Foodservice Employees' Awareness and Performance in Sanitation and Customers' Satisfaction with Sanitation at Large-Sized Restaurants (대형 외식업소 조리종사자 위생인지도와 수행도 및 고객 위생만족도)

  • The purpose of this study was to investigate the foodservice employees' awareness and performance in sanitation and customers' satisfaction with sanitation in large sized restaurants in Korea. Sanitation inspections were carried out in 200 large Korean, Western, Chinese, and Japanese style restaurants, and in buffet-style restaurants in Daegu and Gyeongbuk province. Foodservice employees' awareness of sanitation and customers' satisfaction with sanitation were investigated by interviewing 317 foodservice employees and 205 customers. Results of the inspection of restaurants showed low performance in food handling, employees' hygiene (hygienic) practices, and in cleaning food processing equipment. Scores of the foodservice employees' awareness in Chinese style restaurants were significantly lower than scores of workers in western restaurants. Foodservice employees had low awareness of sanitation procedures used for food storage and cleaning of equipment in Korean, Chinese, and Japanese style restaurants. Foodservice employees had low awareness of equipment cleaning, inspection and food distribution in western style restaurants and of equipment cleaning and food handling in buffet-style restaurants. Foodservice employees at all restaurants had the lowest performance in terms of HACCP. This shows that HACCP application and recording have not yet been properly carried out at restaurants in Korea. Foodservice employees had low performance scores in food handling, vegetable disinfection and disinfection after hand washing. Research on customers' satisfaction with sanitation revealed a low rating of kitchens and foodservice employees at all restaurants. Customers had low satisfaction with servers and kitchen environments in Korean style restaurants with food, tableware, utensils and servers in western style restaurants; with food and kitchen environments in Chinese style restaurants with servers, tableware, and utensils in Japanese style restaurants and with kitchen environments and servers in buffet-style restaurants. Therefore, cleanliness of kitchen facilities and equipment, and hygienic food handling procedures by workers in restaurants are urgently needed.

Research on Attachment Creating Structure due to Customers' Product Group Innovativeness: -Towards Mobile Telecommunication Service- (소비자의 제품군 혁신성향에 의한 애착형성 구조에 관한 연구: 이동통신 서비스를 중심으로)

  • This research dealt with the psychological structure where customers get attached to mobile telecommunication service. As a result, first, product group innovativeness had a meaningful influence on the customers' having trust and positive affects in mobile telecommunication service. Second, when the trust of the customers using mobile telecommunication service was high, the affection towards the service was proportionately positive. Third, although the affection of love was strong when the customers highly trusted the mobile telecommunication service he is using, it did not have a meaningful influence on the attachment of relationship. Fourth, when the customers gained a positive affection towards the mobile telecommunication service, the attachment of love and relationship was stronger. These research results mean that the effects which customers' mobile telecommunication innovativeness have should be considered importantly as a factor of influence on customers' service attachment.

Service Pursuit Benefits and Revisit Intent Based on Nail Shop Customers' Self-Confidence and Self-Respect (네일숍 고객의 자신감과 자아존중감에 따른 서비스 추구 혜택 및 재방문 의도에 관한 연구)

  • The nail service field, which has emerged as a new trend in the beauty industry, is showing rapid growth compared to other beauty fields. As nail beauty services become more common and popular, studies on related fields are also actively progressing, but most of the research has been focused on changes on self-esteem. In addition, most of the preceding studies are centered on female customers, thus, there is little data on male customers that are increasing recently. This research aims to provide customized marketing data to the nail beauty service industry by analyzing the psychological characteristics of the customers and their motives by selecting self-esteem and confidence as factors. First, the customers' confidence and self-esteem were classified into a group with high and low confidence and self-esteem, and as a result of analyzing the difference in service pursuit benefits and revisit intentions, there were significant differences in mood change, professionalism, health hygiene, aesthetics, and revisit. Second, as a result of analyzing the effect of the service pursuit benefits of male and female customers on the revisit intention, it was found that only health and hygiene had a significant effect on the revisit intention. Female customers also had a significant influence on their revisit intention, which is judged to have a significant effect on male customers' revisit intention because most of the main management is cuticle cleaning, callus management, and problematic nails.

The Effect of Chinese Perceptions of Quality Attributes on Customer Satisfaction, Revisit Intention and Recommendation Intention for Korean Restaurants in Shandong, China (중국 산동성내 한식당 이용 중국인의 서비스품질속성에 대한 인식이 고객 만족도, 재방문 의도 및 추천 의도에 미치는 영향)

  • This study was conducted to survey the perception and preferences of customers that have dined at Korean restaurants in China and investigate the importance and performance level of quality attributes, customer satisfaction, revisit intention and recommendation intention. The survey was conducted January 31~March 1, 2016 in China. The 293 questionnaires (97.7%) were analyzed using SPSS(Ver. 23.0) and AMOS(Ver. 21.0). Results of this study are as follow: Customers that dined at a Korean restaurant in China were composed of 157 women and 136 men. Regarding the reason for preferring Korean cuisine, taste, hygiene and nutritional value of Korean food were the most significant quality factors. Regarding complaints about Korean food, Chinese people placed much emphasis on freshness of ingredients when dining out, based on the majority of complaints about ingredients that were not fresh. The main reason for leftover food were personal eating habits and that of customers revisiting food taste and nutrition. Path model among customer satisfaction, revisit intention and recommendation intention revealed the factor of menus and attributes of menu items regarding customer's age that had an impact on customers' satisfaction, and association with customers' satisfaction, revisit intention and recommendation intention as well.

Customers' Satisfaction and Loyalty with Motivations to Dine Out and Selected Attributes in Korean Traditional Restaurant

  • Purpose - This research analyzes the impact of motivations to dine out and selected attributes of customers on customer satisfaction and loyalty. Based on collected data, this study aims to suggest effective marketing strategies to help manage traditional Korean food restaurants. Research design, data, and methodology - The data were collected from the customers who visited traditional Korean food restaurants in Jeon-Ju for two months from December, 2015. The available data were 402 from collected 450 customers' data and they were analyzed by using SPSS 19.0. Result - These are the results of data analysis. First, environmental, personal and perceived factors influence on the motivations to dine out at Korean food restaurants which affect customer satisfaction. Next, selected attributes from Korean food restaurants have impacts on customer satisfaction. Third, motivations to dine out Korean food restaurants affect customer loyalty. Moreover, physical environments, curiosity and need satisfactions, which are the selected attributes, have impacts on customer loyalty. Lastly, it has been identified that customer satisfaction in Korean food restaurants influences customer loyalty. Conclusions - Satisfaction and good brand image of Jeon-Ju will increase customers' intention to revisit. This study has found that high customer satisfaction leads to re-visitation.

An Exploratory Analysis on Adoption of Potential Customers in Transmedia Storytelling : Emphasis on Korean TV Drama and Movie (잠재고객의 OSMU(One Source Multi Use) 콘텐츠 수용에 대한 탐색적 분석 : 영화, 드라마를 중심으로)

  • There is an increasing interest in contents such as movie, drama and game using transmedia storytelling. It includes Le Grand Chef, The War of Flower, Dae Jang Geum, The Matrix, Harry Potter and The Lord of the Rings. However, transmedia contents have not always been successful. To study the factors affecting possible outcomes of transmedia storytelling, we analyzed the intention on transmedia of potential consumers who have not been exposed to transmedia contents before. To this end, we investigated two different cases : first, potential customer intention to watch dramas which will be produced after launching comic-based movies; second, potential customer intention to see movies which will be made after broadcasting comic-based TV dramas. In each case, we analyzed the outcomes from potential customers by applying several variables including gender, exposure to the original and components of contents (plot, quality of act and music etc). Our study showed that potential customers prefer movies or TV dramas with quality of acting, directing, casting and storylines. Interestingly, the quality of acting is more important in dramas than in movies and casting is an appealing factor to potential customers in movies. In TV drama cases, potential customers have high watching intentions when they read the original content. Among them, male potential customer have low watching intentions on TV drama when they did not read the original content. However, female potential customers have high watching intentions on TV drama regardless of the previous exposure to the originals. In movie cases, female potential customers have higher intentions on seeing movies than male. These results suggest that one needs to consider several factors such as casting, acting and gender for generating transmedia contents with a high probability of success.

The Effects of Selection Attributes on Customers' Satisfaction and Behavioral Intention for Hotel Weddings - Focusing on Young People's Life Style - (호텔 예식 선택 속성의 만족도와 행동의도에 관한 연구 - 라이프스타일을 중심으로 -)

  • This study aims to investigate the effects of selection attributes on customers' satisfaction and behavioral intention for hotel weddings depending on their life style. The developed hypotheses were tested using a sample of customers who have ever had hotel weddings in the age of 20~30 living in Seoul and Daejeon. The total number of 300 self-administrated questionnaire copies were distributed and 248 valid samples were used for the analysis. In order to examine the proposed model, statistical tests were conducted using SPSS (14.0). The results showed that the customers' attributes selecting a hotel wedding were significantly different depending on their life style. It was also found that customers' satisfaction has a significantly positive effect on their behavioral intention for hotel weddings.

A Study on Choice of Japanese Restaurant Set Menu in Hotel of Gwan-ju and Jeon-nam (광주.전남 호텔 일식 레스토랑 세트 메뉴 선택에 관한 연구)

  • This study is a practical analysis about customers who use menu in Japanese restaurants. The aim of this thesis is to research what the choice factors of the menu are and how they affect customers' satisfaction and reordering. This research also provides basic information and suggestions on the strategies of customers' satisfaction and differentiation. Research was conducted concerning customers who use travelers' hotels in Gwang-ju and Jeon-nam and they were asked to answer the questionnaire from August 20th to 30th. The 250 questionary forms were distributed and 238 pieces were returned. The result of analysis was that 17 variables were out of total 31 variables and they were also divided into 5 factors: food itself, extrinsic factor of food, events, atmosphere and locality of food. It was found that customers were greatly affected by the atmosphere of a restaurant, the mood of the day, social position, and the appropriateness of serving guests choosing a restaurant. And the main factors of reordering were the names of dishes, the explanations for the dishes, and their visual aspects, all of which were extrinsic factors.

Influence of Emotional Experience at the Beauty Salon on Store Preference

  • Identifying the factors of emotional experience that arouse emotional responses will contribute to determining the relationship between the visual attributes of a salon and the emotional responses of humans, as well as the relationship between service factors and the emotional response of humans. The aim of this study is to examine the effect of the various e motional responses of customers on store preference and to thereby propose marketing strategies for offering an insightful service. The emotionally expressed vocabulary used by customers during their visit is also explored. 300 customers with previous experience of beauty shop services were surveyed and their responses were analyzed using SPSS 20.0 to define the problems. All the emotional experiences at the beauty salon influence the service satisfaction and re-visitation intention. The results showed that, as the customer's level of satisfaction with a service experience increases, the re-visitation intention increases. Of these results, only the service experience influences the recommendation intention. As the effective delivery of positive emotional services influences customers' revisiting intentions, beauty industry workers should be aware of each phase of the customers' emotions and try to provide customer-oriented services to appease these emotions. In addition, workers should strive to create service systems that induce customers' positive emotional responses rather than to offer merely stereotyped services.

A Study on the Customers' Perception and Intention to Purchase Food according to Food Styling (푸드스타일링에 따른 소비자 인식과 음식 구매의도에 관한 연구)

  • This study aimed to find out how food styling (plating and the size of the dishes) can increase customer purchasing intention, and propose a marketing measure to increase revenue growth and boost image growth after examining perceptions of customers and their intention to purchase food according to the food styling of cream pasta, which is a type of western food item. SPSS 20.0 statistical package program was utilized to run the Paired t-test. As a result, consumers' awareness of the amount of food according to food styling indicated that the amount of food accompanied by vegetables and meat was perceived more than vegetables alone. Second, according to food styling (size of dishes), customers perceived that there was more food with smaller sized dishes. Therefore, in order to increase the level of satisfaction with the amount of food of the customers, it is recommended that the foods which display high calorie content are more highly visible. Moreover, customers' intention to purchase food as well as their perception of the amount of food could also be increased by adjusting the size of containers for food.
