Analysis of Consumer Receptivity to Pet Food Containing Edible Insects in South Korea (식용곤충을 이용한 반려동물 사료에 대한 소비자 수용도 조사)

  • A survey was conducted among pet owners visiting pet hospitals, using a pet animal app, or being involved in pet breeding, who had the awareness of and intention to purchase animal feed containing edible insects, as well as functional pet food. Results showed that 89.5% of survey participants were pet owners such as those of dogs, cats etc., of whom 55.6% knew about this type of pet food. Nearly half (48.5%) of respondents had an intention to purchase edible insect-based pet food, while the rest of them (51.5%) did not. The two main reasons for deciding to buy it were the excellent nutritional value of insects, and low allergenicity. The most significant reason for refusing purchase was a strong aversion to insects as food.

A Study on Food Service Environments for the Elderly in Community - Focused on Community Senior Lunch Service (커뮤니티 거주 고령자를 위한 식사서비스 환경에 관한 연구 - 국외의 고령자 식사지원서비스를 중심으로)

  • Purpose: Healthy and balanced meal is very important for the elderly to maintain the quality of life in community. Senior meal delivery system and congregate meal services have been played an important role to prevent premature institutionalization of the elderly. Food delivery system and lunch service spaces for the Korean elderly were mostly focused and limited on low-income family. The purpose of this study is to analyze community food services environments for the elderly in the UK, the U.S. and Japan for the possibility of applying those service spaces to Korean community. Methods: Lunch service spaces of these three countries were investigated by literature research and visiting of venues. Pilot study of the elderly meal services in Seoul was done for comparing environments and future research. Results: Lunch service spaces in three countries were mostly community based for accessibility and the types of management were various for the elderly to choose the most suitable services for them. The group dining spaces are usually small and designed to give de-institutional atmosphere. Implications: Food service environments for the elderly in Korea should develop more community based model of food delivery and congregate meal service spaces as well as more de-institutionalized design of those spaces.

Income Statement Analysis and Developing the Guidelines of Meal-pricing and Facilities Investment Cost in Contract-Managed High School Foodservice in Seoul (서울시내 고등학교 위탁급식의 재무성과 분석을 통한 급식비 및 투자비의 적정 수준 산정)

  • The purposes of this study were: 1) to investigate the operational and financial characteristics of contract-managed high school food services in Seoul, 2) to analyze the financial performance of high school food services 3) to develop guidelines for meal pricing and facilities investment costs. From Oct to Nov 2001, questionnaires were mailed to 249 high schools that were managed by contract food service companies. A 40.2% response rate was recorded. The results of this study were as follows: 1. Student enrollment in high schools run by contract-managed food services was 1,518, with a 68.5% participation rate in the school lunch program. The average meal price was 2,141 won. 2. Based on the income statement analysis, average total sales were 410,440,504 won and average net profit was 16,098,558 won. 3. The optimum food cost per meal was 1,200-1,300 won per meal, calculating using the methods of conversion factor, RDA (Recommended Daily Allowance), and nutrient exchange unit. 4. Guidelines for meal pricing were developed using the modified actual pricing method based on facilities investment cost, number of meals and food cost. The ratio of labor cost, general management expenses and ordinary profit were adopted from the schools with liability. The food cost, depreciation and interest cost were calculated based on unit meal. 5. The guideline for facilities investment was developed based on the number of meals, meal price and food cost. The guideline included the maximum facilities investment cost paid by the contract food service management company. (Korean J Nutrition 36(5): 528∼535, 2003)

Proximate Compositions and Biological Activities of Lactuca indica L. Seonhyang and Wild Species Depending on Harvesting Time (왕고들빼기 선향과 야생종의 수확시기별 일반성분 및 생리활성)

  • We investigated the effect of harvesting time on the proximate compositions and biological activities of Lactuca indica L. Seonhyang and wild species. The highest moisture content (91%) was obtained from Seonhyang harvested in June. The wild species harvested in August showed the highest crude protein (4.8%) and crude fiber contents (2.7%). Potassium contents were 626~684 mg/100 g, and no significant difference in harvesting time was observed between Seonhyang and wild species. Calcium and phosphate contents of Seonhyang leaves harvested in August were highest (350 mg/100 g and 123 mg/100 g, respectively). The highest total polyphenol and total flavonoid contents were observed for wild species harvested in June (60 mg/g and 126 mg/g, respectively). Ethanol extracts of Seonhyang and wild species leaves harvested in June showed the highest DPPH radical scavenging activity (95%). ${\alpha}$-Amylase inhibitory activity was highest (94.8%) in water extract of Seonhyang leaves harvested in July. Nitric oxide production inhibitory activity was $14.3{\mu}M$ in ethanol extracts of Seonhyang and $16.8{\mu}M$ in ethanol extracts of wild species harvested in June. Calcium content and ${\alpha}$-amylase inhibitory activity of Seonhyang leaves were greater than those of wild species leaves. These results suggest that Seonhyang leaf can be used to develop processed foods.

A Study on the Number of Domestic Food Delivery Services (국내 배달음식 이용건수 분석 및 예측)

  • Food delivery services are well developed in the Republic of Korea, The increase of one person households and the success of app applications influence delivery services these days. We consider a prediction model for the food delivery service based on weather and dates to predict the number of food delivery services in 2014 using various data mining techniques. We use linear regression, random forest, gradient boosting, support vector machines, neural networks, and logistic regression to find the best prediction model. There are four categories of food delivery services and we consider two methods. For the first method, we estimate the total number of delivery services and the posterior probabilities of each delivery service. For the second method, we use different models for each category and combine them to estimate the total number of delivery services. The neural network and linear regression model perform best in the first method, this is followed by the neural network which is the best for the second method. The result shows that we can estimate the number of deliveries accurately based on dates and weather information.

Fact-finding Survey on Occurrence of Paddy Field Weeds and The Use of Paddy Field Herbicides at Farmer's Level in Korea (논잡초 발생양상 및 논 제초제 사용 실태조사)

  • A fact-finding survey was conducted to obtain the basic information on nation-wide weed distribution and farmer's opinions to weed control strategy in paddy field. Most respondents considered Echinochloa spp., Monochloa vaginalis, Sagittaria trifolia, and Scirpus juncoides etc. as dominate weeds in paddy fields. And herbicide resistant weed species were M. vaginalis, S. juncoides, E. oryzicola and S. pygmaea etc. Purchase guidances for herbicide selection, experience of farmers was 34.0% and dealers recommendation was 33.9% at farmer's level. And paddy field herbicides application frequence were one time 15.6% but twice 75.6%. Preferred herbicides were ranked in the following order: oxadizone 12% EC, butachlor 5% GR, butachlor 33% CS, mefenacet pyrazodulfuron-ethyl 21.42% SC, and oxadiargyl 1.7% EC etc. in paddy fields. And in most preferred foliar herbicide were bentazone MCPA 38.6% SL and bentazone cyhalop-butyl 18.5% ME, 48.5% and 22.3%, respectively.

Quality Characterization of Yanggaeng with Rice Germ Powder (쌀눈 분말을 첨가한 양갱의 품질 특성)

  • This study examined the quality characteristics of yanggaeng with rice germ; it was incorporated into yanggaeng at different levels (containing 5% rice germ, 10% rice germ, 15% rice germ, and 20% rice germ) based on the total weight of red bean extracts. For analyzing the quality characteristics of yanggaeng, moisture content, hardness, color, antioxidant activity, total polyphenol content, reducing sugar, and vitamin E were determined. There was no significant difference in the moisture content and hardness except in the control. For color, lightness and yellowness of yanggaeng increased as the concentration of the powder was increased, whereas there was no significant difference in redness. As the rice germ powder was increased, total polyphenol content and antioxidant activity increased significantly, whereas reducing sugar decreased. Especially, total vitamin E, including isomers, increased as the concentration of the powder increased from 0.41 mg/100 g to 4.03 mg/100 g. Therefore, it could be possible to develop processed products with functional snack for yanggaeng prepared by adding 10% rice germ.

Food Delivery Applications Becoming Alligator of Hotel Supply Chain: An Empirical Analysis

  • Purpose: Online-To-Offline Food Delivery Services (O2O-FDS) is a new element in hotel supply chain that digitalizes traditional food delivery practices using new technologies. Targeting hotel guests, the present research is to explore the role of trust in the relationship between food delivery app on loyalty, price efficiency, and convenience. This new perspective is an essential value addition in the field of hotel marketing in relation to O2O-FDS. Research design, data and methodology: The present research conducted the mediator variable regression analysis as a main statistical methodology to identify the connections between three main constructs using total 244 South Korean participants that were recruited from the professional research company in Korea. Results: The statistical findings based on three steps of mediator regression approach strongly indicate that the trust of food delivery app in the hotel sector plays a moderating role in the relationship between price efficiency and convenience of food delivery app and customer loyalty of food delivery app in the hotel business. Conclusions: This research concludes that hotel practitioners must strive to provide adequate information on food delivery applications in order to increase price efficiency and convenience relative to traditional food and beverage services, influencing consumer trust in food delivery technology.

Implementation and Evaluation of Nutrition Capacity Training Program for Dietitians and Related Professionals Working at Customized Home Visiting Health Services (방문건강관리사업 담당 영양사와 연계전문인력을 위한 영양부문 교육 프로그램 운영과 평가)

  • The purpose of the study was to implement and evaluate a nutrition capacity training program for dietitians and other professionals working at customized home visiting health services (CHVHS). This program focused on nutrition services for hypertension or diabetes mellitus patients including topics regarding CHVHS, and composed of 10 sessions with lectures, discussion and practice. Dietitians (n = 54) and other professionals (n = 20) participated in the program and completed the questionnaire to assess their understanding of nutritional management, nutrition services and CHVHS before and after the program, and to examine program satisfaction and education needs. Subjects were mostly women (98.6%) and college or university graduates (93.2%). Total score (p < 0.001), as well as all items (p < 0.001 or p < 0.01) of understanding regarding nutritional management, nutrition services and CHVHS, were significantly increased after the program both in dietitians and in other professionals. Subjects were generally satisfied with the program, showing more satisfaction with items regarding subject's participation, acquiring new knowledge, usefulness of the program for CHVHS, and education materials. In future nutrition capacity training programs, subjects wanted to have classes regarding nutrition services for specific chronic diseases, development of education materials, methods for dietary life education, modifying eating habits and so on. Other professionals compared to dietitians, showed higher education needs in meal management (p < 0.01) and nutrition counseling skills (p < 0.05). This study showed the effectiveness of a nutrition capacity training program for home-visiting dietitians and other professionals, and suggests the need and direction for future nutrition capacity training programs.
