서울지역 고령소비자의 식생활 라이프스타일에 근거한 시장세분화 및 특성 규명 (Florida, USA Food-Related Lifestyle Segments of Older Consumers in Seoul and Its Characteristics)

  • 본 연구에서는 식생활 라이프스타일에 따라 고령소비자 집단을 세분화하고 건강신념모형에 근거하여 라이프스타일과 관련된 유용한 변수들을 파악함으로써 실버소비자들의 특징을 이해하고자 하였으며 연구결과를 요약하면 다음과 같다. 첫째, 라이프스타일에 대한 23개 문항에 대하여 요인 분석을 실시한 결과로 나타난 건강추구형, 편의추구형, 맛추구형, 식사관리형, 안전추구형의 5개의 요인별 요인점수를 기준으로 군집분석을 실시하였고 '건강관리형', '식생활무관심형', '편의지향형', '맛추구형', '실행부족형'의 5개의 군집으로 분류되었다. 둘째, 식생활 라이프스타일 군집별로 건강신념관련 변수들 중 사회인구통계학적 특징에 따른 차이를 분석한 결과, 성별(p<0.05), 교육수준(p<0.001), 가족형태(p<0.05)에서 모두 유의한 차이가 나타났으며 연령, 직업, 월소득에 따른 유의한 차이는 없었으나 군집간의 약간의 차이를 보였다. 건강관리형은 상대적으로 고연령자, 고학력자, 전문직, 고소득자의 비율이 높았고 부부단독의 비율도 높았다. 식생활무관심형은 저학력, 저소득의 응답자들이 대부분 속해 있었으며, 편의추구형은 상대적으로 교육수준이 높았으며 독신의 비율이 다른 군집보다 높았다. 맛추구형은 저연령대(55~64세)의 가정주부 여성이 많은 것 알 수 있었으며, 실행부족형은 전문직과 가정주부가 비슷한 비율로 속해있었고 가족형태는 2,3대 동거의 비율이 다른 군집에 비해 높았다. 셋째, 건강신념 변수들 중 나머지 변수에 대한 차이를 분석한 결과, 지각된 자기효능감(p<0.001), 지각된 유익성(p<0.001), 지각된 장애성(p<0.01), 행동계기(p<0.05)의 모든 변수들에서 유의한 차이가 조사되었다. 건강관리형과 맛추구형에서 지각된 자기효능감과 지각된 유익성의 점수가 가장 높아, 이들은 올바른 식습관을 유지할 수 있는 자신감이 있었고 이로 인한 혜택을 높이 인식하고 있는 것으로 나타났다. 식생활무관심형과 편의추구형에서는 지각된 장애성의 평균점수가 높은 반면 지각된 유익성은 유의적으로 가장 낮아, 장애요인이 많아 올바른 식습관을 유지하기 어렵다고 생각하고 올바른 식습관으로 인한 혜택에 대한 인식이 낮았다. 실행부족형은 지각된 자기효능감은 높은 반면 올바른 식습관을 유지하는데 장애요인이 많다고 인식하고 있었다. 따라서 건강신념 변수들이 실버소비자들의 식생활과 관련된 라이프스타일을 심층적으로 이해할 수 있도록 해주는 유용한 변수임을 알 수 있었다. 이상의 결과를 종합해 볼 때, 고령소비자 집단이 식생활 라이프스타일에 따라 세분 시장이 규명됨을 확인하였고, 세분시장별로 사회인구통계학적 특성 및 건강신념관련 변수에 차이가 있음이 검증되었으므로 고령소비자 집단의 행동을 예측할 수 있는 변수들을 활용하여 차후 맞춤형 급식 서비스 프로그램에 대한 이론적 근거를 제시함으로써 향후 전략 방안을 모색하는데 기여할 수 있을 것으로 사료된다. 본 연구는 표본이 서울에 거주하는 노인을 대상으로 한정되었고 교육수준 및 경제적 수준이 중상층 이상이어서 고령소비자의 전반적인 특성을 유추해 내기에는 충분하지 못하였다. 또한 고령소비자들의 식생활라이프스타일에 따른 세분화모형의 최초 연구로 고령소비자들의 식생활과 관련된 특성을 반영할 수 있는 변수를 고려하는데 한계가 있을 것으로 사료되는바 지속적인 연구를 통해 보다 심도 있는 이론에 근거한 변수의 선정과 분석이 필요할 것으로 사료된다. 현재까지 대부분 고령소비자 시장을 상대적으로 젊은 시장에 대비되는 단일시장 혹은 유사한 특성을 지닌 소비자집단으로 접근하고 있는 상황에서 본 연구에서는 이질적인 세분집단들로 여기는 것이 타당하다는 것이 제기되었다. 따라서 향후 학문적으로 혹은 실무적으로 고령 소비자들에게 접근할 때 단일시장이 아닌 다수의 세분 시장으로 접근할 필요성이 있다고 사료된다.

식생활 라이프스타일에 따른 밀키트 이용 현황과 만족도에 관한 연구 (A Study on the Utilization and Satisfaction of Meal-Kits by Food-Related Lifestyle)

  • 본 연구는 밀키트를 이용한 경험이 있는 성인 357명을 대상으로 식생활 라이프스타일에 따른 밀키트 이용 현황과 만족도 차이를 분석하였고 밀키트 시장에 효율적인 메뉴 구성과 개선 방향을 제안하는 기초자료를 제공하고자 하였다. 식생활 라이프스타일 유형을 군집분석한 결과는 '건강추구 집단', '안전추구 집단', '편리추구 집단', '경제추구 집단', '미식추구 집단' 등의 5가지 집단으로 군집화되었다. 밀키트 월평균 구매가격은 미식추구 집단의 경우 밀키트 '3-5만원'이 36.66%로 상대적으로 다른 집단에 비해 높게 나타났다(p<0.05). 밀키트를 구매하는 장소는 '온라인 쇼핑몰'에서 전체 대상자의 52.38%로 나타났고 밀키트 구매 시 중요하게 고려하는 요인으로는 '맛'으로 경제추구 집단의 경우 전체의 58.46%로 다른 집단에 비해 높게 나타났다. 밀키트 선호 음식 종류는 '한식'이 전체의 49.02%가 선호하였다. 식재료는 모든 유형 집단에서 '육류'가 전체 42.58%로 가장 높았으며, 특히 미식추구 집단(53.33%)에서 높았다(p<0.001). 밀키트 만족도에서 '조리방법의 간편성'이 4.05점으로 미식추구 집단에서 가장 높은 만족도를 보였고 '재료의 원산지'의 경우 편리추구 집단에서 2.98점으로 다른 집단에 비해 낮은 만족도를 보였다(p<0.01). 전체 대상자의 93.28%가 앞으로 밀키트를 이용하겠다고 하였다. 전체의 93.28%는 다른 사람에게 밀키트 이용을 추천하겠다고 하였으며, 추천이유로는 '구매 또는 조리의 편리성'이 전체의 67.23%로 나타났다. 본 연구의 조사결과, 모든 군집에서 가장 중요한 요인은 맛으로 나타났으며 조리방법의 간편성이 가장 높은 만족도를 보였지만 재료의 원산지는 낮은 만족도를 나타냈다. 따라서 밀키트 시장이 성장하기 위해서는 밀키트 품질 개선과 다양한 메뉴 개발이 이루어야 할 것으로 보인다.

한국 성인의 성별에 따른 식이보충제 섭취 및 관련 요인에 대한 연구 -제 4기 국민건강영양조사(2007-2009) 자료를 이용하여 (Use of Dietary Supplements and Determinants of Taking Dietary Supplements by Gender in the Korean Population: Using the 4th Korean National Health and Nutrition Examination Survey (2007-2009))

  • Objectives: Although dietary supplements use in Korea has been rapidly increasing and women are more likely to take dietary supplements more than men, only a few studies have been conducted to investigate factors contributing to gender differences in dietary supplement use in the Korean population. The aim of this study is to evaluate the prevalence of dietary supplement use and also identify gender-specific key factors that contribute to it using the data of the 4th KNHANES. Methods: Subjects were divided into user and non-user groups according to the answer given to the question that asked whether they had used any dietary supplement for more than 2 weeks on a regular basis during the previous year. Factors related to dietary supplement use were examined by general characteristics, health behavior and eating behavior. Results: Prevalence of dietary supplement use was 13.6% for men and 20.6% for women. Users were more likely to be middle-aged, have higher income and education, have a spouse, or reside in dong areas in both men and women. Regarding health behaviors, men with desirable lifestyle behavior were more likely to take dietary supplements, while men who smoked were less likely to take dietary supplements. Regarding disease history, both men and women with a current disease had higher odds of taking supplements. With regard to dietary behavior, frequent eating out and nutrition attitude were associated with higher odds of taking supplements in both men and in women. Conclusions: Health or dietary behavior related factors that were associated with taking supplements differed by gender. These findings can be useful for planning gender-specific dietary education and health programs.

학령 전 아동의 라이프스타일과 부모의 체중인지도가 아동의 과체중위험에 미치는 영향 (Lifestyle Behaviors and Parental Perception of Children's Weight in Relation to Overweight Risk of Preschool Children)

  • We conducted this study to determine the factors associated with childhood obesity. The subjects were 170 preschool children in Busan. Data were collected by using questionnaires which asked for information about socioeconomic status, parental perception of their child's weight status and dietary/physical activity behavior. BMI was calculated for each child and their classification was determined, according to their age and sex, as follows: "overweight" at or above the 85th percentile, "normal" for the 15th-85th percentile, and with a BMI below the 15th percentile the children were deemed as underweight. Classification according to BMI percentile showed that 23.5% ($18.25{\pm}1.33\;kg/m^2$) of the children were overweight, 62.9% ($15.51{\pm}0.76\;kg/m^2$) normal, and 13.5% ($13.23{\pm}2.86\;kg/m^2$) were underweight. Socioeconomic status, as represented by the parents' level of education, the occupation of the father and the household income, did not affect the results. However, mothers working outside the household was a factor that was more likely to affect the weight status (p<0.05). Among mothers whose children were overweight, 30% underestimated their children's weight status (believing them to be of normal weight when they were overweight), and 25% failed to recognize the necessity of weight control for their overweight children. While sedentary activity and total daily activity levels were not related to BMI, the level of physically active leisure activity was inversely correlated with BMI (p<0.05). Although there were no differences in total energy intake, dietary behavior was significantly related to weight status. Overweight children had poor eating tendancies: they eat faster (in less than 15 minutes), overeat, and eat late at night. Based on our findings where hereby recommended the following interventions to help limit weight problems in Korean pre-schoolers: early promotion of active leisure behavior and healthy eating habits, along with attempting to correct parental misperception of healthy weight status for children.

조선 중기 두류 수급 현황과 콩 음식 문화 고찰 - 오희문(吳希文)의 『Shaemirok (쇄미록(瑣尾錄))』을 중심으로 - (Study on the Consumption Status of Beans and the Soybean Food Culture in the Mid-Joseon Period According to Shamirok)

  • This study researched the food culture and bean economy of the Joseon dynasty during the 16th century and according to the primary lifestyle reference "Shaemirok (?尾錄)". The research analyzed the textual contents of the "Shaemirok (?尾錄)". It is clear that the people of the Joseon dynasty produced more beans than grain, at a ratio of 41 to 50, respectively. The soy bean sauce consumption was split into family consumption and non-family consumption. It was evident that there was more family consumption compared to that of non-family consumption at a ratio of 7 to 3, respectively. People of the Joseon dynasty annually recorded their way of making soy sauce from 1595 to 1600. The Joseon writers edited the record six times for making meju and four times for making soy sauce. The recorded ratio displays the ingredients of soy sauce, which were: 6 Du of Mal Jang and 2 Du of salt. Mal Jang and salt had a three to one ratio, respectively. The most mentioned food was Tofu during the mid-Joseon period with fifty six mentions. The Joseon people regarded making Tofu in a Buddhist temple as a family-bonding experience. Porridge was the second most prominent food next to Tofu, among the bean-related food. Porridge appears thirty five times. There were 3 types of porridge named: bean porridge, bean powder porridge and mung bean porridge.

국민건강증진을 위한 영양 부문의 2000년 잠정목표와 전략 (Provisional National Nutrition Targets and Strategies for Health Promotion of Koreans)

  • This study attempts to propose a priority of national nutrition targets and strategies for health promotion by the year 2000 in Korea, as a part of the task set for national health promotion objectives and strategies. Among all of the important health issues raised, ten were chosen, nutrition was one priority area. In the first part, the current status of the nutrition-related health problems and risk factors are reviewed, in conjunction with the newly arisen health phenomena, such as changes in prevalence of lifestyle disease and causes of death, changes of food consumption patterns in our country. In the second section this study suggests six feasible national nutrition targets, eight implementing strategies and current major tasks on the basis of the assessment of present status and in consideration of the other health promotion goals and strategies, with reference to that of other developed countries. The main targets and strategies are suggested as follows ; Firstly, the national nutrition monitoring and surveillance system should be established for identifying the nutritional problems for our people, and current National Nutrition Survey is a strong need for improvement to a more comprehensive and reliable one. Secondly, effective administrative mechanism should be operation at national level for the development of nutrition policy. Ministry of Health and Welfare (MOHW) as well as local health department must be remarkably renewed and strengthened the nutrition section. And it is recommended that MOHW organize and operate “The Council of Nutrition”, in which all government authorities related with foodstuffs and nutrition would incorporated. The Council of Nutrition would act as an adjustor as well as a coordinator in nutrition related policy-making. Thirdly, healthy eating pattern will be supported by activities of introducing a nutrition labeling for providing consumers with the necessary information and skills for food selection. Fourthly, nutrition education, and nutrition intervention programs will be carried out in various settings such as health centers, schools, and clinical fields and workplace. Fifthly, the current dietary guidelines shall be continuously improved in detail, and publicly circulated to particular levels of people by age group and by health condition. And finally, researches and epidemiological studies particularly in regard to diet for development of chronic diseases are needed for more investigation and up-to-date national health and nutrition data should be collected with the support and cooperation from the various medical professional teams . Development of a Semi-quantitative Food Frequency Questionnaire Based on Dietary Data from the Korea National Health and Nutrition Examination Survey

  • Objective : This study was carried out to develop a semi-quantitative food frequency Questionnaire (SQFFQ) for estimating average dietary intake to determine the risk factor for lifestyle-related diseases in a conjoint cohort study. Design : We developed an SQFFQ for genomic epidemiological studies based on the data in the'98 Korea Health and Nutrition Examination Survey. A subset of data on informative food items was collected using the 24-hr recall method with 2,714 adults aged 40 or older living in middle-sized cities or in rural areas in Korea. The cumulative percent contribution and cumulative multiple regression coefficients of 17 nutrients (energy, fat, carbohydrate, protein, fiber, iron, potassium, sodium, calcium, phosphorus, vitamin A, retinol, $\beta$-carotene, vitamin $B_1$, vitamin $B_2$, niacin and vitamin C) of each food were computed. Results : Two hundred and forty-nine foods, which were selected based on their 0.9 cumulative percent contribution, and 254 foods, which were selected based on their 0.9 cumulative multiple regression coefficients, respectively, were grouped into 97 food groups according to their nutrient contents. Several popular Korean foods, which were missing from the list due to the seasonality of the survey, were included. The portion sizes were derived from the same data set. The SQFFQ covered 84.8 percent of the intake of 17 nutrients in the one day diet record data of our 326 cohort study subjects. Conclusions . The final list included 103 food items. The foods list in the SQFFQ described herein accounted for 84.8 percent of the average intake of 17 nutrients. Therefore, the list could be used for the assessment of the baseline dietary intakes of the conjoint cohort studies.

Obesity and its association with diets and sedentary life style among school children in Seoul, Korea: Compliance with Dietary References Intakes for Koreans food guides

  • This study compared obese children's food group intakes with the new Dietary References Intakes for Koreans (KDRIs) food guides for 5th-6th grade school children. This study also determined the extent of sedentary life styles related with obesity in this area of children. This is it cross-sectional study of 799 school children. The dietitian sent a survey form describing the project and a questionnaire to the subject's family. The questionnaire included child demographics, family history of chronic diseases, the daily servings of five food groups, such as grains, meat and beans, dairy products, fruits, and vegetables. The daily or weekly hours of physical activity, television viewing, and computer usage were also surveyed. Obesity index (%) of the subjects was calculated, and children with an obesity index (%) equal to or greater than 20 were classified as the obese. Among the 799 participants, 50.7% were female. The percentages of the normal and the obese were 691 (86.5%) and 108 (13.5%) respectively. Obese children reported eating less vegetables (p<0.05), more high sugar snacks (p<0.05), and high fat snacks (p<0.05) than normal children. No significant differences in food servings of grains, meats and beans, and fruits, and dairy products between the normal and the obese were shown. Obese children reported fewer hours of physical activities (p<0.05) and more hours of computer usage (p<0.05) than normal children. Girls showed less likelihood of being obese (odds ratio, 0.575, CI (0.38, 0.87), p<0.05). More hours of physical activity significantly decreased the likelihood of being obese (odds ratio, 0.572, CI (0.35, 0.92), p<0.05). Family history of obesity almost doubled the likelihood of obesity in children (odds ratio, 2.653, CI (1.660, 4.241), p<0.05). In conclusion, frequent snacking, inadequate vegetable consumption, and sedentary lifestyle increased significantly the likelihood of obesity in children, which suggest that obesity intervention in this age group should focuse more on those variables.

중 고등학생 대상 영양교육 목표 설정을 위한 영양 관련 문제점 분석 (Setting Instructional Goals for Nutritional Education Program Through an Analysis of Problems Identified in Junior/senior High School Students)

  • For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs. 재미 한인의 식생활 변화와 관련된 건강 상태 연구 (Health Risks in relation to Dietary Changes in Korean Americans)

  • Differences in dietary intake of Korean Americans (KA) by the length of residence in the U.S. were studied in relation to health and disease patterns in Michigan. Of 1860 questionnaires mailed, 637 (34.3%) responded with demographics, anthropometrics, self-reported disease patterns, lifestyle, and dietary patterns (93-item FFQ developed for KA). Complete responses were available for 498 people (263 men,253 women, aged 30-87 yr), who were then divided into three groups based on the number of years lived in the U.S.: 15y, 16-25y, 26y. Age-adjusted weight, height, BMI, and waist to hip ratio were within the normal ranges and did not differ among the three groups. Chronic diseases frequently reported in men and women (age-adjusted) included hypertension (14.4%, 14.1%), digestive diseases (5.4%, 8.5%), diabetes (3.6%,4.9%), and arthritis(3.3%, 12.5%), respectively. The length of residence in the U.S. was inversely associated with the age-adjusted prevalence of digestive diseases (12.4%, 6.5%, 0.4% in men, 13.0%, 11.7%, 0% in women). The length of residence was positively associated with health consciousness, receiving regular health care, taking supplements regularly, and exercising, while inversely related to smoking. The majority favored American foods for breakfast and Korean foods for dinner. Foods frequently consumed included cooked rice (w/other grains). kimchi, coffee (w/cream and sugar),bread (white and dark), citrus juice, milk (low fat and skim), lettuce and cucumber, apple, seaweed, and soda. Intake frequency of the Korean starch food group was inversely associated with the length of residence for both men and women (p<0.001), but not with the American starch food group. Fat intake did not differ by the length of residence in the U.S. The dietary changes were associated with the length of residence and chronic disease patterns for the first generation of KA, which should be further examined 'for the subsequent generation of KA.
