건강지향의 저지방/저염 식육가공품을 위한 Microbial Transglutaminase와 기능성 소재 이용 기술 (Application of Microbial Transglutaminase and Functional Ingredients for the Healthier Low-Fat/Salt Meat Products: A Review)

  • The level of fat and salt can affect the product quality and storage stability of processed meats. Additionally, consumers' demands require dietary guidelines for developing low-fat/salt functional foods. Microbial transglutaminase (MTGase), which enhances textural properties by catalyzing protein-protein cross-linkages, was introduced to develop healthier lowfat/salt meat products. The potential possibilities of low-fat/salt processed meats were reviewed under optimal conditions for functional ingredients from several previous studies. The addition of non-meat protein (e.g. sodium caseinate and soy protein isolates), hydrocolloids (e. g. konjac flour, carrageenan, and alginates), and MTGase alone or in combination with other functional ingredients improved textural and sensory properties similar to those of regularly processed meats. When MTGase was combined with hydrocolloids (konjac flour or sodium alginate) or other functional ingredients, gelling properties of meat protein were improved even at a low salt level. Based on these reviews, functional ingredients combined with new processing technologies could be incorporated into processed meats to improve the functionality of various low-fat/salt meat products.

  • Dietary fiber naturally present in various sources of cereals, legumes, fruits and vegetables plays a physiological role in human health, such as lowering cholesterol and blood pressure, improving blood glucose control in diabetes, helping with weight loss and management, and reducing cancer risk. In addition, dietary fibers have has been added as a functional food ingredient to food products to provide water-holding capacity, viscosity, gel-forming ability, and fat-binding capacity to food products. These beneficial characteristics of dietary fiber components can improve the image of meat products to be healthy and functional food products. This article reviews the concept and current definition of dietary fibers in food products along with their health benefits and functional characteristics. Dietary fibers from different sources like cereals, legumes, fruits, and vegetables and soluble dietary fibers have been applied as functional ingredients to various types of meat products, such as beef patties, ground beef and pork, pork and chicken sausages, meatballs, and jerky etc. Based on the application of dietary fibers to different types of meat products, possible future characteristics in selecting appropriate dietary fiber ingredients and their proper incorporation are explored to develop and produce healthy and functional meat products with high dietary fiber contents.

  • Growing demand for sustainable production, increasing competition and consideration of health concerns have led the meat industries on a path to innovation. Meat industries across the world are focusing on the development of novel meat products and processes to meet consumer demand. Hence, a process innovation, like nanotechnology, can have a significant impact on the meat processing industry through the development of not only novel functional meat products, but also novel packaging for the products. The potential benefits of utilizing nanomaterials in food are improved bioavailability, antimicrobial effects, enhanced sensory acceptance and targeted delivery of bioactive compounds. However, challenges exist in the application of nanomaterials due to knowledge gaps in the production of ingredients such as nanopowders, stability of delivery systems in meat products and health risks caused by the same properties which also offer the benefits. For the success of nanotechnology in meat products, challenges in public acceptance, economics and the regulation of food processed with nanomaterials which may have the potential to persist, accumulate and lead to toxicity need to be addressed. So far, the most promising area for nanotechnology application seems to be in meat packaging, but the long term effects on human health and environment due to migration of the nanomaterials from the packaging needs to be studied further. The future of nanotechnology in meat products depends on the roles played by governments, regulatory agencies and manufacturers in addressing the challenges related to the application of nanomaterials in food.

유럽 및 오세아니아의 기능성 축산물과 식육제품에 대한 운영현황 및 관리방안 (Management Practices on Functional Meats and Meat Products in European Countries and the Oceania Area)

  • 본 연구는 유럽과 오세아니아의 선진국형 기능성 축산물 및 식육제품의 운영현황 및 관리방안을 연구 분석함으로서 국내 실정에 부합되는 규격기준 표준화와 관리방안 및 제도를 마련하는데 있어서 기초 자료를 제시하는데 있다. 우리나라를 비롯하여 전 세계적으로 국제경쟁력 강화 차원 등의 여러 여건 변화로 식품의 3차적 기능이 점차 강조되고 있다. 따라서 우리나라 자체적으로 기능성 축산물에 대한 정확한 정의와 범위를 확립하는 것이 시급하다. 식품에 기능성 표시를 허용하는 것은 이미 국제적인 대세이다. 유럽과 오세아니아에서도 별도의 기능성 축산물에 관한 법률이나 관리제도가 없으나 식품의 기능성 강화 측면에서 영양표시기준(nutrition claims)과 건강표시기준(health claims)을 통해 식품을 관리하고 있다. 강화 영양소에 대한 표시기준은 일부에 국한되어 있어 이들 기준을 사용하여 국내의 기능성 축산물 및 식육가공품에 적용할 경우, 기능성 지표물질 및 허용량의 설정이 반드시 이루어져야 할 것으로 보이며, EU와 호주 뉴질랜드에서 운영하는 제도 이외의 다른 선진국의 사례를 바탕으로 기능성 축산물에 대한 표준화가 이루어져야 할 것으로 보인다. 또한 기능성 축산물 및 식육제품의 표시를 확립하기 위해서는 현재 시중에 유통되고 있는 제품에 사용되는 기능성 소재 조사 및 각 기능성 소재가 인체에 유해한지 안전성에 대한 연구가 필요하며, 이들 소재의 적정 사용범위 설정을 위한 data base를 확립하기 위해 많은 실험적인 연구가 요구된다.

Plastein 반응에 의한 고온조리 어육추출물의 기능성 개선 (Improvement of Functional Properties of Extracts from Hydrothermal Cooked Fish Meat by Plastein Reaction)

  • In order to improve the functional properties of several fish meat extracts as an alternate protein source, theri basic plastein reactions were evaluated. The UV absorption at 270 and 290 nm indicated that plasteins had higher amount of hydrophobic peptide or amino acid than the fish meat extracts. The water solubilities of the extracts were reduced at acidic pH. Values for the emulsifying capacity of the extracts and plasteins were over 30% although the latter showed the higher ones than the former. The osmolalities of the extracts at 1.0% concentration were 39(loach), 33(bastard halibut), 30(jacopever) and 24(crucan carp) milliosmole. Generally the slightly higher osmolalities were noted in the plasteins to be compared with the extracts. Both the extracts and plasteins exhibited a higher antioxidative effect than tocopherol. The hydrophobic amino acid which had been introduced at plastein reaction attributed the stronger antionxidative effect of its product than the extracts.

부위별로 제조된 기계발골 계육의 가공적성에 관한 연구 (Functional Properties of Mechanically Deboned Chicken Meat from Various Chicken Parts)

  • The functional properties of mechanically deboned chicken meat(MDCM) from whole carcass, whole carcass without exsanguination, neck without skin, leg hone, and upper back and rib were studied. Also, the effects of adding different levels of gelatin and MDCM to the comminuted meats were investigated. Proximate composition values of MDCM ranged from 54.2 to 68.6% moisture, 14.5 to 19.7% protein, 12.3 to 30.1% fat, and 1.1 to 1.3% ash. The MDCM from leg hone had a higher content of fat, and a lower contents of moisture and protein. The MDCM from neck without skin tended to be opposite to the MDCM from leg hone. The total pigment and myoglobin levels were highest in MDCM from whole carcass without exsanguination such as 3.83 and 0.29 rng /g, and those from the other parts were 1.58~2.93 mg /g and 0. 17~0.31 mg /g, respectively. The emulsifying capacity and water holding capacity were highest in MDCM from neck without skin which contained lower levels of fat, collagen and hydroxyproline, but a higher level of salt soluble protein. The emulsifying capacity of comminuted meat decreased as gelatin content increased. The extractability of hydroxyproline from gelatin showed a higher solubility in acidic solution. The MDCM could he added up to 20% level without detrimentally affecting functional properties of comminuted meats although they had less water holding capacity and cooking loss as the proportion of MDCM increased.

Characterization of Cooked Meat Models using Grasshopper (Sphenarium purpurascens) Soluble Protein Extracted by Alkalisation and Ultrasound as Meat-Extender

  • The most abundant Orthoptera in Mexico is a small grasshopper (Sphenarium purpurascens) which is considered a food source with increased nutritional value due to its high protein content. Insect proteins have gained relevance because of their high potential as gelling, texturing, and extender agents in the food industry. The objective of this study was to evaluate the effect of substituting meat with a soluble protein extract from grasshopper obtained by alkalisation or alkalisation-piezoelectric ultrasound, on the techno-functional, physicochemical, and sensory characteristics of cooked meat models (sausages). The soluble protein was extracted in NaHCO3 pH 8 and a piezoelectric ultrasound 5-mm sonotrode at 20 kHz with 99% amplitude. Different formulations with meat substitution: 0%, 5%, 10%, and 15% were prepared and characterised for their rheological behaviour, emulsion stability, weight loss by cooking, total protein content, colour, and texture. Sensory evaluation was conducted with consumers using a test involving check-all-that-apply and overall liking. The alkalisation-piezoelectric ultrasound method improved the solubility and the techno-functional properties of the soluble grasshopper protein when applied in sausages at maximum levels of 10% meat substitution. The sensory evaluation indicated that the formulation with 5% meat substitution exhibited the same acceptability as the control sample. Given these results, the soluble protein treated with alkalisation and piezoelectric ultrasound could be used as an extender in meat products.

Efficacy of Alkali-treated Sugarcane Fiber for Improving Physicochemical and Textural Properties of Meat Emulsions with Different Fat Levels

  • The objective of this study was to evaluate the efficacy of alkaline-treated sugarcane bagasse fiber on physicochemical and textural properties of meat emulsion with different fat levels. Crude sugarcane bagasse fiber (CSF) was treated with calcium hydroxide ($Ca(OH_2)$) to obtain alkaline-treated sugarcane bagasse fiber (ASF). The two types of sugarcane bagasse fiber (CSF and ASF) were incorporated at 2% levels in pork meat emulsions prepared with 5%, 10% and 20% fat levels. Alkaline-treatment markedly increased acid detergent fiber content (p=0.002), but significantly decreased protein, fat, ash and other carbohydrate contents. ASF exhibited significantly higher water-binding capacity, but lower oil-binding and emulsifying capacities than CSF. Meat emulsions formulated with 10% fat and 2% sugarcane bagasse fiber had equivalent cooking loss and textural properties to control meat emulsion (20% fat without sugarcane bagasse fiber). The two types of sugarcane bagasse fiber had similar impacts on proximate composition, cooking yield and texture of meat emulsion at the same fat level, respectively (p>0.05). Our results confirm that sugarcane bagasse fiber could be a functional food ingredient for improving physicochemical and textural properties of meat emulsion, at 2% addition level. Further, the altered functional properties of alkaline-treated sugarcane bagasse fiber had no impacts on physicochemical and textural properties of meat emulsions, regardless of fat level at 5%, 10% and 20%.

농장 사육 꿩고기의 육질 및 가공제품의 물성과 관능특성 (Meat Quality, Textural and Sensory Properties of Farm-Grown Pheasant Meat and Processed Products)

  • 농장사육 꿩고기의 식품적 기능성과 꿩고기 가공제품의 물성 및 관능적 특성을 측정한 결과를 요약하면 다음과 같다. 꿩고기는 고단백 저지방의 구성을 보였으며, 가슴 부위는 다리 부위에 비해 고단백, 저수분의 경향을 보였다. 꿩고기는 수분/단백질의 수치가 2.82∼3.40 정도로 비교적 낮은 값을 보여, 꿩고기는 가공특성이 우수한 것으로 생각되었고, 꿩고기의 보수성과 근원섬유 단백질의 추출율은 높았으며, 연령별$.$부위별로 차이가 인정되었다(p<0.05). 꿩고기의 육색을 측정한 결과 연령과 성별 차이는 없었으나, 부위별로는 차이를 보여 가슴 부위가 다리 부위에 비하여 L*값과 b* 값이 큰 반면 a* 값이 낮았다. 꿩고기 생육의 전단력을 측정한 결과 성별에 관계없이 6월령이 17월령에 비해 대체로 낮은 수치를 보였고, 부위별 전단력은 다리근육이 가슴근육에 비해 전단력이 높은 것으로 나타났다. 고기 가공품에 대한 관능검사 및 물성검사의 결과에서는 꿩고기로 제조된 프레스 햄과 소시지가 시판 돈육햄 및 닭고기 소시지에 뒤지지 않는 양호한 품질을 나타내었다.

Comparison of the Nutritional Composition of Bullfrog Meat from Different Parts of the Animal

  • The objective of this study was to evaluate the nutritional content of bullfrog meat from different parts of the animal, including fore-chest, thigh and calf. Bullfrog meat was found to be a rich source of proteins, essential amino acids and minerals, but with a low fat content, compared with other aquatic meat products. There was no significant difference (p>0.05) between thigh and calf in mineral content (K, P, Na, Mg, Ca, Zn, Fe, Cu, and Mn), but the contents of K, P, and Mg were higher in thigh and calf than in the fore-chest (p<0.05). The salt-soluble, water-soluble and insoluble protein bands in sodium dodecyl sulphate-polyacrylamide gel electrophoresis (SDS-PAGE) electrophoresis, from fore-chest, thigh and calf were similar, with the most abundant bands being 35 kDa (salt-soluble protein), 35-48 kDa (water-soluble protein) and 48 kDa (insoluble protein). The results showed that the insoluble protein content in the fore-chest meat was higher than that in the thigh meat and calf meat, but the salt-soluble protein fraction was the most abundant in thigh meat. These results showed that the nutrients in different parts of bullfrog meat were different.
