크랜베리를 첨가한 막걸리의 품질 특성 (Quality Characteristics of Makgeolli Supplemented with Cranberries)

  • Korean traditional rice wine, Makgeolli, has been widely consumed and increasingly popular in Korea. In this study, we examined Makgeolli supplemented with cranberries (0, 5, 10 and 15% by rice weight) during fermentation for seven days for the various quality characteristics : pH, total acidity, soluble contents, color, reducing sugars, alcohol contents, and DPPH free radical scavenging activities, total flavonoids, microbial properties, and sensory properties. After the pH value decreased from a range of 4.40~5.63 to 3.83~3.94 up to day 3, the pH gradually increased until day 7. As fermentation proceeded, soluble contents and reducing sugar increased in most of the samples, with a temporary reduction after day 2. There were no differences in L and b color values, but the "a" value showed significant differences with the rate of cranberry added. The DPPH free radical scavenging activity and total flavonoid content of cranberry Makgeolli were higher than those of the control. After fermentation for seven days, the alcohol content ranged from 14.57 to 17.40%, while total acidity levels were within the range of 0.50 to 0.54%. Yeast cell counts increased until day 3 and then, gradually deceased. In the sensory evaluation, Makgeolli with 10% cranberry showed the highest overall acceptance.

동해산 가다랑어 훈연조미제품의 저장 중 정미성분 및 관능적 품질의 변화 (Changes of Taste Compounds and Sensory Qualities during Storage in the Seasoned and Smoked Product of the East Sea Skipjack Tuna (Euthynus pelamis))

  • Powder and liquid products of the seasoned and smoked fish were manufactured with small-sized skipjack tuna (Euthynus pelamis) captured in the East Sea, Korea. The property changes of nucleotides and their related compounds, amino acid, and sensory attribute during storage were analyzed. IMP content was the highest among the nucleotides and their related compounds followed by inosine in both powder and liquid products. Nucleotides and their related compounds of the powder product increased slightly as storage period increased, while those of liquid product were constant. Glutamic acid $(15.6{\%})$, aspartic acid $(10.7{\%})$, and lysine $(9.3{\%})$ were major amino acids of the power product, while histidine $(36.2{\%})$ and taurine $(10.6{\%})$ were high in the liquid product. Free amino acid contents of liquid product increased during storage periods. There was no significant difference In the concentration of nucleotides and their related compounds, and composition of free amino acid between the products with/without liquid smoke. Aroma and acceptance were good in both products, while bitterness and sweetness were poor.

Experimental study on TLDs equipped with an upper mounted baffle

  • Tuned Liquid Dampers (TLDs) have gained wide acceptance as a system for structural control and energy dissipation. However, they face limitation caused by low damping in deep water, which affects their efficiency. Another problem with deep water TLDs is that not all water depth participates in energy dissipation. This paper investigated the effect of upper mounted baffles on the effectiveness of TLDs. The Vertical Blockage Ratio (VBR) of baffles ranged from 10% - 90%. The TLD (with and without baffle), structure, and combined structure with TLD (with and without baffles) were subjected to free and harmonic forced vibrations. Results indicated that baffles could significantly enhance the energy dissipation of TLDs, thus reducing structural responses more than structures equipped with ordinary TLDs. It was found that, there was an optimum value of VBR in which the TLD's efficiency was maximized. When TLD had an appropriate VBR, the structural acceleration and displacement responses were suppressed significantly up to 51% and 56%, respectively.

뽕잎 분말을 첨가한 매작과의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activities of Maejakgwa added Mulberry Leaf Powder)

  • This study was conducted to investigate the effect of mulberry leaf powder on the antioxidant activity and the quality characteristics of maejakgwa (a Korean traditional cookie). Maejakgwa was prepared with different amounts of mulberry leaf powder (in ratios of 0, 3, 6, 9 and 12% to the flour quantity). The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenol content in mulberry leaf powder and maejakgwa. For analyzing the quality characteristics, bulk density and the pH of the dough, moisture contents, color, texture profile analysis and sensory evaluations were measured. The total phenol contents, DPPH free radical scavenging activity, bulk density of the batter and the a values of maejakgwa significantly increased with increasing mulberry leaf powder, whereas the pH of the batter, L values and b values of the maejakgwa significantly decreased with increasing mulberry leaf powder content. Finally, the results of the acceptance test indicated that maejakgwa containing 6% mulberry leaf powder had the highest scores. From these results, we suggest that mulberry leaf is a good ingredient for increasing consumer acceptability as well as the functionality of maejakgwa.

Performance and Reliability Characteristics of the Free Piston Free Displacer Stirling Cryocooler

  • This paper presents the results of a series of performance and reliability tests for the Stirling cryocooler. Infrared sensor systems incorporating cryocoolers are required to be qualified to the appropriate specification for the performance and reliability. FPFD Stirling cryocooler is currently under development for cooling infrared detector. Manufactured Stirling cryocooler delivers approximately 0.9W cooling at 80K for 30W∼40W of input power. It takes approximately 2 minutes to cool down to 80K at the ambient temperature of 23$^{\circ}C$. Performance characteristics for the vibration, acoustic noise, EMI and leak rate of the Stirling cryocooler are evaluated. We performed low and high temperature keeping test from -32$^{\circ}C$ to +52$^{\circ}C$ and operating test at high and low temperature cyclic range with acceptance tests performed at scheduled intervals. Cooling capacity is determined as a function of the temperatures at the compressor, hot end and cold tip at the expander. Finally, we describe the experimental facility for the MTTF evaluation and some typical results of the Stirling cryocooler.

노인의 무료요양원 적응 척도 개발 (Scale Development of Free Nursing Home-Adjustment for the Elderly)

  • Purpose: The purpose of this study was to develop a scale of free nursing home adjustment for the elderly in Korea. Method: The developmental processes were construction of a conceptual framework, development of preliminary items, verification of content validity, twice data gathering, verification of construct validity, and reliability of final items. The first 53 preliminary items were obtained through review of literatures about nursing home adjustment and in depth interviews with 5 staffs of nursing home. These items were reviewed by five specialists for content validity and 39 items were chosen. The first data was collected from 107 elderly residing in 3 nursing homes and the second survey was from 147 residents who were living in five nursing homes. Finally this data was analyzed for construct validity and reliability. Result: There were 23 final items which were sorted into 5 factors. The factors were identified as 'Relocation distress symptom'(8items), 'Making friends'(4items), 'Acceptance of new residence'(6items), 'Difficulty in group life'(3items), and 'Having self-worth'(2items). The cumulative percent of variance was 53.466%. The reliability of the scale, Cronbach's alpha was .837. Conclusion: The result of this study could be used for measuring nursing home adjustment of the elderly. However, for further validity and reliability, repeated researches are needed.

사과산 첨가량에 따른 오리 육수의 품질 특성 (Quality Characteristics of Duck Stock by the Addition of Malic Acid)

  • This study was performed to develop duck stock using various nutritional elements in duck bone by the addition of malic acid (0.5%, 1.0%, 1.5% and 2.0%). Moisture contents, b value, and pH were decreased, while the L value, a value, salinity, and sugar contents were increased by increasing the ratio of malic acid. Thirty four types of free amino acid were detected, and the highest individual amino acid content was 1.0%. In a test for different attributes, malic acid content significantly affected properties including color intensity, transparency, acid flavor, savory flavor, acid taste, and savory taste. In the acceptance test, a malic content of 1.0% was preferred for appearance, taste, and overall quality. The optimal malic acid content for maximizing the overall quality of duck stock was 1.0%.

Comparative Study Between Geopolymer and Cement Waste Forms for Solidification of Corrosive Sludge

  • Two waste forms, namely cement and geopolymer, were investigated and tested in this study to solidify the corrosive sludge generated from the surface and precipitates of the tubes of steam generators in nuclear power plants. The compressive strength of the cement waste form cured for 28 days was inversely proportional to waste loading (24.4 MPa for 0wt% to 2.7 MPa for 60wt%). The corrosive sludge absorbed the free water in the hydration reaction to decrease the cementation reaction. When the corrosive sludge waste loading increased to 60wt%, the cement waste form showed decreased compressive strength (2.7 MPa), which did not satisfy the acceptance criteria of the repository (3.45 MPa). Meanwhile, the compressive strength of the geopolymer waste form cured for 7 days was proportional to waste loading (23.6 MPa for 0wt% to 31.9 MPa for 40wt%). The corrosive sludge absorbed the free water in the geopolymer when the water content decreased, such that a compact geopolymer structure could be obtained. Consequently, the geopolymer waste forms generally showed higher compressive strengths than cement waste forms.

National HPV Immunisation Programme: Knowledge and Acceptance of Mothers Attending an Obstetrics Clinic at a Teaching Hospital, Kuala Lumpur

  • Background: Introduction of the HPV vaccine is a forefront primary prevention method in reducing the incidence of carcinogenic human papillomavirus (HPV) and cervical cancer. The Malaysia government has implemented the National HPV immunisation programme since 2010, supplying HPV vaccine free to targeted 13 year olds. This study aimed to explore the level of knowledge among mothers on cervical cancer, HPV, HPV vaccine and National HPV (NHPV) immunisation programme since its' implementation. It also assessed acceptance of mothers towards HPV vaccine being administered to their daughter, son or themselves. Materials and Methods: A cross sectional study was conducted on 155 respondents using self-administered questionnaires; conducted in December 2012 at the Obstetrics and Gynaecology Clinic in a teaching hospital in Kuala Lumpur. Respondents were selected using a multistage sampling technique. Results: A response rate of 100% was obtained. Overall, 51.0% of mothers had good knowledge, with 55% having good knowledge of cervical cancer, 54.2% for both HPV and the National HPV immunisation programme and 51.0% for the HPV vaccine. Regression analyses showed that ethnicity was associated with knowledge on cervical cancer (p=0.003) while education was associated with knowledge on HPV (p=0.049). Three factors are associated with knowledge of the National HPV immunisation programme; ethnicity (p=0.017), mothers' education (p=0.0005) and number of children (p=0.020). The acceptance of HPV vaccine to be administered among daughter was the highest at 87.1%, followed by for mothers themselves at 73.5%, and the least is for sons 62.6%. Conclusions: This study found that the overall level of knowledge was moderate. Adequate information on cervical cancer, HPV, HPV vaccination and the National HPV immunisation programme should be provided to mothers in order to increase acceptance of the HPV vaccine which can reduce the disease burden in the future.

장애-비장애 유아 통합 그룹에 적용된 이야기 기반 상호적 음악 활동에 따른 유아의 또래수용 및 놀이상호작용 변화 (Changes in Peer Acceptance and Play Interactions in Integrated Groups of Young Children With and Without Disabilities Through Story-Based Interactive Music Activities)

  • 본 연구는 통합 어린이집을 이용하는 장애-비장애 유아를 대상으로 이야기 기반 상호적 음악 활동이 유아의 놀이 상호작용 행동과 비장애 유아의 장애 유아에 대한 또래수용 태도에 미치는 영향을 확인하고자 하였다. 대상자는 만 3-5세의 발달장애 및 발달 지연 유아 6명, 비장애 유아 21명이다. 대상자는 통합 그룹과 비통합 그룹에 배정되어 30분씩 주 2회, 총 10회기의 중재에 참여하였다. 중재는 다양성 인식, 행동 전략 습득, 재경험 및 확장의 3단계로 구성되었으며, 매 회기 중재 이후 자유 놀이 중 나타나는 놀이 상호작용 행동을 측정하였고, 중재 전후에 사회적 측정법을 사용하여 비장애 유아의 또래수용 태도를 측정하였다. 연구 결과, 통합 그룹에 소속된 비장애 유아와 장애 유아의 상호놀이 단절이 유의하게 감소하고, 비장애 아동의 공동행동과 장애 유아의 공동주의가 유의하게 증가한 것으로 나타났다. 반면, 통합 그룹의 비장애 유아는 또래 수용 태도에서 유의한 변화가 없었고 비통합 그룹의 비유아는 장애또래에 대한 수용 태도가 유의하게 감소하였다. 본 연구 결과는 이야기 기반 상호적 음악 활동이 장애-비장애 유아 간 상호작용을 향상시키는 효과적인 중재가 될 수 있음을 보여 준다. 반면, 상호작용의 구체적인 변화에 비해 또래수용 태도에서의 미비한 결과는 유아들의 발달수준을 고려할 때 보다 장기적이고 체계적인 개입이 필요함을 시사한다. 또한 장애와 비장애 유아의 개별적 필요에 따른 맞춤형 개입의 중요성도 강조된다. 본 연구는 장애-비장애 유아의 사회적 통합을 위한 개입이 강조되는 시점에 체계적 중재 방향에 대한 중요한 시사점을 제시했다는 데 의의가 있다.
