Perception and Educational Demand on Health Functional Foods among School Nutrition Teachers and Dietitians in Chungbuk (충북지역 일부 학교 영양(교)사의 건강기능식품에 대한 인식 및 교육 요구)

  • We investigated perception and educational demand for health functional foods among nutrition teachers and dietitians working in schools. The subjects were 229 nutrition teachers (57.2%) and dietitians (42.7%) working in Chungbuk elementary, middle and high schools. Approximately 67% of the subjects had experience consuming health functional foods. Most of the subjects did not have experience with the side effects after consuming health functional foods. Subjects who were unaware of the legal specifications, classification, and labeling standards for health functional foods (78-91.2%) were much more common than those who were aware of those issues. Most of the subjects perceived health functional foods as a food (45.0%) or as a product between a food and a medicine (44.5%). The subjects recommended themselves (43.1%) or medical doctors/pharmacists (40.8%) as consultation/education specialists for health functional foods. Approximately 66% of the subjects had experience conducting nutritional consultation/education in their schools, but only 3.2% had experience with health functional foods. Only 17.8% of the subjects had experience receiving education on health functional foods. Most subjects (88.2%) demanded education on health functional foods for themselves. The results suggest that an effective education is needed for nutrition teachers and dietitians working in schools for them to play an active role in educating students and their parents about health functional foods in the near future.

Effect of Educational Attainment of Household Head on Eating-out Demand (가구주 학력이 외식수요에 미치는 효과)

  • Korean households' expenditures on the eating -out have been steadily increasing except for the foreign exchange crisis period. This paper aimed to examine the eating-out expenditures of salary and wage earners's households by educational attainment of household head. We modeled the demand function of eating-out in terms of income and price, examining the responsiveness of eating-out demand to changes in income and price using econometric methods such as regression, rolling regression and impulse response. This paper showed that coefficients of income and price tended to decrease as the income rises in the long-run. Specifically, the higher the educational attainment of household head is, the smaller the coefficients of income and price we. The impulse response analysis also indicated that while price shocks decreased the demand for eating-out, income shocks tended to increase tile demand for eating-out in all the educational attainments. Furthermore income shocks were much greater and last longer than price shocks at all educational attainments of household heads.

  • Demographic transition drives changes in consumer demand for food products. This study examines how rising incomes and population trends affect spending on food purchased for home. The objective of this study is to characterize the relationships between selected socio-demographic factors and food selection among South Korean households. Panel data from Rural Development Administration (RDA) in South Korea in 2010 was used (n=971). Household food purchases were classified into one of the five food groups from Composition of Foods of RDA. Multiple regression analysis was used to analyze the effects of household size and income based on the expenditure share on each food group. All statistical analyses were performed using SAS/ PC version 9.3. Results show that household socio- demographic characteristics have a strong influence on food purchasing, with the purchase of vegetables and fruit, and processed food and pre-packaged being particularly sensitive.

Consumer's Demand and Willingness to Pay for Horse Meat (말고기에 대한 소비자 수요와 지불의사)

  • This study aims at estimating the consumer's demand and willingness to pay(WTP) for horse meat in Korea. Three econometric models are employed to examine the multiple layers of the demand, including the current demand, the potential demand and latent demand. Findings indicate a substantial demand for horse meat. Dichotomous choice contingent valuation method is used to elicit the WTP. We assess the mean WTP for horse meat using a double-bounded logistic model. As a result, consumers are willing to pay at 67.8 percent of the beef prices of the third quality grade to purchase horse meat. And, for the factors that influence on WTP, only sex, age and recognition of horse meat are statistically significant.

Effects of Experiential Value on Continuous Use Intention for On-Demand Services (온디맨드(On-Demand) 서비스의 지속사용의도에 대한 경험가치 효과)

  • On-Demand services have emerged as one of the core business strategies for delivering new experiential values by providing customized services in different user-needs nowadays. Based on the Stimulus-Organism-Response (S-O-R) framework, this paper focuses on the factors of environmental stimulation and emotional states of the demand-side that induce continuous intention of use from the On-Demand services. The study defines 'Informativeness', 'Fulfillment', 'Trust', and 'Convenience' as the properties of the On-Demand services and considers 'Playfulness', 'Customer Return on Investment (CROI)', and 'Service Excellence' as the aspects of the experiential values. The research shows that 'Fulfillment', 'Trust' and 'Convenience' affected the experiential value in 'Kakao Taxi (On-Demand transportation service)' while 'Informativeness', 'Fulfillment', 'Trust of platform', and 'Convenience' are represented as the related factors to the experiential value in 'Baedal Minjok (On-Demand food delivery service)'. The experiential value factors, 'CROI' and 'Service Excellence', are shown directly related to the continuous intention of use in both services. A partial mediation relationship is, furthermore, observed between the aspects of 'CROI' and 'Service Excellence' in Kakao Taxi and its 'Convenience' and 'Continuous intention of use.' In Baedal Minjok, a partial mediation relationship is found between the 'CROI' with its aspects of 'Trust of the platform', 'Convenience', and 'Continuous intention of use' as well. The results of this study may contribute a comprehensive understanding of the purpose of On-Demand services and its needs from the demand-side thus can be helpful for the supply-side.

  • The objective of this study is to establish a direction for smart aquaculture technology development in the Republic of Korea through patent analysis and a demand survey of experts and fishermen. The patent analysis was conducted using Wisdomain for patents in the Republic of Korea, the United States of America, Europe, Japan, and China from 2005 to 2016. This study conducted an analytic hierarchy process (AHP) survey of experts in the fields of fishery, marine, and ICT among others. Furthermore, it carried out a demand survey of 85 fishermen in Jeonnam and Jeju. The smart aquaculture technology market has moderately grown in the Republic of Korea until recently, and it is expected to expand further because of the expansion of national investment in the smart aquaculture field. The priority evaluation results for developing smart aquaculture technology show that land-based aquaculture has a higher priority than sea-based aquaculture. Of the fishermen that responded, 84% said that they need to introduce smart aquaculture technology to solve problems in the supply and demand of manpower, labor cost, and maintenance expenses. The direction of development should lie in developing biological and environment-based standard aquaculture models to spread high-tech systems and vitalize the aquaculture industry. This requires continual training of human resources in the smart aquaculture field.

  • Demand for electricity is increasing annually. Especially, the daytime demand grawth shows higher than any other time period. So the big difference between maximum and minimum electrical demand becomes another important problem to be solved. The Battery Energy Storage System is chosen as one of the solutions among the sevral methods. The purpose of utilization of Battery Energy Storage System is to improve the daily load factor. Also, Battery Energy Storage System may be used for the load levelling or the load shifting as well as the spinning reserve. Up to now, only the pumped hydro power plant system has been operated on the commercial basis, but this system has so many constraints such as site, environmental effects, construction period, ect. Being considered current electrical power situation the development of electric storage system is in need latly. Among the various electric storage systems, Battery Energy System is chosen with the top priority because it has sevral merits to cover such as the short construction period, the demand site installation, and the food environmental characteristics.

The Path Analysis of Consumers' Decision-making to Purchase GMO Foods and Request for Labelling It (소비자의 유전자재조합 콩 식품 구매의사 및 표시요구에 대한 경로 분석)

  • The goal of this study was to examine the effects of perceived risks toward GMO (Genetically Modified Organism) food on the decision-making to purchase it and demands to reveal its Identity. The major results were as follows. First, consumers strongly perceived the risk toward GMO food, and demanded labeling to identify it. But, many consumers had indecisive in the purchase of GMO food. Second, consumers with high level of perceived risks toward GMO food were more likely not to buy GMO food. In addition, the level of perceived risk was high among consumers who had many children. Finally, consumers with high level of perceived risks toward GMO food were more likely to demand the labelling for identifying GMO food. Consumers who had many children and high level of reliability for labelling food safety strongly demanded to label for revealing GMO food.

  • Recently demand for safer and healthier food has augmented with advancements in health conditions. Food ingredients with yet to be known safety and functionality, are being investigated for their safety or detrimental effects. The Ministry of Food and Drug Safety has introduced "health functional food" by the "Health Functional Food Act" to evaluate bio-functional and safety properties of raw materials using standard methods including in-vitro and in-vivo testing before human consumption. Despite recent growth in net worth of domestic functional food market, most of the raw materials are not from local Korean industries with own research and development, and mostly terrestrial not marine resources. Geographically, Korea has access to diverse marine bio-resources that need to be managed and utilized sustainably. Recently, diverse novel physiologically active substances have been reported from marine organisms. Hence, the development of functional foods from marine bio-resources is considered as an inevitably important task.

The Estimation of the Demand Function of Korean Beef and Imported Beef Cuts - Focusing in Consumers in the Metropolitan Area - (한우와 수입산 쇠고기의 부위별 수요함수 추정 - 수도권 소비자를 중심으로 -)

  • This paper estimated the demand function of the cuts of Korean beef and imported beef by using the consumer panel and retail price data from the Korean Agro-Fisheries & Food Trade Corporation, and the weather data from the Korea Meteorological Administration with an log-log model and AIDS model. The results show that the preference for cuts of beef used for cooked soup, steamed dish, Changjorim are more elastic than cuts used for roasting when there is a change in price and income in the estimation of demand function of Korean beef. On the other hand, consumers respond sensitively with the demand of roasting part compared to steamed dish, Changjorim, soup when there is change in price and income in the estimation of demand function of imported beef. The results indicate that there is substitutional relationship between Korean beef and imported beef, because Korean beef cuts used for roasting can substitute for imported roasting part and the same relationship applies to steamed dish, soup, Changjorim. In addition, family number, family member, husband job, purchasing place, means of transportation, purchasing time, weather are statistically significant.
