Nutritional Evaluation of Tofu Containing Dried Soymilk Residue(DSR) 2. Evaluation of Carbohydrate Quality (건조비지 첨가 두부의 영양적 품질평가 2. 탄수화물의 품질)

  • Dietary fiber content and carbohydrate digestibility of dried soymilk residue (DSR) and tofu containing DSR were evaluated. Insoluble dietary fiber (IDF) content was 37.4 and 49.8% (%, moisture free basis) for common soymilk residue and DSR, respectively. Both soymilk residues contained 12.5% of soluble dietary fiber (SDF, dry basis). Tofu containing DSR, which is partially substituted with DSR corresponding to 10% weight of soybean used, had higher dietary fiber content (30% more for RDF and 45% more for SDF) than tofu manufactured in traditional manner. Carbohydrate digestibility was much lower in all tofu products ranging from 11% to 21%, and there was a negative correlation( r = -0.9243) between carbohydrate digestibility and total dietary fiber content.

Assessment of Oncogenicity from Pesticide Residues in Korean Foods (한국식품 중 잔류농약의 종양유발성 평가)

  • Dietary intake and oncogenic risk of 12 pesticides used in Korea whose oncogenic potency was known were assessed from published data. Dietary oncogenic risk (excess tumor incidence for a 70-year human life span) for Korean population was estimated to be $2.17{\times}10^{-3}$ on the basis of legal maximum residue limit, $4.33{\times}10^5$ on the basis of maximum practical residue level and $5.10{\times}10^{-6}$ on the basis of mean practical residue level of examined pesticides, all of which exceeded the negligible risk standard $1{\times}10^{-6}$ of US EPA. A systematic follow-up study on those oncogenic pesticides should be undertaken in order to mitigate the people's worry about the cancer risk by the abuse of pesticides in food production.

  • This study was carried out to establish Korean total diet study (TDS) model for estimating pesticide residue in food samples. In addition, pesticide residues of food samples were monitored by setting the standards of established Korean total diet study model. For monitoring, first step were selection of total 102 species food samples, second step were selection of total 70 species food samples, and third step were selection of total 12 representative diet and 109 species food samples. Ninety-eight pesticides were analyzed using $GC-{\mu}ECD$, GC-MS, and LC-MS/MS after QuEChERS sample preparation method. The residue levels in detected food samples were below the maximum residue limit (MRL). Establishment of the Korean total diet study model means providing safe food for consumers, secure the safety of food samples and provide ongoing information to agricultural producers about use of pesticides.

A Study on Reduction of Food Waste (음식물 쓰레기 소멸화에 관한 연구)

  • The physical and chemical transformation and reduction degree of food waste were investigated in a food waste reduction machine using thermophilic bacteria. The first operation of the reduction machine for grain, vegetables, fishes and flesh wastes proceeded during three weeks. The first and second reduction percentages of the wastes were 98.3% and 93.2%, respectively. The residue of food waste was composed of fruits, fish, and vegetables. The temperature distribution of the reduction machine ranged between 30 and 6$0^{\circ}C$ appropriate for growth of thermophilic bacteria. At initial stage the pH in the reduction machine decreased with organic acids produced, but increased as the organic acids decomposed by different thermophilic bacteria. In the reduction machine, the moisture content of the food waste was reduced from 80-90% to 10-20% after 24 hours, and the salinity of residue was 0.29% after the second operation. The degree of odor was most high between 2 and 4 hours.

  • We studied about analyzing carbamate pesticides, organochlorine, organophosphorus pesticides simultaneously using by GC/MSD. For this, instead of HPLC which is generally used in analyzing carbamate pesticides, GC was used and all hydrogen of -NH group in carbamate pesticides were substituted for trifluoroacetyl group which is stable at heat And eight pesticide resdidues were not detected in nine samples circulated in the city.

Reduction of Pesticide Residues in the Production of Red Pepper Powder

  • Six organophosphorus, one organochlorine, and three synthetic pyrethroid pesticides were analyzed for their residues during washing and hot-air drying of red peppers conducted in the production of powder. The residue ratio in organophosphorus pesticides was 33% in chlorpyrifos, 31 % in diazinon, 50% in methidathion, 80% in EPN, 28% in fenitrothion, and 60% in profenofos. The ratio in pyrethroids was 109% in cypermethrin, 102% in deltamethrin, and 106% in fenvalerate. That in organochlorine was 56% in ${\alpha}$-endosulfan and 90% in ${\beta}$-endosulfan. The results were greatly different between organophosphorus and pyrethroid pesticides. UV irradiation along with hot-air drying brought about a remarkable reduction of the residues, up to 70% as compared with hot-air drying only. The removal effect was most remarkable in pyrethroids, which are hardly removed by hot-air drying. The color of the pepper was not changed during UV irradiation. The use of oxidizing agents such as hydrogen peroxide or chlorine dioxide during washing did not show a remarkable removal of residues. The residue ratio was not affected whether the pesticide is contaminated artificially or naturally.

Residual Dissipation based on Crop Commodities Classification of Boscalid and Spinetoram on Crown Daisy and Sweet Pepper under Green Houses (시설재배 쑥갓 및 피망의 작물특성에 따른 Boscalid 및 Spinetoram의 잔류량 감소추이)

  • BACKGROUND: This study was performed to evaluate the residue dissipation of boscalid and spinetoram on crown daisy and sweet pepper affected by the morphology of the crop. The half-lives and dissipation rate constants for boscalid and spinetoram on crown daisy and sweet pepper were calculated. And then lower limit of 95% confidence interval for dissipation rate constant could be used to propose the pre-harvest residue limit. METHODS AND RESULTS: The pesticide products diluted according to the pesticide label were applied one time on crown daisy and sweet pepper at 2 field sites, respectively. Initial concentration of boscalid and spinetoram on crown daisy after application were in the range of 72.80~117.15 mg/kg and 2.82~4.67 mg/kg, respectively. And Initial concentration of boscalid and spinetoram on sweet pepper were in the range of 1.58~1.62 mg/kg and 0.10~0.21 mg/kg, respectively. Boscalid and spinetoram for crown daisy dissipted below the maximum residue limit(MRL) at 10 and 2 days after application, respectively. All residues concentration of boscalid and spinetoram for sweet pepper below the MRL at 0 day after application. The half-lives based on dissipation rate constant for boscalid and spinetoram on crown daisy were 4.2~4.9 days and 3.0~2.4 days respectively. And the half-lives for boscalid and spinetoram on sweet pepper were 6.7~7.0 days and 2.8~4.0 days respectively. CONCLUSION: The difference in initial concentration of boscalid and spinetoram among crop commodities were due to different crop morphology with larger surface areas. This study was suggested that pre-harvest residue limit would be calculated from lower limit of 95% confidence interval for dissipation rate constant and would be useful to protect consumers by controlling the pesticide residues in crop.

Utilization of Soymilk Residue for Wheat Doenjang (밀가루 고오지에 의한 두유박이용 밀된장 제조)

  • Wheat Doenjang was manufactured by mixing various ratio of the soymilk residue with wheat Koji. As the result, the content of reducing sugar was increased till 50 days and decreased thereafter during aging of the mash. As the combination ratio of soymilk residue was increased, the content of reducing sugar was decreased and amino nitrogen content was increased prominently till 50 days in all testing samples but thereafter the increasing ratio was slowdowned. At the beginning of the aging the content of the amino nitrogen was higher in the testing sample which had higher combination ratio of soymilk residue but at the end of the aging the result was reversed. The content of the total acids was increased prominently till 40 days but thereafter the increasing ratio was slowdowned, and in each testing samples the difference in total acid content was extremely slight. In the color of each testing samples aged 80 days as the combination ratio of soymilk residue was increased, the lightness was increased, and the redness was decreased but the yellowness was increased. From the result of sensory evaluation test of wheat Doenjang aged 90 days, soy sprout Doenjang soup showed the best taste in control and as the combination ratio of soymilk residue was increased, the taste was dropped slightly but no significant differences was obtained among the testing sample A,B and C but between control and testing sample D there was significant difference. In the original taste of Doenjang, the control was the best and as the combination ratio of soymilk residue increased, the point was dropped but there were no significant differences between control and testing sample A and testing sample B and C.

The Effect of Organic Acids on Dewatering Efficiency of Soybean Milk Residue by Hydraulic Press (유기산이 두유박의 압착 탈수율에 미치는 영향)

  • The efficiency of dewatering of soybean milk residue was improved by hydraulic pressing after pH adjustment to 4.5 with organic acids such as acetic and lactic acids. Water content of raw soybean milk residue was reduced from 80% to 72% by pressing after pH adjustment, while only to 78% by the conventional hydraulic press. The water content of the residue after pH adjustment was further reduced to 63% by hydraulic pressing with ohmic heating. The pH adjustment facilitated separation of cake from the filter cloth and reduced the solid content of the expressed liquid from 10 to 3%.

Residue Dissipation Kinetics and Safety Evaluation of Insecticides on Strawberry for the Harvest Periods in Plastic-covered Greenhouse Conditions (시설재배 딸기의 생산단계에서 살충제 잔류량에 따른 반감기 및 감소상수 산출에 의한 안전성 평가)

  • BACKGROUND: Dissipation patterns of insecticides (acequinocyl, clothianidin, diflubenzuron, thiacloprid, and thiamethoxam) on strawberry grown in plastic-covered greenhouse were evaluated at 7 intervals including the preharvest interval after application. This study was performed to determine the residue concentrations, half-lives and dissipation rates in strawberry for the harvest periods. METHODS AND RESULTS: Acequinocyl, clothianidin, diflubenzuron, thiacloprid, and thiamethoxam were applied in accordance with critical good agricultural practices for strawberry. Strawberry samples were collected at 0, 1, 2, 3, 5, 7 and 10 days after application. Quantitaion was performed by HPLC/DAD and HPLC-MSMS system with C18 column. The limit of quantitation (LOQ) values varied between were 0.00025~0.05 mg/kg on strawberry. The recoveries of acequinocyl, clothianidin, diflubenzuron, thiacloprid and thiamethoxam at two concentrations ranged from 70.9~104.9% on strawberry. The half-lives of pesticide dissipation on strawberry for two fields ranged from 1.3~8.2 days. The dissipation rates were evaluated according to the statistics method with a 95% confidence. CONCLUSION: The residue levels of insecticides (acequinocyl, clothianidin, diflubenzuron, thiacloprid, and thiamethoxam) on strawberry at 0-day after application were below the specified values by Korean MRL. To estimate dissipation rate constant of pesticides on crop for harvest periods, it is important to set the pre-harvest residue limit for human health and consumer protection in Korea.
