Objective: The aim of this work is to investigate the antibacterial activity of the essential oil obtained from Artemisia lavandulaefolia (A. lavandulaefolia), as the development of microbial resistance to antibiotics make it essential to constantly look for new and active compounds effective against pathogenic bacteria. Method: The aerial parts of A. lavandulaefolia (1 kg) were subjected to steam distillation for 3 h, using a modified Clevenger type apparatus in order to obtain essential oil. Diethyl ether was the extracting solvent kept at 25?. The essential oil were analyzed by gas chromatography (GC) and gas chromatography/mass spectrometry (GC/MS). The essential oil and the composition were tested for antimicrobial activities against 15 different genera of oral bacteria. Ninety-nine compounds accounting for 94.74$\%$</TEX> of the oil were identified. The main compounds in the oil were 1,8-cineole (5.63$\%$), yomogi alcohol (4.49$\%$), camphor (4.92$\%$), a-caryophyllene (16.10$\%$), trans-a-famesene (5.09$\%$), a-terpineol (3.91$\%$), borneol (5.27$\%$), cis-chrysanthenol (6.98$\%$), and a-humulene oxide (3.33$\%$). The essential oil and its compounds were tested for antimicrobial activity against 10 different genera of oral bacteria. Conclusion: The essential oil of A. lavandulaefolia exhibited considerable inhibitory effects against all obligate anaerobic bacteria (MICs, 0.025 - 0.05 ㎎/ml) tested, while their major compounds demonstrated various degrees of growth inhibition
Volatile flavor components, produced during the young (P-1), immature (P-2), mature (P-3) and old (P-4) growth stages, of shiitake mushrooms (Lentinus edodes), were extracted by simultaneous steam distillation and extraction (SDE), using a mixture of n-pentane and diethyl ether (1:1, v/v) as the extraction solvent. Analyses of the concentrates, by capillary gas chromatography (GC) and gas chromatography-mass spectrometry (GC/MS), led to the identification of 129, 129, 111 and 120 components in the P-1, 2, 3 and 4 stages, respectively. The major volatile compounds were l-octen-3-o1, 3-octanol, 3-octanone and 4-octen-3-one. Ethanol and ethyl acetate were also detected in large amounts. The characteristic volatile compounds found in shiitake mushrooms, such as dimethyl disulfide, dimethyl trisulfide and 1, 2, 4-thiolane, were at low concentrations in all samples. The amount of l-octen-3-o1 decreased as growth progressed, but concentrations of 3-octanone increased. The amount of 4-octen-3-ol decreased from P-1 to P-3, but was at a high concentrations in P-4. The concentration of 3-octanol gradually increased and reached its highest concentration in P-3, but decreased in P-4. The C8-compounds comprised 70.91, 64.09, 64.29 and 60.01 % in the P-1, 2, 3 and 4 stages, respectively, so decreased gradually with growth. The S-compounds were found in the highest concentrations in P-3.
In this study, Krill Eupausia superba oil was extracted using different solvents and supercritical carbon dioxide (SC-$CO_2$). During SC-$CO_2$ extraction, the pressure was set at 40 MPa and temperatures ranged from $40^{\circ}C$ to $55^{\circ}C$. We examined the differences in volatile compounds and safety profiles among extraction methods. Volatile compounds were determined using the thermal desorption system integrated with gas chromatography-mass spectrometry (GC-MS). Heavy metal content was analyzed by inductively coupled plasma mass spectrometry (ICP-MS). According to our results 10 volatile compounds were identified in krill sample. After SC-$CO_2$ extraction of oil, the concentrations of volatile compounds decreased, but increased after solvent extraction. In krill, heavy metal concentrations remained within the permissible limit. Moreover, Zn and Fe which have health benefits were detected at high concentrations. During a 90 days storage period at different temperatures, microbial activity was found to be lowest in SC-$CO_2$ extracted residues. Thus, the quality of krill oil and the residues obtained using SC-$CO_2$ extraction was higher and the oil was safer than those obtained using conventional solvent extraction. These results can be applied to the food industry to maintain high quality krill products.
이 연구는 뇨시료 중에서 검출될 수 있는 9종의 농약에 대하여 HP-1 capillary column(25 m ${\times}$ 0.2 mm I.D., $0.33{\mu}m$ film thickness)을 사용하여 GC/MS/SIM방법으로 동시에 분리 정량할 수 있는 분석방법을 확립하였다. 9종의 농약에 대한 뇨시료로 부터의 추출은 pH 7.0에서 diethyl ether를 사용한 LLE 방법으로 대체로 높은 회수율과 10%이하의 상대표준편차를 나타내었다. SIM 방법으로 얻은 농약의 표준검정곡선은 농도범위 $4.0{\sim}1,000$ ppb에서 직선성이 양호하였고 정량한계는 $0.4{\sim}2.0$ ppb를 나타내었다. 실제로 농약을 살포한 다음 24시간 동안 배설된 뇨시료 중에서 각 농약 물질에 대한 parent form은 모두 검출되지 않았으며, phenthoate를 포함하는 농약을 살포한 후 채취된 뇨시료에서 대사체로 예상되는 ${\alpha}$-hydroxybenzeneacetic acid를 확인하였다.
식품 포장재에 사용되는 접착제의 원료로 사용되는 우레탄의 주원료인 톨루엔 디이소시아네이트(TDI)는 인체에 노출될 경우에 독성을 일으킬 수 있다. GC/MS를 사용하여 식품 포장재에 잔류하는 TDI를 분석하기 위한 시료 전처리 조건과 분석조건을 확립하였다. 포장재 중에 포함된 TDI는 n-헵탄, 4%아세트산 등과 같은 식품유사용매를 사용하여 추출된 후, 기체 크로마토그래프/질량분석기 (GC/MS)에 의해 분석되었다. 26개의 식품 포장재를 측정한 결과 10개의 시료에서 $0.51{\sim}60.88{\mu}g/ml$ 농도 범위에서 TDI가 검출되었다. 포장재의 절단된 면에 대한 추출 용매의 접촉을 피하고 포장재 면만이 접촉하도록 한 후 추출시간을 달리하면서 실험한 결과 2시간 추출 조건에서도 0.7% 수준으로 감소되어 실제 식품 조리시에 TDI가 다량 검출될 위험은 미미한 것으로 평가되었다. 본 연구에서 확립된 톨루엔 디이소시아네이트에 대한 분석법은 외국의 유해물질에 대한 관리기준을 만족시키는 정량한계를 확보한 신뢰성 있는 방법으로 추후 관련 연구를 위한 기초 분석기술로 활용도가 높을 것으로 예상된다.
The purpose of this study is to evaluate the change of volatile compounds in Dakgalbi cooked by charcoal broiling. Fresh deboned and marinated chicken meat was cooked by electric-pan frying or charcoal broiling and subsequently irradiated with a dose of 0, 10 and 20 kGy. Volatile components from Dakgalbi were analyzed using solid phase micro-extraction gas chromatography - mass spectrometry (SPME GC-MS) and identified through the comparison of mass spectrum database. SPME GC-MS analysis shows that a total of 32 volatiles were identified. Among them, aldehydes such as hexanal and octanal, which have relevance to off-flavors such as green, paint, metallic, bean and rancid were detected in Dakgalbi cooked by both methods. However, the contents were less detected in the Dakgalbi cooked by charcoal broiling than in the Dakgalbi cooked by electric-pan frying. Gamma-irradiation caused the change in the formation of these aldehydes in cooked Dakgalbi. The irradiation significantly increased the contents of hexanal and octanal in Dakgalbi cooked by electric-pan frying and a similar increase was found in Dakgalbi cooked by charcoal broiling. However, the contents of the off-flavors were much less in the latter. The results suggest that charcoal broiling might be more effective than electric-pan frying for the reduction of the contents of off-flavor such as hexanal and octanal increased in Dakgalbi by gamma-irradiation.

Recent research on the fatty acyl chains in the membrane lipids in Sarcina ventriculi has shown that unusually long chain bifunctional fatty acyl components are the major components of the total lipid. However, these studies did not yield any information on the complete structures of the lipid species containing these fatty acids. In this study, the structures of a new family of glucolipids containing bifunctional acyl chains are described. These structures were determined using NMR(Nuclear Magnetic Resonance) Spectroscopy, GC (Gas Chromatography)/MS (Mass Spectrometry), FTIR (Fourier Transform Infrared) spectroscopy, and FAB (Fast Atom Bombardment) mass spectrometric studies. One of the major bifunctional acyl components of the $\alpha$-glucolipids was an $\omega$-formylmethyl ester indicating the presence of plasmalogen. The general structure of the lipid components was one in which the two head groups were separated by a membrane-spanning acyl species. One head group component is a glycerol moiety of each head group, and the other is a glyceryl clucoside. Two regular chain fatty acids, one on the glycerol moiety of each head group, are also present and meet in the middle of the membrane, roughly equidistant from each head group.

This study was conducted to investigate the effects of heating, fiber type used in solid-phase microextraction (SPME, two phase vs three phase) and storage time on the volatile compounds of porcine M. longissimus dorsi (LD). Volatile compounds were measured using a gas chromatography and mass spectrometry (GC/MS) with a quadrupole mass analyzer. Among the volatile compounds identified, aldehydes (49.33%), alcohols (24.63%) and ketones (9.85%) were higher in pre-heated loins ($100^{\circ}C$/30 min), whereas, alcohols (34.33%), hydrocarbons (22.84%) and ketones (16.88%) were higher in non-heated loins. Heating of loins induced the formation of various volatile compounds such as aldehydes (hexanal) and alcohols. The total contents of hydrocarbons, alcohols, and carboxylic acids were higher in two phase fibers, whereas those of esters tended to be higher in three-phase fibers (p<0.05). Most volatile compounds increased (p<0.05) with increased storage time. Thus, the analysis of volatile compounds were affected by the fiber type, while heating and refrigerated storage of pork M. longissimus dorsi increased the volatile compounds derived from lipid oxidation and amino acid catabolism, respectively.
압출성형에 의해 제조된 구운 쇠고기 반응향의 향특성을 알아보기 위해 휘발성 성분 및 aroma-active화합물을 SDE-GC-MS-O법을 이용하여 분석하였다. HVP에 ribose, cysteine, furaneol, thiamin, methionine, 마늘 분말 및 인지질 등의 전구문질을 넣고 최적 압출성형 조건인 $160^{\circ}C$, 스크루 속도 45 rpm 및 윈료공급 속도 38 kg/hr에서 압출성형하였다. 압출성형에 의해 제조된 구운 쇠고기 반응향에서 모두 68개 의 휘발성 성분이 검출되었으며, 그 숫자는 furaneol을 빼고 압출성형 시킨 반응향과 HVP만 압출성형 시킨 시료에서 크게 줄어들었다. GC-O결과 구운 쇠고기 반응향에서 27개의 aroma-active 화합물이 검출되었으며, methional과 2-methyl-3-furanthiol이 가장 중요한 aroma-active화합물로 밝혀졌다. Furaneol이 구운 쇠고기 반응향 생성에 있어서 중요한 역할을 할 것으로 생각되어 진다.
본 연구는 재배종 감자 덩이줄기에 존재하는 glycoalkaloid (PGA) 중 특히 ${\alpha}$-chaconine, ${\alpha}$-solanine, demessine을 산가수분해 처리하여 분해 생성물인 아그리콘 및 배당체를 분석하는 방법으로 PGA의 정량 가능 유무를 조사하였다. 1. 표준품의 solanidine을 1 N-HCl로 가수분해하면 산 가수분해 반응 10분 후부터 solanidine이 급속하게 감소하였고 새로운 피크가 급증하였다. 이 피크를 GC-MS로 분석한 결과, 분자 이온 피크($M^+$=379)가 검출되어 이 물질을 solanthrene으로 분류하였다. 이 solanidine-solanthrene의 반응은 시간의 경과에 따라 진행되었다. 2. 표준품의 demissidine을 solanidine과 같은 방법으로 가수분해하여 GC-MS로 분석한 결과, solanidine의 경우와는 상이하게 solanthrene는 검출되지 않았고 demissidine ($M^+$=399, 204,150)의 피크만이 검출되었다. 이로써 demissidine은 산 가수분해 처리에 의한 분해가 일어나지 않는 것을 추측 할 수 있었다. 3. ${\alpha}$-chaconine, ${\alpha}$-solanine, demessine를 산분해하면 ${\alpha}$-chaconine과 ${\alpha}$-solanine은 solanidine에서 solanthrene으로 분해 반응이 일어났다. 이 두 물질의 아그리콘인 solandine을 측정하는 방법으로는 PGA량을 산출하는 것은 불가능하리라 생각된다. 그러나 산 분해에 의해 생성된 배당체는 매우 안정하여 이 배당체의 당함량을 측정하여 이 두 물질의 PGA 함량을 산출하는 것은 가능하였다. demissine는 산 분해에 의해 생성된 아그리콘(demissidine)은 매우 안정하여 생성된 아그리콘의 양으로부터 demissine 함량을 산출하는 것은 가능하였다.
