품질기능전개(Quality Function Deployment) 기법을 활용한 만두전문점의 유무형 외식 상품 기획 (Planning of Tangible and Intangible Foodservice Product Using Systematic Quality Function Deployment (QFD) Technique of the Dumpling Restaurant)

  • This study has utilized the Quality Function Deployment (QFD) technique in order to plan the tangible (menu) and intangible (service) product of dumpling restaurant. The engineering characteristics of tangible products were classified into product planning, purchase management, production management, and information management based on the production system of foodservice. The engineering characteristics of intangible products were also classified into physical evidence, human interaction, and pre-communication based on the service operation and delivery system. As a result of analyzing the QFD, it was found that the customer hope the hygiene factor and response factor to be improved. It is analyzed that product planning, information management, and production management should be improved first in terms of engineering characteristics considering consumer needs. In the future, by utilizing the systematic product development process that the requirements of tangible and intangible product consumers are converted to the engineering characteristics, the development of competitive product within the market will be possible, and furthermore it is expected to be useful for reducing the unnecessary time and design costs due to failure of product development.

  • The world has been transfiguring so rapidly thesedays. Especially, Shanghai, the symbol of the modernization of China, its speed is now so transcendental, indeed. A lot of Korean companies have made inroads into the China market so actively. There a building called PosPlaza was investigated by PohangJechul(POSCO) in the financial business trade area of Pudong, Shanghai. It has a main building of thirty-four stories with an industrial of four stories as an office area, which is now perceived as a symbolic architecture of Pudong. As for many employers who needed a large-scale restaurant, it was planned to pursue the convenience, to feel the Korean traditions and the cozy of the sunshine through the large flat window with the simplicity as the people enter the main hall.

외식 프랜차이즈 본사의 기업가 지향성과 시장 지향성이 가맹점의 영역 초월 행동과 경영 성과에 미치는 영향 (The Effects of Entrepreneurship and Market Orientation of Restaurant Franchisers on the Boundary-spanning Behavior and Managerial Performance of Franchisees)

  • This study was conducted to investigate the effects of the entrepreneurship and market orientation of franchisers on the boundary-spanning behavior of franchisees in food-service companies in the Yeongnam region. This study also investigated the relationship between the entrepreneurship and market orientation of franchisers and sought to identify the effect of the boundary-spanning behavior of franchisees on their managerial performance. Based on literature reviews, 4 hypotheses were tested. The subjects responding in this study were owners or managers of franchise restaurants in Youngnam province. A total of 605 questionnaires were analyzed using the factor analysis, a reliability test, and structural equation modeling analysis. The results revealed that first, the entrepreneurship and market orientation of franchisers were positively related to the boundary-spanning behaviors of franchisees, and secondly, the entrepreneurship of franchisers was positively related to their market orientation. Finally, the boundary-spanning behavior of franchisees was positively related to their managerial performance. Therefore, food-service franchisers in Youngnam should have the entrepreneurship and market orientation to lead franchisees to have positive boundary-spanning behaviors and good performance.

외식기업 혼잡 만족 측정 도구 개발에 관한 연구 (A Study on Developing Crowding Measurement Tools for Foodservice Corporations)

  • This study is to develop a viable measurement tool of crowdedness in restaurants. First, to measure customer’s awareness of crowdedness related to each different environmental factor in a restaurant, 49 factors of crowdedness awareness were selected based on the previous studies and then properties of each factor affecting customer’s satisfaction for crowdedness were analyzed. To analyze effects of each factor upon the satisfaction rate, a Multiple Regression Analysis was conducted with the crowdedness awareness as an independent variable and satisfaction of crowdedness as a dependent variable. The results showed that when an analysis of the environmental factors in the crowdedness awareness was conducted in an effort to develop a measurement tool of crowdedness awareness in restaurants, that would be fit for the domestic food service market, based upon 49 factors of restaurant environment. Focusing on expectation and satisfaction rate, it was found that rating the satisfaction level would be a much more effective tool to measure crowdedness awareness because satisfaction rate appeared to be more closely related to the awareness than the results obtained from the Multiple Regression Analysis with a difference between expectation and satisfaction scores as an independent variable.

  • The family life cycle is a useful indicator of consumer behavior, as well as the family life cycle concept utilizes a combination of demographic and socioeconomic variables that best explains the changes in the construct of the family. The family decision-making research has frequently examined role relationship between husband and wife across stages and sub-decisions. The objective of this research is to measure children and parents' perceptions of the influence of the decision-making process for a family dining-out experience, and to determined the customers' choice behavior of restaurants according to isolated factors underlying the important attributes of the restaurants, and finally authors applied a market segmentation approach by capturing customers' preference of restaurant attributes in family dining-out situation and to investigated influence of the family decision making for family dining out in family life cycle. For practitioner, marketing implications are provided and recommendations for future research are also discussed.

패밀리레스토랑 종사원의 인센티브 만족도에 관한 연구 (A study on the incent ive satisfaction in family restaurant employer)

  • The food service industry has grown up without an affection of economic collapse, and its kinds are being diversified and focused on many different aspects from physical taste to many other elements such as atmosphere, service quality, sanitation and etc.. Now it appeals to even familiarity. These Facts are well ref looted to Family Restaurant which has not been very popular so far, but now it takes its space in the market, and its management system is being introduced to other countries. The purpose of this study is to see how to satisfy them to make maximum business profit, and one possibility is "incentive". To accomplish research, theoretical and practical studies have been done and surveys have taken placed for substantial studies. The subjects were limited to employees in Family Restaurant in Seoul from February 20th to March 20th, 2001. Data, reliableness, and propriety were analyzed by SAS(Statistical Analyzed System). Sampling mode was randomness, and validation mode was limited to 223 papers. The followings are the results of this analysis First, Satisfaction of incentive were made by stability, impartiality and suitability regardless difference on companies, ages, departments, and authority of an employees. Second, Satisfaction on incentive for employees in Family Restaurants were not well received. Although these necessary demand, there is not yet incentive system operation to most of business. Especially, it is not even studied on Family Restaurants. This study should have been studied on more customers and spotted employees to be objective. It is strongly recommended to do this study without limitation and further studies is considered on this subjects.

호텔조리사의 직무 속성이 레스토랑 식자재 관리 수행도에 미치는 영향에 관한 연구 (A Study on the Effects of Hotel Restaurant Chefs' Job Attributes on Food Material Management)

  • The purpose of this study was to examine the structural relationship where the job satisfaction of chefs who directly handle the food materials in the hotel restaurants influences their purchase and management of the food materials. For this, 350 chefs of 11 five-star hotels were surveyed with a questionnaire about the process and consciousness in managing food materials. 293 copies of the questionnaire were used in the empirical study by excluding unanswered and insincere ones. Before verifying the hypothesis, the reliability and propriety of the concepts suggested by the study model were analyzed through structural equation model using AMOS 5.0 to analyze concepts and verify the hypothesis. As the result of, the job satisfaction of five-star hotel restaurant chefs appeared to have positive influence on the chefs' purchase attitude, food material satisfaction, food material management performance. Also, the supplier satisfaction increased when the cooking and purchase departments communicate well with each other. Therefore, for the efficient purchase of food materials, the purchase and cooking departments shall survey the market periodically, increase communication between departments to obtain food material satisfaction, organization satisfaction and job satisfaction.

고객의 미쉐린가이드 선정 레스토랑 선택에 대한 현상학적 연구 (A Phenomenological Study on Michelin Guide Restaurant Selection by Customer)

  • With the increased development of the dining sector, several restaurants have emerged and are becoming more advanced. Since the Michelin Guide Seoul publication in Korea, the fine-dining market has attracted attention from guests. Moreover, the number of customers visiting fine-dining restaurants has increased comparatively. However, it has been a mere 6 years since the publication of the Michelin Guide Seoul, and domestic materials and research related to the Michelin Guide are insufficient. Therefore, this research examines the factors responsible for restaurants to gain Michelin stars, and the effect of the Michelin guide on customers to select restaurants. Customers who have visited and experienced the star restaurants were interviewed, as well as the owner chefs and personnel managing the restaurant. The interviews were conducted from August to September 2020 using the Colaizzi method. The survey was designed to extract meaningful sentences or phrases from the participant interviews, categorize general and abstract statements into topic clusters, and describe the essential experience. This research aimed to determine the effect of the Michelin guide on customers for a selection of the restaurants and star restaurants. It is important to understand the development of Michelin restaurants and the effective factors which make customers choose the restaurants. Also, results of this study will be a future guide for the possibility of developing domestic fine-dining restaurants, normal restaurants, and the food service industry.

관계혜택에 따른 미국 패밀리 레스토랑의 시장세분화에 관한 연구 (A Study on Market Segmentation of American Family Restaurants Based on Relational Benefits)

  • 본 연구는 관계혜택에 따라 패밀리 레스토랑의 시장을 세분화하고 각 세분시장 간의 인구통계학적 특성, 레스토랑 방문행태, 관계의 질, 관계성과에 차이가 있는지를 살펴보는데 그 목적이 있다. 이를 위해 미국 내 패밀리 레스토랑 고객을 대상으로 얻은 총 510부의 자료를 빈도분석, 요인분석, 신뢰도 분석, 군집분석, 다변량 분산분석, 판별분석, 교차분석, 일원배치 분산분석을 통해 분석하였다. 요인분석 결과 확신적, 특별대우, 사회적 혜택 등 세 개의 관계혜택요인을 도출하였으며, 군집분석 결과 관계혜택의 정도에 따라 '높은 관계혜택 소비자,' '중간 관계혜택 소비자,' '낮은 관계혜택 소비자'의 세 개의 세분시장이 도출되었다. 세 개의 세분시장그룹은 연령(p<0.05)과 교육수준(p<0.05)에 차이가 있었다. 또한 관계혜택을 높게 인식하는 소비자일수록 레스토랑의 방문빈도(p<0.001), 관계의 질(p<0.001), 관계성과(p<0.001)가 보다 높게 나타났으며, 그 뒤를 중간 관계혜택 소비자, 낮은 관계혜택 소비자 순으로 높게 인식하는 것으로 나타났다. 결과적으로 패밀리 레스토랑은 높은 관계의 질과 관계성과를 얻기 위해 고객들에게 높은 관계혜택을 제공해야할 것이다. 이에 대한 실무적인 시사점을 제시하였다.

브랜드 차별화 마케팅 성과에 관한 연구 - 서울 지역 체인 패밀리 레스토랑을 중심으로 - (A Study on Performances of Brand Differentiation Marketing (Focus on the Investigation of Multi-Chain Family Restaurants in Seoul))

  • This study aims at providing restaurant marketers and decision-makers both the brand differentiation information and the useful clues to achieve the high market share through the various brand differentiation opportunities in multi-chain family restaurants. Sample surveys were conducted to 245 persons who had frequent using multi-chain family restaurants in Seoul. Method of survey used are telephone interviewing. The result of analysis was shown the marketer's performances on differentiation marketing, but that there were a lot of opportunities of differentiating the brand from others. Therefore, restaurant marketers and decision-makers should try to differentiate their brand along the lines of physical attributes, service, food quality, personnel, location, or image, in order to win the guest and then get the succession of their business.
