In this study, quality characteristics of three different kinds of Gat Kimchi, added with Cheonnyuncho fruit (C-fruit) water extract, Cheonnyuncho cladodes (C-cladodes) water extract, and without Cheonnyuncho water extract (control group), were investigated during storage for 80 days at $5{\pm}1^{\circ}C$. In terms of mineral content of Gat Kimchi, C-fruit group showed higher calcium and zinc contents than the control group, whereas Cheonnyuncho groups showed higher iron content, and C-cladodes showed higher potassium content than the control group. The pH was mostly higher in Cheonnyuncho groups than in the control group until 40 days of storage, whereas the pH of the C-cladodes group significantly decreased after 60 days. On the other hand, titratable acidity showed the reverse tendency during storage. Hunter's color L, a, and b values all increased during the storage period. The hardness value was significantly higher in Cheonnyuncho groups than in the control group after 40 days of storage, and hardness value of the C-fruit group was significantly higher than those of the other groups after 80 days of storage. In terms of sensory evaluation, there was no significant difference between the control group and Cheonnyuncho group during fermentation. As a result, the study suggests that addition of C-fruit extracts increase nutrition and function of Gat Kimchi during storage.

The experiment was conducted to evaluate the effect of fruit skin spray of the lime fertilizer in 'Campbell Early' grapes. The T-N, P, K, Ca and Mg of fruit skin and cluster weight, berry weight, cluster length showed no difference between control and lime fertilizer. But soluble solids in fruit was reduced by fruit skin spray of liquid calcium fertilizer extracted from oyster shell after bagging(LCaB). The anthocyanin content of fruit skin was decreased by air-slaked lime(HCa) and LCaB treatment. Also, occurrence of fruit skin bloom was significantly reduced by HCa and oyster shell powder(OS-CaP) treatment. The berry firmness was significantly increased through liquid calcium fertilizer extracted from oyster shell(LCa) and HCa treatment. Conspicuously, berry elasticity was rather decreased by OS-CaP treatment. However, there was no difference of weight loss of fruit among treatments during room temperature storage.
We investigated changes in fruit quality of Hallabong tangor (Citrus Kiyomi ${\times}$ ponkan) that was packaged with Si+CaO and LDPE film. The flesh ratio during storage was 74.33% (${\pm}3.66$) to 81.56% (${\pm}1.38$). Firmness of M16A, a variant of Hallabong tangor, was higher 100g-force than that of Hallabong tangor, changes of firmness was not shown among film packages. A fruit juice was $12-14^{\circ}$Brix, and this increased somewhat at the end of storage without film packaging. The titratable acidity of the M16A variety was 0.2% lower than that of the Hallabong tangor. Hallabong and M16A maintained freshness and taste for 120 and 60 days, respectively. The level of reducing sugars in the Hallabong tangor was 1% higher than that of the M16A variety. Reducing sugars increased at room temperature storage without film packaging. Total sugar content was 9.19% (${\pm}2.03$) to 12.78% (${\pm}0.75$). The content of vitamin C declined slowly after 105 days of storage. In conclusion, storage of Hallabong tangor with film packaging coated with Si+CaO was effective for maintaining freshness and quality.
This study was conducted to maintain the postharvest shelf-life of summer strawberry cultivars 'Goha' and 'Flamengo' through $CO_2$ (90%) and $ClO_2$ gas ($5{\mu}L{\cdot}L^{-1}$) pre-treatment. The respiration rate of 'Goha' and 'Flamengo' treated with $CO_2$ and $CO_2$ + $ClO_2$ was the lowest during storage. The weight loss with $CO_2$ + $ClO_2$ treatment was about 1% lower than the control group and 'Goha' was the lowest during storage. The pre-treatments effect on soluble solids contents was minimized. The firmness with $CO_2$ and $CO_2$ + $ClO_2$ treatments was only about 30% higher than $ClO_2$ and control. The firmness of 'Goha' was about 2.15N and 'Flamengo' was 2.37N, 15 days after storage. Decayed fruit was shown from after 6 days after storage in control. Control group lost quality 10 days after storage due to decayed fruit rate 20% of 'Goha' and 'Flamengo'. $CO_2$ and $CO_2$ + $ClO_2$ treatments showed the lowest decay rate during storage. Especially, 'Goha' showed around 5% decay fruit rate 10 days after storage. As a result, $CO_2$ + $ClO_2$ pre-treatment is recommended to extend the shelf-life of the summer strawberries.

Effects of 1-MCP(1-methylcyclopropene) on the postharvest life and fruit quality of cucumber 'Baekdadaki' were investigated. Cucumber were held at room and cold chamber($10^{\circ}C$) treated with several concentrations of 1-MCP. Physico-chemical characteristics such as fresh weight and firmness were greatly varied during storage, and the treatment with I-MCP(500ppb) showed the minimal loss of the values at harvest. The peel b value representing a senescence process was higher investigated in 1-MCP(250 and 1,000ppb treatment, and led to the apparent yellowing and softening after cold storage for 15 days. 1-MCP(500ppb) showed lower decay rate and better marketability of cucumber than other treatments after cold storage for 15 days. The respiration rate was higher found in cucumber treated with 1-MCP(250ppb) than in other treatment. Ethylene evolution was most detected in cucumber treated with 1-MCP(1000ppb) after room storage for 6 days. 1-MCP did not affect the production of ethylene in cucumber during room and cold storage.
The experiment described in this paper focused on determining the effects of high-temperature(20$^{\circ}$) treatment of Satsuma mandarins, prior to their storage, on their color development and quality. High-temperature treatment promoted fruit skin color during the storage, decreased the weight loss regardless of their color at the time of their harvest and reduced the decay occurrence until the middle of March, but there was no difference between treatments after the end of March. There was a tendency of higher soluble solid and acid levels in the fruit when high-temperature treatment was applied but this difference was not significant.
Model for optimally dimensioned PE film bag was developed according to fruit size to maintain best quality of 'Fuyu' persimmon in modified atmosphere packaging (MAP) storage based on relationship between quality and oxygen and carbon dioxide in PE film bag. Harvested persimmons were graded into five sizes, and average weights were LL:261, L:217, M:188, S:168, and SS:154 g. Five fruit units of each grade were optimized in five PE film bag sizes of $150{\times}376,\;140{\times}357,\;130{\times}344,\;130{\times}333,\;and\;120{\times}3l8\;mm$. To minimize quality deterioration such as softening and discoloration, optimal oxygen and carbon dioxide concentrations in PE film bag were 0.5-1.0 and 6.0-8.0%, respectively, and optimal thickness of PE film bag according to fruit size were LL:45, L:50, M:55, S:60, and $SS:65\;{\mu}m$. For all fruit sizes, model for PE film bag area $(mm^2)$ was good quadratic simple equation by fruit weight (g): $Y=-4055.707+627.993X_1-0.701{X_1}^2$. Model far optimal oxygen and carbon dioxide (Y) concentration in PE film bag was suited to linear multiple equation by fruit weight $(X_1,\;g)$ and PE film thickness $(X_2,\;{\mu}m)$. Equations for oxygen and carbon dioxide concentrations (%) were $Y=5.798-0.0109X_l-0.0491X_2\;and\;Y=-2.427+0.01927X_l +0.09646X_2$, respectively.
The effects of 1-methylcyclopropene (1-MCP) for controlling ripening processes such as weight loss, fruit softening, soluble solids content (SSC), titratable acidity (TA), and fruit skin color were investigated and also the possibility that 1-MCP can inhibit the development of brown rot was explored in 'Formosa' plum ($Prunus$$domestica$ L.). Fruit were treated with $1{\mu}L{\cdot}L^{-1}$ 1-MCP on the day of harvest and one day after harvest for 16 h at ambient temperature ($20^{\circ}C$), followed by 14 days of shelf life. 1-MCP treatment delayed fruit softening, weight loss and changes in skin color and TA during the shelf life period, but did not affect SSC. These 1-MCP effects were similar with and without delayed treatment. 1-MCP treatment inhibited the development of brown rot caused by $Monilinia$$laxa$ during storage. Our data shows that treatment delays of ${\geq}1$ day before 1-MCP application had no negative effect of fruit softening, fruit skin color, and TA at ambient temperature ($20^{\circ}C$). Overall, these results indicate that 1-MCP can be used to maintain the quality of non-refrigerated plums.
This study was carried out in order to investigate the condition of storage and to evaluate preference of supplementary foods for infants using Korean foods. Thirty-four different kinds of supplementary foods were developed and fourteen representative ones were selected to be analyzed. A safety storage assay and sensory evaluation were conducted. The results are as follows: 1. In the safety storage assay, the microbiological quality of the products was good during the 13 day-storage in refrigerator. After 14 days, the total plate counts in the products were low and were determined safe. During the 17 day-storage in refrigerator, coliform was not found. 2. In the sensory evaluation, fruit products scored high in acceptability and cow liver products scored low.

Lentinula edodes mushrooms cultivated under different relative humidities were wrapped at 4℃ and the results of storage characteristics were investigated. Changes in water content of fruiting bodies during the storage period showed the highest water content in fruit bodies harvested from the treatment with the highest relative humidity. The luminosity of the fresh fruiting bodies showed no significant change during the storage period, and the redness was higher in the relative humidity 95% treatment than in the other treatments. According to this study, the relative humidity of the pileus was 65%, and the content of Ergosterol was 0.67 ± 15 g / L at relative humidity of 65%, 80% and 95%. In addition, amino acid analysis and Principal Component Analysis (PCA) confirmed that methionine was the main cause of changes in storage time and relative humidity.
