HACCP의 연구동향 (Current research trends in HACCP principles)

  • 1993년 국제식품규격위원회(CODEX)에서 HACCP 지침서를 발간하고 적용할 것을 권장하면서 HACCP 제도는 국제적인 교역에서도 필수적인 제도가 되기 시작했다. 국내의 경우 1990년대부터 본격적으로 도입되어 축산과 식품을 우선으로 적용되기 시작하였으며 수산물, 급식, 외식 등 식품 원료, 제품 전 분야를 망라하는 구조로 확대 적용되고 있다. 국내에서의 HACCP은 축산, 식품으로 이원 적용되었기 때문에 두 제도간의 일원화 연구가 보고되고 있으며, HACCP 적용에 따른 효과 검증 연구가 축산, 식품 등 다양한 제품을 대상으로 이루어지고 있다. 한국과학기술정보연구원(KISTI)의 학술정보 검색엔진(ScienceON)을 활용하여 연도 제한 없이 'HACCP'을 검색어로 검색 시 총 6,173건의 연구보고가 검색되었다. 관련한 연구보고 중 관리, 효과 관련 연구가 492건으로 전체의 53%에 이르는 것으로 나타나 중복을 감안하더라도 많은 연구가 이에 집중되어 있음을 알 수 있다. 즉, HACCP 적용 시의 식품안전, 품질 및 경제적 효과에 대한 연구가 지속적으로 보고되고 있고, HACCP 적용에 따른 소비자 인식 변화 및 이를 통한 기업에의 영향연구가 이루어지고 있다. 4차 산업혁명시대의 급변하는 기술변화와 발맞춰 HACCP 제도에도 블록체인 등 다양한 기술을 접목하여 효율적인 모니터링을 진행할 수 있도록 추진되고 있다. HACCP관련 연구는 지속적으로 이루어지고 있으므로 이들 연구 자료의 활용을 위해 체계적 문헌고찰(systematic review)과 같은 방법론을 적용하여 좀 더 체계적으로 검토하여 연구 방향 설정 및 정책 반영에 활용하는 것이 좋겠다.

MAR기반 음용수 공급 시스템에의 HACCP 원리 적용 (Application of HACCP principles to MAR-based drinking water supply system)

  • Supplying clean and safe water to people is facing both quantitative and qualitative challenges. Due to climate change, access to freshwater becomes increasingly difficult, while pollution from various sources decreases the public trust in water quality. Managed aquifer recharge (MAR) which stores and uses surface water in aquifer is receiving attention as a new technology to secure freshwater. Recently, there is a global expansion in the attempt to combine general purification plants and hazard analysis and critical control point (HACCP) which manages all the process from raw material to consumer for food safety. This research is about an attempt to apply HACCP to the drinking water supply process using MAR to secure both quantity and quality of drinking water. The study site is a MAR plant being constructed in the downstream area of the Nakdong River Basin, South Korea. The incorporation of HACCP with MAR-based water supply system is expected to enhance the safety and reliability of drinking water.

경기ㆍ인천지역 학교급식 조리종사원의 스마트 HACCP 사용의 직무수행도, 직무만족도, 및 직무스트레스에 미치는 요인 분석 (Analysis of Factors Affecting Smart HACCP Utilization: Job Performance, Job Satisfaction, and Job Stress among School Food Service Employees in Gyeonggi-do and Incheon)

  • The Smart Hazard Analysis Critical Control Point (HACCP) management system, which integrates information technology (IT) to automate and analyze big data, has been introduced into school food services. This study investigated the job performance, job satisfaction, and job stress of employees in school food services using Smart HACCP. Data were collected via questionnaires from 350 employees in school food services who utilized Smart HACCP and worked in Gyeonggi-do or Incheon. The questionnaire included general information, workplace characteristics, HACCP education status, job performance, and job satisfaction according to the use of Smart HACCP, and general job stress. The responses showed that 92.3% of the participants had received HACCP education in the workplace, and 66.6% understood the content of the education. Among the HACCP process stages, CCP2 (Food Handling and Cooking) and CCP3 (Cooking Completion and Distribution) were the stages at which all participants were using Smart HACCP. CCP3 had the highest percentage (61.4%) of participants who experienced feeling the maximum reduction in their tasks by using Smart HACCP. The Smart HACCP job performance at CCP1 (Inspection) and Smart HACCP job satisfaction were higher in workplaces with 6~10 employees, compared to those with 10≤ employees (both P<0.05). The Smart HACCP job performances at of CP1 (Refrigeration and Freezer Temperature Management) and CP2 (Cleaning and Disinfection of Food Contact Surfaces) were significantly affected by the work area. General job stress was significantly higher in cooks than in cook practitioners, higher in employees with cook certification than in those without it, and higher in employees with work experience (<1 year), compared to those with 5~10 years or 10~15 years' experience. In conclusion, employees' job performance and satisfaction with Smart HACCP need to be enhanced to improve hygiene in school food service. This requires the effective management of their job stress.

대수층 저장·이동 및 회수에 의한 음용수 생산과정에서의 위해사건분석 (Hazardous event analysis in drinking water production using aquifer storage transfer and recovery)

  • Aquifer storage transfer and recovery (ASTR) is a type of managed aquifer recharge which entails injecting water into a storage well and recovering it from a different well. It has effects of natural purification when injected water passes through aquifer medium, and can be a good way of supplying water especially in a region with poor surface water quality. This study is about an on-going effort to introduce ASTR as a solution to source water problems in coastal areas. A pilot study is being conducted in the delta of the Nakdong River. A proactive management system is incorporated to ensure the water qulity in the process of drinking water process. The system is based on the Hazard Analysis and Critical Control Point (HACCP) which is a tool originated from the food industry in order to assess hazards and establish control systems for the safety of food product. In this paper, we analyze hazardous events which can occur in the entire water supply system using ASTR as a first step to the incorporation of HACCP to drinking water production process.

볶음김치스프 제조공정중 살균공정에 대한 미생물학적 한계기준에 관한 연구 (A Study on Microbiological Critical Limit in Sterilization processing of Fried Kimchi Soup)

  • 본 연구는 볶음김치스프 제조공정중 살균공정의 살균온도와 시간에 대한 한계기준 설정을 위한 목적으로 실시하였다. 살균공정의 한계기준 설정은 경기도 이천시 소재의 P사에서 약 30일 (2012년 5월 1일~30일)동안 살균온도, 살균시간, 관능평가, 보관실험 및 보관 중 pH변화를 측정하였다. 분석결과 살균 전, 일반세균, 대장균군과 내열성 세균수(세균아포수)는 $6.00{\times}10^5$, $7.50{\times}10^2$ 그리고 $2.75{\times}10^2$ 검출되었다. 그러나 $90{\pm}5^{\circ}C$에서 $22{\pm}5min$ 동안 살균한 모든 시료에서는 일반세균, 대장균군, 내열성세균수(세균아포수) 모두 검출되지 않았다. 관능평가 결과는 $90{\pm}5^{\circ}C$에서 $22{\pm}5min$ 동안 살균했을 때 가장 맛있는 김치으로써 결정되었다. 결론적으로, 볶음 김치의 살균공정은 유해미생물(일반세균, 대장균군, 내열성세균수)를 예방, 감소 또는 제거할 수 있는 좋은 대안이 될 것이다. 따라서 품지 유지와 생물학적 안전성을 위한 살균 온도와 시간의 한계 기준은 $90{\pm}5^{\circ}C$에서 $22{\pm}5$분으로 설정하였다. 그리고 HACCP 계획은 살균 공정중 모니터링 방법과 모니터링 주기, 문제 해결 방법, 교육, 훈련, 기록 관리 등을 위하여 필요하여 이를 제안하고자 한다.

생딸기 주스 제조 환경에서의 미생물학적 오염도 조사 (Investigation of the Level of Microbial Contamination in the Environment for Juice Production)

  • 본 연구는 서부경남 진주지역 생딸기 주스 상점에서 미생물학적 오염도를 조사하고 그 결과를 주스 HACCP 도입을 위한 미생물학적 정보를 제공하기 위하여 수행하였다. 본 연구를 위하여 총 75점의 시료를 5곳의 상점으로부터 채취하였으며, 일반세균수, coliforms, 그리고 E. coli와 같은 위생지표세균을 평가하였다. 아울러 E. coli O157:H7, Salmonella spp., Staphylococus aureus and Listeia monocytogenes와 같은 병원성 미생물을 검사하였다. 위생지표세균 검사결과 일반세균수는 $0-5.2\;log_{10}\;CFU/(mL,\;g,\;100cm^{2},\;hand)$. coliform은 $0-2.8\;log_{10}\;CFU/(mL,\;g,\;100cm^{2},\;hand)$ 수준으로 검출되었다. 또한 4곳의 상점에서 판매되고 있는 딸기 주스에서 E. coli가 검출되었다. 한편, 병원성 미생물의 경우는 S. aureus가 19% 검출되었으며 특히 가장 빈번하게 검출된 시료는 작업자의 손, 딸기, 딸기 주스였다. 그러나 E. coli O157:H7, Salmonella spp.와 L. monocytogenes는 검출되지 않았다. 이상의 결과로 미루어 볼 때 안전한 주스의 생산을 위해서는 모든 생산단계에서 미생물학적 위해를 감소시킬 수 있는 HACCP 제도가 도입되어야 하며 주스 HACCP 도입을 위해서는 작업자가 HACCP의 원리를 이해하고 적용할 수 있는 교육이 선행되어야 할 것으로 사료된다.

초등학교 급식소에서 제공되는 닭고기 주요리의 급식품질 확보를 위한 HACCP 시스템 적용연구 (HACCP System Application on Chicken Entrees Served by Lunch Program of Elementary Schools)

  • This study was conducted to establish the hygiene standards for chicken entrees (deep-fried breast chicken, chicken and potato in red pepper paste and smothered chicken) served with in 3 different elementary school lunch programs during 2002. The study evaluated the layout characteristics of the food facilities, and determined the physical and microbiological hazards for the production of chicken entrees based on the HACCP(Hazard Analysis Critical Control Point) system. The kitchen layouts needed to be remodeled for the separation of soiled and clean work areas. The pH values for all items were over 6.0, which require careful attention. The microbial assessments of 3 chicken items revealed that the TPC, coliforms and Staphylococcus aureus were within normal ranges, but Salmonella was found at several stages in the production of all products, with the exception of smothered chicken. The bacterial counts of the kitchen utensils and cooks' hands exceeded acceptable limits, and workers' sanitary practices were poor in terms of sanitary handling and holding of foods and utensils. The CCPs determined related to the steps of receiving, cooking and breaking of egg shells. From our findings, it is recommended that chicken entrees should be prepared and served very carefully, as salmonella was detected at several stages during meal production, and the aim of the HACCP system is to secure against food-borne illnesses due to reckless school food service operations.

  • HACCP 인증업체의 자율관리 능력을 제고하고 관리가 미흡한 업체 등에 대한 집중관리 등 선택과 집중을 통한 관리가 필요하다. 더불어 스마트 HACCP의 확대, 보급을 통해 HACCP 운영의 효율성과 편의성을 향상 시켜야 한다. 이처럼 HACCP 제도의 내실화와 스마트화 뿐만 아니라 동시에 적용분야를 지속적으로 발굴, 확대하는 것이 우리나라 HACCP이 나아가야할 방향이다.

부산·경남지역 사업체 급식관리자의 식품위해요소 중점관리기준에 대한 인지도 조사연구 (Recognition about the HACCP Concepts by the Industry Foodservice Managers in Pusan and Kyung Nam)

  • This study was conducted to evaluate the recognition of HACCP(Hazard Analysis Critical Control Point) concept by the industry foodservice managers in Pusan and the Kyung Nam areas and to suggest a guideline for an effective HACCP education program. A survey was conducted from 133 foodservice managers by using a questionnaire. The results were as follows; 68.0% industry foodservice managers were educated about HACCP concept, 33.8% didn't understand the concept, and only 13.4% understood the concept fully. On the application of HACCP program to the foodservice operation, 15.0% of managers always applied HACCP program, 35.4% often, and 49.6% did not. The reasons for not applying HACCP were the ignorance HACCP implementation method(36.7%), poor facilities of foodservice operations(34.7%), shortage of time(l4.3%), and difficult of HACCP principles(6.1%). The mean score of HACCP knowledge for all manager was 64.1, in which the educated manager showed significantly higher score than noneducated CP(0.01). The ratio of correct answers concerning HACCP was 80.5% for the pre-preparation stage, 60.3% for the receiving and storage stage, 57.0% for the hot and cold holding stage, 54.5% for the facilities sanitation stage, and 46.0% for the preparation stage. The mean score of HACCP knowledge was positively correlated with understanding of HACCP program as well as the application. Also, the implementation of HACCP program was positively correlated with the understanding of HACCP.

  • Concerns about food safety continue to rise and under this situation, governments of some countries have reinforced their regulations more strictly for food safety. In order to prevent food safety incidents or, at least to minimize the impact, the preparedness is very important. As a consequence of this, traceability system has become an essential tool for food safety. Recently, it requires more prevention-based food safety control system. One of the most generally used systems for food safety control is Hazard Analysis and Critical Control Point (HACCP). Both traceability and HACCP systems can be integrated through Electronic Product Code (EPC) Sensor Network technologies which have four value propositions. In this paper, we will introduce the concept of product and process traceability system (P2TS) through the integration of three systems to improve food safety management. The final aim is to find out the added values of the P2TS.
