The methanol extract of waxy brown rice fermented with Agrocybe cylindracea was prepared. The extract was then freeze dried and fed to rats at the level of 0.5, 1.0, 2.0 g/kg body weight for 14 days, followed by the treatment with carbon tetrachloride for three consecutive days to induce hepatotoxicity. After sacrificing the rats, the enzyme activity of aspartate aminotransferase (AST), alanine aminotransferase (ALT), alkaline phosphatase (ALP), lactate dehydrogenase (LDH), and ${\gamma}$-glutamyl transpeptidase (${\gamma}$-GTP) in serum was determined. Biochemical analysis on serum for albumin, total protein, triglyceride, and total as well as HDL-cholesterol were carried out along with a histopathological study of liver tissues. Based on these data, we suggest that the waxy brown rice cultured with A. cylindracea may exert hepatoprotective activity against hepatotoxicity caused by chemicals such as carbon tetrachloride.

곡류, 서류, 두류 및 그 가공품 총 200건을 대상으로 benzo(a)pyrene등 8개 PAHs 화합물에 대하여 분석하였다. 시료 중 PAHs 화합물을 n-hexane으로 추출한 후 Sep-Pak Florisil cartridge로 정제한 후 HPLC-fluorescence로 분석하였다. 분석한 대상식품 중 PAHs 평균 함량은 각각 benzo(a)anthracene $0.13{\mu}g/kg$, chrysene $0.08{\mu}g/kg$, benzo(b)fluoranthene $0.06{\mu}g/kg$, benzo(k)fluoranthene $0.03{\mu}g/kg$, benzo(a)pyrene $0.08{\mu}g/kg$, dibenzo(a,h)anthracene $0.15{\mu}g/kg$, benzo(g,h,i)perylene $0.45{\mu}g/kg$, indeno(1,2,3-c,d)pyrene $0.14{\mu}g/kg$이었다.

Migration levels of plasticizers, di-n-butyl phthalate (DBP), benzyl-butyl phthalate (BBP), di-n-octyl phthalate(DNOP), di-iso-decyl phthalate (DIDP) and di-iso-nonyl phthalate (DINP), di-(2-ethylhexyl) adipate (DEHA), from 46 poly(vinyl chloride) (PVC) wrap films and 54 PVC gaskets into food simulants were determined using gas chromatography/mass spectrometry (GC/MS). The method was validated with limit of detection (LOD) of $0.01{\sim}0.02\;{\mu}g/mL$ for DBP, BBP, DNOP and DEHA, and $2\;{\mu}g/mL$ for DIDP and DINP. The linearity were found to be > 0.99 for all the compounds in concentration range of $0.1{\sim}81.4\;{\mu}g/mL$, and overall recoveries were ranged from 90.4 ~ 99.6%. DBP, BBP, DNOP, DEHA, DIDP and DINP were not detected in food simulants, except 1 wrap sample from which 0.28 and $0.99\;{\mu}g/mL$ of DEHA were detected respectively when tested with 20% ethanol and n-heptane as food simulants. These values were below the regulatory limitation in European Union (EU).
