9.1 kg in the attempters, showing a significantly higher difference than the counterparts (p<0.001). The attempters also showed more interest toward weight control (p<0.001), but were less satisfied with their body size (p<0.001). Most of subjects (88.1%), especially in the attempters (96.7%) responded that they would try to control their weights in the future. The regular exerciser was 22.9% in the attempters while the percentage of the counterparts was 11.9% (p<0.05). The use of internet or television watching was not significantly different by weight control status. Subjects scored 15.8 out of 20 on a nutritional knowledge scale, which showed a moderate level of knowledge. The nutritional knowledge score was 15.7 for the attempters and 15.8 for the counterparts. None of the nutritional knowledge items reached statistical significance, although the percentages of correct answers regarding weight control or balanced meals were slightly lower in the attempters. The attempters showed more favorable eating attitudes than the counterparts (p<0.001), especially in the attitudes of applying nutritional knowledge to daily life (p<0.01), attitudes for modifying diets (p<0.01) and importance of having adequate meals (p<0.01). The eating behavior was moderate, with mean scores of 31.1 (possible score: 15 - 45). Subjects showed problems in eating a variety of foods, eating meals regularly, eating slowly, eating breakfast and consumption of some food groups (e.g., dairy foods, fruits). The attempters consumed seaweeds more frequently than the counterparts (p<0.05). Although there were not many significant differences by weight control status, this study suggested that nutrition education for adolescent girls should be planned to provide nutrition information regarding desirable weight control as well as modifying diets and eating behaviors.

과체중 및 비만여성의 식습관, 식이섭취실태 및 혈청지질 양상 비교 (Comparison of Food Intakes and Serum Lipid Levels in Overweight and Obese Women by Body Mass Index)

  • This study was done to investigate the health-related habits, dietary intakes and serum lipid levels in overweight and obese women by body mass index(BMI). Subjects were 137 pre-menopausal women aged 19 to 49 years. They were divided by 3 groups, overweight($23{\leqq}BMI<25$), obese($25{\leqq}BMI<30$) and morbidly obese($BMI{\geq}30$) according to their BMI. Body composition was determined by bioelectrical impedance analysis(BIA) method. Dietary intakes were examined by 3-day record method and nutrient intakes were analyzed by the Computer Aided Nutritional analysis program for professionals(CAN-pro 3.1). Serum lipid levels were measured using automatic biochemical analyzer(Selectra E). The average age, height weight and BMI of subjects were 31.7 years old, 159.3cm, 69.4kg, and $27.4kg/m^2$, respectively. Their average consumption of energy were 1712kca1 and 86.4% of estimated energy requirement(EER). Their mom ratio of carbohydrate:protein:fat was 55.2:14.6:30.2. Particularly, the fat consumption of subjects tended to be elevated with increasing BMI. There was no significant difference in nutrient intakes among 3 groups. But the mom intakes of Ca, Fe, vitamin C and Na of all the subjects were 70.1%, 81.2%, 75.7% of recommended intake(RI) and 258.9% of adequate intake(AI), respectively, The intakes of vegetables and seaweeds were significantly higher in morbidly obese group while the intake of fruits was higher in overweight group compared to the other groups. Serum lipid analysis showed that there were no significant differences in the levels of total cholesterol, triglyceride and LDL-cholesterol among the groups. But the serum HDL-cholesterol level of the overweight group was significantly higher than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the morbidly obese group compared to the other groups. In addition, The systolic blood pressure of morbidly obese group was significantly higher compared to the other groups. Overall data suggest that morbidly obese women have to more concern about reducing systolic blood pressure and nm lipid levels by decreasing their fat consumption and salt intakes as well as loosing body fat. In addition, all the subjects participated in this study have to be careful about their meals and health-related behaviors in order to prevent obesity-related chronic diseases.
