The quality Characteristics of Saccharified Minor Cereal Gruel Prepared with Different Grain Kojis (곡류 코지를 이용하여 제조한 당화잡곡죽의 품질 특성)

  • This study investigated the quality characteristics of saccharified minor cereal gruel prepared with different grain kojis (rice, buckwheat, sorghum, adlay, and Italian millet koji). The moisture, crude protein, crude lipid, and crude ash contents of raw materials showed ranges of 11.12 - 12.85; 5.81-16.24; 0.56 - 4.36, and 0.28 - 1.93%, respectively. The crude protein, crude lipid, and crude ash contents of the samples showed ranges of 1.64 to 2.44; 0.08 to 0.28, and 0.09 to 0.18%, respectively. The pH, L, a, and b values ranged from 6.11- 6.43; 58.72 - 65.96; 2.92 - 5.76, and 7.81- 9.42, respectively. The viscosities of saccharified minor cereal gruel prepared with different grain kojis were significantly (p<0.05) lower than the unsaccharified minor cereal gruel. After the saccharification, the soluble solids, glucose, and maltose content were significantly (p<0.05) increased, with ranges of $9.58-10.61^{\circ}Brix$; 0.64 - 0.90%, and 0.32 - 0.50%, respectively. A sensory evaluation indicated that minor cereal gruels saccharified using sorghum koji and adlay koji were more acceptable than unsaccharified minor cereal gruel. In conclusion, the cereal kojis could be used as a gruel processing method that would increase the sensory properties and nutritional values of gruels.

Response of Millet and Sorghum to Water Stress in Converted Poorly Drained Paddy Soil

  • Millet and sorghum are major dryland cereal crops, however their growth and productivity is limited by soil water stress with varying intensity. The major objective of this study was to evaluate water stress of millet and sorghum yield under drainage classes of poorly drained soil and to test the effect of the installed pipe drainage in poorly drained paddy soil to minimize crop stress. The research was carried out in poorly drained paddy fields located at alluvial slopping area resulting in non-uniform water content distribution by the inflow of ground water from the upper part of the field. Stress Day Index (SDI) was determined from a stress day factor (SD) and a crop susceptibility factor (CS). SD is a degree of measurement by calculating the daily sum of excess water in the profile above 30cm soil depth ($SEW_{30}$). CS depends on a given excess water on crop stage. The results showed that sum of excess water day ($SWD_{30}$) used to represent the moisture stress index was lower on somewhat poorly drained soil compared with poorly drained soil on 117 days. CS values for sorghum were 57% on $3^{rd}$ leaf stage, 44% on $5^{th}$ leaf stage, 37% on panicle initiation, 23% on boot stage, and 16% on soft dough stage. For proso millet CS values were 84% on $3^{rd}$ leaf stage, 70% on $5^{th}$ leaf Stage, 65% on panicle initiation, 53% on boot stage, and 28% on soft dough stage. And for foxtail millet the values were 73% on $3^{rd}$ leaf stage, 61% on $5^{th}$ leaf stage, 50% on panicle initiation, 29% on boot stage, and 15% on soft dough stage. SDI of sorghum and millet was more susceptible to excess soil water during panicle initation stage more poorly drained soil than somewhat poorly drained soil. Grain yield was reduced especially in proso millet and Foxtail millet compared to Sorghum.

Analysis of Phenolic Compounds in Sorghum, Foxtail Millet and Common Millet

  • The cereal grain crops have strong flexibility against adverse environment and they have various functional compounds. The objective of the present study was to screen phenolic compounds in sorghum [Sorghum bicolor (L.) Moench], foxtail millet (Setaria italica), common millet (Panicum miliaceum L.) by high performance liquid chromatography (HPLC) with photodiode array (PDA) detector. Sorghum contained the highest amount of phenolic compounds among three different crops (sorghum, foxtail millet, common millet). Especially Moktaksusu showed the highest amount of phenolic compounds concentrations and biggest regional differences. The comparison of average phenolic compounds in sorghums by regions showed order to Milyang ($963.3\;{\mu}g{\cdot}g^{-1}$), Yeongyang ($923.1\;{\mu}g{\cdot}g^{-1}$), Gijang ($831.3\;{\mu}g{\cdot}g^{-1}$) and Bonghwa ($735.6\;{\mu}g{\cdot}g^{-1}$). Among the sorghum cultivars, Moktaksusu ($1407.9\;{\mu}g{\cdot}g^{-1}$) had the highest concentration of phenolic compounds. The average phenolic compounds of foxtail millets showed similar amount among Milyang ($319.0\;{\mu}g{\cdot}g^{-1}$), Gijang ($288.1\;{\mu}g{\cdot}g^{-1}$) and Bonghwa ($281.9\;{\mu}g{\cdot}g^{-1}$) areas. The phenolic compounds of Yeongyang ($246.6\;{\mu}g{\cdot}g^{-1}$) slightly low and that showed similar concentrations among three different regions. The concentration of phenolic compounds in foxtail millets, Chungchajo ($335.6\;{\mu}g{\cdot}g^{-1}$) showed the highest concentrations. The average phenolic compounds of common millets showed the highest concentrations in Milyang ($305.5\;{\mu}g{\cdot}g^{-1}$), Bonghwa ($262.0\;{\mu}g{\cdot}g^{-1}$), Gijang ($195.1\;{\mu}g{\cdot}g^{-1}$), Yeongyang ($237.2\;{\mu}g{\cdot}g^{-1}$) in decreasing order. The concentration of phenolic compounds of common millets was the highest in the Norangchalgijang ($337.0\;{\mu}g{\cdot}g^{-1}$), Hwanggumgijang ($250.0\;{\mu}g{\cdot}g^{-1}$) was also relatively higher than others. The results of this study will provide basic information for breeding sorghums, foxtail millets and common millets with higher phenolic compound concentrations.

Effect of Heat Treatments on in vitro Starch Hydrolysis of Selected Grains (가열처리가 잡곡류의 in vitro 전분가수분해율에 미치는 영향)

  • The effect of heat treatments on in vitro starch hydrolysis of proso millet, sorghum, Job's tears, and buckwheat by pancreatic ${\alpha}-amylase$ was investigated. Grain samples were tested raw, boiled in water, or steamed/roasted. Starch content of the grains varied from 59.5% in Job's tears to 65.5% in proso millet, and amylose content varied from 5.3% in Job's tears to 36.3% in buckwheat. The in vitro starch hydrolysis of raw and heat-treated grains continuously increased during 60 min of hydrolysis. The starch hydrolysis (%) of raw grains after 60 min incubation was in the order of buckwheat (5.7%), proso millet (33.0%), Job's tears (51.2%), and sorghum (57.6%). Grains treated with steaming/roasting appeared to have higher starch hydrolysis rates than those with boiling except proso millet. Hydrolysis rates of buckwheat with a high amylose content appeared to be lower, compared to proso millet, sorghum, and Job's tears containing low amylose contents.

Sensing Technologies for Grain Crop Yield Monitoring Systems: A Review

  • Purpose: Yield monitoring systems are an essential component of precision agriculture. They indicate the spatial variability of crop yield in fields, and have become an important factor in modern harvesters. The objective of this paper was to review research trends related to yield monitoring sensors for grain crops. Methods: The literature was reviewed for research on the major sensing components of grain yield monitoring systems. These major components included grain flow sensors, moisture content sensors, and cutting width sensors. Sensors were classified by sensing principle and type, and their performance was also reviewed. Results: The main targeted harvesting grain crops were rice, wheat, corn, barley, and grain sorghum. Grain flow sensors were classified into mass flow and volume flow methods. Mass flow sensors were mounted primarily at the clean grain elevator head or under the grain tank, and volume flow sensors were mounted at the head or in the middle of the elevator. Mass flow methods used weighing, force impact, and radiometric approaches, some of which resulted in measurement error levels lower than 5% ($R^2=0.99$). Volume flow methods included paddle wheel type and optical type, and in the best cases produced error levels lower than 3%. Grain moisture content sensing was in many cases achieved using capacitive modules. In some cases, errors were lower than 1%. Cutting width was measured by ultrasonic distance sensors mounted at both sides of the header dividers, and the errors were in some cases lower than 5%. Conclusions: The design and fabrication of an integrated yield monitoring system for a target crop would be affected by the selection of a sensing approach, as well as the layout and mounting of the sensors. For accurate estimation of yield, signal processing and correction measures should be also implemented.

Forage productivity of Silage Corn and Sorghum at Differnet Planting Dates in Rice Black-Streaked Dwart Virus Prevalent Area (흑조위축병이 심한 지역에서 파종기에 따른 사일리지용 옥수수와 수수의 건물생산성)

  • Dry matter productivity at silage stage of two corn hybrids varying resistance to rice blackstreaked dwarf virus(RBSDV) and two sorghum hybrids varying growth duration was evaluated at six planting dates (Apr. 1, Apr. 15, Apr. 29, May 13, May 27, and June 10) in Kyongsan where RBSDV is prevalent.Corn was harvested 38-40 days after silking. For sorghum 1st-cut was made 19-22 days after heading and some regrowth (2nd-cut) on October 13. 1. Percent stand of both corn hybrids was over 91% at all planting dates, but that of sorghum ranged 37.2-80.3% depending on hybrids and planting dates. 2. The number of days from planting to emergence decreased as planting date delayed in both crops. The number of days from emergence to silking of both corn hybrids and a sorghum hybrid(P 956) decreased as planting date delayed, but that of the other sorghum hybrid(P 931) increased significantly after May 13 planting. 3. RBSDV infection rate of corn hybrids was highest at April 1 planting (Kwanganok 24.896, Jinjuok 63.0%) and decreased up to April 29 planting and then increased as planting date delayed. Sorghum was not infected by RBSDV at all. 4. EarfTotal dry matter ratio of corn ranged 30.6-47.9% and that of sorghum 3.1-30.7% depending on hybrids and planting dates. All the hybrids developed grain normally at all planting dates except a sorghum hybrid (P 931) which developed few grains after May 13 planting. 5. Crude (C) protein and C. fat contents were similar among all treatments. C. fiber content of P 931 was higher than that of both corn hybrids and P 956, but nitrogen free extract (NFE) was lower. C. fiber and NFE of both corn hybrids and 1st-cut sorghum were similar among the planting dates, but C. fiber and NFE of 2nd-cut of sorghum decreased and C. protein increased as planting date delayed due to plants were younger. 6. Dry matter (DM) yield of all hybrids decreased as planting date delayed except Jinjuok of which yield was highest at April 29 planting. DM yield of corn was similar to 1st-cut sorghum, but lower than total DM yield of sorghum at April 1 and 15 plantings where regrowth yield was high.

Effects of Seed Size Variation on Germination and Seeding Vigour of Sorghum (Sorghum bicolor L.) (수수의 종자크기가 종자활력과 출아에 미치는 영향)

  • Seed size has been considered as an effective criteria for selection of the most vigorous seeds in sorghum [(Sorghum bicolor (L) Moench]. The smaller seeds were inferior to the larger sizes in emergence and grain yield. This study was conducted to determine germination rate, field emergence and vigor of sorghum for selection of high quality seed by different seed size. Sorghum cultivar of two (Hwanggeumchal and Tojong) were separated into five seed size proportion (<2.36, 2.80, 3.15, 3.35 and >3.55 mm diam.) according to seed size. The larger seed was more higher 1,000 seeds weight, seed density, carbohydrates and protein content. Total seed germination performing varied 92% at the largest size (>3.55 mm diam.) frequently inferior to slightly 67% at smaller seed (2.36 to 2.80 mm diam.) in the standard germination test. Seed size did have a significant effect on mean emergence time (MET) and maximum emergence rate index (ERI) and percentage of emergence. It should be noted that the results refer to MET of sorghum seeds ranging from 4.26 to 4.74 days. The relationship of seed size was not only to stand establishment but to grain yield. Yield was most affected by seed size and large seeds were superior to the smaller seed in 25~37% of the cases. Especially, yield was significant under 3.15 mm the beginning.

Studies on Reserved Carbohydrates and NEL ( Net energy Lactation ) in Corn and Sorghum I. Synthesis and Accumulation Pattern of Fructosan, Mono-and Disaccharose (옥수수 및 Sorghum에 있어서 탄수화물과 NEL 축적에 관한 연구. I. Fructosan , Mono 및 Disaccharose의 합성 및 축적형태)

  • Phytotron and field experiments were conducted to determine the influence of morphological development and environmental temperature on synthesis, translocation and accumulation behaviour of Fructosan, Monoand Disaccharose in corn cv. Blizzard and fodder sorghum cv. Sioux and Pioneer 931 at Munich technical university. Sorghum and maize plants were grown for 42 days at 4 temperature regimes (30/25, 25/20, 28/18 and 28/8 dog C) and mid-summer sunlight over 13-h days. The obtained results are summarized as follows: 1 Non-structural carbohydrates in maize and sorghum were accumulated mainly as Mono- and Disaccharose. The concentrations of Mono- and Disaccharose were increased markedly after differentiation of growing points and shown at early milk stage the highest contents with 27.8-29.1% and 16.8-20.4% for maizeand sorghums respectively. 2. Non-structural carbohydrates were accumulated mainly in stalk. However, during the late maturity the most of Mono- and Disaccharose were translocated into grain and reserved as starch. The increase of starch was associated with decrease of total non-structural carbohydrates. 3. Fructosan synthesis was not affected by morphological changes and environmental factors, which shows a value of 1.5-2.5% in whole stage of maize and sorghum. 4. Sorghum and maize plants were shown to have a great photosynthetic rates to high temperature. Reserved Mono- and Diaaccharose were, however, declined when temperature exceeded 30 dog C. Under cold stress at l8/8 deg C non-structural carbohydrates were not translocated and also were accumulated in leaves too much that cause to restrict of photosynthesis. 5. Net Energy Lactation (NEL) of sorghum and maize were directly associated with synthetic rates of non-structural carbohydrates, especially Mono- and Disaccharose. The highest values of NEL were found at physiological maturity stage with 6.6- 6.9 MJ and 5.7-6.0 MJ-NEL/kg for maize and sorghum respectively.

Effect of Various Gluten-free Flours on Quality Characteristics and Antioxidant Activities of Cookies (전분의 종류를 달리하여 제조한 Gluten-free 쿠키의 품질특성 및 항산화 활성 비교)

  • Purpose: This study examined the effect of different gluten-free flours on the properties of cookies. Methods: Each gluten-free cookie was made from wheat, brown rice, buckwheat, corn, sorghum, teff, or black rice. Results: Baking loss was highest on sorghum (18.85%) and the lowest on teff (12.73%). The spread factor was highest on brown rice (8.20) and lowest on corn (7.60). The density was similar in all samples (1 g/mL). pH was the highest on buckwheat (6.45) and lowest on wheat (5.96). While L-value, a-value and b-value were lowest on black rice, the ${\Delta}E-value$ was the highest on black rice (35.57). The hardness was highest on wheat (30.28 N) and lowest on teff (14.87 N). The polyphenol and flavonoid content was the highest on buckwheat ($25.97{\mu}g\;GAE/mg$) and the flavonoid content was the highest on black rice ($24.33{\mu}g\;QE/mg$). The DPPH IC50 value was highest on wheat ($352.41{\mu}g/mL$) and lowest on black rice ($33.59{\mu}g/mL$). The ABTS $IC_{50}$ value was highest on wheat ($349.30{\mu}g/mL$) and lowest on black rice ($57.72{\mu}g/mL$). The results of the sensory properties revealed color to be highest on corn (7.33). The top grain was similar in all the samples (5.43-6.57). Flavor was highest on black rice and teff (6.43-6.48). The softness was the highest on wheat, sorghum, teff, and black rice (6.48-7.05). Sweetness was highest on sorghum, teff, and black rice (6.19-6.71). The overall preference also was highest on sorghum, teff, and black rice (6.14-6.48). Conclusion: Gluten-free flours can improve the quality characteristics and antioxidant activities of cookies.

Effect of Planting Distance and Seeding Date on the Tiller Occurrence, Growth Characteristics of Sorghum (Sorghum bicolor L.) Resources (재식거리 및 파종기 이동에 따른 수수자원의 분얼발생 및 생장 특성)

  • This experiment was conducted to investigate the aspect of tiller occurrence, growth and yield of sorghum according to planting distance and sowing date. The object of this experiment is to get basic data to inhibit non-productive tillers uneconomical and cumbersome for mechanical harvesting. Also another object was to evaluate optimum planting distance and sowing date in central district area. Total number of tillers was more in 80 cm ridge than 60 cm ridge and it was increased as the planting distance was wider from 15 cm to 30 cm on the each ridge. Ratio of effective tillers was higher in 60 cm ridge than 80 cm ridge and it was decreased as planting distance was wider from 15 cm to 30 cm. The lower the planting distance, the more increased total number of tillers, whereas effective tillers was decreased as planting distance was high. Average of total number of tillers of three varieties was higher in sowing date of May 2 (1st sowing date), whereas ratio of effective tillers was the highest in sowing date of May 23 (2nd sowing date). Hwanggeumchal showed the highest total number of tillers (1.2 tillers), while Moktaksusu had the lowest total number of tillers (0.8 tillers) among three varieties. There were no significant difference between planting distance and days to heading and ripening date from seeding. Culm length increased as planting distance was high, but ear length, grains per ear and 1000 grain weight were decreased on the other hand. The highest yield of sorghum per 10a was obtained from $60{\times}20cm$ planting distance among 6 planting distances.
