This study was carried out to investigate the feeding effects of microcapsulated inulin (MI) from Jerusalem artichoke (Helianthus tuberosus L.) on blood lipid, fatty acid composition and cholesterol of egg in laying hens. Hyline brown layers of 25 weeks old were subjected to one of the following treatments for 4 weeks: a control group without MI, 800 ppm, 900 ppm, and 1,000 ppm. Compared with control group, levels of triacylglyceride and cholesterol in blood and egg cholesterol decreased significantly in groups MI groups. Egg saturated fatty acid was lower in MI groups than control group but not unsaturated fatty acid was significantly high in MI groups as compared to the group without MI. The results suggest that the addition of microcapsulated inulin to a laying hens' diet can improve egg quality by reducing blood lipids.
Leaf temperature is complicated with the microclimate and the dry matter production in a plant community. But a daily change of leaf temperature varying by the locality in plant body or plant community is not yet clear. To resolve such a question, following experiment was designed; Helianthus tuberosus L., Glycine max L., Zea mays L., Impomoea batatas Lam., and Cucurbita moschata var. toonas Makino were planted in the different sandy loam, $2m{\times}2m-quadrat$, which has a eastern, southern, western and northern edge. In each plot 17-25 plants were planted and the distances between individuals spaced uniformly. And leaf temperature were measured by MR3-C type thermistor from 14th May through 20th August. It is seems that the upper leaf is affected by solar radiation, the lower leaf by released heat from the earth and the middle leaf by the conditions of both zones. Measuring the temperature of a leaf that is on terminal, central, left and right margins and base part, temperature of control plant in a leaf was sloped during about two hours from noon. It is noticeable as a "noon sleeping" phenomenon.henomenon.
In this study, we evaluated the nutritional components and functional activities of Wooung (burdock, Arctium lappa L.) and Jerusalem artichoke (Helianthus tuberosus L.) tea. Roasting burdock' contained 75.87% carbohydrates; in addition, the moisture content, crude fat, crude protein, and crude fiber were 10.43%, 1.77%, 8.50%, and 3.43%, respectively. Roasting Jerusalem artichoke showed 77.477% carbohydrate content, with moisture content, crude fat, crude protein, and crude fiber of 10.67%, 1.23%, 7.83%, and 2.80%, respectively. Roasting burdock's water-soluble dietary fiber content was 4.8 g/100 g and insoluble dietary fiber content was 1.5 g/100 g; whereas, roasting Jerusalem artichoke' water soluble dietary fiber content was 2.4 g/100 g and insoluble dietary fiber content was 1.6 g/100 g. The highest mineral contents in roasting burdock and Jerusalem artichoke were potassium and magnesium, in order. The results of amino acid analyses s indicated a total of 25 types in roasting burdock, with total amino acid content of 1,382.112 mg/100 g, and essential amino acid content of 766.031 mg/100 g. In total, 24 types of amino acids were separated and identified in roasting Jerusalem artichoke, with total amino acid content of 2,678.018 mg/100 g, and total essential amino acid content of 157.294 mg/100 g. Roasting burdock and Jerusalem artichoke' polyphenol contents were 32.56 and 29.56 mg GAE/g each, and their flavonoid contents were 16.54 and 16.71 CE/g each. $IC_{50}$ values of DPPH radical-scavenging activity of roasting burdock and Jerusalem artichoke were 12.99 and 19.74, respectively; and $IC_{50}$ values of hydroxyl radical-scavenging activity were 25.96 and 22.93, respectively.
This study aimed to evaluate the efficacy of the antioxidative and antidiabetic activities of the flowers, leaves, and roots of the Jerusalem artichoke (Helianthus tuberosus L.). The total polyphenol and flavonoid contents of the leaves were higher than those of the flowers and roots. However, the DPPH radical-scavenging and hydroxyl radical-scavenging activities of the flowers were higher than those of the leaves and roots. The nitrite-scavenging ability under acidic conditions was high in Jerusalem artichoke flower extracts. The ${\alpha}-glucosidase$ inhibitory activity and ${\alpha}-amylase$ inhibitory activity of a methanol extract of Jerusalem artichoke roots were about 60% (5 mg/mL concentration). Based on these experiments, it can be concluded that the flowers leaves, and roots of the Jerusalem artichoke can be used as natural preservatives. Therefore, they can be developed as functional foods, to take advantage of their antioxidant activity and abundant polyphenols. This study suggests that the whole Jerusalem artichoke, including roots, leaves, and flowers, is useful as a functional, nutritious food product.

Jerusalem artichoke (JA, Helianthus tuberosus L.) has a great potential to enhance the quality of yakju due to the plentiful inulin content which is functional and indigestible carbohydrate in human. In this study, the optimal preparation conditions such as the added amount and steam treatment of JA were investigated to improve the quality of yakju. As the amount of JA added to yakju increased, alcohol production decreased, whereas fermentation was performed well when the steam-cooked JA was added to yakju. The pH and total acidity of yakju decreased and increased, respectively, when the amount of JA added to yakju increased, whereas pH and total acidity of yakju increased and decreased, respectively, when the steam-cooked JA was added to yakju. The free sugar and organic acid contents of yakju increased and decreased, respectively, when the amount of JA added to yakju increased, whereas those of yakju decreased when the steam-cooked JA was added to Yakju. Amino acid content of JA decreased as the amount of JA added to yakju increased and that of JA significantly decreased when the steam-cooked JA was added to yakju. In the sensory evaluation analysis, the addition of 10% unsteam-cooked JA to yakju was the best when considering sweetness, flavor, sourness, and overall preference of yakju supplemented with JA. Consequently, utilizing JA to yakju may contribute to the improvement of the quality of yakju.
Jerusalem artichoke (Helianthus tuberosus L.) as a biomass potential crop has several distinct advantages such as vigorous growth on poor land and high yield of carbohydrate. In this crop, seed dormancy has hampered the efforts of seed-propagration and to use them in breeding programs for improving jerusalem artichoke. Several seed treatments were tested to determine their effectiveness in overcoming the seed dormancy found in five collected varietes of jerusalem artichoke. The first results showed that the seed fertilities of five collected varieties ranged from 2.4% to 14.7% and the number of seed produced by one plant ranged from 88 to 1058. Germinability of seeds stored for 3 months at room temperature after harvest was almost 0% and it was not improved by addition to the treatments of temperature, light and GA3, while germinability of seeds stored for 27 months at room temperature after harvest increased to 47.5% in germination rate. But the removal and pin-pricking of seedcoat were very effective in breaking the seed dormancy, giving germination of 96.8% and 82.3%, respectively. These results showed that the seed dormancy of jerusalem artichoke was induced by the seedcoat. Besides the treatment of seedcoat removal and seedcoat-pinpricking, the treatment of low and wet stratification was also effective in breaking the seed dormancy of jerusalem artichoke. Whole dormant seeds incubated for 70 days in low and wet condition germinated over 85%.
In order to examine the possibility of seed propagation of jerusalem artichoke (Helianthus tuberosus L.) which has been propagated vegatatively so far, it was investigated the growth characteristics of seedlings and the biomass productivity by seed propagation in jerusalem artichoke. The results indicated that the seedlings from seeds exhibited the physiological dwarfing as a rosette habit. The physiological dwarfing as a rosette habit in jerusalem artichoke seedlings from seeds was a kind of appearance affected by photoperiod. This abnormal habit in seedlings from JA6 seeds during the growing period was persisted in short photoperiod of 10 hrs but was disappeared in long photoperiod of 14 hrs. In the condition of long photoperiod, seedlings from seeds grew normally and the average tuber yields obtained from seed propagation was finally 3.51 ton/10a, which can be the satisfying level to the use of seed propagation despite its complexity such as the needs of specific seedling time because it gives a high biomass productivity. This potential utilization of seed propagation in jerusalem artichoke can be basically applied to the collection or preservation of germ plasm and the improvement of jerusalem artichoke.
Fructan has been found to accumulate in various tissues during periods when light levels increased carbon fixation where low temperatures reduced growth rates while photosynthesis continued. In this study, we have cloned 1-sucrose:sucrose fructosyl transferase(1-sst) and 1-fructan: fructan fructosyl transferase (1-fft, a key enzyme for the synthesis of fuctan) from Jerusalem Artichoke (Helianthus tuberosus L.). The recombinant vector with 1-sst and 1-fft has been constructed under the control of 35S promoter of KJGV-B2 vector and transgenic plants obtained by Agrobacterium tumefaciens LBA4404. PCR analysis carried out on the putative transgenic plants for amplification of the coding region of specific gene (1-sst, 1-fft), and HPT genes. Transgenic lines carrying of 1-sst and 1-fft were confirmed for integration into the rice genome using Southern blot hybridization and RT-PCR. The transgenic plants in $T_2$ generation were selected and expression pattern analysis revealed that 1-sst and 1-fft were stable. This analysis confirmed the presence of low-molecular-weight fructan in the seedling of the transgenic rices. Therefore, cold tolerance and carbohydrate metabolism will be possible to develop resistant plants using the transgenic rice.

Nineteen clones of Jerusalem Artichoke (JA) from several countries were collected through the series of experiments about JA started in 1979. Collected clones were screened for adaptibility in Korea and showed introduction path way. The results about an ecological response of collected clones including flowering, tuberization, biomass production, sugar contents and grouping of collected clones for use of genetic material were as follows; 1. Nineteen clones collected were ffom Korea(2), Japan(l), USA(Z), Canada(2), France(4), Germany(7), and USSR(1). 2. Through the characteristics of top collected clones were divided to the types of branch-non branch, short and long plant height, and early and late maturity. Tuber characteristics were mainly grouped to the types of white skin color-violet skin color, clusters-single unit, round-elongate, and knotty-smooth. 3. Total sugar yields 6-om top at flowering time were 490 - 630kgl10a and 6-om the tuber were 420 -490 kg/ IOa through the high yielding clones. The top-high yielding clones were Mammoth French White, Fuseau 60, Nahodka, and JA3. The higher tuber yields were got from the clones of D- 19, Colombia, Bianka and Mammoth French White. 4. Collected clones were grouped to three and first group was characterized to early maturity and short plant height and second group to medium and finally, third group to late maturity and high plant height. 5. High yielding of top was 6-om the I group of early maturity and short plant height and high yielding of tuber h m III group of late maturity and high plant height.

This study is to offer the raw data for conservation and restoration of national park by surveying and analysing the vascular plants in the Gayasan national park. The flora were summarized as 102 families, 328 genera, 469 species, 4 subspecies, 59 varieties and 9 forms. The endangered plants designated by Ministry of Environment were 2 taxa; Pedicularis hallaisanensis Hurus. and Gymnadenia conopsea for. albiflora Y.N.Lee. The rare plants designated by Korea Forest Service were 13 taxa; Crypsinus hastatus (Thunb.) Copel., Ligusticum tachiroei (Franch. & Sav.) M. Hiroe & Constance, Primula modesta var. fauriae (Franch.) Takeda, Lilium distichum Nakai ex Kamibay and so forth. The korean endemic plants were 15 taxa; Betula ermanii Cham., Carpinus laxiflora (Siebold & Zucc.) Blume, Stewartia pseudocamellia Maxim., Galium koreanum (Nakai) Nakai, Heloniopsis koreana Fuse, N.S. Lee & M.N. Tamura and so forth. The specific plants by floristic region were 66 taxa; Betula chinensis Maxim., Spiraea fritschiana Schneid., Vaccinium hirtum var. koreanum (Nakai) Kitam., Cimicifuga heracleifolia Kom., Adoxa moschatellina L. and so forth. The plants with approval for delivering oversea were 22 taxa; Salix hallaisanensis H.L$\acute{e}$v., Sanguisorba argutidens Nakai, Viola albida Palib., Weigela subsessilis (Nakai) L.H.Bailey and so forth. The naturalized plants were 30 taxa; Chenopodium album L., Lepidium apetalum Willd., Trifolium pratense L., Bidens frondosa L., Helianthus tuberosus L. and so forth.
