프랜차이즈 기업의 핵심역량과 발상의 전환을 통한 신규브랜드 성공전략 사례연구 - (주)마세다린의 가마로 강정 사례를 중심으로 - (The Case Study of Successful Strategies for Launching New Brands in Franchise Companies through Core Competence and Paradigm Shift : Based on Cases of'Gamarogangjung'of Masedarin Inc.)

  • 본 연구의 목적은 (주)마세다린의 가마로 강정 사례를 바탕으로 프랜차이즈 기업의 신규브랜드 성공전략을 도출하기 위한 것이다. 가마로 강정의 사례를 분석한 결과, 성공요인은 다음과 같이 나타났다. 첫째, 기업이 지닌 핵심역량을 활용한 것이다. 다년간 치킨프랜차이즈를 운영해온 (주)마세다린은 차별화된 기술 및 인프라를 보유하고 있었으며, 이를 통한 신규브랜드 론칭은 신규브랜드 성공의 요인 중 하나였다. 둘째, 가마로 강정은 적극적인 시장 지향적 전략을 활용하였다. 소비자의 니즈를 파악하고 전사적으로 공유하여 즉각적으로 반영한 것이 성공요인이라 할 수 있다. 셋째, 비즈니스 모델을 차별화한 것이다. 배달시키거나 방문하여 구입하는 치킨을 테이크아웃의 형태로 전환함으로써 많은 비용을 절감하였다는 부분이 성공요인이라 할 수 있다. 넷째, 새로운 업태의 개발이다. 기존의 치킨전문점, 테이크아웃전문점과 차별화되는 새로운 업태의 개발을 한 것이 성공요인이라 할 수 있다. 다섯째, 진정성의 소구이다. 가맹사업에 대하여 부풀리지 않고 솔직하게 설명하는 사업설명회의 차별화는 높은 가맹계약률을 불러왔다. 넷째, 입지조건에 대한 발상의 전환이다. 테이크아웃 점포는 B급 입지에 입점하는 것이 일반적이나 가마로 강정은 A급 입지에 입점함으로써 박리다매를 가능하도록 하였다. 마지막으로, 철저한 교육이다. 개점 전 교육을 반복적으로 오랜 기간에 걸쳐 실시하여 완벽하게 숙달시킴으로써 개점 직후에도 가맹점주가 능숙하게 운영할 수 있었던 것이 가마로 강정의 성공요인이라 할 수 있다.

편의점 도시락의 식단형태별, 가격대별, 편의점 브랜드별 영양성분 함량 평가 (Evaluation of Nutritional Content in Convenience Store Lunchboxes by Meal Type, Price, and Store Brand)

  • Objectives: This study investigated the menu and nutritional contents of convenience store lunchboxes, and evaluated the nutritional content by meal type, price, and store brand. Methods: In September 2019, 93 convenience store lunchboxes from the top five franchise stores were purchased. Relevant information on price, food weight, food ingredients, cooking methods, and nutrition labeling were subsequently collected. Nutritional content was evaluated based on the daily value (DV) and Index of Nutritional Quality (INQ), and energy contribution of carbohydrate, protein, fat, saturated fat and sugar was compared with the recommended range. Results: Most lunchboxes included the food groups; grains/starches, meats/fish/eggs/legumes, and vegetables. However, none provided fruits, and only a few lunchboxes provided milk/milk products. Stir-frying, deep-frying, and pan-frying were the most frequent methods of cooking. The average energy content of the lunchboxes was 736.6 kcal, whereas the average contents of protein, fat and saturated fat were higher than 40% of the DV, and sodium content was 66.8% of the DV. The contents of most nutrients in traditional type lunchboxes were higher, as compared to nutrients in onedish type lunchboxes. Considering pricing of lunchboxes, protein and sodium contents were higher in the higher-priced lunchboxes as compared to lower-priced lunchboxes, but there were no differences in the INQs. The contents of energy, protein, fat, saturated fat, and cholesterol significantly differed by brand. Conclusions: Our results indicate that convenience store lunchboxes contain high levels of protein, fat, saturated fat, and sodium. The nutritional contents differed by meal type, price, and store brand, and higher price did not imply higher nutritional quality. We propose the need to educate consumers to check nutrition labels and purchase appropriate lunchboxes. Manufacturers also need to make efforts to reduce the amounts of fat, saturated fat, and sodium, and not provide protein in excess.

여자 중.고등학생의 의복구매 의사결정 유형과 관련변인연구 (A Study on the Decision-Making Styles and the Related Variables in the Apparel Purchase of Female Adolescents)

  • The purpose of this study was to 1) segment female adolescent consumers into consumer groups displaying different consumer decision-making styles 2) to determine the consumer characteristics(clothing involvement information search store patronage and demographic variables) that related to each consumer segment and 3) to identify the interrelationship between the consumer characteristics. Decision-making styles were measured by 32 seven-point Likert type scales adapted from Sproles & Kendall and Shim & Kot A total of 78 statements dealing with three aspects of consumer characteristics was adapted from previous research. Data were collected from 567 2nd grade female middle and high school students in Seoul via self-administered questionnaires. and were analysed by frequency factor analysis ANOVA cluster analysis χ2 -test and Duncan's multiple range test. The results of this study were as follows: As a results of cluster analysis and ANOVA on seven factors of desion-making styles(1. brand-consiousness 2. novelty/fashion-consciousness 3. recreational/hedonis-tic orientation, 4. impulsive/carelessness, 5. price-consciousness/value-for-money, 6. perfectionism/high quality orientation 7. habitual/brand-royal consciousness) three consumer groups were identified and labeled as puality-oriented/non-utlitarian shoppers price-oriented shoppers and apathetic shoppers. Quality-oriented/non-utilitarian shoppers showed the highest clothing involvement scores of all aspects the highest consumer knowledge/experience most active ongoing information search and prepurchase information search. They preferred department store and franchise store for apparel shopping and considered service/reliability atmosphere variety of goods as important store attributes, Price-oriented shoppers showed prepurchase information search and planned purchase behavior actively. They preferred factory outlet store specialty stre and considered price very important as store attributes. Apathetic shoppers showed the lowest scores of all aspects of clothing involvement and most passive behavior in information search activities except showing the highest planned purchase. They preferred regional markets.

유통경로상의 지배구조형태와 영향전략이 신뢰에 미치는 영향

  • The franchise system has become more widely adopted by Korean distribution industries than before as foreign direct investment is liberalized in these industries. However, a number of problems has arisen between franchisers and franchisees recently. In this regard, the objective of this study is to identify problems arisen between franchisers and franchisees of convenience store operation. More specifically, this paper investigates how credibility between two parties is affected by the internal political structures, including bureaucratic structure and relational norms, and impact strategies of franchisers. The results of this study can be summarized as follows : Under rapidly changing channel environment, credibility between franchisers and franchisees tend to be characterized as the bureaucratic structure rather than relational norms. This result suggests that franchisees are more likely to recognize the power of franchisers in Korean convenience stores. This paper also shows that the adoption of coercive impact strategies decreases credibility and vice versa. The results of this paper suggest following implications. In order to have mutually beneficial relationship franchisers and franchisees have to share benefits and costs incurred by their convenience store operation, and to raise their ability to revise contract terms to accommodate changes in external environments. It is also important for the development of convenience store operation to construct more efficient relationship between franchisers and franchisees by adopting supportive norms rather than opportunistic ones.

아이스크림 전문점의 고객 선택 요인과 만족에 관한 연구 (A Study on Determinant Factors and Choice Intentions Ice Cream Stores)

  • This study focused on the attribution factors affecting customers' satisfaction and revisit behaviors related to ice cream stores. For this study, 180 ice cream consumers who were patrons of ice cream franchise stores were randomly selected. Among them, 31 did not completed the survey. Therefore, a total of 149 survey questionnaires were analyzed for the results. All results were carried out using the frequency, factor analysis, cross tabs, and regression procedure of the SPSS 10.0 package. The results indicated that customers who visit ice cream stores $2{\sim}3$ times per month have a preference for a particular ice cream store. Determinant factors for ice cream specialty stores were summarized as the extensiveness of the menu, advertisements and familiarity, economical benefits, convenience inside the store, location and accessibility, and kindness. Among these, four factors (extensiveness of menu, advertisement and reputation, economical benefits, location and accessibility) significantly affected the level of customer satisfaction.

서비스품질 관리를 위한 프로세스 접점에 관한 연구 : 프랜차이즈 외식업을 중심으로 (A Study on the Process Encounter for Service Quality Control : Focusing on franchise restaurant)

  • Purpose - Foodservices have grown to over 60% of the franchise industry. However, despite reaching this high level, the foodservice franchise industry is experiencing severe ups and downs. While factors such as expansion by franchises and the entry of large multinational firms are causing this imbalance, the more serious problem faced by franchisees is the lack of know-how and correct operating procedures. Franchise headquarters should advise franchisees on important matters such as food ingredients, interior design, tableware, and fixtures. However, even though franchise headquarters have the ability to impart such management know-how, this is often a neglected area. Research design, data and methodology - This study was conducted in an industrial environment to present suitable competitive alternatives for foodservice franchises. Empirical analysis was conducted using a sample of 232 people with experience in targeting customers. The main purpose of this study is not to identify and analyze the factors affecting customer satisfaction. Customers of the Food Service Industry to invite contacts until departure for the service flow by identifying the expectations and allow this area by analyzing the resulting measures to enhance the competitiveness has presented. Results - Actual results contact factors affecting the quality of service on customer satisfaction was a significant influence. However, the end of this analysis, the actual customer satisfaction directly affects the quality of service that is only important factor can commit mistakes. Relatively large impact on customer satisfaction, which is relatively independent of the quality factor should be a review of zone of tolerance. In this study, eating phase relative to contact the service customer satisfaction was the most influential. The results, however, zone of tolerance for an area in the waiting and ordering dissatisfaction factors are appearing. And in the course of these services outside the zone of tolerance area is unsatisfactory evaluation is being done. Conclusions - After all, Foodservice, the contact service management for zone of tolerance the top priority should be can be seen. Foodservice contact first in the case of service quality factors caused by the continuous flow of services, so this step-by-step identification needs to be clearer. This, of course, to distinguish between the actual per unit of activity appears to be more difficult to follow, for it seems to need a lot of future complementary. Next is the assessment of customer service quality. Customers remember the experience for the services of a real contact through the assessment and service evaluation clearly emerge as the expected level can be difficult. However, this situation is controlled by the test method cannot be avoided unless there is no limit to the number of leave. Despite these limitations, the next step to contact a service evaluation and analysis have to continue to refine and thereby franchisees for the operation of the store in terms of practical know-how required to provide to the office believe.

연속적인 리워드로 고객을 유치하는 모바일 어플리케이션의 개발 (The Development of Mobile Applications to Attract Customers in a Continuous Rewards)

  • Many franchise stores are in the surrounding. These stores offer many membership services. But, small traders do not provide much customer management service. For example, non-franchised cafes provide the services through paper coupons. However, most of paper coupons are available only in one store that issued the coupon. Besides, these coupons are in stamp format. Due to the absence of customers' management service, it is hard for small traders to attract customers compared to the franchise. Therefore, in this paper, We had implemented a mobile application, and applied to new customer management service in order to increase the price competitiveness of small traders. This service issues electronic coupon through a mobile app. customers can receive a relatively large amount of discount, and a deadline of coupons are short. When customers use coupons, new coupons are issued at the same time. This structure can be powerful means to lead customers' frequent visit. Small traders can gain a lot of regular customers by using this service.

레스토랑의 안전성이 신뢰, 불안, 만족 그리고 재방문 의도에 미치는 영향 (Effects of Restaurant's Safety on Trust, Anxiety, Satisfaction and Revisit Intention)

  • Purpose: Most people are worried about contracting COVID-19, which in turn increases anxiety that they may have contracted COVID-19. Therefore, this study examines the effect of restaurant safety consisting of hygiene, store management, and countermeasure on trust, anxiety, satisfaction, and revisit intention. Research design, data and methodology: The data were collected from 537 consumers who had experiences of visiting a restaurant within the last 2 months and analyzed with SPSS 28.0 and SmartPLS 4.0 programs. Result: The hygiene, management, and countermeasure had a significant positive (+) effect on trust. Restaurant hygiene was found to have a significant negative (-) effect on anxiety, but countermeasure had a significant positive (+) effect on anxiety. Meanwhile, management did not appear to have a significant effect on anxiety. Trust was found to have a significant positive (+) effect on satisfaction and revisit intention. Anxiety was found to have a significant negative (-) effect on satisfaction but had no significant effect on revisit intention. Finally, satisfaction was found to have a significant positive (+) effect on revisit intention. Conclusions: As a result of the study, this study explained the safety of restaurants in the COVID-19 pandemic environment through the protective motivation theory.

제3세계 음식전문점의 문화마케팅 활동이 방문동기와 재방문의도에 미치는 영향 - 베나레스를 중심으로 - (Culture Marketing Activities of the Third World Food Restaurant on Visit Motivation and Revisit Intention : The Case of "Benares")

  • This paper aims to examine the effect that cultural marketing influences on visit motivation and customer responses. We found that cultural marketing promotion activities by Benares, Indian restaurant had a positive effect on motivation to visit the store. Also research showed that the cultural direction and positioning marketing activities of Benares' cultural marketing had a statistically significant positive effect on all items of customer responses, that is service, atmosphere, brand but cultural promotion and cultural support marketing activities had a positive effect only on brand, except service, atmosphere. In addition, research showed that while all items of customer responses had a positive effect on revisit intention. In other words, it was proven that cultural marketing promotion activities by the Third World restaurant influence on visit motivation and customer responses and it provides practical implications to business marketers that foodservice companies' marketing associated with cultural marketing activities can be efficient marketing strategies that influence on revisit intention.

외식광고로 인한 인지부조화가 소비자의 구매 만족도 및 구매 후 행동에 미치는 영향 (Effect of Cognitive Dissonance in Franchise Foodservice Advertisement on Customer Satisfaction and Post-purchase Behavior)

  • The purpose of this study was to analyze the post-purchase behavior of customers who experienced cognitive dissonance after exposure to a franchise foodservice advertisement. The study adopted cognitive dissonance theory to explain the dissonance resulting from the combination of advertisements and actual product that consumers received. In detail, the research hypothesized that cognitive dissonance will affect consumers' post-purchase behavior as well as their efforts to reduce dissonance. Exactly 274 questionnaires were used in the analysis. The results showed that more than 80% of respondents were influenced by advertisements when purchasing menus, and 50% were unsatisfied when the provided menu "was not the same as the advertisement shown". It was found that advertisement type did not significantly affect either group that experienced dissonance. In terms of satisfaction, however, the former group showed greater dissatisfaction when dissonance occurred (p<.001). Finally, there was a significant difference between the two groups regarding post-purchase behavior (p<.05). Customers with dissonance were likely to 'express dissatisfaction directly to the store', 'leave negative reviews', and 'participate in negative word-of-mouth'. Thus, the results revealed that cognitive dissonance could significantly influence customer satisfaction and consequently lead to negative post-purchasing behaviors.
