This study is performed to examine the meal management attitudes of housewives who had elementary schoolchildren in the remote rural areas(RA: n = 318, $37.2{\pm}0.3$ years of age) in comparison to those in their vicinity urban area(UA: n = 349, $36.9{\pm}0.2$ years of age) in the Chungnam province in Korea. The subjects were asked to fill out the questionnaire on their attitudes of meal management for their families. The results obtained in this study were as followings: (1) Most husbands of the subjects had a farming job in the RA while they had salaried workers in the UA(p<0.001). Education levels of both subjects and their husbands were lower in the RA than in the UA. Nuclear families were dominated by both groups, however single parent-family and step parent-family were more prevalent in the RA than in the UA. (2) in terms of ways of getting foods such as grains, meats, eggs, vegetables and fruits, the RA housewives relied more often on self-production than did the UA housewives(p<0.001). (3) The frequency of purchasing unprocessed foods was lower in the RA than in the UA(p<0.001). The RA housewives purchased the convenient foods such as instant noodles(p<0.05), ready to eatsoups(p<0.001), retort pouch foods(p<0.05) and instant teas(p<0.05) more frequently than did the UA housewives, while tuna, canned in oil(p<0.01), milk and their products(p<0.001), soybean products(p<0.001) and snacks(p<0.01) were purchased less often by the RA housewives. (4) Family members except housewives engaged more often in meal preparation in the RA than did those in the UA(p<0.001), which was more strongly observed for dinner. The time spent in preparing the dinner was shorter in the RA than in the UA(p<0.001). (5) The degrees of endeavor to provide the subjects' offspring with balanced meal(p<0.001) and nutrition education(p<0.01) were lower in the RA than in the UA. The RA housewives had more difficulty for performing meal management because of 'over work-related fatigue', 'insufficient money to purchase foods' and 'far distance from grocery' than the UA housewives(p<0.001). The RA housewives had lower score on nutritional knowledge(p<0.001) and wanted more strongly nutritional knowledge to improve the quality of family's meal than did the UA housewives(p<0.01). Therefore, the RA housewives had various problems regarding meal management such as 'over work related to fatigue', 'food-purchasing inconvenience', 'low economic status of family' and 'lack of nutritional knowledge'. As a consequence the RA housewives relied on cheap convenient foods more often in order to prepare the meal easily than did the UA housewives. These findings emphasize the need in the RA for nutrition education for housewives and a range of nutrition policies that focus upon the social and economic determinants of food choice within families to improve the nutritional status of the RA residents.
Environmental pesticides used for insect control can be transferred from plants to animals even to livestock animals through food chain. Human beings also can be exposed to pesticides by consuming polluted dairy products, including meats, eggs and other milk products. Therefore, the Ministry of Food and Drug Safety (MFDS) established Standard for Pesticide Residue Limits in dairy products. The QuEChERS (quick, easy, cheap, effective, rugged and safe) methods for detecting residual pesticides are relatively well established for fruits and vegetables, however, the methods for meat have not been appropriately studied yet. In the present work, pyraclofos was used as an organophosphate pesticide to examine its tissue residue in experimental animals by QuEChERS methods. For this, pyraclofos (150 mg/kg body weight) was orally administered to male rats once a day for 2 days. After 6, 12, and 24 hr of the treatment, the tissue residues in liver and femoral muscle of the rats were determined using QuEChERS methods followed by HPLC analyses. In preliminary studies, the recovery rates of spiking samples of pyraclofos demonstrated approximately 109~110% from the tissues. In previous study, pyraclofos tissue residues were observed with significantly high levels in livers and muscles at 6 hr of oral treatment. Then, they were almost completely disappeared after 24 hr of the administration, indicating the orally exposed pyraclofos is rapidly absorbed and distributed to body organs, then quickly excreted from the body with a negligible level of tissue residue. The alterations in blood chemistry as well as the histopathology of heart, lung, liver, spleen and kidney have also been investigated in the experimental animals for assessing acute toxic effects of pyraclofos. The obtained blood chemistry indexes (ALT and AST) showed maximum peak values at 12 hr after the oral administration and decreased to the normal levels at 24 hr of the treatment. Histopathologic observation exhibited acute hepatic damages at 24 hr of the treatment. In conclusion, we suggest that QuEChERS method can be adequately optimized for the analysis of pyraclofos residues in animal tissues.
An unusual young fruit rot of apple caused by two species of Phytophthora was epidemic from late May to early July of 1996 in Andong, Uisung and Chungwon areas of Korea. The disease spread to over 30 apple orchards in the areas and percent of the infected tree and fruit was ca. 10~90% and 1`15%, respectively. Water soaking lesions or spots on leaves and shoot blight were also developed by the pathogen. Among 39 isolates collected, 25 were identified as P. cactorum and the others were as zp. cambivora on the basis of their distinctive morphological characters. While the former fungus was homothallic, all isolates of the latter were A1 mating types. Koch's postulate was fulfilled. Both fungi showed strong pathogenicity not only to young fruits, leaves and shoots of apple but also to those of pear and peach. Several vegetables tested did not show symptoms even by wound inoculation. An Occurrence of young fruit rot of apple caused by Phytophthora has not been reported in Korea, especially, P. cambivora has not been recorded previously as the causal agent of the disease in the world.
References on the cooking and processing losses of organophosphorus (OP) pesticides in foods were collected and analyzed to indicate that the average removal of whole pesticides being 45% in water washing, 56% in detergent washing, 91% in peeling of fruits, 5l% in blanching-boiling of vegetables, 90% in milling and processing of grains. The theoretical maximum daily intake (TMDI) calculated from the food intake and Korea maximum residue limits showed that 4 among 11 pesticides exceeded the acceptable daily intake (ADI). The estimated daily intake (EDI) calculated from the food intake and monitoring data reached 17.2% of ADI on the assumption that the toxicity of OP pesticides appears as an additive effect. The % ratio of ADI for individual pesticides was 6.1% in diazinon, 5.8% in fenthion, 3.3% in fenitrothion and very low in other pesticides. By applying reduction factors to the EDI, the removal ratio of OP pesticides in cooking and processing appears to be over 50%. In summary, the exposure level of Korean population toward whole OP pesticides was estimated to reach 23% of ADI, which would not cause any health rick as yet, but calls for a systematic risk assessment.
Purpose: The purpose of this study was to estimate dietary flavonoids intake of Korean adolescents. Methods: Using data from the 2007-2012 Korean National Health and Nutrition Examination Survey, a total of 3,957 subjects aged 12-18 were included in this study. We estimated individual daily intake of total flavonoid and six flavonoid classes including flavonols, flavones, flavanones, flavan-3-ols, anthocyanidins, and isoflavones by linking food consumption data with the flavonoids in the commonly consumed food database. The distribution of sociodemographic, health-related, and dietary factors according to flavonoids intake was examined. Results: Average dietary flavonoids intake of the study subjects was 195.6 mg/d in girls, and 189.4 mg/d in boys. The highest flavonoids intake group consumed significantly more fiber, vitamin C, legumes, fruits, and vegetables (p < 0.01) and less fat, grains, meats and dairy foods than other lower consumption groups (p < 0.001). Dietary flavonoid intake showed negative correlation with waist circumference and systolic blood pressure (p < 0.05). Conclusion: This study provided basic data for estimation of flavonoids intake of Korean adolescents. Further research will be required for analysis of the association of flavonoids intake and health-related factors such as cardiovascular risk factors.

The analytical method for bifenazate was developed using a HPLC (UVD). Also, analytical condition of LC/MS was set up for bifenazate. We validated the method for the precision and the reproducibility. The correlation coefficient of bifenazate ranged from 0.05 to 2.5 mg/kg was 1.0. Limit of quantitation (LOQ) was 0.01 mg/kg. To measure recoveries from agricultural products such as foxtail millet (cereal grains), kidney bean (beans), orange (fruits), perilla leaves (vegetables) and oak mushroom (mushrooms), bifenazate was spiked. Mean recoveries of bifenazate for each sample were 82.7~104.1% at the level of 0.1 mg/kg and 73.1~104.3% at the level of 0.5 mg/kg. The relative standard deviations (n=3) were 0.2~9.7%. Pesticide residues for bifenazate were investigated in 16 commodities (rice, foxtail millet, buckwheat, kidney bean, peanut, sesame, orange, grapefruit, kiwifruit, spinach, perilla leaves, leek, garlic stem, garlic, ginger and oak mushroom) collected from 22 provinces in 2009. Bifenazate was analyzed using analytical method by HPLC from 304 samples, and residue was not detected.

This study was conducted to develop a Han-sik database as well as to assess the effects of Han-sik on dietary quality among Koreans. The Han-sik database was developed by a focus group composed of food and nutrition specialists considering the results of Han-sik perception surveys conducted in previous studies for frequently consumed dishes. Among the 1,322 dish items identified in the $4^{th}$ (2007-2009) Korea National Health and Nutrition Examination Survey (KNHANES), 973 items (73.6%) were classified as Han-sik. Han-sik usage was defined as the percentage of Han-sik items of all individually consumed dish items in the dietary data of 22,113 subjects who participated in a 24-hour diet recall in the $4^{th}$ (2007-2009) KNHANES. Dietary quality was evaluated based on adherence to the Korean Food Guidance System (KFGS), which was calculated as the percentage of the number of servings consumed in each food group out of recommended servings according to age and sex. Mean usage of Han-sik was 80.1% and was higher in older age groups, rural areas, as well as in households at the lowest income level. Han-sik usage was also higher on weekdays as well as for breakfast. Adherence to the KFGS was significantly higher for grains, meat fish egg beans, vegetables, and fruits (p<0.001) but lower for milk dairy products and oils fats sugars (p<0.001) across the quartiles of Han-sik usage. The results of this study indicate that Han-sik usage is high among Koreans. Further studies are needed to update the Han-sik database as well as investigate the association between health-related factors and Han-sik use.
Cronobacter species (Cronobacter spp.), previously known as Enterobacter sakazakii, are gram negative food borne pathogenic bacteria. They pose a very high risk of infection to neonates and immuno-compromised individuals and can affect the human central nervous system. Consequently, survivors often suffer from severe neurological impairment including hydrocephalus, quadriplegia, and developmental delays. Cronobacter spp. were not only isolated from plant food and products such as cereals, fruits, vegetables, legume products, herbs, and spices but also from animal source foods such as milk, meat, fish, and products made from these foods. Therefore, rapid detection of Cronobacter spp. is essential for food safety. Many detection methods have been developed since the Cronobacter spp. were first reported. However, the development of more rapid, sensitive, and easy-to-use detection methods for the Cronobacter spp. is required. In this review, our aim was to study and compare the available detection methods for Cronobacter spp., including culture-based, molecular biology-based, and immunology-based methods. This study will contribute to the development of new and rapid detection method for Cronobacter spp.
Previously, the methanolic extracts of thirty Korean medicinal plant seeds were screened for tyrosinase inhibitors using a rapid and simple TLC method, which was superior to a conventional spectrophotometrical in vitro assay. As a result, the methanolic extracts of Thuja orientalis seeds was found to have strong tyrosinase inhibitory activity. To isolate active tyrosinase inhibitors, the seeds were defatted with n-hexane under reflux, and then extracted twice with methanol under reflux at 90$^{\circ}C$. The methanolic extract was evaporated to a small volumn in vacuo, and then successively fractionated with ether, ethyl acetate and n-butanol. The ether extract showing significant tyrosinase inhibitory activity was solubilized with 5% NaHCO$_3$and then acidified with 6N HCI. The ether souble acidic fraction was successively ohromatographed on silica gel, Sephadex LH-20 and preparative TLC. Among four compounds isolated, two of them showed stronger tyrosinase inhibitory activity, comparable to that of L-ascorbic acid (IC$\sub$50/=28$\mu\textrm{g}$/$m\ell$). These results suggest that Thuja orientalis seeds may be useful as potential sources of antibrowning agents in fruits and vegetables, and anti-melanoma agents in cosmetics and phamaceuticals.
This study concentrated on the dining out consumption behaviors, dining out selection attributes, and changes in eating habits of silver generation. Total 216 residents in metropolitan area were employed for statistical analysing. The results are as follows. First, as the result of t-test and ANOVA showed that female and higher academic background tended to regularly take high level of fruits, vegetables, meat, and fish eating habits. These results identified that dining out culture and dietary lifestyle are closely linked. Second, as the result of difference in dining out consumption attitudes on eating habit of silver generation, consumers who have better eating behaviors tended to consider the physical environment, variety of menu, and service quality when they choose a restaurant. Third, as the result of analysis on changes in dining out consumption behavior based on eating behavior of silver consumers, groups differences were found from only the source for information on dining out business and standard variable in selection of dining out business. Fourth, physical environment, variety of menu, business quality, and service were indicated as significant selection attributes of dining out among silver peoples. Fifth, dining out consumption behaviors of silver consumers were developed through newspapers, magazines, and previous visiting experiences. In conclusion, the results of present study showed that silver consumers tend to select a restaurant based on word-of-mouth and various factors related to experiences. Hence, various promotional activities are necessary for the business succession.
