담수어와 해수어의 근원섬유단백질의 특성 비교 (Comparison of Biochemical Characteristics of Myofibrillar Protein from Fresh Water Fish and Sea Water Fish)

  • Myofibril and actomyosin were prepared from red muscle and white muscle of fresh water fish and sea water fish, and their biochemical characteristics and SDS PAGE patterns of myofibril were compared. SDS PAGE analysis showed that electrophoretic patterns of myofibril were similar be tween white muscle and red muscle, while difference of 30kDa component of myofibril was detected between fresh water fish and sea water fish. When myofibril were treated with trypsin, difference in hydrolysis of heavy chain was observed between white muscle and red muscle. In activities of Ca ATPase, Mg ATPase, EDTA ATPase and ATPase activity pH curve, myofibrillar protein from fresh water fish showed higher specific activity than those from sea water fish.

대종천 담수어와 반함수어에서의 흡충류 피설유충의 기생상 (Infestation of Larval Trematodes from Fresh-Water Fish and Brackish-water Fish in River Taechong, Kyungpook Province, Korea)

  • 경북 월성군 양북면을 관류하는 대종천에 괴식하는 담수어와 반철수어에서의 흡충류 피설유충 기생상을 알아 보기 위해 1982년 6월부터 10월까지 5개월간 대종천 유역의 3개동, 대본동, 구길동과 호암동에서 투강낚시, 사발모지 등으로 담수어와 반철수어를 채금하였다. 채집된 어류는 어종별로 분류한 다음 어체부위별로 흡충류 피낭유충의 기생상을 조사함과 동시에 신선한 어육 1 gram당 피설유충를 계산하여 감염정도를 추정하였다. 대종천에서 채집된 담수어는 붕어, 꼬치동자개, 버들치, 납지리, 메기 등 5종이었고. 반광수어는 은어와 숭어 2종이 었다. 채집된 7종의 어류에서 4종의 흡충류 피설유충, Exorchis cviformis, Metacercaria hasegawai, Metagonimus yokogawai, Metorchis orientalis와 소속미정 유충을 검출할 수 있었다. 인체에 기생하는 횡천흡충 피예유충은 수은의 담수어, 붕어, 봉치동자개, 떠들치와 1종의 반철수산어, 은어에서 검출할 수 있었으며, 그 기생률은 어종별로 크게 달랐다. 어흉 1 gram당 횡천흡충 피예유충의 평균수는 붕어, 꼬치동자개, 버들치에서는 모두 1개 이하였는데 비하여 은어에서는 109.2개로서 담수어보다 반섬수어에서 그 수가 많았다. 이상의 성적으로 미루어 보아 경북 대종천에 서식하고 있는 담수어와 반함수어의 회를 생식하면 횡천흡충에 감업될 것으로 추정된다.

  • 담수어인 향어와 해수어인 방어의 white muscle과 red muscle로 부터 근원섬유단백질을 조제하여 생육 환경조건이 다른 어류의 근원섬유단백질간에는 어떠한 차이가 있는지에 대하여 알고자 myofibrillar protein ATPase 활성에 대한 온도의 존성과 열안정성을 실험하였다. 향어와 방어 근원섬유단백질의 기질친화도와 $V_{max}$ 값에 있어서는 향어가 방어에 비해 높은 값을 보였고, 활성에 대한 반응온도 및 반응시간에 따른 영향에 있어서는 myofibril의 경우 red muscle이 white muscle에 비해 낮은 활성을 나타냈으며, actomyosin의 경우에 있어서는 향어가 4$0^{\circ}C$에서도 활성증가를 나타낸 반면에 방어는 45$^{\circ}C$, 5$0^{\circ}C$와 같이 반응시간에 따른 활성증가를 나타내지 않았다. 그리고 일반적으로 향어가 방어보다 그리고 white muscle이 red muscle에 비해 높은 반응생성물을 나타내었다. 열안정성에 대한 열역학량(D value, Z value, )은 muscle 종류간 그리고 환경이 다른 어종간에 차이를 보였다. 향어와 방어 둘다 white muscle이 red muscle에 비해 안정하였으며, 향어 myofibrillar protein이 방어 myofibrillar protein보다 열에 안정한 값을 보여 환경조건이 열안정성에 차이를 줄 수 있는 것으로 나타났다.

국내 유통 민물어류와 연안산 패류의 중금속 함량에 관한 조사 (A Study on Heavy Metal Contents of the Fresh Water Fish, and the Shellfish in Koran)

  • 식품의 안전성을 확보하고 건강상의 위험을 방지하기 위하여 또 수산 어패류 중의 중금속 분포상태를 파악하기 위해 국내에서 유통되고 있는 민물어류 11종 166건, 패류 14종 153건 등 총 319건을 대상으로 Pb, Hg, Cd, Cr, Fe, Mn, Zn, Cu 의 8개 금속을 A.A.S. 와 Mercury Analyzer로 측정하여 다음과 같은 결과를 얻었다. 1. 민물어류에서의 중금속 평균함량은 Pb 0.075, Hg 0-.053, Cd 0.002, Cr 0.135, Fe 8.695, Mn 1.078, Sn 9.491, Cu 0.548 mg/kg으로 나타났다. 패류에서의 중금속 평균 함량은 Pb 0.059, Hg 0.007, Cd 0.146, Cr 0.147, Fe 40.808, Mn 7,738, Zn 13.943, Cu 2.731 mg/kg으로 조사되어, Cd , Fe, Mn, Cu 등이 민물어류에 비해 높은 것으로 나타났다. ()P<0.001). 2. 중금속 함량은 산지에 따라 유의한 차이가 있는 것으로 나타났다. 민물어류의 경우 Mn 과 Zn 함량이 지역간의 유의성을 나타냈다. (p<0.001). 패류의 경우는 Fe, Mn, Zn 함량이 지역간의 유의성을 나타내었다. (p<0.01). 3. 계절에 따라 중금속 함량에도 차이가 있는 것으로 나타났다. (p<0.05). 민물어류에서는 겨울철의 Pb, Zn, Cr, Cu 함량이 높은 것으로 나타났고, 패류에서는 겨울철에 Pb, Zn 함량이 높은 것으로 나타났다. 4. 조사된 결과를 종합 고찰하면 우리나라 서식하고 있는 어패류에 함유된 중금속 함량은 유해농도이하이며 , Fe, Mn, Zn 등 미량 영양염류 함량은 비교적 높은 것으로 나타났다.

Fatty Acid Composition of 72 Species of Korean Fish

  • Fatty acid compositions of seventy-two species of Korean fish muscle, 59 species of sea water fish and 13 species of fresh water fish, were studied. Polyunsaturated fatty acid (PUFA) was the richest fatty acid group in all fish samples, accounting for $38.0\pm10.3\%$ of total fatty acids. Monounsaturated fatty acids $(MUFA,\;31.4\pm9.67\%)$ and saturated fatty acids $(SFA, 30.5\pm3.81\%)$ showed a similar level. There was a positive correlation between the total lipid content and MUFA (r=0.7788, p<0.001) and a negative correlation between the total lipid content and PUFA (r= -0.7786, p<0.001) while there was no correlation between the total lipid content and SFA. The proportion of n-3 PUFA and n-6 PUFA was $29.7\pm8.73\%$ and $6,48\pm3.70\%$, respectively, in all fish samples. The n-3 PUFA was rich in sea water fish while n-6 PUFA was rich in fresh water fish. The migratory fish contained the highest level of the n-3 PUFA $(1.82\pm1.01g/100g\;muscle)$, followed by the fresh water fish $(1.09\pm1.04g/100g\;muscle)$, the reef fish $(0.90\pm0.60g/100g\;muscle)$ and the demersal fish $(0.77\pm0.38g/100g\;muscle)$. There was a positive correlation between the total lipid and n-3 PUFA content, $y=0.2083\times+0.05 (r=0.9352,\;p<0.0010)$.

일본 어류 양식업의 발전과정과 산지교체에 관한 연구 : 참돔양식업을 사례로 (A study on Development Process of Fish Aquaculture in Japan - Case by Seabream Aquaculture -)

  • When we think of fundamental problems of the aquaculture industry, there are several strict conditions, and consequently the aquaculture industry is forced to change. Fish aquaculture has a structural supply surplus in production, aggravation of fishing grounds, stagnant low price due to recent recession, and drastic change of distribution circumstances. It is requested for us to initiate discussion on such issue as “how fish aquaculture establishes its status in the coastal fishery\ulcorner, will fish aquaculture grow in the future\ulcorner, and if so “how it will be restructured\ulcorner” The above issues can be observed in the mariculture of yellow tail, sea scallop and eel. But there have not been studied concerning seabream even though the production is over 30% of the total production of fish aquaculture in resent and it occupied an important status in the fish aquaculture. The objectives of this study is to forecast the future movement of sea bream aquaculture. The first goal of the study is to contribute to managerial and economic studies on the aquaculture industry. The second goal is to identify the factors influencing the competition between production areas and to identify the mechanisms involved. This study will examine the competitive power in individual producing area, its behavior, and its compulsory factors based on case study. Producing areas will be categorized according to following parameters : distance to market and availability of transportation, natural environment, the time of formation of producing areas (leaderㆍfollower), major production items, scale of business and producing areas, degree of organization in production and sales. As a factor in shaping the production area of sea bream aquaculture, natural conditions especially the water temperature is very important. Sea bream shows more active feeding and faster growth in areas located where the water temperature does not go below 13∼14$^{\circ}C$ during the winter. Also fish aquaculture is constrained by the transporting distance. Aquacultured yellowtail is a mass-produced and a mass-distributed item. It is sold a unit of cage and transported by ship. On the other hand, sea bream is sold in small amount in markets and transported by truck; so, the transportation cost is higher than yellow tail. Aquacultured sea bream has different product characteristics due to transport distance. We need to study live fish and fresh fish markets separately. Live fish was the original product form of aquacultured sea bream. Transportation of live fish has more constraints than the transportation of fresh fish. Death rate and distance are highly correlated. In addition, loading capacity of live fish is less than fresh fish. In the case of a 10 ton truck, live fish can only be loaded up to 1.5 tons. But, fresh fish which can be placed in a box can be loaded up to 5 to 6 tons. Because of this characteristics, live fish requires closer location to consumption area than fresh fish. In the consumption markets, the size of fresh fish is mainly 0.8 to 2kg.Live fish usually goes through auction, and quality is graded. Main purchaser comes from many small-sized restaurants, so a relatively small farmer and distributer can sell it. Aquacultured sea bream has been transacted as a fresh fish in GMS ,since 1993 when the price plummeted. Economies of scale works in case of fresh fish. The characteristics of fresh fish is as follows : As a large scale demander, General Merchandise Stores are the main purchasers of sea bream and the size of the fish is around 1.3kg. It mainly goes through negotiation. Aquacultured sea bream has been established as a representative food in General Merchandise Stores. GMS require stable and mass supply, consistent size, and low price. And Distribution of fresh fish is undertook by the large scale distributers, which can satisfy requirements of GMS. The market share in Tokyo Central Wholesale Market shows Mie Pref. is dominating in live fish. And Ehime Pref. is dominating in fresh fish. Ehime Pref. showed remarkable growth in 1990s. At present, the dealings of live fish is decreasing. However, the dealings of fresh fish is increasing in Tokyo Central Wholesale Market. The price of live fish is decreasing more than one of fresh fish. Even though Ehime Pref. has an ideal natural environment for sea bream aquaculture, its entry into sea bream aquaculture was late, because it was located at a further distance to consumers than the competing producing areas. However, Ehime Pref. became the number one producing areas through the sales of fresh fish in the 1990s. The production volume is almost 3 times the production volume of Mie Pref. which is the number two production area. More conversion from yellow tail aquaculture to sea bream aquaculture is taking place in Ehime Pref., because Kagosima Pref. has a better natural environment for yellow tail aquaculture. Transportation is worse than Mie Pref., but this region as a far-flung producing area makes up by increasing the business scale. Ehime Pref. increases the market share for fresh fish by creating demand from GMS. Ehime Pref. has developed market strategies such as a quick return at a small profit, a stable and mass supply and standardization in size. Ehime Pref. increases the market power by the capital of a large scale commission agent. Secondly Mie Pref. is close to markets and composed of small scale farmers. Mie Pref. switched to sea bream aquaculture early, because of the price decrease in aquacultured yellou tail and natural environmental problems. Mie Pref. had not changed until 1993 when the price of the sea bream plummeted. Because it had better natural environment and transportation. Mie Pref. has a suitable water temperature range required for sea bream aquaculture. However, the price of live sea bream continued to decline due to excessive production and economic recession. As a consequence, small scale farmers are faced with a market price below the average production cost in 1993. In such kind of situation, the small-sized and inefficient manager in Mie Pref. was obliged to withdraw from sea bream aquaculture. Kumamoto Pref. is located further from market sites and has an unsuitable nature environmental condition required for sea bream aquaculture. Although Kumamoto Pref. is trying to convert to the puffer fish aquaculture which requires different rearing techniques, aquaculture technique for puffer fish is not established yet.

새인두흡충(Clinostomum complanatum)에 의한 인두염 제1례 (The first human case of Clinostomum complanatum (Trematoda: Clinostomidae) infection in Korea)

  • 새인두흡충에 의한 인체감염 제1례를 보고한다. 환자는 56세 된 남자로서 3-4일간의 인후부 이 물감과 염증성 증상으로 이비인후과의원을 방문하여 오른쪽 인두 후벽에 흡착한 충체를 제거하였다. 충체는 Clnostoumum complanatum으로 동정되었다. 환자는 평소 담수어의 생식을 즐겼으며 의원 방문 4일전에도 낚시로 포획한 담수어를 생식한 적이 있었다. 우리 나라에서도 이 흡충에 의한 인두염의 예방을 위해 담수어의 생식에 더 깊은 주의가 요망된다고 생각된다. Clinostomum complanatum의 우리 말 이름을 새인두흡충으로 제안한다.

간흡충(肝吸蟲)의 제이중간숙주(第二中間宿主)에 관한 실험적(實驗的) 연구(硏究) Ⅱ. 참붕어, 묵납자루 및 큰납지리 체내(體內)에 있어서 간흡충(肝吸蟲) 피낭유충(被囊幼蟲)의 운명(運命)에 관하여 (Experimental Studies on the Second Intermediate Hosts of Clonorchis sinensis II. Observations on the fate of encysted cercariae of Clonorchis sinensis in the fish hosts, Pseudorasbora parva, Acheilognathus signifer and Acanthorhodeus asmussi)

  • The present experiments proposed to pass judgement upon the suitability as the second intermediate host of Clonorchis sinensis, of three kinds of fresh-water fish by having them infected with the cercaria of Clonorchis sinensis and then observing the penetrating ability of the cercaria, and maturity, the process of degeneration and extinction, and infectivity of the metacercaria of Clonorchis sinensis. The following is a brief summary of the leading facts gained through the experiments; 1. P. parva was easily subject to invasion of the cercaria, A. signifer was much less subject to the invasion, and finally A. asmussi was hard to invade. And the infectivity of the cercariae was in proportion to their penetrating ability mentioned in the above. 2. The examination of the cercariae after having three kinds of fresh-water fish infected with them disclosed that 24 hours after the infection, all of the cercariae formed their cysts in muscle and the metacercariae kept growing, and that 7 days later the metacercariae were found folding their bodies twice, and that in 15 days the characteristic structure of the metacercariae was complete and they made a vigorous rotary movement intermittently. 3. Then the metacercariae came to a state of maturity and beyond this stage some metacercariae in P. parva started the process of degeneration and extinction in 133 days; some in A. asmussi, in 140 days; and A. signifer, in 70 days. As more days elapsed, their degeneration and extinction increased in number, and in 269 days all of them in A. signifer became dead while those in A. asmussi were all dead in 460 days. However almost all of them in P. parva survived even after 770 days. The results shown above revealed that P. parva was the most suitable as the second intermediate host among three kinds of fresh-water fish and that A. signifer and A. asmussi were not quite recommendable as the second intermediate host. The ability of the cercaria to invade fresh-water fish, and life span of the metacercaria within fresh-water fish vary outstandingly according to species of fresh-water fish. An explanation as to the mechanism must wait as the subject to be further pursued.

경남 태화강에서 채집된 담수어에 있어서 흡충류 피낭유충 기생상의 변화 (Changing patterns of infection with digenetic larval trematodes from Iresh-water fish in River Taewha, Kyongnam Province)

  • 1988년 3월부터 동년 10월까지 경남 청주군의 서북부와 남서부 사이에 위치하고, 태백산맥의 남쪽 끝에 형성된 가지산, 신불산 등에서 기원하여, 청주군과 청주시를 외류한 후 충주호에 하구를 형성하고 있는 태화강에서 투망, 낚시 등으로 담수어와 반함수어를 채집하여 어체 부위별로 각종 흡충류 피낭유충의 기생상을 조사하였다. 한편 얻은 결과를 주(1980)의 조사성적과 비교하였다. 태화강에서 채집된 어류는 붕어, 꼬치동자개, 꺽지, 잉어, 몰개, 긴몰개, 파랑볼우럭, 버들치, 납지리, 모래 무지, 참붕어, 돌고기, 흰줄납줄개, 피래미, 갈겨니 및 은어의 16종이었다. 채집된 16종 어류에서 7종의 피낭유충(Clonorchis sinensis, Cyathocotyle orientalis, Echinochasmus species, Metacercaria hasegawai, Metagonimus yohogawai, Exorchis oviformis 및 Metorchis orientalis)과 4종의 소속미정 피낭유충을 검출할 수 있었다. 인체에 기생하는 간흡충의 피낭유충은 7종의 담수어에서 검출할 수 있었고, 그 기생률은 1980년 주의 조사성적에 비하여 높았으나, 기생정도에 있어서는 3종의 어류(꼬치동자개, 몰개, 돌고기)에서는 1980연에 비해 낮았으며, 납지리에서는 높았다. 요꼬가와흡충 피낭유충의 기생률은 5종의 담수어(붕어, 몰개, 납지리, 봉치동자개, 파랑볼우럭)에서는 낮았으나, 돌고기, 피래미, 갈겨니에서는 그 율이 높았고, 은어에서는 변동이 없었다. 요꼬가와흡충 피낭유충의 기생 정도는 1980연의 조사성적에 비하여 일반적으로 증가되었으나, 은어에서는 감소된 것으로 나타났다. Cythocotyle orientalis, Echinochtl'smus sp., Exorchis owiformis, 및 _Metacercaria hasegawai 피낭유충의 기생율은 어종에 따라 심한 차이를 나타내었으며, 1980연의 조사 성적에 비해 높았다. 비늘, 지느러미 및 꼬리에서의 피낭유충 기생율은 변동이 심하여, 비교할 수 없었으나, 요꼬가와흡충 피낭유충 기생율은 일반적으로 1980연의 조사 성적에 비하여 높았다. 이상의 성적으로 미루어 태화강에서 채집된 어류에 있어서 간흡충을 비롯한 흡충류 피낭유충 기생률은 아직도 높으나, 그 기생 정도는 1980연에 비해 어종별로 심한 변동을 나타내고 있음을 알 수 있었다.
