Development of an Agar-gel Added Soy Beverage (우무를 첨가한 콩 음료 개발)

  • An agar-gel added soy beverage was developed. Optimum processing conditions for preparation of agar-gel were 1.5% agar with 0.1-0.2% sodium chloride and 0.1% glucomannan. And optimum manufacture conditions for soy juice were 10% solid seasoned with 3% sugar and 0.1-0.2% salt. The result of sensory evaluation revealed that overall acceptability of soy beverage with 10% solid seasoned with 3% sugar and 0.1-0.2% salt and agar-gel made with 1.5% agar, 0.2% sodium chloride and 0.1% glucomannan exceeded other groups of samples.

  • A hot-water extract from fruit body of Auricularia auricula was purified by ethanol precipitation and subsequent dialysis. The polysaccharide showed a typical IR spectrum similar to $\beta$-glucan and was composed of glucose and mannose in a molar ratio of 16.8:83.2 indicating that it is a glucomannan. A glucomannan-like polysaccharide was also identified from Tremella fuciformis. Both of the polysaccahrides showed the presence of acetyl groups and presented colorimetric responses for $\beta$-1,4-glucomannan indicating the acetylated $\beta$-glucomannan similar to the typical polysaccharide found in Aloes.

Quality Characteristics of Baked Yugwabandagi with Different Additives (첨가물을 달리한 구운 유과 반대기의 품질 특성)

  • To improve the shortcomings of baked Yugwa 0.5, 1.0, 1.5 and 2.0% natural ind igestible materials,- (gellan gum, glucomannan and carrageenan) were each treated with glutinous rice-baked Yugwa was processed, and quality imprpvements were deducted. Baked Yugwa with natural additives,- (gellan gum, glucomannan and carrageenan) was compared,- to additional test results with sample 1.5%(w/w) additives,- The one showing the highest preference from the sensory test was the acid number reference group at $2.19{\pm}0.42$, while the sample groups,- with different additives, were lower than the reference group by $1.48{\pm}0.39$ to $1.67{\pm}0.68$. The peroxide number reference group showed the highest preference of $49.34{\pm}0.42$, whereas the sample groups, with different additives, showed lower preferences than the reference group by $36.72{\pm}$0.42 compared to the sample group of glucomannan 1.5% (w/w), $32.45{\pm}0.59$ compared to the sample group of gellan gum 1.5%(w/w), and $28.65{\pm}0.56$ compared to the sample group of carrageenan 1.5% (w/w). According to the preference test targeting employees of Korean cake, manufacturers, there was no significant difference in color and flavor among all groups, whereas the sample group of carrageenan 1.5% (w/w) showed the highest scores in items of taste, texture and overall-preference, and also sample groups of glucomannan 1.5% (w/w) and gellan gum 1.5% (w/w) scored higher than the reference group. Baked Yugwa with 1.5% (w/w) additives of carrageenan, glucomannan and gellan gum have higher marketability by decreasing deterioration caused by oxidation of existing deep fried Yugwa and by improving the solid texture of baked Yugwa.

Monitoring of Organoleptic and Physical Properties on Preparation of Oriental Melon Jelly (참외젤리 제조에 따른 관능적 및 물리적 특성 모니터링)

  • To prepare oriental melon jelly having highly favorite, oranoleptic and physical properties of jelly with special to the content of glucomannan, oriental melon concentration juice and vinegar was monitored by four-dimensional response surface methodology. Mouth-feel showed maximum sensory score in 0.09% glucomannan, 3.17% oriental melon concentration juice and 1.25% oriental melon vinegar. Organoleptic taste showed maximum sensory score in 0.12% glucomannan, 3.64% oriental melon concentration juice and 0.91% oriental melon vinegar. Overall palatability showed also maximum sensory score in 0.10% glucomannan, 3.07% oriental melon concentration juice and 1.34% oriental melon vinegar. The sensory socore of overall palatability was more than 7.0 in the texture ranges of 0.20~0.31 cm/g (softness) and 8.0~12.5 gㆍcm (jelly strength).

The Effect of Dietary Nuddle with Glucomannan on the Weight Loss in High Fat Diet-Induced Obese Rats (글루코만난을 첨가하여 제조한 국수가 고지방식이를 급여하여 유도된 비만흰쥐의 체중 감소에 미치는 영향)

  • This study was carried out to investigate the effect of body weight reduction of noddle contained glucomannan in high fat diets-induced obese rats. Male Spraque-Dawley rats were randomly assigned to control and high fat diets groups for 4 weeks. Four weeks later, the control and high fat diet grpups were rearranged into 4 groups by different levels of nuddle containing glucomannan. After 5 weeks of feeding, serum and whole blood was analyzed. Obesity index was significantly lower in the group fed nuddle contained glucomannan than that of high fat diet groups. The status of white blood cells in hematological examination was significantly higher in rats fed high fat diet and was not significantly different by fed nuddle. Serum albumin levels were not significantly different although glucose levels in serum was significantly different among groups. Serum triglyceride and Total cholesterol levels were the highest levels in rats fed high fat diets and showed the lowest levels in rats fed nuddle.

A Study on the Rheological properties of Glucomannan (Glucomannan 의 유변학적 성질에 관한 연구)

  • Glucomannan(G.M.)은 Amorphophallus Konjac C. Koch의 tuber로부터 분리되었고. 이 G.M.은 다시 침전제로 메탄올을 사용하여 4단계로 분별되었다.(F.1, F.2, F.3, F.4,). 각분 별물에 비하여 직선으로부터 벗어남을 보였다. Low shear viscometer로 G.M. 용액의 viscosity를 측정하였고 농도와 zero shear specific viscosity의 logarithm을 도시한 결과 inflection point를 나타내었다. 이것은 G.M. 분자들의 coil overlap의 시작에서 기인한 것이 고 묽은 용액에서 진한 용액으로의 전이행동은 임계농도. C*=4/[η]에서 일어났고 이때의 zero shear specific viscosity는 10을 나타내었다. 또한 specific viscosity는 묽은 용액에대해 서는 C14로써 변화하였고 진한 요액에서는 C3.0으로변화하였다. G.M.의 고체상태에 대한 유 전성($\varepsilon$',$\varepsilon$")과 점탄성(C',C")계수들을 액체질소 온도에서부터 15$0^{\circ}C$ 온도범위에 걸쳐 4단계로 film을 건조시키면서 10Hz에서 측정하였다. G.M. film의 유전성과 점탄성의 허수부 분은 ($\varepsilon$", C"), -10$0^{\circ}C$에서 peak를 나타내었고 이 peak는 hydroxy methyl 기들의 회전 운동에서 생겨난 것이다. 건조시키지 않은 상태의 G.M. film의 유전성과 점탄성의 허수부분 의 값들은 -5$0^{\circ}C$에서 물 분자의 운동에 의하여 생긴 peak를 보였다.

Effects of White Bread with Konjac Glucomannan on Body Weight and Serum Lipids on Rats with Diet-Induced Obesity (곤약 글루코만난을 첨가한 식빵 급여가 고지방식이로 유도한 비만 흰쥐의 체중 및 혈청지방에 미치는 영향)

  • The effects of white bread supplemented with konjac glucomannan on diet-induced obesity in rats were investigated. Four groups of male Sprague-Dawley rats were examined: a non-obese control group (NC), an obese high fat diet group (HF), an obese high fat diet group given bread supplemented with 10% konjac glucomannan (KGM1) and an obese high fat diet group given bread supplemented with 20% konjac glucomannan (KGM2). The daily weight gain of the KGM1 group increased slightly and decreased in the KGM2 group compared to the HF group. The serum triglycerides, total lipid, total cholesterol, and HDL-cholesterol increased in the HF compared to the NC group, whereas they decreased in KGM1 and KGM2 groups. After having this experimental diet for 6 weeks, the body weight in KGM1 and KGM2 groups decreased compared to the HF group. While the initial R$\ddot{o}$hrer index was 23.13 in the NC group, and 31.50~32.59 in the HF, KGM1, and KGM2 groups, the index after the experimental diets for 6 weeks was 28.39 in the NC group, 36.88 in the HF group, 33.48 in the KGM1 group and 29.64 in the KGM2 group. The level of body fat increased from 1% to 7.14% in the NC group, from 15.60% to 60.05% in the HF group, and from 10.60% to 10.83% in the KMG1 group, but decreased from 10.45% to 8.20% in the KGM2 group. These results demonstrate that white bread with glucomannan is effective in reducing body weight and serum lipids in high fat diet-induced obese rats.

Effect of Mixed Glucomannan and WheyCalcium on the Serum Cholesterol and Blood Glucose in Rats (글루코만난과 유청칼슘의 혼합물이 흰쥐의 혈청콜레스테롤 및 혈당에 미치는 영향)

  • This study was performed to investigate the effect of mixed glucomannan(G) and wheycalcium(W) on the level of serum cholesterol in rats(Female Sprague-Dawley) fed high cholesterol diet($1.0\%$ : HCD) and also on the level of blood glucose in rats fed high glucose diet ($70\%$ : HGD) for 4 weeks. The results were follows as 1. The level of serum cholesterol were decreased in the rank order HCD>HCDG>HCDGW>ND, 2. HCDG showed a decrese of about $23.84\%$ but HCDGW showed a decrese of about $42.38\%$ compared with the increasing rate of HCD in serum cholesterol, 3. The level of blood glucose were decreased in the rank order HGD>HGDG>HGDGW>ND, 4. HGDG showed a decrese of about $6.63\%$ but HGDGW showed a decrese of about $36.14\%$ compared with the increasing rate of HGD in blood glucose, 5. The mixture of glucomannan and wheycalcium on the serum cholesterol and blood glucose in rats was most effect of all.

Cooking Properties of Low Caloric Buckwheat Taste Noodle (저열량 메밀맛국수의 조리특성)

  • To lower the calories of buckwheat noodle, which is good for reducing obesity and for Preventing adult disease, glucomannan and flour containing resistant starch(RS) were used during the noodle making Process. Compared with raw noodle, this buckwheat raw noodle had $30\%$ fewer calories. This low caloric buckwheat noodle was coated with olive oil which is reputed as well-being food to prevent soddening to make instant type buckwheat noodle. Its shelf-life was extended to 90 days under normal temperature($35^{\circ}C$I). Among four noodle samples with different combinations of raw materials, the best was made of flour with RS formula flour, buckwheat flour, glucomannan, activated gluten, and emulsifying agent. The one without salt had better quality. Among 6 kinds of packing materials, OPP/Al/PE composite level film demonstrated the best quality packing materials.
