Estimating the Glass Transition of Oligosaccharides Mixtures through the State Diagram

  • State diagram of highly concentrated branched oligosaccharides (HBOS) was constructed to better understand phase behavior of mixtures with different size of oligosaccharides. It showed dramatic plasticizing effect on glass transition, which was successfully described based on Couchman-Karasz equation model. $T_g$' estimated from state diagram corresponded well with previous empirical data measured by maximum ice formation through isothermal holding (annealing) process. Estimated $T_g$' and $C_g$' values were $-36.3^{\circ}C$ and 79.99%, respectively. $T_g$' value of HBOS was approximately $10^{\circ}C$ higher than that of sucrose, while $C_g$' value was similar to those of general carbohydrate materials, which could be useful for applications in frozen system.

A fundmental Study on Vermistavilization of Foodwaste (Vermistabilization에 의한 음식물쓰레기 처리에 관한 기초연구)

  • The objective of this study was to evaluate the possiblity of Foodwaste and co-treatment with other waste for vermistabilization. The value of oxidation-reduction potential(Eh) of the dewaterized foodwaste by a plant of subatmospheric evaporation was a possitive(+) value indicating, but the values of pH, salinity was idicating an unfavorable condition for earthworm life. The paper mill mixing waste properties by ripening for 20days were changed into the favorable range for earthworm. The growth of earthworms in foodwaste and mixing waste of paper mill 30% was found to be 68%, 84% for the survival rate, 227%, 275% for the liveweight increasing rate, respectively. The ingestion rate of foodwaste and mixing waste of paper mill 30% indicate 0.72g/g·d, 0.81g/g·d, respectively. About 62∼75% of ingestion amount produce cast and characteristics of cast indicate pH 6.1∼6.5 organic component 34∼42%, salinity 0.35∼0.4, CEC 73∼94 me/100g, N, P, K concentration 0.8∼1.2%, 0.4∼1.6%, 0.43∼0.5% respectively. Therefore it can be evaluated that the casts are good soil condition and organic fertilizer.

Quality Characteristics of Korean Native Pigs Slaughtered at Commercial Market Weight

  • Ninety KNP were divided into three group by differential market weight(20 of each group): Live weight of Group 1(G 1), Group 2(G 2) and Group 3(G 3) were 50-59kg, 60-69kg, 70-80kg, respectively. Values of pH and shear force showed an increase, while cooking loss showed decreased with increased weight. In color analysis, $a^{\ast}$ value in meat and $b^{\ast}$ value in backfat of KNP showed higher as slaughter weight increased. Slaughter weight did not significantly affect the fatty acid composition of subcutaneous fat of KNP. With the exception of oleic acid in intermuscular fat, there were no significant weight-dependent differences in the fatty acid profiles.

Reference Value of Mercury in Liver and Kidney of Korean (한국인의 간과 콩팥조직 내 수은 함유량의 참고치)

  • This study was conducted to investigate the reference value of mercury (Hg) in liver and kidney of Korean population. The mercury concentration in 244‘sudden and unexpected death’autopsies (male: 180, female: 64) aged from 0 to 87 years was analyzed. The concentration of mercury was measured by atomic absorption spectrophotometer (Perkin-Elmer Model 5100) with mercury/hydride generating system (FIAS 400). The contents of mercury in liver and kidney fitted well the log-normal distribution rather than normal distribution. Geometric mean concentration of mercury in liver and kidney was 0.115 $\mu\textrm{g}$/g wet weight and 0.149 $\mu\textrm{g}$/g wet weight, respectively. Geometric mean concentration of mercury in female was higher than in male (p < 0.01). The mercury content in liver and kidney increased with age up to the forties and slightly decreased there-after. The regression model of mercury deposit in liver and kidney by age was predicted as the following equation : Log LHg : -1.0576+0.0045$.$Age-0.0001$.$Age$^2$+0.0873$.$Sex, Log KHg = -1.0576+0.0152$.$Age-0.0002$.$Age$^2$+0.1935$.$Sex. The liver burden of mercury was estimated to be 158.3∼161.3 $\mu\textrm{g}$ in male and 163.0∼166.9 $\mu\textrm{g}$ in female. The kidney burden of mercury was estimated to be 42.0∼42.9 $\mu\textrm{g}$ in male and 55.5∼57.1 $\mu\textrm{g}$ in female.

Quality Characteristics of Cookies with Garlic Paste (마늘 페이스트 첨가 쿠키의 품질 특성)

  • This study investigated the quality characteristics of the cookies with garlic paste. Five different paste concentration levels of 0, 40, 80, 120 and 140g were added to 400g flour to make the cookie. In terms of color, the L-value and b-value of control group was higher than that with the garlic paste added. In the case of the a-value of garlic paste added group was higher than that with the control group. Among the textural characteristics hardness was decreased according to the addition level of garlic paste. For the sensory evaluation, apperance, taste, texture and overall acceptability were excellent in the group with the addition of 40g garlic paste. From the results of this study, the cookie with 40g garlic paste added content was shown to have the best quality.

  • The growth characteristics of Candida sp. JY-5 were examined on ethanol, acetic acid, or acetaldehyde as sole source of carbon by batch culture. The specific growth rates ($\mu$) of this strain on an ethanol during tile exponential period were changed depending upon the initial concentrations at above 0.5 g/l, but not in the proportion. The highest $\mu$ value was 0.291 hr$^{-1}$ and the maximum growth yield was 61.2% at the concentration of 10 g/l. The $\mu$ values on an acetic acid substrate were constant regardless of the initial concentrations presenting 0.106 hr$^{-1}$ in the highest value. The maximum growth yield was shown as 46.8% at the initial concentration of 10 g/l. The $\mu$ value on an acetaldehyde during the exponential period was 0.063 hr$^{-1}$ and the maximum growth yield was 44.9% at the initial acetaldehyde concentration of 0.2 g/l.

Optimization Condition of Astaxanthin Extract from Shrimp Waste Using Response Surface Methodology (반응 표면 분석법을 사용한 새우껍질에서 astaxanthin 추출 조건의 최적화)

  • A 17-run Box-Behnken design (BBD) was used to optimize the extraction conditions of astaxanthin from shrimp waste. Three factors such as ratio of ethanol to raw material, extraction temperature ($^{\circ}C$) and extraction time (min) were investigated. The adjusted coefficient of determination ($R^2{_{adj}}$) for the model was 0.9218, and the probability value (p=0.0003) demonstrated a high significance for the regression model. The optimum extraction conditions were found to be: optimized ratio of ethanol to raw material 29.7, extraction temperature $49.5^{\circ}C$ and extraction time 59.9 min. Under these conditions, the mean extraction yield of astaxanthin was $17.80{\mu}g/g$, which was in good agreement with the predicted model value. Under these conditions, validation experiments were done and the mean extraction yield of astaxanthin was $17.77{\mu}g/g$, which is in good agreement with the predicted model value.

Studies for the Effective Diagnosis and Treatment of Bovine Piroplasmosis (젖소의 파이로프라스마증(症)의 효과적인 집단검색과 치료방법에 관한 연구)

  • In the endemic area of bovine piroplasmosis in Chonbuk Province, total of 486 heads of Holstein cow selected from 14 farms randomly were examined the infection status of piroplasma and their blood values. The results obtained were summarized as follows: 1. The etiological agent was only Theileria sergenti and none of the Babesia sp. infection. 2. All of the 486 heads of examined cow were infected with Theileria sergenti (100%). 3. In the initial examination of 11 farms in early summer, the means of blood values were as follows; RBC:$526{\pm}84(10^4/mm^3$), Ht:$27.9{\pm}2.8%$, SP:$7.5{\pm}0.6g/dl$, WBC: $11586{\pm}354/mm^3$, and Fibrinogen: $578.5{\pm}164.1mg/dl$. 4. In the second examinations in slimmer season, the blood values of examined cows had little varieties. But in the winter season, cows housed in the barn, the blood values were greatly increased; RBC: $601{\pm}77(10^4/mm^3)$, (F-value: 37.186**), Ht: $30.5{\pm}1.3%$(F-value: 15.626**) Hb: $12.2{\pm}1.3g/dl$(F-value: 5.899**), SP: $7.4{\pm}0.6g/dl$(F-value: 5.05**). 5. To determine the piroplasma infection in the many herds of cow, the measurement of Ht, Hb, and SP values etc. were more effective and helpful to find the weak cow because the examined process are not only to be easily carry out many samples but also to be done very simple and rapidly. 6. The indications of therapeutic standard values were stablished as follows; the less than 20% in the Ht value, below the 10g/dl in the Hb value, and less than 6g/dl in SP value. When the one among the therapeutic standard values, Ht, Hb, and SP was below the therapeutic standard value, the cow was treated with nutriments. When more than two among them were below the therapeutic standard, the cow was treated with Berenil, at once. In this way, there was no one head which represented clinical signs of piroplasmosis among 486 heads of cow at 14 farms during the year of 1986. 7. In a Korean native cattle infected with Thieleria sergenti seriously, the recovery of blood values was very prolonged by the treatment of Berenil only. But by the transfusion of 300ml blood collected from normal cow, the blood values were recovered rapidly.

Comparison of Dietary Fiber Content according to Heat Treatment of Korean Agricultural Products and Seaweed (국내 농산물 및 해조류의 가열처리에 따른 식이섬유 함량 비교)

  • In this study, the dietary fiber content of 33 kinds of agricultural products and seaweeds was compared with that of raw products after heat treatment. To verify the total dietary fiber analysis method, the recovery rate was reviewed by measuring the total dietary fiber content for 4 standard certified substances. As a result, the recovery rate of the analysis value for the true value was 98.8%~103.1%, which was judged to be reliable. The total dietary fiber of vegetables ranged between 0.61~5.36 g/100 g for raw vegetables and 0.55~4.84 g/100 g for heat-treated vegetables. Among the 24 kinds of vegetables used in the analanalysis, the total dietary fiber content of heat-treated Korean radish (3.13 g/100 g) was the highest compared to that of raw radish (0.61 g/100 g). The total dietary fiber of beans was between 13.86~29.69 g/100 g for raw beans and 6.72~18.40 g/100 g for heat-treated beans. In particular, the total dietary fiber content of sword beans was the highest in both raw (29.69 g/100 g) and boiled (18.40 g/100 g) beans. The total dietary fiber content of the three types of seaweed was 1.93~4.85 g/100 g in raw seaweed and 0.99~5.72 g/100 g in heat-treated seaweed.

A Study on Intake/excretion of Sodium and Calcium in Korean Children (일부 한국인 아동의 나트륨과 칼슘 섭취 및 배설에 관한 연구)

  • In this study, the food intake, feces and urine of 16 primary school age boys and girls were collected and intake and excretion of sodium and calcium were measured. The boys and girls were 8-12 years old and measurement continued for four weeks during which they maintained their normal living pattern and body weight. Each boy's and girl's daily intake and excretion of sodium and calcium were measured and apparent digestibility and balance were also studied. The results were as follows. 1) Mean daily intake of sodium was 8.52$\pm$0.38g for the boys and 7.31$\pm$0.44g for the girls. The mean value in males was significantly higher than that in females(p<0.05). Mean daily in take of calcium was 411.0$\pm$16.0mg for the boys and 356.5$\pm$15.4mg for the girls. The mean value in males was significantly higher than that in females(p<0.01). 2) Mean daily fecal loss and apparent digestibility of sodium was 0.32$\pm$0.04g and 96% for the boys and 0.52$\pm$0.07g and 93% for the girls. The fecal loss mean value in males was significantly lower than that in females(p<0.05). Mean daily fecal loss and apparent digestibility of calcium was 299.8$\pm$8.3mg and 29% for the boys and 194.1$\pm$14.3mg and 46% for the girls. The fecal loss mean value in males was significantly higer than that in females(p<0.01). 3) Mean daily urinary loss of sodium was 6.55$\pm$0.50g and showed the positive balance of 1.65g for the boys and 5.67$\pm$0.20g and showed the positive balance of 1.12g for the girls. The urinary loss mean values of the two groups were not significantly different. Mean daily urinary loss of calcium was 42.8$\pm$5.1mg and showed the positive balance of 79.4mg for the boys and 25.0$\pm$1.64mg and showed the positive balance of 137.4mg for the girls. The urinary loss mean value in males was significantly higer than that in females(p<0.01).
