외식업의 6시그마와 조직몰입에 관한 연구 (A Study on Organizational Commitment and 6 Sigma in Foodservice Business)

  • An implementation of 6 sigma in foodservice management was introduced from 2000. However they could not achieve full advantages of 6 sigma management because of short period of implementation time, and the critical problem is employees' complaints and their oppositions. The purpose of this study is to analyze the relationship of 6 sigma and organizational commitment in the foodservice industry. In this study, we found that organizational commitment improve with the implementation of 6 sigma. 6 sigma's essential factors have influenced on the organizational commitment.

특급 호텔 조리 식음료 종사자의 위생 관리 인지도 및 수행도에 관한 연구 (A Study on Sanitation Management Recognition and Employee Performance in the Kitchens and Food and Beverage Departments of Deluxe Hotels)

  • This study was conducted to assess the current status of food safety/sanitation training programs, including HACCP, for kitchen and hall employees at major hotels, as well as how differently the training can affect the employees' recognition and performance of food safety/sanitation management in areas related to the facility, food, and their personal hygiene. A questionnaire for assessing the recognition and performance of sanitation management was developed and distributed to 430 employees currently working in the kitchens and halls of 5 hotels located in Seoul, Korea. A total of 324 questionnaires (kitchen: 138, hall: 186) were subjected to frequency analysis, chi-square tests, one way ANOVA, and Pearson correlation analysis using SPSS/windows software. Ninety-one percent of the respondents had received food safety/sanitation training, which was conducted by a hygienist or a cook once a month. However, only 55% of the respondents had HACCP training. The employees that did not have HACCP training had lower recognition scores than those who had HACCP training, especially in the washing procedures for tablewares, handwashing tools, cross contamination, reheating, and HACCP definitions. Trained, full-time employees received significantly higher recognition and performance scores than untrained, contract, or part-time employees. Significant differences in the recognition and performance scores were found among the employees of the 5 different hotels, indicating various levels for the outcome of their sanitation training. In addition, Pearson's correlation analysis confirmed that the recognition and performance scores were significantly correlated (r=0.473, p<.001). This study indicates that hotel foodservice employees must receive systematic food safety/sanitation training, including HACCP, which provides the foundation for safe foodservice operations.

The Relationship Between AI Opportunity Perception and Job Insecurity: The Mediating Role of Employee's Hope and the Moderating Role of Tenure

  • The increase in the use of artificial intelligence (AI) in the workplace has introduced changes to traditional working environments. However, these are changes not only to employee productivity but also to how employees feel and think about their work. Based on prior research that has suggested connections between employees' perceptions of AI and their emotions and thoughts at work, the present study tested a moderated mediation model in which the perception of AI opportunity is indirectly related to job insecurity via employee hope, with tenure as a moderator. Data obtained from 290 Korean full-time employees illustrated that the perception of AI opportunity was negatively related to job insecurity through hope acting as a mediator. In addition, this indirect relationship was found to be dependent on the moderating role of tenure. Specifically, at lower levels of tenure, the aforementioned indirect relationship was statistically significant, but at higher levels of tenure, this indirect relationship was no longer found to be statistically significant. The implications, limitations, and future research directions of this study are discussed.

외식업체 관리자의 경쟁가치 리더십이 종사원의 직무만족 및 이직의사에 미치는 영향 (Impact of General Manager Competing Values Leadership on Employee Job Satisfaction and Turnover Intention in the Restaurant Industry)

  • The purpose of this study was to identify the competing values leadership of restaurant general managers and to investigate the impact of their competing values leadership on employee job satisfaction and turnover intention. A sample of full-time restaurant employees (n=360, 36% response) completed an e-mail survey. The results showed that among the eight sub-dimensions of competing values leadership roles, the monitor (4.04), producer (4.01), and director (3.99) roles were perceived as the most frequently used leadership styles of managers compared to broker (3.78), innovator (3.83), and mentor (3.91) roles (p <0.001). Additional T-test results suggested that an employees' gender had an influence on how he/she perceived the leadership style of their manager. Male employees were more likely to perceive that the director and mentor roles (4.19) were performed very well by their managers, while female employees perceived that their managers concentrated more on monitor (3.98) and producer (3.96) roles rather than on broker (3.73) and innovator (3.79) roles (p<0.05). It was found that manager competing values leadership had a significant correlation with employee job satisfaction, and the mentor, coordinator, and innovator manager roles explained the relationship with 42.1% based on multiple regression analysis (p<0.001). In further findings, the manager competing values leadership roles had an effect on employee turnover intention. The results of the data were as follows: mentor and facilitator roles promoted a decrease in employee turnover intention and the director role caused employee turnover intention to increase. Ultimately, this study will be useful for restaurant managers to guide the application of appropriate competing values leadership roles in order to strengthen employee job satisfaction and to reduce turnover intention.

  • This study examines the relationship between three major elements -Transformational leadership, Prosocial Behavioral Intentions, and Organizational Performance of full-time academics from different universities and colleges in Oman. A total of 322 full-time employees from different universities and technical colleges participated in an online survey and hardcopy survey. The data was collected using the primary data collection method. Structured scales were adopted for the study to include all the variables under study (Garcia-Morales et al., 2012; Baumsteiger et al., 2019). The adopted questionnaire was slightly modified to align with the circumstances of universities as well as colleges in Oman. A hypothesis is formed to find out the significant contributions among different sample categories. The correlation method was used to find out the relationship. It was evident from the result that there exists a significant relationship between major variables under study. This study reveals an important characteristic of transformational leadership towards prosocial behavioral intentions as it has a connection with organizational performance. There is limited research available to find out the relationship between prosocial behavioral intentions, transformational leadership, and organizational performance. This research focuses on identifying the antecedents and factors influencing organizations' performance efficiently and productively.

근로자들의 근무유연성에 대한 요구 분석 - 한 가족친화인증기업 근로자들의 사례 - (A Case Study on the Family-Friendly Firm Workers' Flexibility Needs)

  • This qualitative case study focused on the workers' flexibility needs. We selected eight full-time workers from one 2009 family friendly certified firm for observation and in-depth interview. The workers are categorized into three groups; male employees with housewives, double income family workers depending on extended family, and double income family workers depending on paid babysitter. The spouse's work status and informal extended familial support to child care were crucial factors to influence their work family life styles and flexibility needs. The flex time is the most desirable everyday needs for the dual working child caring parents depending on the paid help. And the female workers' concerned about the stigma effect of the institutionalized flexibility use of the inferior labors.

  • In U.S.A., minimum wage of New Jersey in April 1, 1992 rose from $4.25 to $5.05. At this assession, there was survey by 410 numbers related back and pro minimum wage in New Jersey and eastern Pennsylvania.. At stores of New Jersey and eastern Pennsylvania, comparison of the increase of employment at constant minimum wag is with estimative effect of increase of minimum wage. Through comparison of stores of low wage and high wage above $5, employment volatility in New Jersey was studied. In U.S.A., increase of minimum wage was not caused to reduce to employment. Contrary to this, result of Korea was not consisted after timing of IMF bailout of 1997. It is because drop of revenue was caused to decrease employees of part-time and full-time job at the viewpoint of cost minimization.

강원 지역 학교 급식 영양사의 근무 년수에 따른 직무스트레스 요인에 관한 연구 (A Study on the Job Stress Factors according to the Working Years of School Food Service Nutritionists in Gangwon Area)

  • The purpose of this study was to evaluate job stress factors of school food service nutritionists according to the number of years they have worked. The subjects of this survey included 125 nutritionists (69 from full-time employees and 56 from part-time nutritionists) from elementary school, middle school, and high school in the Gangwon area. The results showed that stress related to duty was the top job stress factor, followed by environment-related stress, personal stress, organization-related stress and stress caused by human relations. In terms of the degree of stress, part-time nutritionists have more stress compared to full-time nutritionists. This was especially true for nutritionists that had been employed for one year. In this case, the degree of stress was much higher than long time employed nutritionists. In terms of how to deal with job stress, school nutritionists eliminated stress directly (with direct countermeasures). In order to deal with stress, workers expected stable employment such as pay (wages), promotions, etc. In particular, part-time school nutritionists had stronger expectations. When correlation between job stress factors were examined, environment-related, duty-related, organization-related, human relations-related and personal stress were all shown to be mutually related.

중소기업 종업원의 지각된 기업특성과 개인특성이 직무만족에 미치는 영향 : 기업 혁신성의 매개 역할을 중심으로 (The Effect of Company Characteristics and Individual Characteristics Perceived by Employees of Small Businesses on Job Satisfaction : Focusing on Intermediary Role of Company Innovation)

  • 본 연구에서는 중소기업 종업원의 지각된 기업특성과 개인특성이 직무만족에 미치는 영향을 살펴보고 특히, 기존의 연구에서 확장하여 기업혁신성이라는 기업관련 변수를 추가하여 살펴보았다. 이러한 연구는 중소기업의 CEO들이 조직구성원의 직무만족을 유발시키고 변화하는 글로벌 사회의 환경에 초점을 맞추어 관리방안들을 모색할 수 있도록 하여 조직의 활성화를 도모하고, 경영의 개선이나 제도적 발전을 위한 제언이 될 것이다. 본 연구는 중소기업 종업원들을 대상으로 약 2개월간 실시하였으며, 실증적 분석의 결과 첫째, 중소기업 종업원의 지각된 기업특성과 개인특성이 직무만족에 정(+)의 영향을 미치는 것으로 나타났으나, 이중 직무스트레스가 직무만족에 영향을 미친다는 가설은 유의하지 않았다. 둘째, 중소기업 종업원의 지각된 기업특성과 개인특성이 기업혁신성에 미치는 영향관계 중 조직유연성과 CEO의 리더십, 회사의 의사소통과 부서간, 개인간 협력정도, 지각된 개인의 특성에서의 개인의 도전성은 기업혁신성에 영향을 미치는 것으로 나타났으나, 직무스트레스는 영향을 미친다는 가설은 유의하지 않았다. 셋째, 기업혁신성은 직무만족에 정(+)의 영향을 미치는 것으로 나타났으며, 네째, 기업혁신성이 종업원의 지각된 기업특성 및 개인특성과 직무만족 사이에서의 매개효과 검증에서는 조직유연성과 소통과 협력은 부분매개를, CEO의 리더십은 완전매개 하는 것으로 나타났고, 개인의 도전성과는 완전매개를, 직무스트레스는 매개효과가 검증되지 않았다. 이러한 결과는 독립변수인 중소기업 종업원의 지각된 기업특성과 개인특성은 직무만족과의 직접적인 관계일 뿐아니라, 기업의 혁신성에 따라 매개되는 간접효과도 가진다는 것을 시사한다. 그러므로 중소기업 종업원들의 직무만족을 높이기 위해서는 기업의 혁신활동의 성과도 중요하다는 것을 알 수 있었다. 특히, 리더십과 개인의 도전성은 기업의 혁신성을 통해 완전 매개되므로 중소기업 종업원의 직무만족을 높이기 위해서는 조직의 혁신성 노력이 동시에 추진되어야 효과가 있다고 할 수 있겠다.

S병원 성과평가지표 개발에 관한 연구 (Development of Performance Measurement Indicators in S Hospital)

  • This study was undertaken to develop performance measurement indicators in S Hospital, which is the largest component of Y Medical Center which implemented the Responsible Management System in 1993. To begin, strategic initiatives for S Hospital were reestablished based on Y Medical Center's goals and objectives. The BSC(Balanced Scorecard) was used to develop performance measurement indicators after validity checks by specialists. The results were that total 16 indicators were developed to measure performance for strategic initiatives. Those included the growth rate of patient revenues, operating profit to gross revenues, reduction rate in administrative expenses from a financial perspective; average medical expenses per adjusted patient, patient satisfaction survey for inpatients and outpatients and emergency room patients, return rate for treatment results from the customer's perspective; reduction rate in average length of hospital stay, expenses for lost cases of medical disputes, rate for contracted employees, the number of published reports per faculty member from an internal perspective; educational expenses for training medical staff and full time employees, adjusted patient per medical staff, and the number of cases implemented which were proposed by employees. Any organization needs to have its own explicit objectives to grow and develop and it is absolutely necessary to measure performance to accomplish them. The performance measurement indicators developed by this study are expected to be used as a tool to attain the objectives of S Hospital.
