백돈피와 흑돈피의 이화학적 품질특성 평가 (Physico-Chemical Characteristics Evaluation of White Pork Rind and Black Pork Rind)

  • In order to determine the material characteristics of pork rinds according to the breeds, the chemical composition, color, pH, collagen contents, shear force, fatty acid and amino acid contents of pork rinds were investigated. White pork rinds (WPR) and black pork rinds (BPR) were evaluated before and after heating to compare the differences between breeds and the effects of heating treatment. In the chemical composition test, the respective moisture contents for WPR and BPR before heating were 49.90% and 53.75% but increased to 60.75% and 61.09% after heating. The test for crude protein and crude fat contents showed lower values after heating but WPR was higher than BPR. In the color test, the L value decreased rapidly with heating, dropping from 68.75 to 45.11 in WPR and from 67.22 to 49.64 in BPR. WPR had a higher L value and a lower a value than BPR before heating but had a higher L value and a lower a value than WPR after heating. pH was significantly higher in WPR than BPR regardless of heating (p<0.05). The collagen content for WPR and BPR was 10.38 g/100 g and 11.54 g/100 g but increased to 12.00 g/100 g in WPR and decreased to 11.40 g/100 g in BPR after heating. The shear force of 26.14 kgf in WPR was significantly higher than 12.89 kgf in BPR before heating (p<0.05), but the values decreased significantly after heating in both WPR and BPR. Linoleic acid in WPR was 17.29%, which was higher than 15.13% in BPR. The USFA for BPR was also higher than WPR. In amino acid composition, the EAA contents in WPR was 7,190 mg%, which was higher than 5,520 mg% in BPR.

녹두 가수분해물의 항산화활성에 미치는 열처리 효과 (Effects of Heat Treatment on Antioxidant Activity of Hydrolyzed Mung Beans)

  • 본 연구는 전분 및 단백질 함량이 높은 녹두를 산으로 가수분해 시킨 다음 열처리를 통한 항산화 활성의 변화를 조사하였다. 유리당 및 유리아미노산 최대생성 가수분해조건은 6 N 염산으로 2시간 처리조건으로 선정하였으며, $130^{\circ}C$에서 2시간 열처리 한 다음 갈변도, 5'-HMF함량, 환원당, 항산화 성분 및 활성을 검토하였다. 갈변도는 가수분해 시키지 않은 열처리에서는 0.17이었지만 가수분해 후 열처리에서 2.31로 최대 값을 나타내었으며, 5'-HMF 함량도 산가수분해 시키지 않은 열처리에서는 검출되지 않았지만 가수분해 후 열처리에서 81.61 mg/g로 증가하였다. 환원당은 열처리 전 가수분해만 하였을 경우 190.48 mg/g이었지만 열처리 후 137.34 mg/g으로 감소하였다. 총 폴리페놀 함량은 가수분해 시키지 않은 열처리에서는 8.79 mg/g이었지만 열처리 후에는 55.95 mg/g으로 증가하였다. ABTS 라디칼소거능은 가수분해 시키지 않은 열처리에서는 1.75 mg AA eq/g이었지만 열처리 후에는 22.18 mg AA eq/g으로 증가하였으며, DPPH 라디칼소거능은 0에서 3.644 mg Trolox eq/g으로 증가하였다.

The Phonetic Difference Between the Korean Stop Series /p,t,k/ and the English /b,d,g/ Based on the VOT Value

  • Korean is famous for having all voiceless stop sounds. Korean does have voiced stops but they are considered to exist only as the allophones of word initial /p, t, k/. My experiment shows the English word initial stop sounds [b, d, g] and the Korean lax stop series /p, t, k/ in word initial position are similar in the range of voice onset time. If English word initial[b, d, g] sounds are posited as voiced, then Korean word initial /p, t, k/ should be classified as voiced also. Phonetically English /b, d, g/ phonemes and Korean /p, t, k/ phonemes are very similar except the word initial [p, t, k] are devoiced slightly more, but not significant enough to be classified as voiceless than English word initial [b, d, g]. If we posit /b, d, g/ as Korean phonemes, it explains why Korean /p, t, k/ series has the allophones [b, d, g] instead of fortis stops /p', t', k'/ in Korean even though /p', t', k'/ has less positive VOT value than /p, t, k/. If we posit /b, d, g/ as Korean phonemes, then it does not cause spelling or pronunciation confusion either when Koreans learn English or English speakers learn Korean.

표면산화 처리된 흡착제의 Benzene 및 MEK 흡착 특성 - HNO3, H2SO4 및 (NH4)2S2O8에 의한 표면산화- (Adsorption Characteristics of Benzene and MEK on Surface Oxidation Treated Adsorbent -Surface Oxidation by HNO3, H2SO4 and (NH4)2S2O8-)

  • The objective of this research is to improve the adsorption capacity of adsorbent made from MSWI (Municipal Solid Waste Incinerator) fly ash by surface oxidation. Used oxidation agents were $HNO_{3}$, $H_{2}SO_{4}$ and $(NH_{4})_{2}S_{2}O_{8}$. These agents can modify the surface property of an adsorbent such as specific surface area, pore volume, and functional group. The surface structure was studied by BET method with $N_{2}$ adsorption. The acid value and base value were determined by Boehm's method. The adsorption properties were investigated with benzene and MEK (Methylethylketone). According to the results, the specific surface area of the adsorbent was increased from 309.2 $m^{2}$/g to 553.2 $m^{2}$/g by $HNO_{3}$ oxidation. But $H_{2}SO_{4}$ and $(NH_{4})_{2}S_{2}O_{8}$ oxidation was decreased slightly. After Oxidation, surface acid value increased, but base value decreased. FAA-N shows the highest acid value. The content of oxygen increased greatly and oxygen group was created on the adsorbent surface. The surface oxidation improved the adsorbing capacity for MEK. The amount of adsorbing MEK was increased from 189 $m^{2}$/g to 639 $m^{2}$/g by $HNO_{3}$ oxidation.

개선된 퍼지 기법을 이용한 컬러 영상 필터 (Color Image Filter using an Enhanced Fuzzy Method)

  • 본 논문에서는 기존의 퍼지 필터링 알고리즘의 문제점을 개선한 퍼지 필터링 기법을 제안한다. 제안된 퍼지 필터링 알고리즘은 컬러 영상에서 R, G, B 채널을 각각 분리한다. 분리된 각 채널에서 마스크 정보를 추출하여 채널에 대한 평균값과 중간값의 명암도를 제안된 퍼지 기법의 소속 함수에 적용하여 소속도를 구한 뒤, 추론 규칙에 적용한다. 그리고 R, G, B 각각의 소속도 값을 이용하여 잡음 가능성 여부를 판별한다. 제안된 퍼지 기법에서 소속 함수구간은 세 개 구간으로 설정하였다. 잡음이라고 판단되는 경우에는 그 잡음 정도에 따라 중간값이나 평균값을 해당 픽셀 값으로 설정하여 잡음을 제거한다. 제안된 기법을 컬러 영상에 적용한 결과, 제안된 기법이 기존의 퍼지 필터링 기법보다 잡음 제거에 있어서 효과적인 것을 확인할 수 있었다.

Correlation between Colon Transit Time Test Value and Initial Maintenance Dose of Laxative in Children with Chronic Functional Constipation

  • Purpose: To evaluate the correlation between colon transit time (CTT) test value and initial maintenance dose of polyethylene glycol (PEG) 4000 or lactulose. Methods: Of 415 children with chronic functional constipation, 190 were enrolled based on exclusion criteria using the CTT test, defecation diary, and clinical chart. The CTT test was performed with prior disimpaction. The laxative dose for maintenance was determined on the basis of the defecation diary and clinical chart. The Shapiro-Wilk test and Pearson's and Spearman's correlations were used for statistical analysis. Results: The overall group median value and interquartile range of the CTT test was 43.8 (31.8) hours. The average PEG 4000 dose for maintenance in the overall group was $0.68{\pm}0.18g/kg/d$; according to age, the dose was $0.73{\pm}0.16g/kg/d$ (<8 years), $0.53{\pm}0.12g/kg/d$ (8 to <12 years), and $0.36{\pm}0.05g/kg/d$ (12 to 15 years). The dose of lactulose was $1.99{\pm}0.43mL/kg/d$ (<8 years) or $1.26{\pm}0.25mL/kg/d$ (8 to <12 years). There was no significant correlation between CTT test value and initial dose of laxative, irrespective of the subgroup (encopresis, abnormal CTT test subtype) for either laxative. Even in the largest group (overall, n=109, younger than 8 years and on PEG 4000), the correlation was weak (Pearson's correlation coefficient [R]=0.268, p=0.005). Within the abnormal transit group, subgroup (n=73, younger than 8 years and on PEG 4000) correlation was weak (R=0.267, p=0.022). Conclusion: CTT test value cannot predict the initial maintenance dose of PEG 4000 or lactulose with linear correlation.

한반도의 최적 지진원 변수 b값 및 그의 적용에 관한 연구 (A Study on the Best Estimate of Seismicity Parameter b-Value and Its Application for the Seismic Hazard Analysis of the Korean Peninsula)

  • 한반도의 Gutenberg-Richter b값에 관한 기존 국내 연구결과로부터 최적값을 전문가 패널을 통해 도출하였다. 전문가 패널에 의한 평가 결과, Gutenberg-Richter b값은 지진원 구역에 상관없이 한반도 전체에 걸쳐 비교적 일정하며 그의 평균값은 0.96으로 추천되었다. 지진지체구조는 4가지로 의견이 수렴되었다. 패널평가 결과를 신울진 1.2호기 원전부지에 적용하여 지진재해도에 미치는 영향을 분석하였다. 연구대상 부지의 평균재해도 수준은 전문가 패널평가결과 적용 이전에 비해 0.2g에서 최소 약 70-80% (0.6-0.7 order) 감소하였고, 지진재해도의 불확실성 폭은 0.2g (15%-85% 신뢰구간)에서 현저하게 감소하였다. 향후, 지진재해도분석 시 b값을 지진원 전체에 균일하게 보수적으로 0.95를 적용할 것을 제안하였다.

고추 유과의 저장 중 품질특성 변화 및 유통기한 설정 (Quality Characteristics and Determining the Shelf Life of Red Pepper Yukwa)

  • This study was carried out to investigate the changes in the quality properties of red pepper Yukwa (red pepper liquid fermented with lactic acid bacteria was added to the Yukwa) during the storage period. To determine the shelf life of red pepper Yukwa, the rice Yukwa (control) and red pepper Yukwa were stored at 15, 25, and $35^{\circ}C$ for 70 days. Also, the quality properties of red pepper Yukwa, such as acid value, peroxide value, texture, color, and sensory evaluation were measured. Although the acid value of rice Yukwa and red pepper Yukwa increased during storage, the red pepper Yukwa showed a lower acid value score (1.09mg KOH/g) than that (1.19mg KOH/g) of the rice Yukwa. Nevertheless, these values did not exceed the guideline maximum values of 2.0 g KOH/g specified in the Korean Food Code. The peroxide values of samples had significantly increased after 42 days. Especially, the peroxide value scores for the rice Yukwa and red pepper Yukwa were the highest at 146.49 and 126.79 meq/kg at $35^{\circ}C$, respectively. Hardness and brittleness in textural properties increased up to 70 days. The sensory values for the red pepper Yukwa for overall acceptance, taste;texture and appearance were the highest. The results indicated that by using the 'Visual Shelf life Simulator for foods' of the Korea Food and Drug Administration (KFDA) the shelf life of red pepper Yukwa is estimated to be 274.78 days.

국내담수지역 인체위해성기반 준거치 산정에 활용되는 어류섭취량인자 타당성 평가 (Adequacy Evaluation of Fish Intake Parameter used for Human Health Risk Assessment to Derive Freshwater Quality Criteria in Korea)

  • Water quality criteria for human health protection are derived based on the human health risk assessment. Water quality criteria in Korean freshwater bodies have been derived according to the equations developed by the US Environmental Protection Agency. The equations include the fish intake parameter, which is very important factor that significantly influences on the criteria derivation. So far, several fish intake values were used in human health risk assessment for water quality standards and effluent standards. However, these values are not consistent and they refer to various sources. Therefore, there is a need to suggest the most appropriate value of fish intake parameter to derive freshwater quality criteria in Korea. In this study, national and international fish intake values were widely collected and evaluated to select the adequate value of fish intake parameter that can be applied in Korea. The USEPA presented fish intake parameter as the 17.5 g/day for general adults and sport fishers and 142.4 g/day for subsistence fishers. In Korean reports, wide range values of 2 to 67.7 g/day were suggested as fish intake value. These values included finfish and shellfish intakes in common but had various habits. This study found that the 52.4 g/day suggested in Korean Exposure Factors Handbook published by the Ministry of Environment in 2007 seemed to be the suitable fish intake parameter to derive the freshwater quality criteria in Korea. The value is based on water corrected intakes of finfish and shellfish present in freshwater and coastal areas. We expect that this report can be useful to select suitable fish intake value in human health risk assessment for establishing freshwater quality standard in Korea.

랫드에 대한 G. bimaculatus의 급성경구독성시험 (Acute Oral Toxicity of G. bimaculatus in Rats)

  • This study was carried out to investigate the acute toxicity of G. bimaculatus in Sprague-Dawley rats. G. bimaculatus was administered orally at doses of 8, 40, 200, 1000 and 5000 mg/kg. in this study, number of deaths, clinical sign, body weights, and pathological examination were investigated for 14 days after administration of G. bimaculatus. The results indicate that G. bimaculatus did not show any toxic effect in rats and oral $LD_{50}$ value was over 5000 mg/kg in Sprague-Dawley rats.
