제3세계 음식전문점의 문화마케팅 활동이 방문동기와 재방문의도에 미치는 영향 - 베나레스를 중심으로 - (Culture Marketing Activities of the Third World Food Restaurant on Visit Motivation and Revisit Intention : The Case of "Benares")

  • This paper aims to examine the effect that cultural marketing influences on visit motivation and customer responses. We found that cultural marketing promotion activities by Benares, Indian restaurant had a positive effect on motivation to visit the store. Also research showed that the cultural direction and positioning marketing activities of Benares' cultural marketing had a statistically significant positive effect on all items of customer responses, that is service, atmosphere, brand but cultural promotion and cultural support marketing activities had a positive effect only on brand, except service, atmosphere. In addition, research showed that while all items of customer responses had a positive effect on revisit intention. In other words, it was proven that cultural marketing promotion activities by the Third World restaurant influence on visit motivation and customer responses and it provides practical implications to business marketers that foodservice companies' marketing associated with cultural marketing activities can be efficient marketing strategies that influence on revisit intention.

글로벌 외식 프랜차이즈 브랜드의 원산지국가 인지도 (The Perception of Country-of-Origin of Global Restaurant Franchise Brands)

  • The objective of this article is to examine Korean consumers' perception level of the country-of-origin of brand (COB) of global restaurant franchises. Although global brands have rushed onto the Korean food service market since 1980, there has been little or no research conducted regarding consumers' perception of COB of global restaurant franchises. In this study, we surveyed consumers to determine their perception of COB for 27 foreign global restaurant brands; specifically, we attempted to determine whether or not Korean consumers could correctly recognize the COB of each brand. The results of this research revealed that Korean consumers correctly perceived the COB of certain restaurant brands, and incorrectly perceived some other brands. For instance, Korean consumers' perception level of the COB of McDonald's and KFC were quite high, and conversely their perceptions of the COB of Outback Steakhouse and Pohoa were relatively low. When consumers select a restaurant brand, COB image was shown to be more influential than brand image.

패스트푸드 업체의 급식관리 구조 개선을 위한 모형설정에 관한 연구 (A Model for the Improvement of the Foodservice Management Structure of Fast Food Restaurants)

  • The purpose of this study were to investigate relationships between the franchisors and franchisees in terms of management, satisfaction and cooperation, and to establish a model for improvement of the foodservice management structure of fast food franchise system. Data were collected from 4 hamburger and 7 noodle franchisors, and from 21 hamburger and 38 noodle franchisees. Surveyed chains were composed of 10 franchisor-owned units and 49 franchised units. The instrument used in this study was Liker type 5-scale guestionnarie. Hypotheses concerning relations between management practices by franchisor and satisfaction of franchisee, cooperation of franchisee were tested using path analysis. Unit management practices by franchisors were significantly different according to the operation style. Franchisor-owned hamburger chains rather than franchised noodle chains were better managed by franchisors in terms of QSC and management support. Management practices by franchisors in the whole showed a significant relationship with the satisfaction, cooperation, and the implementation of standardized recipes by franchisees. Franchisees' satisfaction had a significant positive relation with the cooperation and the implementation of standardized recipes. QSC management practices and management support by franchisors, had no direct relevance to the general cooperation of franchisees, and management practices in the whole had a little relevance to it, but franchisees' satisfaction in terms of QSC and the whole had a strong effect to their QSC Cooperation.

외식 프랜차이즈 기업의 생산 전략이 가맹점의 조리 역량과 만족도 및 재계약 의도에 미치는 영향 (The Effects of Production Strategies in Foodservice Franchisorson Franchisees' Culinary Competence, Satisfaction, and Recontract Intention)

  • The purpose of this study is to determine the effects of production strategies operated by franchisors in the food service industry on the franchisees' culinary competence and subsequently franchisees' satisfaction with performance and recontract intention. In order to accomplish this purpose, two franchised enterprises which used mass-purchasing and mass-producing before distributing to each franchisee for the production strategies were participated and eventually 287 franchisees responded to this survey. Factor analysis and Cronbach's alpha showed the validity and internal consistency for the survey questionnaire. LISREL(8.72) was used to test the relationships between variables; production strategy, culinary competences, franchisee satisfaction, and recontract intention of the franchisees. The results present that the franchisees' satisfaction with the management system, quality of distribution, and quality of foods influenced on differentiation performance and supply performance of franchisees. On cost performance, only satisfaction with the food cost had an impact. The higher franchisee satisfaction with the franchisees' operations was, the higher recontract intention was in the franchise business. The results suggest the critical points for improving foodservice supplying system as well.

레스토랑 직원의 Up-Selling에 대한 목적 지향성이 판매 행동과 판매 성과에 미치는 영향 (A Study of Learning and Performance Goal Orientation in Restaurant Servers' Up-Selling and Its Impact on Sales Behaviors and Sales Performance)

  • This study investigated causal relationships between goal orientation, sales and performance towards increasing the effectiveness of up-selling in internal promotion methods in family restaurants and provided implications about the hiring and training of sales people. The subjects were 232 sales people in family restaurants. The data were collected by self-administered questionnaires and analyzed by exploratory factor analysis, reliability analysis, comparative analysis of the average, and regression analysis. Results, showed that variations in goal orientation, sales, and performance depended on the age and experience of salespeople and that goal orientation makes adaptive selling more effective. It turned out that effort selling affects up-selling result than adaptive selling. Long-term workers were better than short-term workers in goal orientation, selling, and up-selling results, so human resource management needs to implement a long-term plan to enhance these effects. And, because effort selling is more effective than adaptive selling in up-selling results in family restaurants, effort selling requires training.

경북지역 베이커리 제품 구매자의 세대별 선택속성 (A Study on the Age-Specific Choice Attributes of Bakery Product Purchasers on Gyeongbuk)

  • 이 연구의 목적은 경북지역에 거주하는 성별, 세대별 베이커리 제품 구매 선택 속성을 조사하였다. 그 결과는 다음과 같다 : 일반적 사항에서 남자 33.4%, 여자 66.6%로 남자보다 여자가 좀 더 높았다. 베이커리 구매 속성에서 세대별로는 20대는 미각관심형(44.7%)이고, 30~50대에서는 건강관심형(p<0.001)이었다. 베이커리 제품을 구매할 때 요인으로 맛 61.8%, 영양 17.6%, 가격 9.1%였다. 맛에 있어서 세대별로는 20대 73.9%, 30대 65.8%, 40대 55.8% 그리고 50대는 46.0%(p<0.001)였다. 베이커리 제품의 이용 형태는 프랜차이즈 베이커리 70.4%, 윈도우 베이커리 16.0%였으며, 세대별에 따른 프랜차이즈 베이커리 이용 형태는 20대 70.2%, 30대 78.1%, 40대 72.1%이고, 50대 56.0%였다(p<0.001). 베이커리 제품의 선호도에 있어서는 20대는 샌드위치류를 37.3%, 50대는 12.0% 선호하였다(p<0.001). 천연 발효빵은 20대 14.9%, 50대 37.0% 선호하였다(p<0.001).

  • The purpose of this study is to investigate the causal relationship between new brand awareness and new brand awareness according to type of restaurant menu purchase information. This study will provide basic research data on viral marketing strategy through online marketing of restaurant companies. The purpose of this study is to investigate the effect of information obtained through blog information and SNS advertisement on word effect (information acceptance and information transfer) and to investigate the effect of word of mouth effect on consumers' purchase intention. A total of 206 samples were used for this analysis and regression analysis was performed using SPSS 18.0. The results of the study are as follows. First, experience type, timely relevance and consensus among the characteristics of blog information affect information acceptance. Experience, and accuracy are affecting information delivery. Second, information discomfort among the characteristics of SNS advertising information influences the acceptance of information. Information, entertainment and trust are affecting information dissemination. Third, information acceptance and information diffusion affect purchase intention.

  • 본 연구의 목적은 레스토랑 종사자의 집단응집성이 조직몰입과 이직의도에 미치는 영향관계를 분석하고, 또한 고용 형태(풀타임 vs 파트타임 종사자)에 따라 조직몰입과 이직의도가 달라지는지를 파악하고자 하였다. 집단응집성은 조직몰입에 유의적인 정(+)의 영향 관계가, 이직의도에는 유의적인 부(-)의 영향관계가 있음을 알 수 있었다. 그리고, 집단응집성과 이직의도 간에 조직몰입은 부분매개역할을 하고 있었으며, 집단응집성과 조직몰입 및 이직의도 간의 관계에서 고용 형태는 조절역할을 하지 않는 것으로 나타났다.

제4차 산업혁명에서 SNS 빅데이터의 외식산업 활용 방안에 대한 연구 (A Study on the Application of SNS Big Data to the Industry in the Fourth Industrial Revolution)

  • This study proposed SNS big data analysis method of food service industry in the 4th industrial revolution. This study analyzed the keyword of the fourth industrial revolution by using Google trend. Based on the data posted on the SNS from January 1, 2016 to September 5, 2017 (1 year and 8 months) utilizing the "Social Metrics". Through the social insights, the related words related to cooking were analyzed and visualized about attributes, products, hobbies and leisure. As a result of the analysis, keywords were found such as cooking, entrepreneurship, franchise, restaurant, job search, Twitter, family, friends, menu, reaction, video, etc. As a theoretical implication of this study, we proposed how to utilize big data produced from various online materials for research on restaurant business, interpret atypical data as meaningful data and suggest the basic direction of field application. In order to utilize positioning of customers of restaurant companies in the future, this study suggests more detailed and in-depth consumer sentiment as a basic resource for marketing data development through various menu development and customers' perception change. In addition, this study provides marketing implications for the foodservice industry and how to use big data for the cooking industry in preparation for the fourth industrial revolution.

외식 프랜차이즈 가맹본부의 사후 지원서비스가 가맹점의 관계품질과 경영성과에 미치는 영향 (The Effect of Franchisor's On-going Support Services on Franchisee's Relationship Quality and Business Performance in the Foodservice Industry)

  • 본 연구의 목적은 국내 외식 프랜차이즈 시스템에서 가맹점에 대한 가맹본부의 관계품질에 영향을 미치는 변수를 사후 지원서비스로 설정하고, 사후 지원서비스가 가맹점의 관계품질(신뢰, 만족, 몰입)과 경영성과(재무적 성과, 비재무적 성과)에 미치는 영향에 대한 포괄적인 모형을 개발하는 것이다. 제안된 모형을 검증하기 위하여 서울 및 경기 지역의 외식 프랜차이즈 가맹점 경영자 500명을 대상으로 설문 조사를 하여, 구조방정식을 통해 실증 분석하였다. 분석결과는 다음과 같다. 첫째, 사후 지원서비스 요인 중 제품범주 및 가격 요인과 정보제공 및 문제해결 능력 요인은 가맹점의 만족과 몰입에만 영향을 미치는 것으로 나타났다. 둘째, 물류지원과 슈퍼바이저 지원 요인은 신뢰와 만족에만 영향을 미치는 것으로 나타났다. 셋째, 재교육 및 훈련지원 요인은 가맹점의 신뢰와 몰입에만 영향을 미치는 것으로 나타났다. 넷째, 판매촉진 요인은 신뢰 만족, 그리고 몰입 모두에 영향을 미치는 것으로 나타났다. 다섯째, 관계품질요인들 간의 관계는 신뢰가 만족에 긍정적인 영향을 미치지만 몰입에는 직접적으로 영향을 미치지 못하고, 만족을 통해서 몰입에 긍정적인 영향을 미치는 것으로 나타났다. 여섯째, 신뢰는 재무적 성과에만 긍정적인 영향을 미치고, 만족과 몰입은 재무적 성과와 비재무적 성과 모두에 긍정적 영향을 미치는 것으로 나타났다. 마지막으로 본 연구의 결과요약과 시사점, 그리고 연구의 한계점과 향후 연구방향이 제시되었다.
