A Study on the Effect on Sauce Selection and Preference of Demi-glace Sauce by Material - Focused on the Restaurants in Gwang-ju and South Jeolla Province - (데미글라스 소스의 재료별 선호도와 소스 선택에 미치는 영향에 관한 연구 - 광주.전남 레스토랑을 중심으로 -)

  • The sauce is very important to western dishes and also to value and relish of dishes because taste, appearance and the degree of water content are determined by sauce. Also, the taste derived from major sauce like a demi-glace and the basic sauce that affects cooking quality are highly recognized, but preference analyses of source and researches on each ingredients have not been performed up to now. Until today, sauces act as lubricants which add relish to dishes and aid digestion, so the importance of source is more emphasized to raise the taste, appearance, water content and specially healthy function of main ingredients. In this research, some problems of sauce itself and possibilities of improvement was grasped and then some remedies were suggested through the preference, variety and quantity analyses of demi-glace sauce practically used in hotels and restaurants around Gwang-Ju City and South Jeolla(Chon-Nam) Province. Finally, the volume of demi-glace sauce with various ingredients was suggested for various kinds of application. Through the actual proof analysis, preference of each sauce made from various kinds of ingredients was investigated. The result shows that the sauce made from beef bone is highly preferred, followed by pork bone and lamb bone. The least preferred is chicken bone.

Enhancement of the Antioxidant and Anti-inflammatory Activity of Hizikia fusiforme Water Extract by Lactic Acid Bacteria Fermentation (유산균 발효에 의한 톳 (Hizikia fusiforme) 추출액의 항산화 및 항염증 활성 증가)

  • We previously reported that fermentation by Lactobacillus brevis LB-20 isolated from Kimchi resulted in improvement of the sensory quality of Hizikia fusiforme water extract. This study was conducted to evaluate the possible application of lactic acid bacteria fermentation to improve the functional qualities of H. fusiforme extract. L. brevis LB-20 was inoculated and cultivated in H. fusiforme extract. The antioxidant and anti-inflammatory activities of extract were then assayed both before and following fermentation for two days. Antioxidant activity was determined by assaying levels of radical scavenging activity against 1,1-diphenyl-2-picrylhydrazyl (DPPH), hydroxyl, superoxide, and alkyl radical. Lactic acid bacterial fermentation of H. fusiforme extract resulted in enhancement of antioxidant activity. The greatest enhancement of antioxidant activity was seen in the hydroxyl radical scavenging assay that incorporated 0.5 mg/mL of raw and fermented H. fusiforme extract. Fermented extract exhibited greater (21.95%) inhibition of nitric oxide synthesis than did raw extract (14.66%) at a concentration of 1 mg/mL. The fermented extract exerted its potent anti-inflammatory activity via attenuation of expression of inflammation-related cytokine proteins (TNF-${\alpha}$ and iNOS).

Development of a Set of an Experimental Equipment of Westerly Wave for High School (고등학교에 적합한 편서풍 파동 실험장치 개발)

  • Due to a lack of reproducibility and visibility of the conventional equipment for westerly wave simulation, it is difficult to have indoor experiments at high school that show the stream of Hadley cell. A modified improvement of the old one improves the problem. The side wall and bottom of the new equipment is made by copper and acrylic resin, respectively, in order to clarify the difference between the water temperature inside and outside of the water tank. The equipment also has a high quality digital record for generating exact analysis of the results. And we also carried out several experiments that relate theoretical and experimental aspection of westerly wave. Temperature Detected Sheet (TDS) in flow visualization unit provides not only visual information of liquid flow, but also clear understanding of the relation between upper and lower wind flow structure. And the liquid stream simulated in indoor experiment using proposed equipment is commensurate with westerly wave in real atmosphere. The efficiency of educational properties of the proposed equipment is verified indirectly by Likert Scales survey of high school teachers.

Effect of Dietary Essential Oils on Growth, Feed Utilization and Meat Yields of White Leg Shrimp L. vannamei

  • Effect of dietary essential oils on growth, feed utilization and meat yields of white leg shrimp L. vannamei was investigated. White shrimp fry weighing 0.62 g were kept in one of 12 tanks (75 head/500 L holding tank) in a closed recirculation system. Four experimental diets, a commercial diet (control), phytoncide oil (PO), oregano oil (OO) and fermented garlic liquid (GL) were fed for 16 weeks. The mean water quality values for the whole experimental period were $27.8{\pm}1^{\circ}C$, $7.6{\pm}0.3$, $15.5{\pm}0.3$ g/L and $6.1{\pm}0.3$ mg/L for water temperature, pH, salinity and dissolved oxygen, respectively. At the end of the trial, 10 shrimp per tank were randomly sampled and meat yields (%) were evaluated after peeling the shell and removing the head. After a 16 week feeding trial, final weight of shrimp ranged from 21.9 g to 23.6 g. Feed conversion was not significantly different among groups (p>0.05), which was the lowest (1.95) in the control and highest (2.30) in the PO. Specific growth rate was also not significantly different (p>0.05) and ranged from 3.18% to 3.25%. Average daily gain of 0.2 g was obtained in all treatments. Mortality varied from 35.1% for control to 44.9% for OO. Meat yields maintained constant at 52.1% for control to 53.0% for PO. The study suggested that natural essential oils could not exert any improvement in growth performance, mortality and meat yields of white leg shrimp.

A Case Report of an Intervention Strategy that Applied an ICF Tool to Improve the Walking Ability of Stroke Patients (뇌졸중 환자의 보행능력 증진을 위한 ICF(International Classification of Functioning, Disability and Health) Tool을 적용한 중재전략의 증례)

  • Purpose: The objective of this study was to identify functional problems, including walking ability, of patients with strokes using the International Classification of Functioning, Disability, and Health (ICF) and to present a method that could solve functional problems, thereby determining the applicability of the ICF to increase the quality of evaluation and intervention in clinical fields in the future. Methods: Information on stroke patients who were admitted and treated in a hospital was collected. The authors conducted evaluations, interventions, and measurements of the results of the ICF tool in order to improve gait abilities of patients. The subjects were trained using proprioceptive neuromuscular facilitation (PNF) one hour a day and five times a week for four weeks. The result measurement variables were a six-minute gait test, 10 m velocity test, gait instability test, and measurements using the ICF sheet. Results: In the six-minute gait test, gait distance increased by 48 m, from 102 m to 150 m. The gait velocity test result showed an improvement from 0.36m/s to 0.44m/s. The subjects performed a gait instabilitytestwithacupfilledwith50mmwater. In the gait instability test, the amount of water was 38 mm before the intervention; however, it was 50 mm after the intervention. The gait velocity with a cup filled with water improved from 0.25m/s to 0.31m/s. Conclusion: An evaluation and intervention were designed with the ICF tool for stroke patients. Gait abilities improved when the PNF technique was used. The IFC method can be used for evaluation and intervention, and it could help improve gait abilities of stroke patients.

Estimation of Soil Loss into Sap-Gyo Reservoir Watershed using GIS and RUSLE (GIS와 RUSLE 기법을 이용한 삽교호유역의 토사 유실량 산정)

  • Prediction of exact soil loss yield has as important engineering meaning as prediction of exact flow measurement in a stream. The quantity of soil loss in a stream should be considered in planning and management of water resources and water quality such as design and maintenace of hydraulic structures : dams, weirs and seawalls, channel improvement, channel stabilization, flood control, design and operation of reservoirs and design of harbors. In this study, the soil loss of Sap-gyo reservoir watershed is simulated and estimated by RUSLE model which is generally used in the estimation of soil loss. The parameters of RUSLE model are selected and estimated using slope map, landuse map and soil map by GIS. These parameters are applied to RUSLE's estimating program. And soil loss under probability rainfall in different frequencies are estimated by recent 30 years of rainfall data of Sap-gyo reservoir watershed.

The Evaluation of River Naturalness Improvement Using AHP (계층분석과정기법(AHP)을 이용한 하천자연도평가법 개선)

  • To propose a sound direction for river rehabilitation plan, the naturalness of the river must be evaluated. In this study, the conventional methods for evaluating the naturalness of rivers proposed by Park, et al. has been improved to estimate the weights for each items subject to assessment and applied adequate Analytic Hierarchy Process (AHP). To estimate the weights, survey was conducted on a group of 83 experts in Civil and Environmental Engineering with a customized questionnaire. The results of the survey were generalized and used to estimate the weights of each items. Among the 14 evaluation items that have been generated as a result of the estimation, a total of 7 weight values such as water quality, variations in water flow, vegetation around minor bed, curve of waterway, vegetation around flood plain, variety in minor bed width, and diversity of stream bed materials appeared to be high. The improved method for evaluating the naturalness of rivers was applied to Hoe-ya River, where the method has successfully discriminated the sections having low degree of naturalness. The proposed assessment method can be employed as a criterion to determine the business zones in the river environment maintenance projects.

Analysis and Comparison of Flow Rate Measurements Using Various Discharge Measuring Instrument and ADCP (다양한 유량 측정기기와 ADCP를 이용한 유량 비교 분석)

  • Discharge data examine the process of hydrologic cycle and used significantly in water resource planning and irrigation and flood control planning. It makes high quality discharge data, they carry out research on standard and method of discharge measurement, and equipment improvement. Now various flow meters are utilized to make discharge data in Korea. However, accuracy of equipment and exprerimental research data from measurement are not enough. ADCP(Acoustic Doppler Current Profiler) have been introduced and utilized for flow measurements since the end of 1980's. ADCP flow method is a formal method for flow measurement can easily applyd to relatively large rivers gradually recognized. This equipment can measure the non-contact three-dimensional velocity and water depth data very quickly and efficiently. Also, spatial and temporal resolution of the data is more accurate than any other flow measurement methods which measure flow rate by velocity - area measurement method. In this paper, the velocity is measured using various flow meter and verified the effectiveness by applying from the ADCP in Geum-river. Various flow meters which are med for discharge measurements are VALEPORT002, FLOW TRACKER, PRICE AA and ADCP. The average of five times flow measurement result by ADCP was $10.412m^3/s$, with a standard deviation of 0.68. The repeat test by ADCP and comparison between ADCP and other flow devices to verify the most import factor, flow measurement accuracy. In the result, repeat test of the ADCP showed similar values, flow values were similar to other velocity device results and the average error is 7.7%.

Development of Lora Wireless Network Based Water Supply Control System for Bare Ground Agriculture (자가 충전 및 장거리 무선 네트워크를 지원하는 노지 농작물 관수 자동화 시스템 설계)

  • In order to solve the problems such as reduction of agriculture population, aging and declining of grain self sufficiency rate, agriculture ICT convergence technology utilizing IoT technology is actively being developed. Agricultural ICT technology only concentrates on facility houses, and there is no automated control system in the field of cultivation. In this paper, we propose an irrigation control system that automatically controls the solenoid valves and water pumps in a large area with Lora wireless communication. The proposed system does not require a separate power source by using a small solar panel, and it is very convenient to install and operate supporting wireless auto setup by plug-and-play method. Therefore, it is expected that it will contribute to the reduction of labor force, quality of agricultural products, and productivity improvement.

A Review of a Bill on the Ocean-Based Climate Solution Act (OBCSA) in the U.S and Implications for the Ocean Climate Change-Related Legal System in Korea (미국 해양기반기후해법 법안(Ocean Based Climate Solution Act, OBCSA)의 검토와 국내 해양기후변화 법제에 대한 시사점)

  • Climate change causes ocean warming, ocean acidification, sea-level rise, dynamic coastal risk, change of ecosystem structure and function, and degradation of ecosystem services. Not only that, but it has negatively impacted the well-being of people, society, and culture, including food security, water resources, water quality, livelihood, health, welfare, infrastructure, transport, tourism, recreation, and so on, especially by particularly degrading indigenous communities and generating an inequitable distribution of benefits and costs. As pointed out here, these adverse impacts of climate change on the ocean have been emphasized at the international and national levels. In contrast, the ocean field has been neglected in the climate change conversation for too long. However, since the UNFCCC COP 25, the ocean has been drawn into the discussion as a solution to address climate change. Moreover, the U.S. Congress recently unveiled a bill called the 'Ocean-Based Climate Solution Act, OBCSA' that reflects the new paradigm of the international regime. The comprehensive legislative bill includes elements related to climate inequity, a blue economy, and a community-led bottom-up policy mechanism, which will have a significant bearing on the ocean-climate legal system. Therefore, this study reviews the OBCSA and deduces implications with regard to the ocean-climate legal system in Korea.
