Quality Characteristics of Bread Containing Various Levels of Flowering Cherry (Prunus serrulata L. var. spontanea Max. wils.) Fruit Powder (버찌(Fruit of Prunus serrulata L. var. spontanea Max. wils.) 분말을 첨가한 식빵의 품질특성)

  • The study investigated on quality characteristics of pan breads prepared with 0, 1, 3 and 5% flowering cherry (Prunus serrulata L. var. spontanea Max. wils.) fruit powder. The pH of dough and bread decreased with the addition of flowering cherry fruit powder, whereas the weight of bread increased. The volume, specific volume and baking loss rate of the breads decreased as flowering cherry fruit powder levels increased. The volume of dough during fermentation of bread containing flowering fruit cherry powder was smaller than those of the dough without flowering cherry fruit powder. Lightness (L) and yellowness (b) of breads crumb and crust color were decreased as the concentration of flowering cherry fruit powder increased; however, the redness (a) was increased. In the texture analyzer measurement, hardness and chewiness of the breads were significantly increased by adding the powder but cohesiveness was decreased. There was no significant difference in springiness. The antioxidative activity measured by DPPH radical scavenging activity of bread increased as the concentration of flowering cherry fruit powder increased. The bread containing 3% flowering cherry fruit powder has acceptable sensory properties. such as color, smell, taste, chewiness, texture and overall acceptability. The results exhibited that adding the flowering cherry fruit powder into the bread increased antioxidant activity, and the highest quality improvement was obtained by incorporating 3% flowering cherry fruit powder into the bread formula.

Fruit Growth, Sugar, and Acid Characteristic in Leafy and Leafless Fruits of Satsuma Mandarin (온주밀감에서 유엽과와 직과의 생장과 당산 특성)

  • The study was conducted to investigate the effect of fruit bearing type with leafy (LY) and leafless (LS) fruits on fruit growth, sugar, and acid characteristics in satsuma mandarin. Fruit growth including fruit length, diameter, shape index (diameter/length), weight, and size distribution was not different between LY and LS fruits at ripening time. Total soluble solids (TSS) concentration of the fruit juice increased and acidity decreased continuously and then TSS:acidity ratio increased with fruit development from 100 days after anthesis to ripening time. Soluble sugar was continuously increased, whereas organic acid decreased. Theses tendencies were related to the increase of sucrose and decline of citric acid, respectively. However, there was no effect of fruit bearing type on TSS, acidity, and TSS:acidity ratio, and soluble sugar and organic acid composition in fruit juice. Also, photosynthetic rate and chlorophyll index with SPAD value were not different between leaves adjacent to LY and LS fruits. The results indicated that fruit growth and sugar and acid characteristics were not affected by fruit bearing type with leafy and leafless fruits in satsuma mandarin.

  • In a plumcot 'Harmony' cultivar, which is an interspecific hybrid between plum and apricot, canopy occupation and productivity according to tree training system, Y shape with no trellis (YNT) and Y-palmette with trellis (YPT), were compared. According to the survey results for 5 years of planting, tree growth was similar in two training systems. However, canopy occupation and fruit yield of YPT were significantly higher than those of YNT. The fruit weight and sugar content were not significantly different between two systems. The fruit drop rate tended to be lower in YPT than in YNT. From the above results, it is expected that the YPT type will contribute to the increase of canopy occupation and fruit yield and reducing the fruit drop rate compared to the YNT.

Comparison of Physiological Activities of Rubus coreanus Miquel during Maturation (복분자딸기의 성숙 단계별 생리활성 비교)

  • Total polyphenolic compounds, DPPH radical scavenging activity, superoxide dismutase (SOD), vitamin A, C, E, flavonoid and anthocyanin of Rubus coreanus Miquel during maturation were investigated to expand the utilization of Rubus coreanus Miquel as functional food material. Physiological activities of unripened, middle-ripened and ripened fruit of Rubus coreanus Miquel were examined. The ripened fruit included higher contents of total polyphenolic compound compared with those of the other sample groups, unripened and middle-ripened fruit. SOD of unripened, middle-ripened and ripened fruit were 59.15, 80.05 and 95.03%, respectively. Scavenging concentration ($SC_{50}$) of unripened and middle-ripened fruit for 0.4 mM DPPH (1,1-diphenyl 2-picryl hydrazyl) was 2.3 mg/mL by weight, but only 1.6 mg/mL for ripened fruit. The vitamin A content of the Rubus coreanus Miquel was found to be lower as the fruit ripened; however, vitamin E showed the reverse pattern. In addition Rubus coreanus Miquel is a fruit which has a high vitamin C content regardless of maturity. The flavonoid contents of Rubus coreanus Miquel were in order of ripened fruit ($49{\mu}m/mg$)>middle-ripened fruit ($16.4{\mu}m/mg)$>unripened fruit ($15.4{\mu}m/mg$). Also, the contents of anthocyanin in ripened fruit were $394.50{\mu}m/mg$, which were higher than those of middle-ripened ($12.43{\mu}m/mg)$ and unripened fruit ($7.89{\mu}m/mg$).

Correlation Analysis Between Fruit Quality of 'Campbell Early' Grapes and Climatic Factors (포도 '캠벨얼리' 품종의 과실품질과 기후요인과의 상관분석)

  • The study was conducted to investigate the correlation analysis between fruit quality and climatic parameters in grapevines. 'Campbell Early', one of the major grape cultivars, occupies more than 70% of cultivated areas in Korea. Recent research results have shown that the movement of cultivation area of fruit production resulted from the temperature increase. In this study, we investigated the relationship between fruit quality and climatic conditions in 13 major 'Campbell Early' grape producing areas (i.e., Sacheon, Jinju, Naju, Dangjin, Cheonan, Gimcheon, Yeongdong, Okcheon, Sangju, Suwon, Yeongju, Gangneung, Chuncheon, and Yanggu). The earliest and latest full blooming days of grapevines were ovserved on May 25 in Sacheon area and on June 7 in Yanggu area, respectively. At least 90 days are required for grapes to mature enough for the production of highquality fruits. The southern areas with less than 90 days of maturity period had difficulty in the production of good fruit. However, the areas with longer maturity period of 100 to 110 days produced grapes with with high sugar content and good coloring. The fruit qualities of 'Campbell Early' grapes are more closely related with temperature than other climatic factors. High temperature resulted in fruits with high acidity and delayed the coloration of the fruit skin in the southern area. The fruit skin was thin in the southern area and inclined to be thicker in the northern areas. Therefore, grape should be cultivated in regions with long maturity period to have high quality.

Effect of Pig Slurry Application on the Mineral Content of Leaf, Fruit Quality and Soil Chemical Properties in Pear Orchard (돈분 액비 시용이 배나무 잎의 무기성분 함량, 과실특성과 토양화학성에 미치는 영향)

  • This experiment was carried out to investigate the replaceability of chemical fertilizer by SCB liquid fertilizer (SCB) in pear orchard for 5 years. The effects on the mineral content of leaf, fruit quality, yield and soil chemical properties are as follows: The mineral content of leaf showed no difference between the treatments; two SCB liquid fertilizer treatments based on the N (SCB-N) and K (SCB-K) content, and control (chemical fertilizer application). There were no significant differences in yield, titratable acidity and weight of the fruit although the figure of fruit weight was high in SCB-N treatment. Soluble solids content was higher in the SCB treatments than the control. Soil chemical properties such as the content of soil organic matter, available soil phosphate and exchangeable cation were not different, although soil pH was higher in SCB treatments. In conclusion, it is suggest that the use of chemical fertilizer in pear orchard could be replaced by the application of SCB liquid fertilizer because of the same effect on the growth of pear tree and soil chemical properties.

Lysophosphatidylethanolamine (LPE) Improves Fruit Size, Color, Quality and Phytochemical Contents of Sweet Cherry c.v. '0900 Ziraat'

  • Lysophosphatidylethanolamine (LPE) affects the quality of flowers, fruits, and other horticultural products. Studies have provided evidence that LPE can accelerate ripening of fruits and prolong shelf-life at the same time. In this study, the influence of LPE on anthocyanin accumulation and phytochemical characteristics of sweet cherry was investigated. LPE ($10mg{\cdot}L^{-1}$) was applied to a commercial sweet cherry c.v. '0900 Ziraat' orchard two and four weeks before harvest for two treatment years (2011 and 2012). Preharvest applications of LPE resulted in significant improvement in both pomological and phytochemical attributes at harvest. LPE treatment led to a 17% increase in fruit weight and a 6% increase in soluble solid content when averaged over two experimental years. Fruit phytochemical content and antioxidant capacity were increased significantly. The average total phenolic content of LPE-treated fruits for the two years was $703{\mu}g$ gallic acid equivalent (GAE)/g fresh weight (g FW) compared to $569{\mu}g$ GAE/g FW in the untreated control. Fruits treated with LPE had a 27% and 16% more anthocyanin than the control fruits in 2011 and 2012. Antioxidant capacity of fruits, as measured by TEAC (Trolox equivalent antioxidant capacity) assay, was 12.5 and $11.4{\mu}mol$ TE/g FW in LPE-treated and untreated control fruits, respectively, when averaged over two experimental years. Our results suggest that preharvest application of LPE may have the potential to increase anthocyanin accumulation, improve fruit quality and enhance phytochemical characteristics of sweet cherries.

Growth Characteristics and Chemical Compounds in Schisandra chinensis Collections for the Selection of Superior Lines

  • There are about 2 genera and 49 species of Schisandraceae all over the world which grow 2 genera and 5 species in korea. As'Schisandra'genus, S. chinensis, S. repanda, S. nigra and S. viridicarpa are distributed. As 'Kadsura' genus, there is K. japonica species. Although S. chinensis is often used for food and herbal medicine, 'Cheongsoon'is the only cultivar in korea. Therefore cultivar breeding is required for standardized production of Schisandra chinensis. To select superior lines, characteristics of collected varieties was investigated. These collections were from all the country including Mungyeong, Muju and Jangsu. In the case of 'Schisandra chinensis', analysis of chemical compound is very important. Because in 'Korean Pharmacopoeia', Schisandrin has to contain more than 0.7% of sum of Shizandrin, Gomisin A, Gomisin N as standard compound. According to the investigation, the weight of SC-154 was the highest one that was 99g of fresh fruit and 60g of dried fruit in the 100 granulas of it. As the control group, the weight of cultivar 'Cheongsoon'was 57g of fresh fruit and 40g of dried fruit. The chemical compounds such as Shizandrin A, Gomisin A, Gomisin N and Shizandrin C from the collections were analyzed by HPLC. As a result, all average of total content was 1.67% satisfied with the standard that is over 0.7%. Among them, SC-13, SC-22, SC-40 and SC-45 had more than 2.0% of compound. In this case, the content of Gomisin N was relatively higher than that of the other collections. It can be used for high content compound breeding. This above results indicate that these findings could be used for breeding superior Schisandra chinensis through selection of high quality resource.

The Effect of Irrigation Concentration on the Growth and Fruit Quality of Sweet Pepper(Capsicum annuum L.) in Fertigation (관비재배에서 급액농도가 착색단고추의 생육과 품질에 미치는 영향)

  • Objective of this research was to investigate the effect of irrigation concentration on the growth and fruit quality of sweet pepper(Capsicum annuum L.) in fertigation. The sweet pepper was grown for 210 days with irrigation concentration of EC 0.5, 1.0, 1.5, 2.0, and 3.0 dSㆍ$m^{-1 }$ in fertigation nutrient solution developed by European Vegetable R & D Center, Belgium. The net $CO_2$ assimilation and transpiration rate were the highest in the treatment of 2.0 dSㆍ$m^{-1 }$. The pH in the soil was range of 5.63 ~6.03, the EC increased as the irrigation concentration was getting higher. The SPAD value also increased as the irrigation concentration was getting higher, N, P, K, Mg except Ca were highest in the treatment of EC 2.0 dSㆍ$m^{-1 }$. The growth was good in the treatment of EC 2.0 dSㆍm$m^{-1 }$. The fruit length, width, firmness, and pericarp thickness had no statistical differences among treatments, the fruit fresh weight and dry weight were good in the treatment of EC 2.0 dSㆍ$m^{-1 }$ the yield was good in the treatment of EC 1.5 dSㆍ$m^{-1 }$ and EC 2.0 dSㆍ$m^{-1 }$ The sugar contents was the highest in the treatment of EC 2.0 dSㆍ$m^{-1 }$ with 9.0$^{\circ}$Brix. In conclusion, the optimal irrigation concentration for sweet pepper fertigation was EC 2.0 dSㆍm$^{-1}$ .

Effects of Continuous Application of CO2 on Fruit Quality Attributes and Shelf Life during Cold Storage in Cherry Tomato

  • 'Unicon' cherry tomato (Solanum lycopersicum) is one of the most highly perishable horticultural crops due to its high water content and respiration rate. This study was carried out to assess the effect of continuous application of $CO_2$ (control [air], 3%, and 5%) on the quality and shelf life of cherry tomato fruits stored at $10^{\circ}C$ and $85{\pm}5%$ relative humidity (RH) at two maturity stages (pink and red). Continuous application of $CO_2$ did not affect the soluble solids content (SSC) or titratable acidity (TA) of the fruit at either maturity stage during storage. However, there was a significant difference among treatments in terms of flesh firmness, cell wall thickness, pectin content, vitamin C content, skin color, lycopene content, weight loss, ethylene production rate, respiration rate, and acetaldehyde and ethanol production. Fruits treated with 5% $CO_2$ maintained their high quality with regards to vitamin C, skin color ($a^*$), lycopene content, weight loss, physiological parameters (ethylene production rate, respiration rate, and volatile compounds), flesh firmness, cell wall thickness, and pectin content at both maturity stages compared with 3% $CO_2$ treatment and the control. Continuous application of $CO_2$ (5%) reduced the ethylene production rate and the production of volatile compounds during storage. Therefore, cherry tomato 'Unicon' fruit can be stored for two weeks without losing fruit quality at both maturity stages under continuous application of 5% $CO_2$ as a postharvest treatment.
