Antioxidative function of uncooked powdered food (Sangsik) was evaluated in rats consuming nutritionally unbalanced diet including 1% cholesterol, high proportion of animal lipids (lard : soybean oil : 8 . 2) , sub-optimal levels of vitamin and mineral mixture along with 0.5% ethanol in drinking water. The uncooked powdered food tested in the present study was a mixture composed of 42 kinds of plant foods (cereals, legumes, seaweeds, vegetables, and fruits) supplemented with vitamins and minerals, and dietary fiber. Control rats were fed the semi-purified diet based on the AIN-93G composition, and nutritionally unbalanced rats were divided into 3 groups, and fed one of the following diets with 0.5% ethanol in drinking water for 5 weeks : unbalanced control diet (UC) ,20% Sangsik powder supplemented diet (S20), and 40% Sangsik powder supplemented diet (S40) . Food efficiency ratio was significantly higher in rats fed S40 compared to the value for rats fed UC (p < 0.05). Hepatic level of thiobarbituric acid reactive substances (TBARS) was significantly lower in rats fed UC compared to that for control rats (p < 0.05) , and was not influenced by dietary supplementation of the Sangsik powder. Hepatic superoxide dismutase (SOD) activity was significantly higher in rats fed UC compared to that for control rats (p < 0.05) , and significantly reduced in rats fed S20 or S40 compared to the value for unbalanced control rats. Feeding unbalanced control diet significantly reduced the ratio of hepatic GSH-Px + catalase/SOD activities compared to the value for control rats, and this decrease in the ratio of antioxidant enzyme activities was reversed by adding the Sangsik powder to the diet at 20% (p <0.05) . Based on the results of antioxidant enzyme activities, feeding uncooked powdered diet appears to provide a favorable environment for body's antioxidative defense mechanism. Serum levels of Fe and Cu were significantly lower in rats fed the Sangsik powder supplemented diets compared to the value for unbalanced control rats (p < 0.05) , and levels of Se, Mn, and Zn were also tended to be decreased by dietary supplementation of the Sangsik powder. These results postulate the possibility that ingredients used in the uncooked powdered food may decrease the bioavailability of trace elements in rats.
Crop damages caused by sulfur dioxide poisoning were studied with respect to physiology of lesion, yield loss and prevention measures. The results are summarized as follows; 1. On the physiology of injury: The sulfur dioxide gas did no: affect the pH and $E_h$ values of the tested leaf juice of plants. Peroxidase activity was inhibited just after sulfur dioxide treatment but gradually recovered to normal after 10 hours. Methanolic chlorophyll solution was instantaneously and irreversibly bleached by the addition of sulfur dioxide gas with no evidence of pheophytin formation. It seems that chlorophyll forms colourless addition product or is reduced to colourless form with either sulfur dioxide gas or sulfurous acid. Chlorophyll in the chloroplast was also bleached by the sulfur dioxide treatment, as in the case of methanolic solution of chlorophyll, except that the rate of bleaching was rather slow, requiring 1-2 hours. It appears that the most inflicting cause of sulfur dioxide gas to plants may be the destruction of chlorophyll by the poisoning gas. 2. On the effects to crop yield: The crop yield losses were proportional to the concentration of inflicting sulfur dioxide gas. The order of tolerence of the crops to the sulfur dioxide gas was as follows - chinese cabbage being the most susceptible; wheat, paddy rice, barley, soybean, welsh onion, radish and chinese cabbage. The crucifer crops were generally found more susceptible than other crops studied. With respect to the growing stages of crops exposed to sulfur dioxide gas, it was found that the flowering stage was the most susceptible fellowed by panicle forming, milky and tillering in the decreasing order of susceptibility. 3. On the preventive measures of yield losses: Soil applications of potassium, wollastonite, lime or spray of lime water were effective to prevent yield losses from sulfur dioxide fumigation of paddy rice, barley, and soybeans. The most responsive treatment was lime water spray for all crops tested. In case of sulfur dioxide fumigated paddy rice, the lime water spray also increased carbon assimilation.
To determine the contents of sodium and potassium in side dishes, 92 samples from 22 different kinds of side dishes that can be classified into 3 groups were collected in Seoul area and analysed using ICP-OES. The highest sodium content was detected in pepper doenjang muchim, while potassium content was the highest in kong jorim. When comparing the content of sodium and potassium in 3 groups, namely namul, muchim, and jorim, the sodium content of namul group was significantly different from those of jorim and muchim (p-value < 0.05). Sodium intake per serving size was the highest in parae muchim among the samples as estimated to 20.2% of WHO recommendation that is 2,000 mg/day. The amount of sodium by simultaneously intake of soybean sprouts namul, anchovy jorim and parae muchim per one serving size was estimated to 1,000 mg. The potassim/sodium ratios of spinach namul and kong jorim were 1.70 and 0.81, respectively, while that of bracken namul was very low as about 0.1. Food-borne pathogens were not detected out of 92 side dishes.
This study was conducted to investigate the effects of dietary Lactobacillus brevis (3.4×108 CFU/g) supplementation on growth performance, DM and N digestibilities, blood cell counts and fecal odor emission compounds in growing pigs. Ninety six crossbred [(Landrace×Yorkshire)×Duroc] pigs with an initial BW of 24.60±1.28kg were used for 42-d feeding trial according to a completely randomized design. Three corn- soybean meal based dietary treatments included: 1) CON (basal diet); 2) LB1 (basal diet + Lactobacillus brevis 0.2%) and 3) LB2 (basal diet+Lactobacillus brevis 0.4%). There were three dietary treatments with eight replicate pens per treatment and four pigs per pen. Through the entire experimental period, ADG, ADFI and gain/feed had no significant differences among treatments(P>0.05). Nitrogen digestibility was increased in LB1 and LB2 treatments compared to CON treatment (linear effect, P<0.05), however, DM digestibility had no significant difference among all the treatments (P>0.05). The WBC, RBC and lymphocyte concentrations in whole blood were not affected by treatments (P>0.05). Fecal NH3N and H2S concentrations were significant decreased in LB2 treatment compared to CON treatment (linear effect, P<0.05). Fecal VFA (acetic acid and propionic acid) concentration was also reduced in LB2 treatment compared to CON treatment (linear effect, P<0.05). In conclusion, Lactobacillus brevis (3.4×108 CFU/g) supplementation at the level of 0.4% can improve nitrogen digestibility and decrease the concentrations of fecal odor emission compounds in growing pigs.
Lipie peroxide formation, antiperoxidative s system and body adaptability for handling lipid p peroxide were examined in the first and second g generations of rats fed fish oil. Mackerel oil(MO) was used and four other dietary oils and fat, i.e. soybean oil(SO), perilla oil(PO), rapeseed oil(RO) and beef tallow(BT) were also employed to compare the effect of fish oil. Synthetic diets containing these five dietary fats at the level of 1O%(w/w), were given to the correspondm ing groups of male and female rats weighing about 70 grams. After 34 days of feeding, male a and female rats were mated and their offsprings were raised throughout suckling (17, 26 days) and weanling (39 days) periods. Liver lipid perox xide level was highest in MO group of both first (mother rats after lactation) and second generat tions of 17 and 26 days old, but not of 39 days old. During suckling period, liver lipid peroxide level was well matched to total unsaturation of dietary fat. Brain lipid peroxide levels were not different among five groups. Liver $alpha$-tocopherol a and reduced glutathione (GSH) levels were lowest in MO fed first generation. In second generation, $alpha$-tocopherol level was also low in MO group, although the effect was less pronounc ced, but GSH level was not different from other groups. Oxidized glutathione (GSSG) level did not consistently vary by change in dietary fat. Glutathione peroxidase activity increased as young rats grew up to 39 days. Superoxide d dismutase activity change was insignificant by a age, but was shown as lowest in MO group. At the age of 26 and 39 days, liver glutatione peroxidase activity was increased as was level of lipid peroxide, suggesting that this is the one of the mechanisms responsible for body adaptab bility for protection against the accumulation of lipid peroxide.
Purpose: This study assessed the food intake and nutritional status of the elderly in long-term care facilities in order to provide adequate food services and improve the nutritional status. Methods: The survey was carried out from August 2019 to October 2019 for the elderly in long-term care facilities located in Gwangju Metropolitan City. The survey was conducted to collect data from 199 elderly persons (34 males and 165 females) aged over 65 years old. The food intake was assessed using a 1-day 24-hour recall method. Results: More than 90% of the subjects were over 75 years old. Forty five percent of the subjects were active, 44.2% of the subjects perceived themselves as not being healthy. Dementia and Parkinson's disease were the most common diseases, followed by hypertension, musculo-skeletal disease, diabetes, and stroke. Only 25.6% of the subjects had most of their teeth intact, and 44.7% of the subjects had difficulty in chewing and swallowing. The total food intake was 1,127 g in males and 1,078 g in females. The most frequently consumed foods were kimchi, cooked rice with multi-grains, soybean soup, cooked rice with white rice, yogurt, pumpkin porridge, soy milk, and duck soup. The average energy intake of the subjects was 1,564.9 kcal in males and 1,535.5 kcal in females. The overall nutritional status of the elderly in the long-term care facilities was poor. In particular, the intake of vitamin D and calcium, vitamin C, riboflavin, and potassium were very low. The intake of vitamin D was 5 ㎍, and 86.4% of the elderly were below the estimated average requirement, while the intake of sodium was high. Conclusion: The results of this study can be used to understand the health and nutritional status and to improve the food services and nutrition management for the elderly in longterm care facilities.

The purposes of this study were 1) to investigate eating behaviors and patterns in breast cancer patients using a newly developed food frequency questionnaire and 2) to examine perception and use of nutritional information about breast cancer treatment among cancer patients treated with radiation therapy. Sixty breast cancer patients (case group) undergoing radiation therapy in Ajou University Hospital, Suwon, South Korea and 79 healthy women (control group) participated in this study. Mean age of subjects in the control group was $46.00{\pm}7.88$ years and BMI was $23.12{\pm}2.85kg/m^2$, and that of the case group was $50.06{\pm}11.64$ years and $22.32{\pm}3.24kg/m^2$. The results of eating behaviors showed several significant differences between control and case groups. Breast cancer patients ate meals on a more regular basis, on time, and more frequently compared to control subjects. In addition, they preferred more salty or spicy and bland food compared to healthy women. According to answers from the food frequency questionnaire, breast cancer patients consumed significantly lower amounts of boiled white rice, meats and processed food, fish and shellfish, coffee, milk, and cheese, whereas they consumed a significantly large amount of boiled multigrain rice, vegetable, seaweeds, soybean and processed food, and yoghurt compared to healthy women. This study also observed the way in which cancer patients and healthy control subjects obtain information about breast cancer treatment and its reliabilities. Results showed that healthy women did not hesitate to obtain information from mass media, while breast cancer patients would obtain nutritional information from specialists rather than mass media. Results of this survey confirmed that breast cancer patients avoided intake of red meat protein, even though they already recognized the importance of dietary protein intake for recuperation and treatment of the disease. These results could be used for future diet and nutrition guidelines for breast cancer patients.
This study was conducted to characterize comparatively the accumulative patterns of protein and oil, temporal changes in electrophoretic components of proteins during seed development and maturation for the soybean varieties with high, medium and low protein contents. 1. The dry matter of the developing seed increases slowly for the first 22 days after flowering, followed by rapid linear increase for 20 to 30 days and further slow increase for 5 to 15 days attaining its maximum. During the period 12 to 27 days after flowering the protein content of seed increases rapidly while oil content increases rapidly. Following this period of rapid changes, there was period of slow increase until 40 to 47 days after flowering and no seizable further change in the content of both protein and oil. 2. The high protein variety, Saikai # 20, was characterized by shorter period and lower rate of decrease in protein content during the early period, followed by longer period and higher rate of increase in protein content, with earlier stop of oil accumlation during the seed development. 3. The low protein and high oil variety, Shelby, was characterized by longer period of decrease in protein content and shorter period of increase in protein content in contrast to the longer period of slow oil increase during seed development. 4. The temporal pattern of protein component accumulation during seed development was distinctly different among varieties differing in protein content. The time of distinct appearance of all the protein components identifiable in the matured seeds was in accordance with the end of d crease in the protein content of seed. A component having Rm of 0.03 which was absent in the matured seeds was identifiable during the first 17 days after flowering. 5. The high protein variety, Saikai # 20, had much higher compositioral ratio of the component a from the early days of seed development and it continued to increase until 47 days after flowering, while the increase in the composition of the component a stopped as early as 27 days after flowering in the other lower protein varieties. 6. The composition of the component b increased during the period from 17 to 42 days after flowering in all the varieties tested, but the rate of increase during the period was lowest in the high protein variety, Saikai # 20.
Studies were carried out to find the effect of various soil properties on the growth, nodulation and yield using a soybean variety, 'Tongbuktae', at various soils. The results of the study are summarized as follow: 1. The formation ratios of various characters in soybeans were different before and after flowering. The root length(89.3%), stem diameter(82.1%), plant height(77.8%), number of nodes(67.4%), and number of nodes(67.9%) gave the high formation ratio before flowering. However, the formation of number of nodules(66.3%), top dry weight(74.9%) and total dry weight(71.7%)was accomplished mainly after flowering. The ratio of the formation in root dry weight was appeared to be about same in the growth period before and after flowering. 2. Nodulation ratio after flowering shelved significantly positive correlation with dry matter accumulation. 3. T/R, top dry weight/plant height and plant height/root length were significantly associated with yield. The tested soils with higher ratio mentioned above, also showed higher yield. 4. pH, oraganic matter, phosphate, potassium, total nitrogen and molybdenum in the soils were significantly correlated with nodulation and yield. Content of calcium in the soils only showed significant association with yield. 5. Soil properties influenced yield were molybdenum, calcium, organic matter, pH, number of nodules, magnesium, phosphate, total nitrogen and potassium in the order of importance. This order was varied according to the soils employed in these studies.
The recombinant DNAs, pGBF, pGTF, and pZ4F, using soybean ferritin gene have constructed with the promoters derived from seed proteins, glutelin, globulin, and zein. The recombinant ferritin genes were transformed into rice plant by Agrobacterium-mediated transformation. Iron contents and agronomic traits have been evaluated in the transgenic progenies. The embryogenic calli survived from second selection medium were regenerated at the rates of 19.2% with pGBF, 15.0% with pGTF, and 18.4% with pZ4F in Donganbyeo and 6.7% with pGBF, 11.7% with pGTF, and 3.4% with pZ4F in Hwashinbyeo. The introduction of ferritin gene in putative transgenic rice plants was confirmed by PCR and Southern blot analysis and also the expression of ferritin gene was identified by Northern blot and Western blot analysis. The iron accumulation in transgenic rice grains of the transgenic rice plant, T1-2, with zein promoter and ferritin gene contained 171.4 ppm showing 6.4 times higher than 26.7 ppm of Hwashinbyeo seed as wild type rice, but the transgenic plants with globulin and glutelin showed a bit higher iron contents with a range from 2.1 to 3.0 times compare to wild type grain. The growth responses of transgenic plants showed the large variances in plant height and number of tillers. However, there were some transgenic plants having similar phenotype to wild type plants. In the T1 generation of transgenic plants, plant height, culm length, panicle length, and number of tillers were similar to those of wild type plants, but ripened grain ratio ranged from 53.3% to 82.2% with relatively high variation. The transgenic rice plants would be useful for developing rice varieties with high iron content in rice grains.
