Monitoring the Current Nutrition Labeling Practice on the Packaging of Processed Foods (시판 가공식품의 영양표시 실태 모니터링에 관한 연구)

  • The purpose of this study was to monitor the current nutrition labeling practice on the packaging of the processed foods providing consumers with reliable nutrition information, which has been considered as a useful aid for food selection and a potent educational tool for nutrition in a daily life. The 2,214 processed foods purchased at the a wholesale market in July, 2003, were divided by food categories issued from the 2003 food codes and assessed in the terms of the nutrition composition labeling and nutrition claims. Nutrition composition labeling was found on 533 out of the 2,214 processed foods items. The findings of this study were as follows : Milk and dairy products had 66.4% of nutrition composition labeling, which was the largest percentage among the food categories. Tables format (71.3%) is the most widely used type of nutrition labeling. The title of nutrition composition labeling used the most widely was nutrition composition (71.3%). Nutrition composition included many different ways of expression, such as a table of nutrition composition, and indication of nutrition composition, etc. The expression unit of the nutrition composition labeling was use per 100g or 100mL (40.5%). The processed foods with nutrition claims were 18.0% (399 items). Nutrition claims were divided into two categories: nutrient content claims and nutrient comparative claims. The most frequently used nutrient content claims were contained (43.9%) and more or plus in the nutrient comparative claims (16.0%). Ca was the most popular item as a nutrition claim nutrient (33.6%).

Microbiological Quality Evaluation for Implementation of a HACCP System in Day-Care Center Foodservice Operations I. Focus on Heating Process and After-Heating Process (보육시설급식소의 HACCP시스템 적용을 위한 미생물적 품질평가 I. 가열조리 및 가열조리후 처리 공정을 중심으로)

  • The objective of this study was to evaluate the microbiological quality of heating and after-heating processed foods for implementation of a HACCP system in day-care center foodservice operations. The evaluating points were microbial assessment and temperature of foods during receiving, cooking, and serving in heating process. In non-heating process, in addition to monitoring microbial assessment of food during preparation, cooking, and serving steps, the microbial populations of employees' hands and utensils and serving temperature were also evaluated. Microbiological quality was assessed using 3M Petrifilm$^{TM}$ to measure total plate count and coliforms for foods and utensils and Staphylococcus aureus for hands in five Gumi day-care centers. Microbiological quality assessment for foods and utensils is summarized as follows. Microbiological quality of the heating processed foods was satisfactory for cooking and serving steps. The internal temperature of food was above 74$^{\circ}C$. However, temperature control before the serving step was not achieved due to inappropriate time management between the cooking and serving steps. In the after-heating process, the total plate counts of boiled mungbean sprouts salad, blanched spinach salad, com vegetable salad were below the standard at the serving step. The majority of samples showed that coliforms exceeded the norm, which is thought to be the result of the cross-contamination from utensils. These results suggest that it is essential to educate employees on the importance of hand washing and of avoiding cross-contamination by using clean, sanitized equipment to serve food in the after-heating process. Establishing Sanitation Standard Operating Procedures (SSOPs) is an essential part of any HACCP system in day-care center foodservice operations.

An Investigation of the Intake of the Health Improving Agents and Health Status by Male Workers in Chonnam Yeosu Industrial Area (전남 여수 산단에 근무하는 일부 남자근로자들의 주관적 건강상태 및 건강증진제 섭취 실태에 관한 연구)

  • This study was carried out to examine information regarding usage of health improving agents and health status of male workers in the Chonnam Yeosu industrial area. We obtained data by means of a questionnaire from 329 men. Of the subjects 44.7% were in their forties, high school education was 43.0%, married was 83.0% and $1,500{\sim}3,000$ thousand won in monthly income was 35.8%. Average height and weight of the subjects was $171.8{\pm}5.4 cm$ and $70.5{\pm}8.1 kg$. Average BMI was $23.8{\pm}2.2$. Drinking rate of respondents was 85.5%, the drinking rate of daily workers was significantly higher than rotation workers (p < 0.05). Rotation workers exercised more regularly than daily workers (p < 0.001). Subjective symptoms of the subjects always had eye problems (11.7%), shoulder aches (5.8%), ache in one's empty stomach (4.7%) in decreasing order. 21.4% of the subjects had a disease, and liver disease was the highest in the subjects; the second was cardio-vascular disease. Interval of health food intake was highly irregular (62.7% of respondents), and keeping healthy was the main motivation fur the usage of health foods. Health improving agents included oriental medicine, animal protein based restorative foods, nutrition supplements, health supplements, and natural foods. 33.3% of the subjects took health supplements, nutrition supplements (29.1%), oriental medicine (20.6%), natural foods (16.7%) and animal protein based restorative foods (3.9%), in respective order. Health improving agents were consumed higher in liver disease than other diseases. This study suggests that nutritional education and monitoring should be implemented for industrial workers to prevent life-habit diseases and to keep proper self-management of health status under special environments.

Monitoring of Total Sugar Contents in Processed Foods and Noncommercial Foodservice Foods (국내 유통 가공식품과 단체급식 메뉴의 당 함량 실태조사)

  • In this study, HPLC was used to determine the total sugar contents of processed foods as well as main and side dishes that were acquired from noncommercial foodservices. The total sugar content was identified as the total amount of both mono- and di-saccharides according to the nutritional information standard defined by the Korea Food and Drug Administration. The results for the processed foods were as follows: $25.3{\pm}9.5%$ for biscuits, $11.7{\pm}10.6%$ for snacks, $29.9{\pm}17.7%$ for chocolate, $35.5{\pm}9.3%$ for processed chocolate products, $11.0{\pm}2.7%$ for fruit juice, $10.0{\pm}3.6%$ for carbonated beverages, $23.0{\pm}3.2%$ for ice cream, $24.5{\pm}3.2%$ for ice milk, and $11.4{\pm}2.6%$ for stirred yogurt. Overall, candy items had relatively higher total sugar contents ($71.1{\pm}19.3%$ ) than any other items. Foods in the school zone had $52.3{\pm}24.4%$ total sugars. The noncommercial foodservice foods were classified into 5 main dish categories and 12 side dish categories. The total sugar contents of the main dishes were $2.6{\pm}1.9%$ for cooked rice with seasoning, and $4.7{\pm}0.1%$ for spaghetti. Among the side dishes, hard boiled foods and stir-fried foods contained the highest amounts of sugar, which were dependent on the main ingredients in the foods. Other side dishes with high sugar contents included seasoned vegetables/dried fish/seaweed ($5.5{\pm}5.3%$), salads ($5.6{\pm}3.1%$), and kimchies ($5.7{\pm}4.1%$). The total sugar contents of the side dishes ranged widely, and were significantly different according to main ingredients, cooking method, and amount of spice.

The Monitoring of Information about Food and Nutrition Presented Throughout Various Television Brodeast Media (방송매체에 나타난 식품영양정보 모니터링)

  • The purpose of this study was to analyze information about food and nutrition presented through the television broadcast media, with the aim of finding out the optimal communication method for supplying the general public with accurate information. To perform this study, a total of sixteen monitoring people were recruited and trained before and during the study. Five domestic TV channels were selected to be monitored, and the total monitoring period was six months. For maximum efficiency, the monitoring people were assigned to 8 teams. The results of the present study can be summarized as follows : First, the total reported cases of information about food and nutrition were 237, of which about 30% were judged appropriate and 70% as inappropriate. Second, classifying each case by program type, information programs made up the highest portion at 82 cases (34.6%), cooking programs accounted for 76 cases (32.1%), news programs for 40 cases (16.9%), and entertainment programs for 7 cases (3.0%). The analysis showed that the greatest amount of incorrect information was found in dramas, followed by entertainment, information, cooking and news programs. Third, classifying each case by theme of contents monitored, meal preparation and cookery made up the highest portion at 86 cases (36.3%), foods accounted for 67 cases (28.3%), disease and diet-therapy for 40 cases (16.9%), eating habits for 31 cases (13.1%), and diet and fitness for 13 cases (5.5%). Incorrect information was conveyed most often on the themes of food habits, foods, disease and diet-therapy, cookery, and diet and fitness. Fourth, classifying each case by channel, Cable TV had the highest frequency at 72 cases (30.4%), MBC had 51 cases (21.5%), SBS had 43 cases (18.1%), KBS1 had 41 cases (17.3%) and KBS2 had 30 cases (12.7%). In conclusion, systematic monitoring should be continued to reduce the frequency of incorrect information being broadcast and to help ensure that accurate information is conveyed to the general public. Moreover, there should be a system of cooperation to provide information to help broadcast production teams establish a strategic program. Finally, it is essential to organize an advisory team by promoting links between the mass media and specialists in the field, and to develop an educational program on nutrition to help ensure the communication of accurate information on food and nutrition. Qualitative Analysis of Food and Nutrition Informations offered in Television Programs(year 2002-2003) -Newscastings, Health Information Programs and Dramas (지상파 TV 방송프로그램에 나타난 식품영양정보의 질적 분석(2002-2003년) - 뉴스, 건강정보 프로그램, 드라마)

  • The study aimed to perform the qualitative analysis of food and nutrition informations offered in TV program by monitoring newscastings, health-related programs giving food and nutrition information, dramas for family, education programs for children, and information programs for elderly in major TV broadcasting station(KBS, MBC, SBS, EBS). In this study, statistical analysis were done for numbers of information items related to health or food and nutrition informations. Duration of program the main, subject, sources, evaluation criteria of the contents. Results of qualitative monitoring for TV program are as follows. For health-related informations major propotions of subjects for the newscastings were about diseases. Those for health information programs were about foods. Those for children-education programs were about groceries. Those for seniors’ information programs were about eating habits. The analysis of food and nutrition information sources for most of programs were interviews with specialist and normal person, and on-the-spot-investingations. For food and nutrition informations those were evaluated as inappropriate, the propotion of news was increased to 72.2% in 2003 from 49.3% in 2002. For health information programs, it was increased to 67.7% in 2003 from 54.0% in 2002. But, in drama the propotion of inappropriate scenes were decreased to 16.2% in 2003 from 63.2% in 2002. In children-education programs, it was 40.0%. In seniors’ information programs, it was 17.9% in 2002. The propotion of cases that the quantity of foods is inappropriate in the food scene of serial drama, decreased to 15.8% in 2003 from 28.6% in 2002. The rate of drinking scenes increased to 11.5% from 10.7%. The rate of smoking scenes decreased to 0.2% from 1.6% due to the broadcasting self-regulation of smoking scenes in dramas. In the newscatings and information programs, reasons of being evaluated as inappropriate was that they didn’t have any practical suggestions and proper intakes. There were also insufficient explanation for technical terminology, different comparison standard of nutritive value, and exaggeration for physiological effect of food. The drama contained a lot of unnecessary scenes of alcohol drinking, coffee drinking, midnight meal, and had more quantity of foods than the quantity needed for persons to the scene. As the result of this study, the rate of food and nutrition information were high, but the rate of information which was evaluate as appropriate was not sufficient. There are need to improve contents of information and to moniter the contents for consumer.

Monitoring of Anti-impotence Drugs and Their Analogues in Food (식품 중의 발기부전치료제 및 유사물질 모니터링)

  • This study was conducted to monitor the concentrations of 24 anti-impotence drugs and their analogues in various foods and dietary supplements, with the aim of ensuring the safety of the foods and supplements. The measurements were done in 226 samples using high performance liquid chromatography/photodiode array detector (HPLC/PDA) and liquid chromatography-electrospray ionization tandem mass spectrometry (LC-ESI-MS/MS). Five male sexual function enhancing products have been detected as follows: acethylvardenafil (21,476 mg/kg; 15 mg/capsule from one sample), sildenafil (52,778 mg/kg, 29 mg/capsule in one sample; 71,535 mg/kg, 48 mg/capsule in one sample), and tadalafil (9,772-55,545 mg/kg, 6-33 mg/capsule in four samples). A sustainable monitoring of anti-impotence drugs and their analogues in various foods and dietary supplement is recommended.

Analysis of Dietary Informations in Newspapers and Magazine for Children (2002) (어린이신문 및 잡지에 게재된 식생활 관련 정보 현황조사(2002년))

  • Children regard newspapers and magazines as the important source of information. Because informations about diet in the newspaper and magazines are regarded as good, it is necessary to find out whether informations provided to children are correct. Thus, this study shows the present situation of informations on diet by monitoring 3 newspapers (Kids. Chosun, Kids. Donga, Kids. Hankook) and 2 magazines (Earinee - Dongsan, Sae-But) for children. This study focused on the quantitative and the qualitative analysis for articles and advertisements. For the quantity, rate and number were calculated. For the quality, the accuracy was analyzed. Result of this study were as follow; Analyzed the number of articles and advertisements on diet, there are 2 times more number of advertisements (339 cases) than that of articles (180 cases) in the newspaper. There are slightly more number of advertisements (24 cases) than that of articles (18 cases) in the magazine. Most of advertisements are about processed foods and children' favorite foods. Especially, the advertisement of processed foods are ranked first by the quantity with 245 cases (75%) in the newspaper. In the magazine, 10 cases (42%) are about processed foods. About source of advertisements on diet informations in the newspaper, there are 300 cases (86.7%) without evidence based data and 34 cases (9.8%) of interview with entertainers, from the total 346 cases. In the magazine, there are high rate of cases without evidence based data and interview with entertainers. For the evaluation of the information about diet in the newspaper, there are 148 cases (19.7%) with no clear guidance and position, some cases with advertisements for specific products and etc. Discordance between subjects and contents, and emphasis of specified field or some parts are found from the total 750 cases. About the accuracy of contents, from the total 180 cases in the newspaper, 99 cases (55%) are inappropriate and 19 cases (10.6%) are appropriate. In magazines from the total 18 cases, 7 cases (38.9%) are inappropriate and 11 cases (61.1 %) are appropriate. With these results, we can conclude that informations about diet in newspapers and magazine for children needs improvement. Therefore, for newspapers and magazines contents should be reported scienifically by inspecting contents and by taking professional advice, in order to spread the accurate information about diet. Monitoring and Risk Assessment of Ethyl Carbamate in Korean Major Foods (다소비 식품 중, ethyl carbamate의 분포측정 및 위해성 평가)

  • Levels of ethyl carbamate, a potential carcinogen produced naturally during fermentation, in major Korean fermented foods and some selected alcoholic beverages were determined by GC/MS/SIM, and their average daily intake and excess cancer risk of Korean people were estimated. In GC/MS/SIM analysis average 1.41, 19.44, 3.00 and 170.88 ${\mu}$g/kg of ethyl carbamates were detected in Baechu kimchi, Japanese soy sauces, Soju and fruit brandy, respectively. The average and maximum daily exposures to ethyl carbamate through major Korean fermented foods and alcoholic beverage consumption were 9.42 and 35.75 ng/kg bw/day for Korean female aged 20-64 years, and 12.73 and 48.87 ng/kg bw/day for Korean male respectively, which were mainly contributed by Baechu kimchi, Japanese soy sauces, Soju and fruit brandy. The average and maximum excess cancer risks were $4.7{\times}10^{-7}$ and $1.8{\times}10^{-6}$ for Korean female, and $6.4{\times}10^{-7}$ and $2.4{\times}10^{-6}$ for Korean male. Therefore, the industries related to fermented foods and alcoholic beverages need to make an effort to reduce the amount of ethyl carbamate in their products.
