Properties of Red Wine Fermented Using Freeze-Concentrated Muscat Bailey A Grape Juice (동결농축 Muscat Bailey A 포도 과즙으로 제조한 무가당 적포도주의 품질 특성)

  • Muscat Bailey A grapes, one of the major grape varieties in Korea, contain 18-20% (w/w) sugars, which is less than the amount required to make red wine. In the present study, fermentation of freeze-concentrated Muscat Bailey A grape juice to $24^{\circ}Brix$ was performed using several industrial wine yeasts, including Saccharomyces cerevisiae $OC_2$, S. cerevisiae Fermivin and S. cerevisiae W-3. During fermentation, changes in the levels of soluble solids, alcohols, and yeast viable counts were monitored. Wine quality parameters including organic acid, minor alcohol, sensory score, etc. were also analyzed. Alcohol contents reached maximal levels after 9 days of fermentation, and were 12.6% (v/v) when Fermivin was used and 13% (v/v) when strains $OC_2$ and W-3 were used. No major difference between strains was apparent, except that Fermivin fermentation was somewhat slower in terms of both alcohol production and sugar consumption. Similar levels of soluble solids and total phenols were measured in wines fermented by each of the three strains. The total acid level of W-3 wine was high, whereas the alcohol content of Fermivin wine was low. Although the wines were variable in terms of acetaldehyde and minor alcohol contents, the levels of these materials were much lower than the limits set by the Korean National Tax Service. Upon sensory evaluation, $OC_2$ wine obtained the highest scores in terms of color, flavor, and overall acceptance. However, the best taste score was awarded to the Fermivin wine, which had the same flavor score as $OC_2$ wine but a slightly lower overall acceptance score.

Growth and Fruit Characteristics of 'Cheongsoo' Grape in Different Trellis Systems ('청수' 포도의 수형에 따른 수체 생육 및 과실 특성)

  • Trellising is an important cultural practice that affects grape quality and yield. Some grape cultivars require different trellising under different climate and soil conditions. To find suitable trellis conditions for grape cultivar 'Cheongsoo', we measured growth and fruit characteristics with three different trellis systems: curtain, Geneva double curtain (GDC), and modified T. The maximum light exposure of clusters in the curtain, GDC, modified T trellis systems was 670, 1,654, and $1,649{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$, respectively. However, there was no difference in air temperature among the three trellis systems. Net $CO_2$ assimilation rate at $1,500{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ light intensity was 13.4, 13.7, and $8.7{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$ in curtain, GDC, and modified T trellis systems, respectively. Trunk cross section area (TCSA) and bud burst rate were not significantly different among the three systems. Shoot number was 31.3, 47.0, and 37.0 in curtain, GDC, and modified T trellis systems, respectively. The shoot length was higher (243.9 cm) in the modified T trellis system than in the single curtain (171.1 cm) and GDC (151.5 cm) systems. Interior leaf number and leaf layer number were higher in the GDC system, in which there are two primary branches, in comparison to the modified T and curtain systems, which utilize one primary branch. Primary leaf area and lateral leaf area were significantly higher in the modified T trellis system in comparison to the GDC system. Berry weight, length and diameter, and total soluble solids were not significantly different among the three trellis systems. However, cluster weight and cluster number per tree were significantly higher in GDC. Titratable acidity was significantly lower in GDC. Collectively, our data suggest that the GDC trellis system is preferable for grape 'Cheongsoo' to maintain fruit quality and quantity in Korea.

Suitability of Domestic Grape, Cultivar Campbell's Early, for Production of Red Wine (국내재배 Campbell's Early 포도품종의 적포도주 제조 적합성)

  • The domestic grape, cultivar Campbell's Early, was investigated for suitability for production of red wine. The factors for red wine fermentation and quality such as concentrations of sugar, acidity and organic acids in the fresh fruit and the wine from the grape were analyzed. The average concentration of sugar in the fruit was 14%. Since the concentration was not sufficient for fermentation, sugar was added up to 23%. It resulted in production of wine with 12% of alcohol. The total acidity and pH of the fruit were 0.8% and pH 3.4 respectively. Those were optimum levels for fermentation. The fruit contained 3,649 ppm of tartaric acid, 5,339 ppm of malic acid and 948 ppm of citric acid. The wines from Icheon and Youngdong, which were fermented from the grape and M wine which was an imported red wine, were tested. Their pH were 3.5, 3.4 and 3.7, and total acidities were 0.75%, 0.71% and 0.57%, respectively. They contained 1,881 ppm, 2,098 ppm and 8,534 ppm of tartaric acid, 3,033 ppm, 1,952 ppm and undetectable amount of malic acid, 769 ppm, 389 ppm and undetectable amount of citric acid, and 3,337 ppm, 2,368 ppm and 11,991 ppm of lactic acid. This results indicated that M wine contained much more amounts of tartaric acid and lactic acid than the wines of Icheon and Youngdong. The sensory analysis showed that Korean students preferred Youngdong and Icheon wine to M wine. The analytic results indicated that the domestic grape, cultivar Campbell's Early, is suitable source for high quality red wine.

Correlation between Sensory Quality and Instrumental Quality Attributes in 'Campbell Early' Grape (포도의 관능적 품질과 객관적 품질인자 상호간의 상관성)

  • In order to find correlations between the sensory evaluation and instrumental analysis in 'Campbell Early' grape, grapes were divided into three parts. One-half parts were used for the sensory evaluation and the other half were used as samples for instrumental analysis. Relationship between sensory evaluation and instrumental analysis were studied through correlation study using 48-paired data set obtained during storage. Soluble solid content analysis showed that instrumental quality attributes increased along the passage of storage time with increasing temperature. pH and titratable acidity decreased slightly at lower storage temperatures. Correlations between instrumental quality attributes in grapes were found to be very low. Positive correlation was found between pH and soluble solid content, and negative correlation was found between pH and titratable acidity. The relation of sourness and sweetness to sourness was higher than other sensory evaluation factors, and the shape of the grapes was found to have little relation to their sweetness. Texture ($r^2$=0.890) was found to be the most important factor in preference, followed next by sweetness with sourness ($r^2$=0.860). The correlations between the sensory evaluation and instrumental quality attributes were found to be very low, with overall acceptability given to a relatively high content of soluble solid content. Correlations between pH and titratable acidity in terms of overall acceptability were found to be very low.

Data Mining and Construction of Database Concerning Effects of Vitis Genus (산머루 관련 정보수집 및 데이터베이스의 구축)

  • The database for the oriental medicine had been existed in documentation in past times and it has been developed to the database type for random accesses in the information society. However, the aspects of the database are not so diversified and the database for the bio herbal material exists in widened type dictionary style. It is a situation that the database which handles the in-depth raw herbal medicines is not sufficient in its quantity and quality. Korean wild grape is a deciduous plant categorized into the Vitaceae and it was found experimentally that it has various medical effects. It is one of the medical materials with higher potentiality of academic study and commercialization recently because it has a bigger possibility to be applied into diverse industrial fields including the medical product for health, food and beauty. We constituted the cooperative system among the Muju cluster business group for Korean mountain wild grapes, Physiology Laboratory in Kyung Hee University Oriental Medicine and Medical Classics Laboratory in Kyung Hee University Oriental Medicine with a view to focusing on such potentiality and a database for Korean wild grapes was made a touchstone for establishing the in-depth database for the single bio medical materials. First of all, the literatures based on the North East Asia in ancient times had been categorized into the classical literature (Korean literature published by government organization, Korean classical literature, Chinese classical literature and classical literature fro Korean and Chinese oriental medicine) and modern literature (Modern literature for oriental medicine, modern literature for domestic and foreign herbal medicine) to cover the eastern and western research records and writings related to Korean wild grapes and the text-mining work has been performed through the cooperation system with the Medical Classics Laboratory in Kyung Hee University Oriental Medicine. First of all, the data for the experiment and theory for Korean wild grape were collected for the Medline database controlled by the Parliament Library of USA to arrange the domestic and foreign theses with topic for Korean wild grapes and the network hyperlink function and down load function were mounted for self-thesis searching function and active view based on the collected data. The thesis searching function provides various auxiliary functions and the searching is available according to the diverse searching/queries such as the name of sub species of Korean wild grape, the logical intersection index for the active ingredients, efficacy and elements. It was constituted for the researchers who design the Korean wild grape study to design of easier experiment. In addition, the data related to the patents for Korean wild grape which were collected from European Patent Office in response to the commercialization possibility and the system available for searching and view was established in the same viewpoint. Perl was used for the query programming and MS-SQL for database establishment and management in the designing of this database. Preparation and Characterization of Physicochemical and Sensory Properties of Bread Enriched with Two Types of Wild Grape Extract (제조방법이 다른 두 종류의 머루즙 첨가가 빵의 이화학적 및 관능적 특성에 미치는 영향)

  • Two types of wild grape extracts(WGE) prepared by different methods were added into butter-top bread at different concentrations(0, 5, 10, 15, 20% of water). Then, the resulting breads were analyzed for their physicochemical and sensory properties in order to identify whether or not the WGE-enriched breads were comparable to control bread in terms of qualities and preferences. Wild grape sugar mixture(WGS), which was prepared by osmotic dehydration of wild grape fruits with the same amounts of sugar, presented significantly lower moisture content and titratable acidity as well as higher pH and sugar content compared to wild grape juice(WGJ), which was produced by boiling the fruits in a vacuum jar and squeezing. The pH of the doughs and breads containing WGE tended to decrease with increasing amounts of WGE, and this phenomenon was more appreciable in those containing WGJ than WGS. This was presumably due to the higher contents of tartaric acid in WGJ. For both types of extracts, hardness, gumminess, and chewiness of the doughs decreased with the addition of WGE, nevertheless, which properties were not remained in the resulting breads. This could be partially attributed to the relatively high degree of baking loss and lower pH of the WGE-enriched breads than those of control bread. Contrary to the mechanical analyses, the sensory properties of the breads were dependent on the WGE type. That is, WGJ-enriched bread showed lower consistency and moistness than control bread, which consequently led to relatively lower overall acceptability. However, WGS addition did not adversely affect the sensory properties of the bread. In particular, addition of 5% WGS somewhat improved the physical and sensory qualities of the bread. Thus, WGE-enriched bread could be produced without loss of bread quality when prepared with 5% WGS.

Storage Quality of Ready-to-Eat Campbell Table Grapes as Affected by Active Modified Atmosphere Packaging (기체충진 포장조건에 따른 신선편이 캠벨 포도의 저장 중 품질변화)

  • The storage quality of ready-to-eat Campbell table grapes which were packaged under modified atmospheres was investigated in order to examine the effect of high $O_2$ and $CO_2$ on the fruit. Fresh table grapes with 10-15 berries were packed into polypropylene (PP) trays and were top-sealed with polythylene terephthalate/PP film. The initial gas compositions inside the packages were air, 20% $O_2$/10% $CO_2$/70% $N_2$, and 40% $O_2$/60% $N_2$. Sealed packages with low density polyethylene film bags and perforated PP trays were also used as a further treatment and control, respectively. The quality attributes were assessed during storage at $5^{\circ}C$ for 28 days. Fruit packaged in high $CO_2$ concentration showed the lowest viable cell counts of inherent microorganisms among all samples, although they suffered from severe off-flavors. High levels of $O_2$ significantly lowered flesh weight loss and maintained the flavor of grape. In an overall sensory aspect, the high $O_2$ and $CO_2$ packages exhibited greater scores than the air and control at the end of the storage period. Other quality attributes showed no significant differences among treatments. Results suggest that packaging with an appropriate combination of high $O_2$ and $CO_2$ can be used as an effective processing treatment for improvement of the storability of ready-to-eat table grapes.

  • 'Kyoho' grape (Vitis labruscana L.) has currently cropped twice a year in plastic greenhouses. However, there are problems with low fruit quality in the second cropping owing to low temperatures and short photoperiods. This experiment was conducted to investigate the effect of root zone heating and $CO_2$ enrichment in plastic greenhouse on the vine growth and fruit quality of 'Kyoho' grape in double cropping system. The internode length of shoots, leaf area and leaf dry weight at the treatment of soil heating near root zone was significantly different regardless of $CO_2$ enrichment. There were no significant differences in fruit bunch and berry weight, titratable acidity, coloration degree and berry shattering among the treatments, but the soluble solids significantly increased by root zone heating. Photosynthetic rate increased with increasing $CO_2$ concentration from 300 to $800{\mu}mol{\cdot}mol^{-1}$ in sunny day, whereas it didn't increase in cloudy day regardless of $CO_2$ enrichment.

Fruit Quality and Freezing Damage of 'Kyoho' Grapes by Girdling (환상박피처리에 의한 '거봉' 포도의 과실 품질 및 동해 피해)

  • The effects of girdling on fruit quality and cold resistance of 'Kyoho' grapes were investigated. Girdling treatment was conducted on the trunk at 10 cm above ground with 1 cm width and grapes were harvested at 90 and 110 days after full bloom to compare the fruit quality. First harvesting rate in girdling treatment was higher than that in non-girdling treatment and coloration was also higher in girdled vines at the final harvest. In other words, coloring process of grape was promoted and enhanced by girdling, but this effect of coloring improvement was decreased after successive girdling treatment. Fruit quality showed no difference between the treated and non-treated berries, but fruit cracking rate was lower in girdled treated berries. Girdled trees were weakened and suffered from freezing damage. Especially, most grapevines withered up after being girdled for three consecutive years. Although girdling had effect on improving the berry coloring significantly, the effect wore off with continuous girdling. And it was possible that consecutive girdling leaded to wither and growth suppression especially in grapevines. These adverse effects may make the continuous girdling technique unsuitable in practice for 'Kyoho' grape.

Determination of Phenolics, Sugars, Organic Acids and Antioxidants in the Grape Variety Kalecik Karası under Different Bud Loads and Irrigation Amounts

  • Irrigation applications (IA) and increased bud load (BL) are fundamental practices that are used to achieve optimum yields in grape production, while maintaining fruit quality parameters. Two different irrigation amounts (IA-I and IA-II) based on growth stages, in addition to a non-irrigated (rain-fed) control, along with two different BL applications [normal bud load based on traditional pruning practices (1BL) and double bud load (2BL)] were evaluated over a two-year experiment for their effects on the biochemical composition of the berries. Berries from the rain-fed vines had higher sugar levels, whereas no significant change was detected in organic acid levels. The increased bud load (2BL) treatment yielded less sugar in the berries compared to the 1BL control in both years. The total non-colored phenolic compounds (NPC) were greater in the irrigated (especially IA-I) and 2BL treatments than in those of the rain-fed and 1BL control. However, total anthocyanin was greater in the non-irrigated and 1BL control than in the irrigated and 2BL treatments. The antioxidant contents of the berries also varied according to the treatments and years. Our results implied that implementing a higher bud load along with the IA-I irrigation application, in which irrigation applications were 50 and 75% of the cumulative evaporation from the Class A pan during berry set to veraison and veraison to harvest growth stages, respectively, can help in obtaining greater yields in high-plateau viticulture. Thus, if more buds are left on the vines, along with sufficient irrigation and rainfall, yield may increase while maintaining or increasing the biochemical composition of the berries.
