A Comparative Study on Dietary Habits of Children in Elementary School by School Lunch Program (급식교와 비급식교 아동의 식생활습관에 관한 비교 연구)

  • The main purpose of this study was to observe the effect of school lunch program on dietary habits of elementary school children and their food preferences. A questionnaire survey was conducted on 785 children and their mother in ele-mentary school with and without school lunch program. The results of this study can be summarized as follows: 1. 91.1% of subjects were eating rice for breakfast menu and 12.2% of subjects were skipping breakfast every morning. 2. Most of the children preferred fruits, ddugboggi, ice cream, fritter, cookie, bread, beverage and hot dog for snacks. 3. Despite of its restrictive practice, the school lunch program proved to be contributory to the improvement of children's food intake habits, table manners, keeping social order, sanitary consiousness, gratitude for their parents. 4. Children preferred kimbap, bokumbap and hamburger for main dish, fish jelly soup, brown seaweed soup and bean-sprout soup for soup, animal food for side dish and frying saute for cooking methods. 5. Most of the children disliked crown daisy, green pepper, mushroom, green onion, onion, dropwort, soybean and carrot for their food materials.

The farm management analysis of the effect of yield increase and economic efficiency of cropping system on green manure crops - cabbage in the plastic house (녹비작물-양배추 작부체계에서 양배추 수량증대 효과 및 경영성과 분석)

  • This study was carried out to analyze the effect of the farm management and productivity increase of cabbages growing in the plastic house based on application of green manure crops such as silage corn, haussolgo (Sorghum bicolar L. Moench), hairy vetch, etc. According to the effect of green manure crop grown in summer season, the biomass amount of the silage corn was the highest; 7,630 kg per 10a, the next was haussolgo, 5,620 kg per 10a. In terms of the fertilizer ingredients, the first of forage soybean was 3.84% of nitrogen, whereas hairy vetch was 1.74% of phosphate and kalium, 4.74%. Productivity increase of cabbages was the highest in the haussolgo plot of which the yield of showed 10,090 kg per 10a and the farm household income would be worth 8,053 thousand won. By growing forage crops in the winter season, the biomass amount was the highest in the mixed sowing plot with rye (50%) and hairy vetch (50%) of 3,590 kg per 10a, whereas the productivity in the mixed seeding with rye (70%) and hairy vetch (30%) was highest, 6,249 kg per 10a and the farm household income would be worth 7,387 thousand won. Judging from these results, more practical on-farm research on applying different green manure crops as a basal fertilizer with cabbage in the plastic house should be considered to analyze the farm management and the farm household income at different sites.

Korean-Style of No-Tillage Organic Agriculture on Recycled Ridge V.   • This study was carried out to investigate the hot pepper yield, chemical properties of soil and distribution of animalcule with split irrigation and input of organic matter under no-tillage hot pepper green house condition. After experiment, soil pH maintained range of 5.6~6.2 in whole treatments. Organic matter content of soil was range of $32{\sim}42g{\cdot}kg^{-1}$. Soil salinity (EC) content of soil was range of $1.0{\sim}2.7dS{\cdot}m^{-1}$. Exchangeable cations in soil were range of $0.08{\sim}0.24cmol^+{\cdot}kg^{-1}$ in K, $9.5{\sim}12.8cmol^+{\cdot}kg^{-1}$ in Ca, and $2.7{\sim}3.2cmol^+{\cdot}kg^{-1}$ in Mg. Avaliable phosphorus ($P_2O_4$) content in soil was range of $1,011{\sim}1,137mg{\cdot}kg^{-1}$. Yield of pepper was more decreased in treatment of soybean cake fertilizer than no-treatment of soybean cake fertilizer. Yield of pepper in treatment of soybean cake fertilizer was increased at 33% of standard fertilizer application. Yield of pepper in no-treatment of soybean cake fertilizer was increased at 33% and 66% of standard fertilizer application. Number of fruits was increased range of 12.5~34.9% at half division irrigation compared with whole quantity irrigation. Yield of pepper was increased range of 13.5~34.4% at half division irrigation compared with whole quantity irrigation. Nine index of nature status and 271 Individual were captured in treatment of soybean cake fertilizer. Five index of nature status and 54 Individual were captured in treatment of soybean cake fertilizer. Nature status for environmental change as index organism was 11 points and 5 points, at treatment of soybean cake fertilizer and no-treatment of soybean cake fertilizer, respectively.

A Study on the Preferences for Food Intake of Korean Industrial Workers (한국 근로자의 식품섭취 기호도에 관한 연구)

  • This study was carried on the preferences for food intake pattern of Korean industrial workers. The survey was conducted from Feb 17, to March 31, 1992 by questionnaires which was composed of 21 items. The subjects of this study were composed of 426 clerical workers, and 439 physical workers. The results were obtained as follows. 1. In the educational background, clerical workers was almost of highschool or collage graduates, and physical workers was almost of highschool graduates. Marginal food cost of per person for lunch a day was from 500 Won to 1,000 Won. They replied that amount of staple food and side dishes were appropriate, and the type of preferable foods was Korean style cooked rice. Also it was known that physical workers thought their nutritive condition more badly than that of clerical workers. So the physical workers considered their health very much when they had meal. It was represented that unbalanced diet, without diet and drinking alcohol effected badly to food intake and taste of food was the most important point in food intake. 2. Preferences for staple foods; Cooked rice was preferred the most by the subjects. Cooked rice with redbean was preferred by clerical workers and cooked rice with soybean was preferred by physical workers and cooked rice with soybean was preferred by physical workers. Also clerical and physical workers liked Kalkooksoo (hot noodle), Nangmyun (cold noodle), bread, vegetable bread and disliked Sphagetti, Ramyun (Instant noodle) in same rate. In the next, cooked rice covered with raw fish pieces (Sushi) was preferred by clerical workers and Mandu-kook was preferred by physical workers. Also they disliked Curriedrice and Hashrice in same pattern. 3. Preference for side-dishes; The Acceptances for side-dishes were high soybean paste soup (clerical workers:43.7%, physical workers:34.4%), Kim chi stew, fried potatoes, crab steaming (37.8%, 36.9%), broiled fish (34.6%, 33.9%), fried green pepper, Ham, Chinese cabbage Kim chi, and pickled garlic by clerical and physical workers all together. But in clerical workers, Wooghugi beef-rib tang, Deodeok muchim, spinach namul, beef jangjeorim, fried shrimp were shown to have high preference in physical workers, beef-rib tang, wild onion and shepherd's purses muchim, soybean sprout, fish jeorim, fried sweet potatoes were high preference. 4. Preference of Snacks; The preferences for snacks were high in strawberry (clerical:36.3%, physical:34.3%), milk (49.9%, 44.4%), waxy rice Doek (30.7%, 30.2%), coffee (40.1%, 38.9%) by two groups in same order.

  • Importance of climate change and its impact on agriculture and environment has increased with the rise Green House Gases (GHGs) concentration in the atmosphere. To slow down the speed of climate change many efforts have been applied in industrial sectors to reduce GHGs emission and to enhance carbon storage. In agricultural sector, many researches have been performed on GHGs emission reduction, but few on the role of carbon sink. In this study, we investigated carbon balance and soil carbon storage in agricultural field in the barley-red pepper and barley-soybean cropping system. With the system for automatic measuring of carbon dioxide, net ecosystem production(NEP) was estimated to be $6.3ton\;CO_2\;ha-1$ for N-P-K chemical fertilizer treatment plot and $10.6ton\;CO_2\;ha^{-1}$ for N-P-K chemical fertilizer with swine manure treatment plot in the barley-soybean rotation cropping. In the barley-red pepper rotation cropping, it was $12.0ton\;CO_2\;ha^{-1}$ for N-P-K chemical fertilizer treatment plot and $13.2ton\;CO_2\;ha^{-1}$ for N-P-K chemical fertilizer with swine manure treatment plot. Soil carbon storage rate was estimated to be $0.7ton\;C\;ha^{-1}$ for the barley-soybean cropping system and $0.5ton\;C\;ha^{-1}$ for barley-pepper cropping system. In appeared that agricultural lands may contribute to the greenhouse effect as a potential carbon sink preserving carbon into soil.

Chemometric Approach to Fatty Acid Profiles in Soybean Cultivars by Principal Component Analysis (PCA)

  • The purpose of this study was to investigate the fatty acid profiles in 18 soybean cultivars grown in Korea. A total of eleven fatty acids were identified in the sample set, which was comprised of myristic (C14:0), palmitic (C16:0), palmitoleic (C16:1, ${\omega}7$), stearic (C18:0), oleic (C18:1, ${\omega}9$), linoleic (C18:2, ${\omega}6$), linolenic (C18:3, ${\omega}3$), arachidic (C20:0), gondoic (C20:1, ${\omega}9$), behenic (C22:0), and lignoceric (C24:0) acids by gas-liquid chromatography with flame ionization detector (GC-FID). Based on their color, yellow-, black-, brown-, and green-colored cultivars were denoted. Correlation coefficients (r) between the nine major fatty acids identified (two trace fatty acids, myristic and palmitoleic, were not included in the study) were generated and revealed an inverse association between oleic and linoleic acids (r=-0.94, p<0.05), while stearic acid was positively correlated to arachidic acid (r=0.72, p<0.05). Principal component analysis (PCA) of the fatty acid data yielded four significant principal components (PCs; i.e., eigenvalues>1), which together account for 81.49% of the total variance in the data set; with PC1 contributing 28.16% of the total. Eigen analysis of the correlation matrix loadings of the four significant PCs revealed that PC1 was mainly contributed to by oleic, linoleic, and gondoic acids, PC2 by stearic, linolenic and arachidic acids, PC3 by behenic and lignoceric acids, and PC4 by palmitic acid. The score plots generated between PC1-PC2 and PC3-PC4 segregated soybean cultivars based on fatty acid composition.

Physico-Chemical Properties of Korean Traditional Soybeans (우리나라 전통콩의 이화학적 특성 연구)

  • The physicochemical characteristics and chemical compositions of six Korean traditional soybeans were studied namely, cheongtae, seoritae, jinjoori, subaktae, yutae and huktae. The characteristics of imported soybean were also investigated for comparison. The average weight of one hundred-seed for huktae, which is normally used as nutritional supplement by adding to rice during cooking, was 43.1 g. The average whole length and long and short width for six varieties of the bean were $5.68{\sim}10.15\;mm$, $5.10{\sim}9.33\;mm$ and $4.30{\sim}7.48\;mm$, respectively. Color of cheongtae and subaktae were green, while that of seoritae, jinjoori, and huktae were black with yutae having yellow seed coat. Moisture, crude fat, crude protein and ash content of soybean seeds were all in the ranges of $8.5{\sim}11.5%$, $14.0{\sim}20.8%$, $38.0{\sim}49.2%$ and $4.2{\sim}5.0%$, respectively, showing differences among cultivars. Methionine, cysteine and histidine were the minor components of soybean protein and percentage of methionine to the total proteins showed significant varietal differences. Subaktae contained the highest content of methionine with 4.0 mg/g protein, while jinjoori the lowest with 1.8 mg/g protein. The main fatty acids of total lipid were linoleic, oleic and palmitic acids, which comprised over 80% of total fatty acids. Cultivar yutae had higher content of neutral lipid but lower content of glycolipid and phospholipid. Among the fatty acids, content of linoleic acid were the highest $(41.4{\sim}54%)$ and ratios of unsaturated fatty acid to the total fatty acid was $82.7{\sim}85.2%$. The main fatty acid of neutral lipid, glycolipid, and phospholipid was linoleic acid.

Thermal Distribution of Size-resolved Carbonaceous Aerosols and Water Soluble Organic Carbon in Emissions from Biomass Burning

  • The study of carbonaceous aerosols in the atmosphere is critical to understand the role of aerosols in human health and climate. Using standardized thermal optical transmittance methods, organic carbon (OC), elemental carbon (EC), and water soluble organic carbon (WSOC) were determined using a combustion sampling system for four types of agricultural crop residues (rice straw, red pepper stems, soybean stems, and green perilla stems) and eight types of forest trees (pine stems, pine needles, ginkgo stems, ginkgo leaves, maple stems, maple leaves, cherry stems, and cherry leaves). The aerosol particles between 0.056 and $5.6{\mu}m$ in size were analyzed using a Micro-Orifice Uniform Deposit Impactor (MOUDI). In the current study, the Carbonaceous Thermal Distribution (CTD) by carbon analyzer was discussed in order to understand the carbon fractions from the twelve types of biomass burning. Also, the concentration of OC, EC, WSOC, and water insoluble organic carbon (WIOC) detected in the emissions were described.

  • Recently worldwide concern and research is being actively conducted on green energy which can reduce environmental pollution. A plant such as the natural rapeseed oil, soybean oil, palm, etc. is used as a bio source in home and industry. Biofuels is a sustainable fuel having economically benefits and decreasing environmental pollution problems caused due to fossil fuel, and it can be applied to the conventional diesel engine without changing the existing institutional structure. Waste vegetable oil contains a high cetane number and viscosity component, the low carbon and oxygen content. A lot of research is progressing about the conversion of waste vegetable oil as renewable clean energy. In this study, waste oil was prepared to waste cooking oil generated from the living environment, and applied to diesel engine to confirm the possibility and cost-effectiveness of biodiesel blend waste oil. As a result, brake specific fuel consumption and NOx was increased, carbon monoxide and soot was decreased.

A Study on the Influence of Sulphur-compound to Vitamin C in the different Vegetable during Cooking (유황화합물질이 조리시 야채류중의 Vitamin C 함량에 미치는 영향에 대하여)

  • In order to study the influence of sulphur-compound on the vitamin C contents of different vegetables-i.e. Korean green pepper, leaf, Bilum, leaf, Soybean sprouts, Mung bean sprouts, Cucumber-the garlic powder and minced garlic were used while the vegetables were cooked. The results garlic juice during scaling the vegetables the vitamin C contents of them were higher as much as 9.2~12.7% 2. When the scaled vegetables were seasoned the vitamin C contents were higher as much as 8.9~`17.5% by adding garlic powder and 7.3~14.9% by adding minced garlic. 3. Vitamin C loss of the cooked vegetables with room condition for 30 min, was higher as much as 15.2~34.5% compared to just cooking. 4. Vitamin C contents of vegetables after 30 min from cooking, compared to just cooking were higher of vegetables after 30 min from cooking, compared to just cooking were higher as much as shown below. 1) ~13.3% by adding garlic powder. 2) 4.0~9.3% by adding minced garlic.
