Evaluation of Traditional Aspects of School Lunch Menus in Korea by Analyzing Dish Group Composition (음식군 구성 분석을 통한 전통 음식문화 측면에서의 학교급식 식단 평가)

  • This study was conducted to analyze traditional aspects of school lunch menus in Korea. We conducted a content analysis of menu-related contents included in guidelines for school lunch programs provided by 16 city and provincial education offices. In addition, the data of 10,495 menus for the third week of December 2010 and March, July, October 2011 from 557 elementary, middle, and high school were analyzed by school grade, area, and province. The results showed that there were no specific and detailed guidelines for menu planning in terms of traditional food culture in most of the guidelines for school lunch programs. However, the basic traditional menu composition was maintained in school lunch menus. The percentage of menus including rice and Kimchi was 97% and 95%, respectively, and that including Korean soup was about 72%. However, the frequency of serving Namul, Korean seasoned vegetable dish, accounted for only about 52% of the menus. The percentage of the menus following the traditional food group pattern including such five food groups as rice, Korean soup, Kimchi, Namul, and optional Korean side dish was only about 35%. The percentage of the menus following the traditional food group pattern excluding Namul from the five food groups accounted for about 30%. The traditional food group score, calculated by allocating 1 point to each of the five food groups was 4.06 out of 5 points on average. Elementary schools and schools in rural area and in Jeolla-do province served traditional menus more frequently. In conclusion, school lunch programs need to consider establishing traditional foods-based standards and relevant guidelines for school lunch, particularly for high schools and schools in urban areas and in some provinces.

Performance of Evidence-based Pain Assessment and Management Guidelines among Medical-Surgical Nurses (내·외과 간호사의 근거기반 통증사정 및 관리 가이드라인 수행도)

  • Purpose: This study aimed at the effectiveness to investigate the performance of evidence-based pain assessment and management guidelines. Methods: Participants were 140 nurses at the med-surgical units. Data were collected in early July, 2014 using Registered Nurses Association of Ontario (RNAO) guideline (2007) revised and validated by Hong and Lee (2012) and analyzed by descriptive statistics, t-test, ANOVA using SPSS/WIN18.0. Results: The score of performance of pain assessment guideline was higher than the score of pain management. Categories with high score were pain screening, parameter of pain assessment, documentation, assessment of opioids side-effects, and record of pain caused intervention. Categories with low score were comprehensive pain assessment, multidisciplinary communication, establishing a plan for pain management, consultation and education for patients and their families, and education for nurse. Non-pharmacological management was the lowest one. Conclusion: Assessing and managing pain is a complex phenomenon. It might be useful if institutions host training programs to ensure that nurse are better able to understand and implement pain assessment and management. Since non-pharmacological management is less likely to be used by nurses it may be helpful to include these methods in a training program.

Safety Measures for Main Risk Factors in Cultivating Shiitake Mushrooms (표고버섯 원목재배 작업의 주요 위험요인과 안전대책)

  • It is important to provide the farmers with practical and effective information of safety and health for individual crop to prevent or reduce occupational injuries in agricultural sector, since work characteristics and risk factors are not the same for all crops. In this study, risk assessment was carried out for cultivating shiitake mushrooms and then safety measures, which were based on the results of the risk assessment, were summarized and presented as the information of safety and health of shittake farmers. Guidelines for safety and health of the farmers of shiitake mushrooms, which were developed based on the risk assesment and safety measures, can be used by the farmers as self-educational tools or by the agricultural facilitators as an educational material for agricultural safety. It is expected that the guidelines can be useful in preventing occupational injuries of shiitake farmers.

  • Influenza A viruses periodicall y cause worldwide epidemics, or pandemics, with high rates of illness and death. A pandemic can occur at any time, with the potential to cause serious illness, death and social and economic disruption throughout the world. Historic evidence suggests that pandemics occurred three to four times per century. In the last century there were three influenza pandemics. The circumstances still exist for a new influenza virus with pandemic potential to emerge an d spread. The unpredictability of the timing of the next pandemic is underlined by the occurrence of several large outbreaks of highly pathogenic avian influenza since the early 1980s. In 1999, the World Health Organization published the Influenza pandemic plan. The role of WHO and guidelines for national and regional planning. And in 2005, WHO revised the global influenza preparedness plan for new national measures before and during pandemics. This document outlines briefly the Korean Centers for Disease Control's plan for responding to an influenza pandemic. According to the new pandemic phases of WHO, we set up the 4 national levels of preparedness and made guidelines for preventing and control the epidemics in each phase. And also we described the future plans to antiviral stockpiles and pandemic vaccine development.

Calculating the Mooring Force of a Large LNG Ship based on OCIMF Mooring Equipment Guidelines (OCIMF 계류설비지침 기반 대형 LNG선박 계류력 계산)

  • When a large liquefied natural gas (LNG) carrier is anchored at a coastal terminal, calculations on mooring forces of mooring cables induced by environmental loads such as strong winds and currents are needed to secure mooring safety. The advantages and disadvantages of several existing mooring force calculation methods are compared and analyzed with their application conditions. Resultingly, mooring equipment guidelines of the Oil Companies International Marine Forum (OCIMF) are chosen as the computational method for this study. In this paper, the mooring forces of a large LNG carrier with spectrum was calculated using the OCIMF mooring equipment guidelines. The calculation shows similar maximum forces resulted from the calculation using experiment data of a wind tunnel test. To verify the results, OPTIMOOR, a dedicated mooring force calculation software, is used to calculate the same mooring conditions. The results of both calculations show that the computational method recommended by OCIMF is safe and reliable. OPTIMOOR calculates more detailed tensile force of each mooring cable. Thus, the calculation on mooring forces of mooring cables of a large LNG carrier using OCIMF mooring equipment guidelines is verified as an applicable and safe method.

Dietary Behaviors Related to Metabolic Syndrome in Korean Adults (우리나라 성인의 대사증후군 유병과 관련된 식습관 및 식행동 요인)

  • This study was conducted to investigate the cross-sectional associations between dietary factors and the risk of metabolic syndrome (MetS) in 12,755 subjects (males 5,146, females 7,609) aged 19 years or above using data from the 4th (2007-2009) Korea National Health and Nutrition Examination Survey (KNHANES). The prevalence of MetS in Korean adults was 23.6% (males 26.1%, females 20.9%) with the criteria for modified National Cholesterol Education Program Adult Treatment Panel III. While males had a higher prevalence of abdominal obesity, hyperglycemia, hypertriglyceridemia, and high blood pressure than females, the prevalence of low HDL-cholesterol level was higher in females than in males. Among dietary guidelines, the response of 'yes' for asking practice of 'avoiding salty foods', and 'eating moderately and increasing physical activity for healthy weight' were significantly associated with the decreased risk of MetS in both males and in females. Especially, the risk of MetS was significantly lower in the subjects that responded the practice of all items of Korean Dietary Guidelines. Significantly negative associations with MetS were also found in the responding for practice of 'limiting consumption of alcoholic beverages' in males, and taking dietary supplements in females. Skipping breakfast was positively associated with the risk of MetS. In conclusion, dietary behaviors such as having breakfast, practice of dietary guidelines, and food consumption in moderation could modify the prevalence of MetS, and our findings could be useful for establishing guidelines for preventing MetS.

Cognition and Practice of Safe Handling of Cytotoxic Drugs in University Hospital Nurses (간호사들의 항암제 취급실태와 안전수칙에 대한 인지도와 실천도)

  • Purpose : To provide basic data for establishing the policy of safe handling of cytotoxic drugs and for building training materials and clinical guidelines for nurses handling cytotoxic drugs. Methods: 255 nurses in Seoul and 257 nurses in D metropolitan area participated in the study. Questionnaires were based on the safe handling guideline for cytotoxic drugs issued by OSHA and ONA. Results: Nurses in Seoul scored higher in the cognition for safe handling guidelines of cytotoxic drugs in preparation, administration. as well as total score compared with nurses in D metropolitan area. The practical score also showed higher in nurses in Seoul in administration, disposal and total score. But both groups showed low level of practical score. The answers why they could not follow the guideline for cytotoxic drugs were "don't have", "busy", and "don't know", etc Conclusion: Handling of the cytotoxic drug is very common and important. The study findings suggest that hospitals especially in D metropolitan area should educate the nurses and supply equipments for safe handling of cytotoxic drugs. Thus, repetitive and continual education of all nurses including experts is needed. In addition, it is necessary to supply enough protective equipment for preventing exposure to the cytotoxic drugs.

Comparative Analysis of Elementary School Computing Achievement Standards in the U.S. and Korea

  • ACM's CSTA has drafted standards for computing curricula and recommended them to schools in the United States. The five core concepts of the US elementary school computing curriculum are computing systems, network and the Internet, data and analysis, algorithms and programming, and impacts of computing. In 2005, Korea prepared ICT education guidelines, including five fields, their subfields, and achievement criteria for each subfield. In the 2015 revised curriculum, software education was introduced and five achievement standards were set. The ACM CSTA has 18 achievement criteria up to K-2 and 21 achievement criteria up to K-5. If we compare the 39 achievement standards of the US to Korea, Korea's 2005 ICT education guidelines include 25 of these, and the 2015 revised curriculum includes 5 of them. In this study, we aim to study the CSTA achievement criteria that second graders should know and the achievement criteria that fifth graders should know. This is compared and analyzed with Korea's 2005 ICT Guidelines and 2015 Software Curriculum. In comparison with the number of achievement standards, the US elementary school's computing achievement standards are much higher than in Korea. Comparing with each standard, there are many areas that are not covered in Korean curriculum, and we can see that the 2015 curriculum has rather receded from 2005.

Updates of Evidence-Based Nursing Practice Guidelines for Pressure Injury (근거기반 욕창간호 실무지침 개정)

  • Purpose: This study was conducted to update the previous evidence-based nursing clinical practice guidelines for pressure injury. Methods: The guideline was revised in 22 steps based on the international standards. Results: The updated nursing practice guideline for pressure injury consisted of four domains and 494 recommendations. The numbers of recommendations in each domain was: 31 hospital policy, 64 assessment, 386 prevention and management, and 13 education. The recommended grade was 10.3% for A, 13.8% for B, and 75.9% for C. Of these, the major revision was done in 40 recommendations (8.1%). A total of 55 recommendations (11.0%) were newly added. 25 recommendations had minor revisions such as changes or additions for some words, and only one recommendation was deleted. Conclusion: The revised nursing practice guidelines for pressure injury are expected to serve as an evidence-based practice guideline for pressure injury in Korea. This guideline will provide healthcare providers, patients, and caregivers with information to help prevent and manage pressure injuries, leading to improving patient outcomes.
