  • A production method for scaled and scaleless strain of common carp (Cyprinus carpio) at a breeding trial is developed by test-cross technique. When the fish with scaleless (Israeli strain of common carp) were crossed with scaled strain (hybrid fish between oriental and Israeli strain of the species), we can easily obtain 2 types of common carp with or without scale. The frequency of scaleless fish in this experiment was about 40% in the population, however, their growth rate was slightly higher than scaled fish after 3 months of this experiment.

Process Optimization for Cookies with Low-marketable Israeli Carp Cyprinus carpio Using Response Surface Methodology (RSM) (반응표면분석법을 활용한 저상품성 향어(Cyprinus carpio) 쿠키 제조 공정 최적화)

  • This study was conducted to optimize the cookie preparation using Israeli crap Cyprinus carpio paste (C-ICP). The results of response surface methodology suggested the selection of other supplementary materials/[soft flour (SF) + ICP] (X1) and SF/ICP (X2) as independent variables, and hardness (Y1), yellowness (Y2), amino acid nitrogen (Y3), and overall sensory acceptance (Y4) as dependent variables. The optimal conditions of OS, SF, and ICP were 35.0%, 40.3% and 24.7%, respectively, and the predicted values of the multiple response optimal conditions Y1, Y2, Y3, and Y4 were 2,006.2 N/m2, 21.1, 30.0 mg/100 g, and a score of 6.6, respectively. Under the optimum conditions, experimental values of Y1, Y2, Y3, and Y4 were 2,010.5 ± 22.3 N/m2, 21.6 ± 0.5, 29.6 ± 0.7 mg/100 g, and a score of 6.9 ± 0.3, respectively, which were not significantly different from the predicted values (P < 0.05). The results on hardness, moisture, VCI yellowness, and lightness suggested that the optimum heating period was 20 min. C-ICP prepared under the optimum conditions was superior in sensory evaluation to cookies without the Israeli carp paste.

Nutritional and Digestive Properties of Israeli Carp Cyprinus carpio as Affected by Size, Part and Commercial Value (향어(Cyprinus carpio)의 크기별, 부위별 및 상품성별 영양 및 소화 특성 비교)

  • This study was conducted to compare sensory and nutritional and digestive properties of the Israeli carp Cyprinus carpio muscle (ICM) by size [normal large (NLF) and small (NSF) fish], part [ventral (VM) and dorsal (DM) muscle], and commercial value [NLF, recessive (RF) or deformed (DF) fish]. In NLF, the major amino acids were lysine, aspartic acid, and glutamic acid, whereas aspartic acid and glutamic acid were predominant in NSF, DM, VM, DF, and RF. Taurine content increased with fish size, and was higher in DM than in VM, and higher in NLF than in DF but lower than that in RF. Regardless of ICM size, part, and commercial value, potassium and iron were expected in the health function, but calcium and zinc were not expected. The major fatty acids present in ICM were 16:0, 18:1n-9, and 18:2n-6, regardless of size, part, and commercial value. The digestion rate of ICM by digestive organ was lower in NLF than in NSF, and lower in VM with a high lipid content than in DM, and lower in DF than in RF.

Preparation and Sensory Properties of Semi-dried Israeli Carp Cyprinus carpio (향어(Cyprinus carpio)를 활용한 반건제품의 제조 및 관능 특성)

  • The aims of this study were to optimize the processing procedure of high-quality semi-alternating temperature dried Israeli carp Cyprinus carpio (SAD-IC) and to investigate the sensory properties of the product. Based on the differences in moisture content of the dorsal and ventral muscles, high quality SAD-IC was prepared by alternating the drying temperature between 4 h at 35℃, and 2 h at 5℃, three times before final drying for 2 h at 35℃. The surface in SAD-IC produced under the optimal alternating-temperature drying process had a markedly superior browning index value and softer texture compared to products produced using constant-temperature drying. SAD-IC produced from dorsal and ventral muscle had significantly superior taste values than the raw material. These results suggest that SAD-IC has the potential to be industrialized.

Sensory and Enzymatic Properties of Israeli Carp Cyprinus carpio as Affected by Size, Part and Commercial Value (향어(Cyprinus carpio)의 크기별, 부위별 및 상품성별 관능적 및 효소학적 특성 비교)

  • This study was conducted to compare the sensory and enzymatic properties of Israeli carp Cyprinus carpio muscle (ICM) according to size [normal large (NLF) and small fish (NSF)], part [ventral (VM) and dorsal muscles (DM)], and commercial value [NLF, recessive (RF), or deformed fish (DF)]. There was not difference in salty of all samples. The sourness was stronger in NLF and DM than in NSF, RF, and DF, and VM, respectively. The umami of ICM showed no size-associated differences; however, those of DM, and DF and RF, were superior to those of the VM and NLF, respectively. The sweetness was also stronger in NLF than in NSF and RF, and in DM than VM. The sweetness of DF didn't differ compared to those of NLF and RF. The intensity of fish odor was weaker in NSF or DF than that in NLF, and was higher in DM than in VM. The color of ICM was bright in NSF and DF compared to NLF. Enzyme activity was very low in the muscles and high in viscera. Therefore, ICM could be used as a material for seafood products, regardless of size, part, and commercial value; however, the issue of lipid oxidation must be considered.

  • Digestibilities of nutrients and energy are among the most important parameters to be determined in feed evaluation research. The apparent digestibility coefficients (ADC) of protein, total carbohydrate (TCHO), fat, energy and amino acids were determined for 14 common feed ingredients using chromic oxide as external indicator with Israeli carp (Cyprinus carpio). The ingredients tested were; corn, corn starch, gelatinized starch, wheat middling, wheat grade inferior, corn gluten meal, rapeseed meal (solvent extracted), soybean meal (solvent extracted), blood meal (drum dried), feather meal(hydrolyzed), file fish meal (flame dried), sardine fish meal (steam dried), sardine fish meal (flame dried) and brewers yeast (dehydrated). The overall ADC values were high in Israeli carp showing high capacity to digest their feed ingredients irrespective of plant or animal sources. In addition the ADC of plant protein was high enough to support the successful supplementation of fish meal with other plant proteins.

Effects of Fish Meal Analogue on the Growth of Israeli Strain of Common Carp, Cyprinus carpio (이스라엘 잉어(Cyprinus carpio)에 대한 어분 대체품의 성장 효과)

  • This study was conducted to investgate the effect of fish meal analogue (FMA) on the growth of Israeli carp, Cyprinus carpio averageing 43g. Leather meal, meat and bone meal, feather meal, squid liver powder, poultry by-product and blood meal were used for ingredient of FMA. Four experimantal diets were formulated to contain 36% crude protein and 15.4 kJ available enery g-1. The percentage of follows ; Diet 1, 100% 3, 60% WFM + 40% FMA (40% FMA) ; Diet 4, 40% WFM + 60% FMA (60% FMA). In this expriment, fingerling Israeli carp averaging 43 g were assigned to each diet treatment. When the experiment was terminated, weigth gain (WG), feed conversion (FC), specific growth rate (SGR) and protein efficiency ratio (PER) were measured respectively. In the experiment, WG, FC, SGR and PER of Diet 2 were not significantly different from those of the control diet (P0.05). And WG, FC and SGR of Diet 3 were not significantly of the control Diet. In Diet 4, WG, FC and PER were not significantly different from those of the control Diet, but SGR was lower than that fo the control Diet. According to the results from this study, it might be possible to replace fish meal protein by FMA up to 60% in fingerling Israeli carp diets.

  • This study was undertaken to understand development stage of ovary and changes of hormone concentrations in the Israeli carp, Cyprinus carpio from Ferbruary to May. The results obtained in these experiments are as follows: 1. Serum LH levels began to increase sharply in March, coinciding with the onset of rapid ovarian development. 2. LH levels were well correlated with changes in gonadosomatic index. 3. Dramatic increase in gonadosomatic index occured during the months of March. 4. Ripe stage(Stage VII) rapidly increase in March. 5. Early perinucleolus oocyte rapidly develop into late perinucleolus oocytes in March. 6. The vitellogenic phase begins as these late perinucleolus oocytes become transformed into early maturing oocytes through the accumulation of yolk. 7. The cytoplasm completely fills with yolk as oocytes reach the late maturing stage. 8. Changes in the microscopic appearances of the ovaries were well correlated with changes in both gonadosomatic index and macroscopic appearance. 9. It is concluded from these observations that LH plays a major role in sexual maturating of the Israeli carp.

Sensory and Nutritional Properties of Vegetable Rice Porridge Made with Israeli Carp Cyprinus carpio (향어(Cyprinus carpio) 야채죽의 관능 및 영양 특성)

  • This study was conducted to investigate the sensory and nutritional properties of vegetable rice porridge made with Israeli carp (VRP-IC), and to compare it with commercial vegetable rice porridges (controls). The proximate composition of VRP-IC per 100 g was 82.4 g moisture, 3.9 g protein, 2.6 g lipids, and 0.9 g ash, and had a lower moisture content than that of the controls, but a higher crude protein, crude lipid, and ash content. In terms of taste, VRP-IC was higher in umami and sourness, but lower in saltiness, sweetness, and bitterness. The viscosity and hardness of VRP-IC were 13,117 mPa·s and 2,258 N/m2, respectively. The total amino acid content of VRP-IC was 3,537.2 mg/100 g, with the maor amino acids being aspartic acid and glutamic acid. The mineral contents of VRP-IC per 100 g were as follows: 114 mg calcium, 70.3 mg phosphorus, 79.1 mg potassium, and 0.23 mg iron. These were all higher than those of the controls. The major fatty acids of VRP-IC were 16:0, 18:1n-9, and 18:2n-6, which were identical to those of the controls. The digestibility of VRP-IC was 86.4%, which was similar to those of the controls.

  • As a part of serial study for comparing lipid components in freshwater fishes, this work was undertaken to compare the lipid components among wild and cultured carp, Cyprinus carpio, and Israeli carp, Cyprinus carpio nudus. The lipid components of cultured carp were analyzed and compared with those of wild and Israeli carp. In the content of total lipid, the lipid content in cultured carp was slightly lower than that in wild one, but similar to that in Israeli carp. The lipid contents in viscera of wild and cultured carp were 2 times higher than those in edible portion, but the lipid content in viscera of Israeli carp showed a similar trend to that in edible portion. In the fatty acid composition of neutral lipid in edible portion, percentages of $C_{18:1},\;C_{18:2},\;C_{18:3},\;C_{22:5}\;and\;C_{22:6}$ in cultured carp wire higher than those in wild one, while percentages of $C_{16:0},\;C_{18:0},\;C_{16:1},\;C_{20:4}\;and\;C_{20:5}$ lower, and percentage of $C_{18:2}$ in Israeli carp was noticeably higher than that in wild and cultured carp. In the case of phospholipid in edible portion, percentages of $C_{18:0},\;C_{18:1},\;C_{18:2},\;C_{18:3}\;and\;_C{22:6}$ in cultured carp were higher than those in wild one, while percentages of $C_{16:0},\;C_{16:1},\;C_{20:4},\;C_{20:5}\;and\;C_{22:5}$ lower. The unsaturation (TUFA/TSFA) of neutral lipid in cultured carp was slightly higher than that in wild one, but slightly lower than that in Israeli carp. In the case of phospholipid, the unsaturation showed a similar trend to that of neutral lipid. The essential fatty acid content(TEFA) of neutral lipid in edible portion of cultured carp was higher than that of wild one, but that in viscera lower. In the case of phospholipid in edible portion, the essential fatty acid content in Israeli carp was slightly higher than that in wild and cultured carp, and that in wild one was higher than that in cultured one. The w3 highly unsaturated fatty acid contents(w3 HUFA) of neutral lipid almost showed a similar trend to the essential fatty acid contents in wild and cultured carp, and Israeli carp. In the case of phospholipid, the w3 HUFA in Israeli carp was considerably higher than those in cultured and wild carp. In the ratio (A/C) of fatty acid content(A) in cultured carp to that(C) in diet, the A/C ratios of $C_{20:5}\;w3(0.12),\;C_{22:5}\;w6(0.53),\;C_{22:5}\;w3(0.68)\;and\;C_{22:6}\;w3(0.26)$ were much lower and in the ratio (B/C) of fatty acid content (B) in Israeli carp, the B/C ratios of $C_{18:3}\;w3(0.61),\;C_{20:5}\;w3(0.11),\;C_{22:4}\;w6(0.16),\;C_{22:5}\;w6(0.07)\;and\;C_{22:6}\;w3(0.79)$ were also lower than the other fatty acid. Consequently, it is considered that the ratios of w3 HUFA is related to the biosynthesis of polyenoic acid and growth rates of cultured and Israeli carp.
