  • Purpose: The purpose of this study was to investigate the disease-related knowledge, stress and quality of life for the patients with varicose veins. Methods: Data were collected via questionnaire from 138 patients with varicose veins in C University Hospital in Korea from November in Korea 2012 to August 2013. Results: Knowledge of the symptoms and diagnosis was the lowest. The scores from patients with disease-related knowledge tended to be low for both subjects over the age of 60 and subjects with low education (less than high school). The score for stress over complications was the highest. The level of stress is higher for women, subjects without spouses, subjects with higher severity of disease and patients who had been taking hormones in the past or are still taking hormones. The disease-related quality of life tended to be lower for women and subjects without spouses. 21% of the variance in quality of life was explained by the level of disease-related stress, disease severity and knowledge. Conclusion: Education and the management of nurses to improve disease-related knowledge for patients with varicose veins is highly recommended. Intervention, by reducing stress, is necessary to improve the quality of life for women, subjects without spouses, and subjects with higher severity of the disease.

  • The purpose of this study was to evaluate total sugars intake and determine its relationship with nutrient density and obesity degree in elementary school children. A total of 1,292 elementary school students (638 boys, 654 girls) in Chungnam participated in this study. Daily total sugars intake of subjects was analyzed using the USDA database of sugars after a questionnaire survey using 24-hour recalls. The average age of subjects was 9.7 years, daily energy intake was 1,834.0 kcal, and total sugars intake was 37.6 g/day, which was 8.3% of total energy intake. Sugars intake from the milk group was highest at 18.4 g/day, followed by fruits, cereals, sugars and sweeteners, and beverages. Nutrient density of protein as well as Na, Fe, and Zn levels were significantly lower according to total sugars intake level. There was no significant difference between overweight and obesity risk among the sugars intake quartile groups. In conclusion, total sugars intake of subjects was not significantly high and not associated with obesity risk; however, high sugars intake in children was associated with decreased consumption of protein, Fe, and Zn, which are important for growth.

  • BACKGROUND/OBJECTIVES: A healthy diet has been reported to be associated with physical development, cognition and academic performance, and personality during adolescence. This study was performed to investigate the relationships among milk consumption and academic performance, learning motivation and strategies, and personality among Korean adolescents. SUBJECTS/METHODS: The study was divided into two parts. The first part was a survey on the relationship between milk consumption and academic performance, in which intakes of milk and milk products and academic scores were examined in percentiles among 630 middle and high school students residing in small and medium-sized cities in 2009. The second part was a survey on the relationships between milk consumption and learning motivation and strategy as well as personality, in which milk consumption habits were collected and Learning Motivation and Strategy Test (L-MOST) for adolescents and Total Personality Inventory for Adolescents (TPI-A) were conducted in 262 high school students in 2011. RESULTS: In the 2009 survey, milk and milk product intakes of subjects were divided into a low intake group (LM: ${\leq}60.2g/day$), medium intake group (MM: 60.3-150.9 g/day), and high intake group (HM: ${\geq}151.0g/day$). Academic performance of each group was expressed as a percentile, and performance in Korean, social science, and mathematics was significantly higher in the HM group (P < 0.05). In the 2011 survey, the group with a higher frequency of everyday milk consumption showed significantly higher "learning strategy total," "testing technique," and "resources management technique" scores (P < 0.05) in all subjects. However, when subjects were divided by gender, milk intake frequency, learning strategy total, class participation technique, and testing technique showed significantly positive correlations (P < 0.05) in boys, whereas no correlation was observed in girls. Correlations between milk intake frequency and each item of the personality test were only detected in boys, and milk intake frequency showed positive correlations with "total agreeability", "organization", "responsibility", "conscientiousness", and "intellectual curiosity" (P < 0.05). CONCLUSION: Intakes of milk and milk products were correlated with academic performance (Korean, social science, and mathematics) in Korean adolescents. In male high school students, particularly, higher milk intake frequency was positively correlated with learning motivation and strategy as well as some items of the personality inventory.

  • The purpose of this study was to examine the job satisfaction of foodservice managers at schools in Jeju, Korea, according to the organizational culture and commitment of the school foodservice and administrative departments. The subjects included 144 (98.6%) dieticians from Jeju schools. The data were analyzed by descriptive analysis, reliability analysis, factor analysis, ttests, ANOVA, and Pearson's correlation coefficients, using the SPSS Win 12.0 program. In terms of organizational culture, the dieticians perceived the 'human relations model' and 'internal process model' as the strongest types for the school foodservice departments and administrative departments, respectively. However, for both types, a gap existed between the organizational culture that was perceived and that which was expected. In particular, the subjects expected that the 'human relations model' and 'open systems model' were the most important organizational culture types. In terms of the subjects' organizational commitment scores, loyalty and pride scored highest whereas unity scored lowest. For the level of job satisfaction, the performed work itself scored highest and was deemed most important. Additionally, organizational culture was positively correlated to the factors affecting organizational commitment and job satisfaction. Finally, the surveyed managers had high demands for a human relations-oriented organizational culture to enhance job satisfaction.

  • We surveyed 821 children (ages 12-15 y) in Daejeon city and Cunngcheong province, Korea for their use of vitamin mineral supplements (VMS), either over-the-counter drugs and/or health functional foods (HFF). We also considered the significant variables of VMS use, including demographic characteristics, health-related variables, eating habits and nutritional beliefs of VMS by subjects. The frequency of VMS use was 24.8% and, in comparison to counterparts, it was higher in subjects attending middle school (p<0.001), in those living in a large city (p<0.001), in those with a high monthly family income (p<0.05), and in those with high concerns about school performance by parents (p<0.01). Selfhealth concerns by subjects (p<0.05) and concerns about health of offspring by parents (p<0.01) were higher in users than in nonusers. Eating habits of subjects did not affect the use of VMS. Users had a more positive view concerning the potential health benefits of VMS than did nonusers (p<0.05). Most users took VMS when they were healthy (78.9%) and expected 'disease prevention and health maintenance' (44.6%). However, most users did not feel any special effects from VMS use (58.8%), and they got their information on VMS through family and relatives (53.9%). Users of VMS preferred vitamin C supplements (44.2%) and Ca-supplements (56.9%). Therefore, the results show that VMS use is widely spread among the subjects, and that use of VMS is influenced by multiple variables and subjective criteria. Therefore, practical guidelines on VMS use for children's health and growth should be given through nutritional education.

  • The purpose of this study was to investigate the conceptual structure of subjects related to matter having pre-service elementary school teachers by applying semantic network analysis (SNA). The analyzed concepts in the subjects of matter were 6 words such as 'atom', 'molecule', 'ion', 'electron', 'matter' and 'particle'. The results of SNA of the concepts are as follows : 1. In the semantic network of 'atom', words having a high betweenness centrality were linked with the words based on both the scientific context and the everyday context. 2. The network of 'molecule' was analyzed to be more organized than the network of the 'atom'. 3. In the network of 'ion', the group of words of the scientific context was distinguished from the group of words of the everyday context. 4. The network of 'electron' was analyzed to be more oriented on electricity and magnetism in the field of physics. 5. In the network of 'matter', the words related to compounds were linked with knowledge of history of science. 6. The network of 'particle' was not structured with words based on particulate nature of matter.

  • To assess the food intake and diet quality by the interrelationship of DDS and DVS of high school girls, this dietary survey was conducted with 253 subjects living in Iksan and Seoul areas using a 24-hour recall method. The average amount of total food intake was 1,133.2 g, with 79.9% of food intake being supplied by vegetable food and 20.1% by animal food and higher in Seoul area. The food consumed most frequently was rice, green onion, garlic, soy sauce, sesame oil, onion, and Kimchi. The food consumed in the largest amounts were rice(303.3 g), milk(62.2 g), and Kimchi(53.4 g). Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When investigating the consumption pattern of major five food groups(grain, meat, dairy, fruit, vegetable groups), nobody consumed all five food groups in each meal. The groups most frequently missing were fruits and dairy products. The average number of food consumed per day was 12.1(DVS) and Iksan area scored lower(11.7) on DVS than Seoul area(12.6). The higher DDS and DVS of subjects were, the more MAR and NAR of energy, calcium, vitamin A and C increased. The number of major food groups(DDS)(p<0.01, P<0.05) and that of food items (DVS)(p<0.01) correlated positively NAR(nutrient adequacy ratio) and MAR (mean adequacy ratio) significantly.
