Bioactive Levan-Type Exopolysaccharide Produced by Pantoea agglomerans ZMR7: Characterization and Optimization for Enhanced Production

  • Levan is an industrially important, functional biopolymer with considerable applications in the food and pharmaceutical fields owing to its safety and biocompatibility. Here, levan-type exopolysaccharide produced by Pantoea agglomerans ZMR7 was purified by cold ethanol precipitation and characterized using TLC, FTIR, 1H, and 13C NMR spectroscopy. The maximum production of levan (28.4 g/l) was achieved when sucrose and ammonium chloride were used as carbon and nitrogen sources, respectively, at 35℃ and an initial pH of 8.0. Some biomedical applications of levan like antitumor, antiparasitic, and antioxidant activities were investigated in vitro. The results revealed the ability of levan at different concentrations to decrease the viability of rhabdomyosarcoma and breast cancer cells compared with untreated cancer cells. Levan appeared also to have high antiparasitic activity against the promastigote of Leishmania tropica. Furthermore, levan had strong DPPH radical scavenging (antioxidant) activity. These findings suggest that levan produced by P. agglomerans ZMR7 can serve as a natural biopolymer candidate for the pharmaceutical and medical fields.

Diet and Physical Activity in Relation to Weight Change among Breast Cancer Patients

  • Background: This study aimed to provide an overview of lifestyle changes after breast cancer diagnosis and to examine the relationship between dietary and physical activity changes with weight changes in breast cancer patients. Women with breast carcinomas (n=368) were recruited from eight hospitals and four breast cancer support groups in peninsular Malaysia. Dietary and physical activity changes were measured from a year preceding breast cancer diagnosis to study entry. Mean duration since diagnosis was $4.86{\pm}3.46$ years. Dietary changes showed that majority of the respondents had decreased their intake of high fat foods (18.8-65.5%), added fat foods (28.3-48.9%), low fat foods (46.8-80.7%), red meat (39.7%), pork and poultry (20.1-39.7%) and high sugar foods (42.1-60.9%) but increased their intake of fish (42.7%), fruits and vegetables (62.8%) and whole grains (28.5%). Intake of other food groups remained unchanged. Only a small percentage of the women (22.6%) had increased their physical activity since diagnosis where most of them (16.0%) had increased recreational activities. Age at diagnosis (${\beta}$= -0.20, p= 0.001), and change in whole grain (${\beta}$= -0.15, p= 0.003) and fish intakes (${\beta}$= 0.13, p= 0.013) were associated with weight changes after breast cancer diagnosis. In summary, the majority of the women with breast cancer had changed their diets to a healthier one. However, many did not increase their physical activity levels which could improve their health and lower risk of breast cancer recurrence.

농어촌지역 여성의 태교인식(胎敎認識)과 실천(實踐)에 관한 연구 - 영동 지방을 중심으로 - (Knowledge and Practice of Prental Care in the Rural Districts of Korea -in Yongdong region)

  • This is a study to analyze rural area women's perception and practice of prenatal care, which is the fundamental of the education of children. Further, it was aimed to provide basic data for ideal childbirth, upbringing and household management process. For that object, questionnaires were distributed to women living in Yongdong region to judge the level of general understanding on prenatal care. Research was done from three different aspects; dietary life, emotion control and health management. Percentages were drawn out to see the general tendency. The following results were discovered from data analysis: 1. Most subjects of the survey knew well about prenatal care. They had acquired that knowledge from their parents. Most thought that prenatal care is necessary. They answered that they think prenatal care has more or less effect on the fetus. The first dime they thought about prenatal care was after they found that they were pregnant. 2. The subjects knew well about dietary needs for pregnant women carried out much of what they knew. Intake of sufficiently nutritious food is somewhat difficult, but foods that are regarded as bad were avoided thoroughly. It appears that most women have much concern about what they eat during pregnancy. 3. Most of the subjects understood that the emotional stability is necessary but it wasn't put into practice so well as in dietary life. Especially, attitudes connected with emotional development like, "Look or hear only what is good (for the fetus)" were practised little. Efforts for self-restraint as "Not to hate or pick out others' defects or talk bad about others" were appeared to be great, and it is practised well, too. 4. The subjects were well-informed on health area, but practised little. Behaviors for health improvement as to "Lead a regular daily life for health" or "Not to take a long trop" were practised very faithfully. The results of the survey showed that passive attitudes related to tabooed food, self-abstinence and cautions for bodily safety were prevalent; more positive and progressive disposition missing. That is, full perception and active practices for caloric intake, emotional improvement and physical strength development are needed.

직영 및 위탁 사업체 급식소 영양사에 대한 작업자 지향적 직무분석(제 2 보) : 요인분석에 의한 직무수행 특성 영역 및 직무정보 기술 (Categorization of Competencies and Description of Job Informations for Dietitians in Employee Foodservice by Wdorker-oriented Job Analysis Methodology)

  • The job characteristics and competencies of 285 dietitians in employee foodservices were investigated by worker-oriented job analysis methodology. The purposes of this study were to : a) determine the knowledge, abilities, skills and other characteristics(KASO) needed for dietitians in two types of employee foodservice groups(self-operated vs. contracted), b) categorize KASO items by factor analysis and c) provide job information and job descriptions for dietitians in employee foodservices. The job analysis questionnaire was consisted of questions concerning the 134 KASO items. The questionnaire was mailed to 250 dietitians who are members of The Korean Dietetic Association Practice Group in self-operated foodservices(group A) and 250 dietitians who are employed in contracted foodservice companies(group B). Completed questionnaires were received from 285 dietitians(121 in self-operated, 164 in contracted) ; with response rate of 57%. Statistical data analysis was completed using the SPSS/win and the SAS/win packages. The results of this study can be summarized as follows. 1) Through factor analysis, the 134 KASO items were regrouped into 6 categories :‘primary dietetic tasks concerning menu management and administrative work regarding merchants’, ‘primary dietetic tasks concerning procurement and purchasing of food and supplies and meal production and service control’, ‘primary dietetic tasks concerning facility, sanitation and safety control’, ‘secondary dietetic tasks concerning nutrition education and research’, ‘secondary dietetic tasks concerning foodservice operation management’and‘human attributes’. 2) Analysis of the total scores(average scores of degree of frequency, importance and entry requirements of KASO items within 6 categories), group A showed high priorities placed on‘human attributes’, ‘procurement and purchasing of food and supplies and meal production and service control’, ‘menu management and administrative work regarding merchants’, ‘whereas group B showed high priorities placed on’‘human attributes’, ‘foodservice operation management’. 해수의 대장균군과 분변계대장균의 검출률 비교 분석 (Comparative Analysis of Total and Fecal Coliforms in Sea Water)

  • Seafood, if eaten raw, carries the risk of food poisoning. Seafood poisoning is often caused by pathogenic microorganisms originating from fecal contamination, such as Salmonella sp. and norovirus. Fecal coliforms are an important indicator of fecal contamination. Therefore, data on fecal coliforms are very important for evaluating the safety of fisheries in coastal areas. In this study, 2,226 sea water samples were collected from the southeast coast of Korea, and total and fecal coliforms were compared and analyzed. Total coliforms were detected in 76.5% of the samples and 71.4% of the total coliforms were fecal coliforms. At sea water temperatures above $20.0^{\circ}C$, total coliforms were found in 78.8% of the samples and fecal coliforms constituted 72.0% of the total coliforms. In sea water below $19.9^{\circ}C$, the respective values were 74.6% and 70.9%. These results suggest that temperature does not have a significant effect on the detection of fecal coliforms. When the salinity exceeded 30.0%o, total coliforms were found in 72.1% of the samples and fecal coliforms constituted 66.0% of these. At salinities below 29.9%o, the respective values for total and fecal coliforms were 90.4% and 85.2%. These results strongly suggest that the detection of fecal coliforms is proportional to the amount of precipitation.

경로당 노인의 식습관 및 영양지식과 신체건강기능수준에 관한 연구 (A Study on the Nutritional Habit, Nutritional Knowledge, Functional Health Status of the Aged People in the Hall for the Aged in Sungnam Area)

  • The purpose of this study was to determine the basic materials needed for nutrition and health programs for aged people. In order to set up these programs, the nutritional habit, nutritional knowledge and functional health status (mobility, functional assessment, and falls efficacy) of the aged were measured, and their relationships were determined. Data was collected on 57 aged individuals that participated in the 'Exercise Program for the Aged' conducted by the National Health Insurance Corporation. These 57 subjects were interviewed and tested by direct measurement prior to conducting the program. The data was analyzed using the SPSS 13.0 Package. According to the results, the nutritional habit ranged from 24-50 out of 50, and the average was 37.2, which was above the middle level. The average nutritional knowledge was of 4.02 out of 5, which was considered reasonably high. Especially, more than half of these subjects were uneducated, but they had a high interest in nutrition. The average mobility was determined to be 9.2 seconds and the falls efficacy was 64.2 out of 100. In addition, subjects answered that they had a fear of falling due to low confidence, which indicates that safety education for the prevention of falls should be provided to aged individuals in the future. The results showed that notable counter-relations between nutritional habit and functional health status existed.

식품충분성과 다양성의 개인간 및 지역사회 관련 요인: 2017년 지역사회건강조사 자료 분석 (Interpersonal and Community Factors Related to Food Sufficiency and Variety: Analysis of Data from the 2017 Community Health Survey)

  • 본 연구에서는 질병관리본부의 2017년 지역사회건강조사에 참여한 19세 이상의 한국 성인 228,310명을 대상으로, 식품의 충분한 공급과 다양성 확보를 기준으로 식품충분·다양군, 식품충분·비다양군, 식품불충분군으로 분류한 집단의 개인적 요인, 개인간 요인, 지역사회 요인에 차이가 있는지를 파악하고, 식품충분성 및 다양성과 관련된 개인간 요인과 지역사회 요인을 파악하고자 하였다. 본 연구의 대상자 중 식품충분·다양군은 65.3%, 식품충분·비다양군은 31.5%, 식품불충분군은 3.2%이었다. 식품충분·비다양군과 식품불충분군은 식품충분·다양군에 비해 여성, 65세 이상, 중졸 이하, 가구의 월평균 소득이 200만원 미만, 직업이 없거나 배우자 없는 경우, 소규모 지역 거주 등의 특성을 나타냈으며, 모든 건강행동과 건강상태에서 집단별 분포에 유의적인 차이가 있었다. 건강행동 중 금연, 규칙적 운동, 적절한 수면 실천 비율은 식품충분·다양군이 가장 높았으나, 금주와 규칙적 아침식사 실천 비율은 식품불충분군이 가장 높았다. 고혈압, 당뇨, 이상지질혈증 및 관절염 비율은 식품충분·다양군에 비해 식품충분·비다양군과 식품불충분군이 높게 나타났으나, 과체중 이상은 식품 충분·다양군이 가장 높은 결과를 보였다. 또한 식품충분·비다양군은 규칙적인 아침식사를 제외한 모든 요인에서 식품 충분·다양군과 차이가 있었으며, 대중교통과 의료서비스를 제외한 모든 요인에서 식품불충분군과 차이가 있었다. 식품충분성 및 다양성과 관련된 개인간 요인과 지역사회 요인을 파악하기 위해 사회인구학적 요인, 개인간 요인, 지역사회 요인을 모두 고려하여 다변량로지스틱 회귀분석을 실시한 결과 식품충분·다양군에 비해 식품충분·비다양군과 식품불충분군에서는 사회적 연결망이 미흡하고, 사회적 활동이 활발하지 않았으며, 안전한 환경, 생활환경, 의료서비스 등에 대하여 불만족하였다. 본 연구에서는 지역사회건강조사 또는 국민건강영양조사에서 식품안정군으로 분류되지만 다양성을 확보하지 못한 군을 분류하여 분석하였고, 그 결과 식품충분·비다양군은 식품불충분군 뿐 아니라 식품충분·다양군과도 개인적 요인, 개인간 요인, 지역사회 요인에서 유의적인 차이가 있었다. 이와 같이 사회인구학적 특성, 건강 행동, 건강상태 등의 개인적 요인과 사회적 연결망, 사회적 활동 등의 개인간 요인, 그리고 지역사회 환경 등이 식품충분성 및 다양성과 관련된 요인으로 규명되어, 식품불안정과 관련된 문제를 해결하기 위해서는 식품의 다양한 공급을 고려한 식품지원 정책과 더불어 사회적 연결망과 사회적 활동을 촉진시킬 수 있는 다양한 영양교육 프로그램 개발 등이 지역사회의 환경 개선 정책과 함께 이루어져야 할 것으로 생각된다.

인천지역 학교급식 영양사의 가공포장식품 영양표시에 대한 인식 (School Dietitians′ Perception on Nutrition Labelling of the Processed and Packaged Foods in Incheon)

  • The purpose of this study was to investigate school dietitians' perception on nutrition labelling of processed and packaged foods in the Incheon area. This study was carried out through a self-administered questionnaire and the subjects were 203 school dietitians. The results were summarized as follows. Most of the subjects checked nutrition labeling of processed and packaged foods when they purchased these foods for school lunch. However, the main reason for their checking nutrition labeling of processed and packaged foods was not for nutrition but for food safety. There were significant differences in the subjects' understanding and trust on nutrition labeling of processed and packaged foods by employment school. The scores of the subjects' satisfaction, understanding and trust on nutrition labeling of processed and packaged foods were not high. There were significant differences in the subjects' perception and concern about content information on nutrition labeling of domestic processed and packaged foods by employment school. Most of the subjects answered that it is almost necessary or very necessary to implement nutrition labelling of processed and packaged foods. Also their most preferred method of nutrition labelling was to label nutrient content. As the most important nutrient and functional component necessary for nutrition labelling, they answered energy, mineral such as calcium and iron, protein, total fat, cholesterol, vitamin, sodium and dietary fiber in order. As the major prerequisite task for the implementation of nutrition labelling, they answered formulation of nutrition labelling-related rules, and education and motivation for consumer, Therefore, it is necessary to activate the mandatory nutrition labelling of the processed and packaged foods and to prepare its consumer education program for school dietitian.

주요 건강기능식품 관련 홍보용 인터넷 건강 정보에 대한 평가 (Evaluation of Promotional Internet Health Information about Health Functional Foods)

  • Objectives: The aim of this study is to evaluate promotional Internet health information on health functional foods with regard to labeling information, website structure, and overall quality. Methods : The websites of 15 producers of three health functional foods (Red ginseng, vitamin, aloe) were selected. Ministry of Food and Drug Safety (MFDS) required labeling information was used to evaluate the integrity of basic information, and the structural properties of the websites were investigated. Moreover, DISCERN instrument was used to evaluate reliability and quality of information. Results : 1) Among MFDS required labeling information, seven items, including 'sell by date', and 'possible side effects' were not fully specified, and only 6.7% of Internet advertisements provided 'possible side effects'. 2) Each of 92.9% of these websites offered 'Introducation to websites and producers', and 'customer service', whereas only 64.3% and 42.9% of these websites offered 'FAQ about website utilization' and 'multilingual support', respectively. 3) The evaluation using DISCERN instrument showed the scores of $2.03{\pm}0.24$ in reliability, $1.87{\pm}0.28$ in quality, and $2.10{\pm}0.55$ in overall quality. Conclusions : Current promotional Internet health information on health functional foods has various weaknesses in terms of reliability and quality that need to be improved.

경기지역 IT 분야 직장인의 직무스트레스, 건강기능식품 선택속성 및 소비가치의 관계 (Relationship between job stress, health functional food selection attributes, and consumption values among workers for information technology in Gyeonggi area)

  • 본 연구는 경기지역의 IT 분야 직장인 340명을 대상으로 일반적 특성, 직무스트레스 수준, 건강기능식품 선택속성 및 소비가치에 대한 설문 조사를 실시하였으며, 직무스트레스 수준에 따라 두 개의 집단으로 나누어 집단 간 일반적 특성, 건강기능식품 선택속성 및 소비가치의 차이를 알아보고, 직무스트레스와 건강기능식품 선택속성의 관계에 대한 건강기능식품 소비가치의 매개효과를 분석하였다. 연구 결과, 대상자의 건강기능식품 선택속성과 관련하여 직무스트레스 수준이 낮은 집단이 제품의 성분, 효능의 내재적 속성을 더 고려하는 것으로 나타났다. 대상자의 건강기능식품 소비가치와 관련하여 직무스트레스 수준이 낮은 집단이 건강기능식품 복용으로 건강을 지킬 수 있다는 안정감의 감정적 가치를 중요하게 여기는 반면, 직무스트레스 수준이 높을수록 다른 사람들과 차별화된 건강기능식품 선택이 중요하다는 인지적 가치를 중요하게 여기는 것으로 나타났다. 상관관계 분석 결과, 직무스트레스 수준이 높을수록 건강기능식품 선택속성 중 내재적 속성, 건강기능식품 소비가치 중 감정적 가치 및 가격, 실용성 및 안전성을 중요하게 생각하는 기능적 가치 (p = -0.134)를 고려하지 않는 것으로 나타났다. 매개효과 분석에서는 직무스트레스 수준이 내재적 속성에 직접적으로 영향을 미치는 것이 아니라 기능적 가치와 감정적 가치를 통해 영향을 미치는 완전매개효과를 나타냈다. 연구 결과를 종합해보면 직무스트레스 수준이 낮을수록 건강기능식품 선택속성 및 건강기능식품 소비가치에 긍정적인 영향을 주는 것으로 나타났으며, 직무스트레스 수준과 건강기능식품 선택속성의 관계에서 건강기능식품 소비가치 중 기능적 가치와 감정적 가치가 완전 매개효과를 가지는 것으로 나타났다. IT 분야 직장인들은 직업적 특성 상 지속적으로 스트레스 상황에 놓여 있으며 그로 인해 발생할 수 있는 신체적 이상을 예방하기 위한 건강기능식품 이용이 증가하고 있다. 따라서 올바른 건강기능식품 선택을 통해 효과적으로 건강을 유지할 수 있도록 건강기능식품 소비가치를 개선하기 위한 교육이 필요하다. 소비가치는 소비자의 사고 및 행위를 이끄는 판단기준의 집합으로, 교육 대상자들이 건강기능식품에 대하여 제품이 주는 이미지보다는 성분과 효능 및 안전성 등에 가치를 두고 관심을 가질 수 있도록 하는 교육이 이루어져야 한다.
